수용성 β-glucan을 함유한 꽃송이버섯 발효액의 제조 (Preparation of fermentation broth of Sparassis latifolia containing soluble β-glucan using four Lactobacillus species)

  • 본 연구에서는 꽃송이버섯 건물과 powder를 각각 Yeast Extract broth와 MRS broth에서 Lactoballius 4종(L. plantarum, L. acidophilus, L. helveticus, and L. delbrueckii)과 함께 발효시켰다. 발효액의 final pH는 pH $3.9{\pm}0.02$로 유산균의 일반적인 final pH 값과 일치함을 통해 유산균의 발효를 확인하였고, 유산균에 의한 꽃송이버섯 발효의 효과를 ${\beta}$-glucan 함량을 통하여 확인하였다. Yeast Extract broth 발효액은 YSB-2LP 1.65 g/100 g으로 ${\beta}$-glucan을 거의 함유하고 있지 않았지만 MRS broth 발효액은 Yeast Extract broth 발효액의 10배에 달하는 MPB-1LP 10.84 g/100 g을 함유하고 있었다. MPB-1LP는 꽃송이버섯 powder와 L.actobacillus plantarum으로 발효한 발효액으로 pH stress로 인해 만들어진 L. plantarum의 ${\beta}$-D-glucosidase에 의해 분해된 고분자량의 수용성 ${\beta}$-glucan이라 사료된다. 꽃송이버섯을 powder 상태로 L. plantarum과 함께 발효시켰을 때 꽃송이버섯의 수용성 ${\beta}$-glucan 추출 효율을 높일 수 있으며, 본 연구의 결과는 꽃송이버섯 유산균 발효물의 면역촉진 작용 연구를 위한 기초연구자료로 활용될 수 있을 것이다.

보리순의 영양성분과 항산화 효과 (Nutrient Composition and Antioxidative Effects of Young Barley Leaf)

  • This study was conducted to investigate the proximate composition and antioxidative activities of young barley leaf(YBL). YBL powder(all w/w) was 2.98% moisture, 17.13% crude protein, 4.00% crude fat, 10.72% crude ash, and 65.17% carbohydrate. The contents of total, insoluble, and soluble dietary fiber were $36.62{\pm}2.33$, $19.05{\pm}1.04$, and $17.57{\pm}1.01g/100g$, respectively. The essential and non-essential amino acids contained in the YBL powder accounted for 46.56% and 53.44% of the total amino acids, respectively. The major unsaturated fatty acid was linolenic acid. The ratio of polyunsaturated fatty acids to saturated fatty acids was 4.84. Only tartaric acid was detected. The contents of vitamins A, C, and E were 0.761, 398.05, and 0.936 mg%, respectively. The mineral contents of YBL powder were in the order of Na$IC_{50}$ value for the DPPH radical scavenging of the YBL ethanol extract was $365.74{\pm}6.98mg/mL$. The antioxidative index was high and was similar to that of t-butylated hydroxytouene. These results suggest that YBL can be recommended as a baby vegetable of high nutritional quality and antioxidative properties.

By-product of Tropical Vermicelli Waste as a Novel Alternative Feedstuff in Broiler Diets

  • Two experiments were conducted to determine physical and chemical properties of vermicelli waste (VW) and effect of VW inclusion levels on growth performance of broilers. In experiment 1, VW samples were randomly collected from vermicelli industry in Thailand to analyze nutritional composition. Vermicelli waste contained 9.96% moisture, 12.06% CP, 32.30% crude fiber (CF), and 0.57% ether extract (EE), as DM basis. The ratio of insoluble:soluble non-starch polysaccharide (NSP) was 43.4:8.9. A total of 120 chicks (6 pens per treatment and 10 chicks per pen) were fed a corn-soybean meal-based diet or 20% VW substituted diet to determine the apparent metabolizable energy corrected for nitrogen retention ($AME_n$) of VW. The $AME_n$ of VW was $1,844.7{\pm}130.71$ kcal/kg. In experiment 2, a total of 1,200 chicks were randomly allotted to 1 of 4 dietary treatments for 42-d growth assay. There were 300 chicks with 6 pens per treatment and 50 chicks per pen. The dietary treatments contained 0%, 5%, 10%, or 15% VW, respectively. All diets were formulated to be isocaloric and isonitrogenous. From 0 to 18 d of age chicks fed VW diets had higher (p<0.001) feed conversion ratio (FCR) compared with those fed the control diet. No difference was observed during grower and finisher phase (19 to 42 d). Chicks fed VW diets had lower relative weight of abdominal fat (p<0.001) but higher relative weight of gizzard (p<0.05) than those of chicks fed the control diet. Increasing VW inclusion levels increased ileal digesta viscosity (p<0.05) and intestinal villus height of chicks (p<0.001). For apparent total tract digestibility assay, there were 4 metabolic cages of 6 chicks that were fed experimental treatment diets (the same as in the growth assay) in a 10-d total excreta collection. Increasing VW inclusion levels linearly decreased (p<0.05) apparent total tract digestibility of DM and CF.
