  • Sa-Sang, one of the Korean traditional medicines, classifies people's constitution into 4 types, which are referred to as Tae-Yang-In, Tae-Eum-In, So-Yang-In and So-Eum-In. The purpose of this study was to examine demographic and dietary factors and to test any significant differences between Sa-Sang constitution and related factors. The participants were 483 college students and the data of 428 students were finally analyzed. Constitution was determined identically through both the questionnaire on Sa-Sang constitution and an inquiry by a Korean traditional medical doctor. Tae-Eum-In showed statistically significant higher BMI and higher smoking frequency. Tae-Eum-In also had significantly higher intakes in iron, potassium, sodium, vitamin B$_1$, niacin, $\beta$-carotene and vitamin E. So-Eum-In had significantly lower intakes in protein, phosphorous, and folate. From this study, we could expect to get some scientific, objective and accurate diet information on the types of constitution. Considering the fact that most chronic degenerative diseases could be developed by any lifestyle factors, it is necessary to conduct educational programs about lifestyles including the dietary habit for maintaining good health. Therefore, it will be better to continue a long-term follow-up study on any chronic degenerative disease based on the types of Sa-Sang constitution in the future. • Sixteen Harnai males were used to evaluate the influence of varying levels of fourwing saltbush hay on feed and water intakes as well as the blood serum mineral status in a completely randomized design. The animals were grouped randomly into four, with four animals in each. The four groups were randomly allotted low, medium, high and very high levels of saltbush hay supplementation in addition to wheat straw. The animals were given fresh water at free of choice. Weekly body weight was recorded for each individual animal. Blood serum was collected for mineral contents. The experiment lasted for eight weeks. The inclusion of saltbush leaves in the diet showed a non-significant effect on the total dry matter intake. There has been a significant increase in the water intake when very high levels of saltbush were included in the ration. Lower levels showed no effect on the water intake. The animals maintained their body weight from week 1 to week 8. No treatment by weeks interactions on the potassium and sodium levels were detected. However higher levels of saltbush increased significantly the potassium and sodium contents in the serum. Calcium contents were significantly(p<0.01) lowered with the inclusion of saltbush leaves in the diet. Whereas Phosphorous contents showed an increasing(p<0.05) trend with the higher levels of saltbush. No clinical or sub-clinical toxicological symptoms were observed in the sheep with the higher mineral contents.

  • Objectives : It is well known that vegetables and fruits contain minerals, including potassium, sodium and phosphorus etc. Though most oriental herbal medications are made of natural plants, western scientists suppose that they also contain certain amounts of minerals and so are injurious to kidney disease such as chronic renal disease. However, by the reason of the limitation of western medical treatment on kidney disease, many patients depend on oriental medical treatment, which includes taking oriental herbal medicine. So, in order to find out the mineral contents in oriental herbal medicine, and to establish the oriental herbal medication's safety in kidney disease, studies were performed. Methods : In this study, we analyzed 42 oriental herbs commonly used in kidney disease by the Inductively Coupled Plasma(ICP) method. Results : 1. The potassium and sodium contents of oriental herbs were 3-10 times as much as of food. 2. The mineral contents of a daily dose of oriental herbal medicine satisfied the restriction of dietary mineral in CRF, though the amount of mineral intakes by food was considered. Conclusions : The mineral contents of oriental herbal medicine are less than the limits of mineral restriction in renal failure. The yielded results, we carefully suggest that oriental herbal medicine does not induce accumulation of minerals or damage in kidney disease patients.

  • The aim of this investigation was to collect the baseline data about growth, dietary behaviors, nutrient intakes and dietary quality of children at child care centers for planning nutritional management program. The dietary intakes were measured by weighing method for intakes at child care centers and by dietary records by children\\`s mothers for intakes at home. The weight and height were measured and calculated z-scores by using standard of the same age groups. The children were 163 boys and 168 girls and the mean age were 55.6 months(12-78 months) and 56.0 months(16-78 months). respectively. The Z-score for height(0.33) and weight(0. 11) showed that the growth of children were above average. Nutrients intakes such s energy, protein, fiber, iron, sodium, potassium, vitamin A, vitamin B$_1$, vitamin C, niacin of boys from lunch and snack at day care centers were significantly higher than those of girls, and the meals at child care centers provided 20-37% of RDAs. The daily energy intakes were 1332.2kcal(83.1% RDA), protein 44. 26g(109.3% RDA), calcium 437.73mg(72.4% RDA), iron 7.24mg(72.4% RDA), vitamin A 459.6RE(113.1% RDA),vitamin B$_1$ 0.74mg(93.4% RDA), vitamin B$_2$0.79mg(79.7% RDA), niacin 7.66mg(69.9% RDA) and vitamin C 56.84mg(142.1% RDA). The nutrients which more than 50% of subjects ate less than 75% RDA were calcium, iron, niacin, and vitamin B$_2$.The average mean adequacy ratio was 0.80 and mean dietary variety score was 22.42, and those are positively correlated to % RDA of nutrient intakes. In summary, the children using child care centers consumed most nutrients below level of RDA and the nutritional management program at child care center is required to enhance the nutritional status of them. • The purpose of the present study was to evaluate the characteristics of nutrient intakes of adults aged 20-64 years in Daegu and Gyeongbuk areas in comparison with Seoul and the whole nation. Data from the 1st (1998) to 3rd (2005) Korean National Health and Nutrition Examination Survey (KNHANES) were used. Total numbers of subjects were 296-369 from Daegu and 307-447 from Gyeongbuk while 1076-1244 from Seoul and 5436-6852 from the whole nation. Average energy intakes (men; 2,386, 2,581, 2,305 Kcal, women; 1,937, 1,981, 1,804 Kcal in 1998, 2001, 2005, respectively) of the subjects from Daegu were higher than those from Gyeongbuk (men; 2309, 2267, 2487 Kcal, women; 1,851, 1,845, 1,901 Kcal) and those from Seoul in 1998 and 2001 but not different from those in 2005. Energy from carbohydrate was consistently higher in the subjects from Daegu and Gyeongbuk than in those from Seoul from 1998 to 2005, when the subjects whose carbohydrate energy was over 70% comprised 34 to 58% of the total in the two regions. In 2005, the average intakes of calcium of women and men from Daegu were 512 and 573 mg, iron, 12.8 and 16.6 mg, sodium, 4,650 and 5,951 mg, potassium, 2,585 and 3,152 mg, vitamin A, 823 and 1,038 ${\mu}$gRE, thiamin, 1.10 and 1.43 mg, riboflavin, 1.08 and 1.33 mg, and niacin. 15.4 and 19.3 mg, and vitamin C, 94 and 105 mg and these intakes were not very different from those from Gyeongbuk except higher sodium intake of the Gyeongbuk subjects. Nutrients of which the intakes were over 50% lower than EAR were calcium and riboflavin and those about 30% lower than EAR were iron in women, vitamins A and C in men and women from Daegu and Gyeongbuk. From the present results, it is concluded that high dependence on carbohydrate as energy source and low calcium intake in adults of Daegu and Gyeongbuk are serious and that low intakes of riboflavin, iron and vitamins A and C need to be improved. But changes in the intakes of total energy and other micronutrients from 1998 to 2005 were not reliable enough to judge the regional nutrition due to large variations during this period. The present study also provides the adults' nutrient intakes separated by sex and age groups in the three regions which could be readily used for setting up the nutrition policy for the adults in the regions.

  • Korean diet is high in plant foods but also high in salted vegetables. World Cancer Research Fund (WCRF) recommends consumption of fruits and vegetables excluding salted vegetables for prevention cancer. This study aimed to analyze relations between intakes of salted and non-salted vegetables and socioeconomic factors, providing a data for targeted groups in promotion of fruits and vegetables consumption. Dietary and socioeconomic status data of the 5,400 subjects over 30 years of age from the 2005 Korea National Health and Nutrition Examination Survey (KNHANESIII) were used. Dietary intake data from KNHANESIII was obtained by one day 24-hour recall method. Mean daily intakes of salted vegetables, non-salted vegetables and fruits of subjects were 151 g, 237 g, and 71 g respectively. Mean daily intake of salted vegetables was significantly higher in men than women for daily amount (173 g vs. 133 g) as well as percentage of total food intake (9.9% vs. 9.6%). Subjects living in rural area consumed more salted vegetables. Salted vegetables as percent of total food were lower in subjects with higher education levels (p < 0.001). Intakes of non-salted vegetables were significantly affected by age and gender. Intake levels of fruit were significantly higher in younger groups, in females, and subjects with higher income and education levels (p < 0.05). Average intake of fruits and non-salted vegetables was 307 g, lower than WCRF recommended level of 400 g for personal guideline. Intake of salted vegetables was positively correlated with sodium intake (Pearson's correlation coefficient, r = 0.43) but less so with potassium (r = 0.16) and other micronutrients intake (r < 0.1). On the other hand, non-salted vegetables had higher correlations with potassium (r = 0.45), carotene (r = 0.38), vitamin A (r = 0.37), iron (r = 0.34) and low for sodium (r = 0.13). Fruits intake was highly correlated with vitamin C intake (r = 0.46). Proportion of subjects satisfying WCRF personal guideline of fruits and non-salted vegetables was 25.7%. Results of this study indicate that intake of salted vegetable is considerably high among Koreans, and it is highly correlated with sodium intake and less so with other micronutrients.
