Economic Valuation of the Creation Project of Snow Crab Spawning and Habitat Ground (대게 산란·서식장 조성사업의 경제성 평가: 울진·영덕군의 사례를 중심으로)

  • This study is to evaluate economic effect of the creation project of snow crab, Chionoecetes opilio, spawning and habitat ground in Uljin and Youngdeok county. The main results of this study are summarized as follows: first, 14,400 million won was invested in the creation project cost of Chionoecetes opilio spawning and habitat ground of Uljin and Youngdeok County from 2015 to 2020. Second, the creation project of Chionoecetes opilio spawning and habitat ground directly provides fishing benefits, festival benefits, research and development benefits and employment benefits. Third, on the basis of above benefits, the creation project of Chionoecetes opilio spawning and habitat ground has net present value of 29,900.53 million won, internal rate of return 16.9%, and benefit-cost of 2.91 under a 4.5% social discount rate. Also, the creation project creates 195 jobs. This indicates that the creation project of Chionoecetes opilio spawning and habitat ground not only contributes to the increase in the income of coastal fishery and fishing villages but also to the job making. The result of this study provides useful information to policy makers or project managers as it shows that the project to create spawning and habitat ground should be carried out in consideration of the resource and biological characteristics of individual fish and that economic assessment logic should also be developed based on this. Also, it proves that the project to create a snow crab spawning and habitat ground is a national and local infrastructure project that increases the actual fishing income in the region. At the same time, it maintains the reproducibility function of most fish species, along with enhancing the people's benefits such as fishing village tourism and marine product consumption. Moreover, it provides useful information on budgeting for the continuous development of snow crab spawning and habitat ground in the mid to long-term.

A bioeconomic analysis on the effectiveness of fisheries management measures for red snow crab Chionoecetes japonicus (붉은대게 자원관리를 위한 어업관리수단별 생물경제적 효과분석)

  • In this study, internationally widely utilized bioeconomic models were used to make a comparison and analyze the effectiveness of red snow crab fisheries management measures. As a specific effect analysis, biological and economic effects of both total allowable catch (TAC) and effort reduction management measures were analyzed simultaneously. Model results showed that the red snow crab biomass would be decreased from 106,000 tons to 73,076 tons after ten years when the TAC is set to and maintained at the current level of 26,000 tons. The amount of biomass would be increased to 125,316 tons when the level of TAC is set to 22,000 tons. In cases of reduced fishing efforts, a 30% decrease from the current level would result in greater biomass and NPV would be also estimated at the highest level. In addition, a sensitivity analysis by market price was conducted to analyze the minimum TAC level of the red snow crab offshore pot fishery. Results showed that the minimum TAC level would be 8,210 tons when the market price increased by 30% and it would be also 15,247 tons when the market price decreased by 30%. Furthermore, results of the sensitivity analysis by fishing cost showed that the minimum TAC level was analyzed to be 13,857 tons when the fishing cost increased by 30% from the current level.

Changes in Quality of Fried Rice with Red Snow Crab Meat Depending on the Storage Period and Temperature (저장기간 및 저장온도에 따른 붉은대게풍미 볶음밥의 품질변화)

  • The red snow crab lives at a depth 200-2,000 m in the east coast. It has a smooth taste with a rich texture. However mostly red snow crab are only utilized materials. For seafood development, research is needed on using red snow crab in various products. In this study, quality changes in fried rice prepared with red snow crab meat, red snow crab emulsion sauce and red snow crab effluent were investigated. Physicochemical, microbiological and sensory characteristics were determined during storage at -20, 4 and $25^{\circ}C$ for 5 weeks to assess changes in the quality of the fried rice. The pH and acidity values did not show any significant differences at $-20^{\circ}C$. The VBN and TBA values of fried rice stored at 4 and $25^{\circ}C$ were significantly higher than those of fried rice stored at $-20^{\circ}C$ during the same storage period. The viable cell count of the fried rice stored at $-20^{\circ}C$ changed little during the storage period. During storage at $25^{\circ}C$, the overall quality was initially 8.0, but rapidly decreased to 1.0 after 5 weeks. In conclusion, the best storage temperature for both quality and safety was $-20^{\circ}C$. The storage condition for instant rice containing red snow crab affects the quality and we confirmed the applicability of using materials from red snow crab.

Efficiency of the Korean Bottom Survey Trawl for Snow Crab Chionoecetes opilio

  • The Korean bottom trawl survey was conducted using a trawl designed by the National Fisheries Research and Development Institute (NFRDI). The capture efficiency and size selectivity of this trawl for snow crab Chionoecetes opilio was investigated by experimental tows. An auxiliary sampling net (underbag) was attached beneath the trawl net to capture crabs escaping under the trawl footrope. Experimental tows were made by the same vessel speed (3.4 knots) as in the bottom trawl survey, but toing time was shortened from the standard 30 min to 10 min to reduce possible trawl distortion due to the high catch rate of mud and debris in the underbag. In averaged over 17 tows conducted between 110-383 m depth, trawl efficiency of both males and females combined increased from about 10% at 20 mm (carapace width) to about 70% at 100 mm, with a width of 50% capture equal to 78 mm.

Morphology of Snow Crab, Chionoecetes opilio Larvae and Larval Growth at Different Water Temperatures (대게, Chionoecetes opilio 유생의 형태 및 수온별 성장)

  • At 5$^{\circ}C$ incubation of the brooded eggs of the snow crab, Chionoecetes opilio lasted for 297 days; freshly hatched prezoea molted to become the first zoea in one hour. Length (from the tip of the rostral spines to the tip of the dorsal spines) of the first and second zoeae measured 4.8 and 6.4mm, respectively. Experimental rearing of the larvae at 5, 10, 15 and 2$0^{\circ}C$ indicated that the upper limit of thermal tolerance is 15$^{\circ}C$, as all the reared larvae succumbed at 2$0^{\circ}C$. Intermolt period from the first the first zoea to the second was 57, 32 and 23 days at 5, 10 and 15$^{\circ}C$, respectively and that of the second zoea was 52, 29 and 90 days, respectively. Largest number of larvae survived at 1$0^{\circ}C$.

Quantitative Analysis of Alkylpyrazines in Snow Crab Cooker Effluents

  • Alkylpyrazines in snow crab cooker effluent(SCCE) and effluent concentrate(EC) were quantitatively analyzed and compared by simultaneous steam distillation-solvent extraction/gas chromatography/mass spectrometry(SDE/GC/MS). A total of 11 pyrazines were identified in both SCCE and EC. Amounts of tetramethylpyrazine, 2,5-dimethylpyrazine, trimethylpyrazine, and 2,6-dimethylpyrazine were 23.0, 21.1, 13.8, and 13.3 times higher, respectively, in EC than those in SCCE. The total amount of pyrzines in EC (1664.0${\pm}$171.1ng/g) was 8.1 times higher than that in SCCE(204.5${\pm}$32.2). The compounds, ethylpyrazine and 2-ethyl-3,6-dimethylpyrazine, were only detected in EC.

Estimation of the distribution density of snow crab, Chionoecetes opilio using a deep-sea underwater camera system attached on a towing sledge (예인식 심해용 비디오카메라를 이용한 대게의 서식밀도 추정)

  • This study shows that the distribution density of snow crab, Chionoecetes opilio, was estimated using an underwater video monitoring system attached on the towing sledge. The field experiments were carried out at the coastal waters around Chuksan, East Sea, where ranged from 110 to 130m depth during September and October 2007. The sledge was towed for 40 minutes and the towing speed was controlled between 1.5 to 1.7 knot and each research areas were calculated to multiply towed distance by the detection width of the video monitoring system(1.2m), and then, distribution density of snow crab in each observations were estimated as a counted number of crab per 1,000$m^2$. The result shows that their survey, taken between two months, reflected similar results during survey period, and the maximum and mean distribution densities in September estimated to be 77.0(number/1,000$m^2$) and 19.9, respectively, and those of October were 36.0 and 21.8, respectively.

Changes in Volatile Flavor Compounds in Red Snow Crab Chionoecetes japonicus Cooker Effluent during Concentration (붉은 대게 가공부산물 농축중의 휘발성 향기성분 변화)

  • To develop natural crab-like flavorants from red snow crab Chionoecetes japonicus cooker effluent (RSCCE), the flavor was analyzed during the concentration of RSCCE up to $40^{\circ}Brix$. Using solid phase microextraction (SPME)/gas chromatography (GC)/mass selective detection (MSD), 30 volatile flavor compounds were detected in four RSCCE samples (10, 20, 30, and $40^{\circ}Brix$). These comprised 12 aromatic compounds, 5 N-containing compounds, 2 5-containing compounds, 2 alcohols, 2 aldehydes, and 7 miscellaneous compounds. The amounts of all volatiles except alcohols and aldehydes increased significantly with the concentration (p<0.05). Of the volatiles detected, the most abundant was a dimethyl trisulfide with an odor like onion/cooked cabbage. Of the N-containing compounds (nutty, roasted peanut-like odor), 2-ethyl-5-methylpyrazine was the most abundant, followed by 2,5-dimethylpyrazine and 2-methyl-5-isopropylpyrazine in that order (p<0.05). The N- and S-containing compounds with characteristic odors detected in this experiment are thought to play a positive role in RSCCE during concentration.

The Quality Characteristics and Processing of Fish Paste Containing Red Snow Crab Chionoecetes japonicus Leg-Meat Powder (홍게(Chionoecetes japonicus) 다릿살 분말을 첨가한 어묵의 제조 및 품질특성)

  • This study investigated the physicochemical and sensory characteristics of fish paste containing red snow crab Chionoecetes japonicus leg-meat powder (RMP) in 0, 3, 6, 9, and 12% concentrations. The moisture contents of fish paste with RMP ranged from 56.7 to 60.2% and the pH ranged from 7.0 to 7.7. The L values decreased as the RMP concentration increased, and a and b increased. The folding test for all of the fish paste samples scored AA, which indicates good flexibility. The hardness, springiness, gumminess, and cohesiveness increased with the RMP concentration. In the sensory evaluation, the fish paste prepared with 6% RMP was the most preferred. These results suggest that RMP can be added to fish paste to achieve high quality.

Size selectivity of gill net for male snow crab, Chionoecetes opilio (자망에 대한 대게 수컷의 망목 선택성)

  • A series of fishing experiments was carried out in the waters off the east coast of Korea from January, 2002 to March, 2003, using gill nets of different mesh sizes (m = 180, 210, 240, 270, and 300 ㎜) to determine the size selectivity of gill net for male snow crab Chionoecetes opilio. The maximum carapace length (RL) of each male snow crab caught in the fishing experiment was measured. The master curve of mesh selectivity was estimated by applying the extended Kitahara's method. Two kinds of functional models, quadratic function and cubic function were used to express logarithmic selectivity curve and were fitted to the data using the method of least squares. The obtained results were summarized as follows; 1. The cubic function of asymmetry was chosen to determine the selectivity curve of gill net for male snow crab from the model deviance comparison. 2. The result of size selectivity showed that the catch number of small male crab was getting decreased according to the increase of mesh size. 3. The optimum value (RL/m) was 0.549 and the RL/m was estimated to be 0.281, 0.296, and 0.356 when the retention probability were 0.2, 0.25 and 0.5, respectively.
