Determination of Shelf Life for Butter and Cheese Products in Actual and Accelerated Conditions

  • The aim of this study was to estimate the shelf life of butter and cheese products, with shelf life being a guide used to determine the storage period of food before deterioration. Butter and cheese samples stored at $10^{\circ}C$ and $15^{\circ}C$ had a shelf life of 221 d, while those stored at $25^{\circ}C$ and $35^{\circ}C$ had a shelf life of 109 d. Quality changes, including total cell count, coliform counts, Listeria monocytogenes counts, acid value, moisture content, pH, acidity and overall sensory evaluation, were monitored. In order to pass the overall sensory evaluation, a quality score of 5 points on a 9-point scale was required. For other quality criteria, legal quality limits were established based on the "Process Criteria and Ingredient Standard of Livestock Products" by the Animal, Plant and Fisheries Quarantine and Inspection Agency (Republic of Korea). The nonlegal quality limit was estimated by regression analysis between non-quality criteria (y) and overall sensory evaluation (x). The shelf life was estimated based on the number of days that the product passed the quality limit of the quality criteria. The shelf life of samples stored at $10^{\circ}C$, $15^{\circ}C$, $25^{\circ}C$ and $35^{\circ}C$ was 21.94, 17.18, 6.10 and 0.58 mon, respectively, for butter and 10.81, 9.47, 4.64 and 0.20 mon, respectively, for cheese.

Physicochemical Properties of Kefir Manufactured by a Two-Step Fermentation

  • The objective of this study was to assess the physicochemical and sensory changes of a kefir manufactured by a two-step fermentation (MTY, $1^{st}$ step: $37^{\circ}C$ for 9 h; $2^{nd}$ step: $24^{\circ}C$ for 15 h) and compare it with kefirs produced by two conventional methods (GTY, fermentation at $37^{\circ}C$ for 24 h; KEY, $22^{\circ}C$ for 24 h). Rapid changes in pH and titratable acidity (TA) were observed in samples from all three manufacturing methods during fermentation process and storage period. Lactic acid bacteria (LAB) counts of MTY increased gradually up to 12 h of fermentation, reaching 9.28 Log CFU/mL, with maximum value observed in this experiment of 9.48 Log CFU/mL. The LAB counts of all samples decreased significantly during storage. The highest viscosity was observed for MTY (1750-1771 cPs), compared with the lowest viscosity observed for KEY (1250-1277 cPs). The viscosity of all samples increased slightly during storage (1250-1805 cPs, p<0.05), as well as carbon dioxide content (0.01-1.36%, p<0.05), except for GTY. The most significant increase in alcohol concentration during storage period was seen in MTY from 0.01% to 1.36% (p<0.05). MTY scored significantly higher in most items of the sensory analysis, indicating that the product manufactured by the two-step fermentation method is more acceptable compared with conventionally produced kefirs.

  • In the society of the 21\ulcorner century under multiphase media conditions, the rapidly glowing electronic media will replace the conventional paper media in a variety of areas. However, if human being still has an affinity for paper media and an instinct for hardcopy from electronic-based text or image, the new market will be created for the paper industry. To what extent the consumer choses paper media for output will depend upon the availability of functions of paper media appealing to human senses; i.e., "sensory functions of paper". As a whole, on-demand type personal as well as business communications will increase in the next century and this trend will lead certainly to a rapidly expanding "contents hardcopy market". The technological progress of the paper industry in the 21\ulcorner century depends upon the market needs for higher products quality and higher efficiency of manufacturing process as well as an endeavour to overcome constraints from forest resource, energy, and environmental issues. Under the conditions with above constraints, the paper media will be polarized into two categories; (1)paper for higher image reproduction capability for original image or text and (2)paper for lower reproduction but with higher appeals for human senses. To cope with these trends, psycho-physical analysis and a sensory engineering approach for developing new paper media is vitally required. Also newly emerged roles of paper physics in the multimedia age is pointed out associated with sensory functions of paper that are not well-understood so far.

재래식 찹쌀고추장 및 보리고추장의 적정 숙성기간 설정을 위한 연구 (Studies on Establishment of Optimal Aging Time of Korean traditional Kochujang)

  • 재래식 찹쌀고추장 및 보리고추장의 산업화를 유도하기 위하여 우리나라의 주요 고추장인 찹쌀고추장과 보리고추장을 순창 및 괴산에서 각각 제조하였다. 180일동안 숙성시키면서 숙성 중의 이화학적 성분조사와 아울러 관능검사 등의 고추장의 품질 특성을 규명하여 재래식 고추장의 적정 숙성기간을 설정하고자 하였다. 숙성 180일동안 찹쌀고추장과 보리고추장의 이화학적 성분 변화는 비슷한 경향을 나타내고 있었으나 관능적 품위에서는 찹쌀고추장이 보리고추장보다 색, 향, 맛, 전체적인 기호도에서 우수한 것으로 나타났다. 찹쌀고추장 및 보리고추장의 이화학적 성분과 관능검사를 실시한 결과를 고려하였을 때 두 고추장의 적정 숙성기간은 150일로 나타났다.

  • Objectives : To further enhance the business value of domestic Schisandrae Fructus, new products composed of modified Gyeongok-go were developed. Their preferences and antioxidant behaviors were compared under different manufacturing processes. Methods : Sensory evaluation was carried out on a 7-point scale by a taste panel. Additionally, the antioxidant activities were investigated in vitro against ABTS[2,2'-azinobis-(3-ethylbenzothiazoline-6-sulfonic acid)] and DPPH(2,2-diphenyl-1-picrylhydrazyl). Results : The differences among each sample were not statistically significant in sensory evaluation. In contrast, the antioxidant properties of each sample can have up to twice effect distinction at a final concentration of 2.5 mg/ml. Conclusions : Manufacturing methods, while having smaller effect on sensory evaluation, greatly affected the antioxidant properties. As a consequence, the optimum manufacture conditions need to be established using different manufacture conditions and activity search methods.

응고제가 우유두부의 물성 및 관능적 특성에 미치는 영향 (Effect of Various Coagulants on the Texture and the Sensory Properties of Milk Curd)

  • Different types of coagulant and characteristics of its concentration added in the process of making milk curd were compared in this study. The pH of whey decreased when the amount of coagulant increased. The turbidity of whey was decreased when 5% of acetic acid and lemon juice were put into as coagulants. The texture of milk curd made with cow's milk and skim milk was measured the highest when acetic acid and lemon juice were added at 3, 5% of their concentration. The fracturability of milk curd made only with cow's milk decreased as the concentration of each coagulant increased. The cohesiveness was decreased as concentration of coagulant increased. The springiness was slightly changed depending on its coagulant but didn't show much of difference. The gummminess of milk curd made with cow's milk was increased when 3, 5% of coagulant was added. The result of sensory evaluation of milk curd showed that preference of milk curd wasn't depending on types of milk nor its coagulant. Also, flavor preference showed better when lemon juice was added. Preference in texture of milk curd was the highest made with cow's milk and skim milk. Preference in taste was high when 10% of lemon juice was added to skim milk and preference in its appearance showed higher when the alum was added as a coagulant to both cow's milk and skim milk than other coagulants.

단호박을 첨가한 식빵의 품질 및 기호도 특성 (Quality Characteristics of Bread Supplemented with Sweet Pumpkin)

  • This study investigated the effects of freeze-dried sweet pumpkin powder on the baking of bread. Freeze-dried sweet pumpkin powder (0, 3, 6, 9, or 12%) was supplemented during the baking process and the bread volume, weight, specific volume, baking loss rate, texture, and sensory characteristics were measured. The results were following. Freeze-dried sweet pumpkin contained 4.88% water, 4.40% protein, and 4.02% ash. The L-values (brightness) of the bread were significantly lower as increasing amounts of sweet pumpkin powder were added (p<0.001). However, higher values for the a-value (redness) and b-value (yellowness) were observed (p<0.01 for both values). The volume and baking loss rate decreased when the sweet pumpkin powder was added. In contrast, the weight significantly increased as sweet pumpkin powder was added (p<0.01) and the intensity of dark brown color increased. The outer side of the bread was balanced overall, but the outer skin of the bread appeared darker as the amount of sweet pumpkin powder increased. The overall acceptability, hardness (p<0.001), elasticity (p<0.01), cohesiveness (p<0.01), gumminess (p<0.01), and brittleness (p<0.001) increased as sweet pumpkin powder increased as well. However, when sweet pumpkin powder was added at 12%, the overall acceptability value was fairly low. Sensory parameters, such as taste (p<0.001), color (p<0.001), and flavor (p<0.05) were observed when sweet pumpkin powder was used at 3% and these results were lower than the control. Overall acceptability (p<0.001) was best when sweet pumpkin powder was used at 9% and the texture was best when sweet pumpkin powder was used at 6%.

WPC 분말이 첨가된 설기떡의 품질 특성 (Quality Characteristics of Seolgiddeok added with Whey Protein Concentrate (WPC) Powder)

  • The effects of substituting whey protein concentrate (WPC) powder for rice flour in the preparation of seolgiddeok were determined by objective and subjective tests. Milk whey is drained from milk curd as a by-product of the cheese manufactureing process. Whey protein is known as a good nutritional source and is a functional material for many processed foods. WPC contains more than 80% whey protein. The moisture content decreased gradually during storage and the decrease in moisture was less in the control than in the WPC powder substituted groups. The color lightness (L) decreased significantly as the amount of WPC powder increased, wherease redness (a) and yellowness (b) both increased. Texture analyses revealed that the hardness, chewiness, gumminess and adhesiveness of seolgiddeok tended to increase in proportion to the amount of WPC powder in the formula. Seolgiddeok gelatinization was investigated by amylographing. Initial pasting temperature, peak viscosity, hot pasting viscosity and breakdown were low in seolgiddeok prepared with WPC powder substituted for rice flour. Setback had the lowest value in the control. Sensory evaluations revealed that, seolgiddeok prepared with 3% WPC powder had the highest overall acceptability score. These results indicated that WPC seolgiddeok with 3% WPC powder has the best quality.

Evaluation of Deodorization Capabilities, Morphologies, and Thermal Stabilities of Baking Soda, Charcoal, Coffee, and Green Tea for Kimchi Packaging Application

  • We evaluated the applicability of baking soda, charco'al, coffee, and green tea as a natural deodorant in Kimchi packaging. Moreover, to evaluate the potential usage of these deodorants in packaging materials and confirm their applicability in high-temperature melt-extrusion processing, the thermal stabilities of the deodorants were investigated, and heat-treated deodorants were evaluated in terms of the deodorizing function compared with non-treated deodorants. Aroma patterns were decreased after deodorizing treatment with all-natural deodorants. Dimethyl disulfide, methyl trisulfide, and diallyl disulfide, the most significant odorous Volatile organic compounds (VOCs) of Kimchi, decreased after treatment with the deodorants. In particular, baking soda and charcoal showed the highest efficiency in removing odorous compounds and VOCs from Kimchi, even after high-temperature processing. The acetic acid removal rates for both baking soda and charcoal were 99.9±0.0%. The heating process increases the deodorizing effects of baking soda. Sensory evaluation results showed that there is a significant increase (p < 0.05) in the overall preference for Kimchi samples packaged with charcoal and baking soda. This study provides useful information for the deodorization effects of natural deodorants for Kimchi smell and their applicability for packaging materials.

생강가루 첨가 찹쌀머핀의 최적화 및 품질특성 (Characteristics and Optimization of Processed Sweet Rice Muffin using Ginger Powder)

  • The purpose of this study was to develop Zingiber officinale Roscoe powder(ginger powder) sweet rice muffins. The process included substituting sweet rice flour for cake flour and adding ginger powder. The mixing conditions for the ginger powder sweet rice muffins were a control and three levels of ginger powder (A), whole egg (B), and soybean oil (C) using central composite design, and were optimized by response surface methodology. The optimization was analyzed with regard to physical, textural, and sensory properties. Among the sensory properties, variables that appeared to show significant values, such as appearance, flavor, softness and overall quality were used to identify optimums. The numerical and graphical methods used in this study determined that the optimum formulation for ginger powder sweet rice muffins was 8.39 g of ginger powder, 215.37 g of whole egg, and 54.40 g of soybean oil. Ginger increases appetite, enhances metabolism and reduces the speed of aging. These health advantages of ginger provide evidences that ginger powder sweet rice muffins are a good healthy snack, particularly for the elderly.
