  • 본 연구에서는 톳 양식에서 pH 및 염분농도의 조절에 의한, 환경친화적인 해적생물 구제 방법을 개발하고자 하였다. 이를 위하여 톳의 내성범위를 구하고, 친환경적인 해적생물 구제법을 확립하고자 하였다. 톳에는 생리적 영향을 미치지 않는 친환경적인 해적동물 구제법으로서, pH 4 이하 조건과 pH 10 이상의 조건, 염분농도 10 psu 이하의 조건 및 44 psu 조건에서 효과가 있는 것으로 나타났다.

한국 남서해안 진도군 금갑의 해조상 및 군집구조의 계절 변화 (Seasonal Variability of Marine Algal Flora and Community Structure at Gumgap, Jindo, on the Southwestern Coast of Korea)

  • Seasonal variation in marine macroalgal community structure was examined at the intertidal zones of Geumgap, Jindo, Korea, from October 2013 to August 2014. In total, 56 macroalgal species were identified, including 9 green, 12 brown, and 35 red algae. Annual seaweed biomass was 548.96 g wet wt. /$m^2$ with seasonal range between 371.08 g wet wt. /$m^2$ at summer and 32.91 g wet wt. /$m^2$ at winter. The dominant seaweed in terms of biomass was Sargassum thunbergii and subdominant species were Gelidium elegans, Sargassum fusiforme, and Ishige okamurae. The vertical distribution of seaweeds from the upper to lower intertidal zones was Gloiopeltis spp., Ulva spp.- S. thunbergii, S. fusiforme, Ishige okamurae - S. thunbergii, S. fusiforme, G. elegans. Annual seaweed coverage, richness index (R), evenness index (J'), and diversity index (H') values were 27.95%, 6.10, 0.38, and 1.38, respectively. Coarsely branched form was the most dominant functional group in terms of species number and biomass among benthic macroalgal species.

Effects of Dietary Fermented Seaweed and Seaweed Fusiforme on Growth Performance, Carcass Parameters and Immunoglobulin Concentration in Broiler Chicks

  • This study was conducted to investigate the effects of brown seaweed (Undaria pinnatifida) by-product and seaweed fusiforme (Hizikia fusiformis) by-product supplementation on growth performance and blood profiles including serum immunoglobulin (Ig) in broilers. Fermentation of seaweeds was conducted by Bacillus subtilis and Aspergillus oryzae. In a 5-wk feeding trial, 750 one-d-old broiler chicks were divided into 5 groups, and were assigned to the control diet or experimental diets including control+0.5% brown seaweed (BS) by-product, control+0.5% seaweed fusiforme (SF) by-product, control+0.5% fermented brown seaweed (FBS) by-product, and control+0.5% fermented seaweed fusiforme (FSF) by-product. As a consequence, body weight gain (BWG) and gain:feed of seaweed by-product groups were clearly higher, when compared to those of control diet group from d 18 to 35 and the entire experimental period (p<0.05). In mortality rate, seaweed by-product groups were significantly lower when compared to control diet group during entire experimental period (p<0.05). However, Feed Intake of experimental diets group was not different from that of the control group during the entire experimental period. Whereas, Feed Intake of fermented seaweed by-product groups was lower than that of non-fermented seaweed groups (p<0.05). Total organ weights, lipids, and glutamic oxalacetic transaminase (GOT) of all treatment groups were not different from those of control group. However, glutamic pyruvate transaminase (GPT) of all treatment groups was higher than that of control group at d 17 (p<0.05). In case of serum Igs concentration, the concentration of IgA antibody in BS, SF, FSF treatment groups was significantly higher than in control group at d 35 (p<0.01). IgA concentration in FBS supplementation groups was negligibly decreased when compared to the control group. IgM concentration in the serums of all treatment groups was significantly higher than in control group (p<0.05) and in fermented seaweed by-product groups were much higher than in non-fermented seaweed groups (p<0.05). On the other hand, IgG concentrations in all treatment groups were lower than in control group (p<0.05). Taken together, our results suggest that by-product dietary supplementation of BS, SF, FBS, and FSF in poultry may provide positive effects of growth performance and immune response.

  • We investigated the quality characteristics of rice noodles supplemented with turmeric, purple sweet potato, or seaweed (Hizikia fusiforme). RVA (Rapid Visco Analyser), color, water activity, texture, and cooking properties were tested. Initial gelatinization temperature of noodles containing turmeric were the highest. Peak viscosity, holding strength, break down, final viscosity, and set back of noodles containing purple sweet potato were highest, indicating that the gelatinization state was more unstable and retrogradation would occur faster. The L value of the seaweed noodle was the lowest, while the a and b value of the turmeric noodles were $7.3{\pm}0.3$ and $40.2{\pm}1.3$ respectively, higher values than turmeric and seaweed noodles. Water activity of the seaweed noodle was 0.665, higher than turmeric and purple sweet potato noodles. Cooking properties (including weight, volume, and water absorption) and turbidity of seaweed noodles showed the highest growth rate. In terms of texture, the hardness was highest in purple sweet potato noodles, and the cohesiveness and gumminess was highest in seaweed noodles. The quality characteristics of rice noodles supplemented with turmeric, purple sweet potato, or seaweed showed that seaweed noodles were stable in gelatinization and cooking properties.

해조소금의 성분 특성에 관한 연구 (Characteristics of Seaweed Salts Prepared with Various Seaweeds)

  • 해조류와 소금물을 이용하여 해조소금을 제조하고 이화학적 특성과 무기성분을 비교하였다. 해조소금 제조에 사용한 해조류의 회분함량은 미역이 22.78%로 많았고 김이 9.81%로 적었으나 무기성분으로 미역은 Na함량이 많은 반면 다시마와 톳은 K와 Ca가 많았다. 건조만 한 소금을 회화시켜 물불용해성분을 제거하면 소금의 순도가 증가하여 색이 밝아졌으며 pH와 ORP가 저하하였고, K와 Ca함량은 증가하나 Mg가 감소하였다. 해조소금의 수율은 미역소금에서 높았고 ORP는 다시마와 톳소금에서 낮았으며, K와 Ca함량은 미역소금에 비하여 다시마와 톳소금이 현저히 많았다. 해조소금 제조시 소금물의 농도가 증가하면 소금의 수율과 순도는 증가하나 pH는 저하하였고, ORP와 Ca, Mg함량이 증가하였다. 해조소금을 SEM에 의해 표면관찰 한 바 소금의 외형이 작고 특징적인 결정구조를 보였다.

  • We investigated noodles supplemented with turmeric, purple sweet potato, or seaweed (Hizikia fusiforme) for their functional properties, including total phenol, flavonoid contents, electron donating abilities, and nitrite scavenging abilities. The percentage of total phenolic compounds in turmeric, purple sweet potato, and seaweed noodles were 2.40, 2.47, and 1.27%, respectively, whereas the percentage of total flavonoid contents were 0.55, 0.92, 0.74%, respectively. Results showed that purple sweet potato noodles had the highest amount of phenolic compounds and flavonoids compared to the other types of noodles. The electron donating abilities of the turmeric, purple sweet potato, and seaweed noodles were 4.72, 4.11, and 3.11 at 1,000 ppm respectively. The nitrite scavenging abilities of the turmeric, purple sweet potato, and seaweed noodles were 75.93, 79.81, and 73.51% at pH 1.2, respectively. Purple sweet potato noodles had the highest nitrite scavenging abilities, with an effect better than BHT and ascorbic acid. The ferrous ion chelating effect of turmeric, purple sweet potato, and seaweed noodles were 12.17, 13.63, and 42.12%. All of the experimental results showed good anti-oxidative activity; thus rice noodles supplemented with turmeric, purple sweet potato, or seaweed, have good functional effects for human beings.

한국 남서해안 관매도와 영산도의 해조상 및 군집구조 (Marine Algal Flora and Community Structure at Gwanmaedo and Yeongsando, Korea)

  • Seasonal variations in seaweed communities were examined at Gwanmaedo and Yeongsando, Korea, from May 2014 to February 2015. Eighty-nine species were identified, including 11 green, 20 brown and 58 red algae. Seventy-three and 74 species were identified at Gwanmaedo and at Yeongsando, respectively. Sargassum thunbergii and Myelophycus simplex were the dominant species, comprising 60.89 and 39.50% of total biomass, respectively, and S. fusiforme was subdominant at the two sites. Of six functional seaweed forms, the coarsely-branched form was the most dominant, forming about 43% of the species number at Gwanmaedo and Yeongsando. Seasonal seaweed biomasses ranged between 53.10 and 172.85 g/m2 (average 93.57 g dry wt./m2) and between 83.11 and 176.20 g (138.21 g/m2) at Gwanmaedo and Yeongsando, respectively. The vertical distribution from the high to low intertidal zone was S. thunbergii and Gloiopeltis furcata; M. simplex and S. thunbergii; and S. fusiforme at Gwanmaedo. Seaweed zonation was distinct at Yeongsando, with S. thunbergii and Gelidiophycus freshwateri; M. simplex and S. thunbergii; and S. thunbergii and S. fusiforme. Seaweed biomass, evenness index (J'), and diversity index (H') values were greater at Yeongsando (138.21 g/m2, 0.51, 2.18 respectively) than at Gwanmaedo (93.57 g/m2, 0.48, 2.04), indicating that the seaweed community at Yeongsando is more stable than that at Gwanmaedo.

미생물을 이용한 해조류의 가수분해 및 이용 II. 돌가사리, 톳 및 가시파래를 가수분해시키는 미생물군의 탐색 (Studies on the Hydrolysis of Seaweed using Microorganisms and Its Application II. Screening of Microfloras Involved in Hydrolysis of Seaweed Tenella, Seaweed Fusiforme and Green Laver)

  • 해조류 조직을 가수분해시켜 기호성 및 응용성이 높은 액상원료로 가공하는 기술 개발의 일환으로 우선 자연계에 존재하는 미생물로서 산, 논, 밭, 해변 및 어판장에서 약 200종류의 미생물군 시료를 수집하여 해조의 조직파괴가 인정되는 8군의 미생물 시료를 사용하여 돌가사리,톳 및 가시파래의 조직파괴와 가수분해 가능성에 대하여 검토하고,추출액 중의 전당과 환원당을 측정하여 추출율과 분해율을 비교하였다. 그 결과 돌가사리, 톳 및 가시파래의 전당 추출량과 추출율은 각각 담수에서 채취한 미생물군 시료(No.27번), 부식한 식물에서 채취한 미생물군 시료(No. 8번) 및 담수에서 채취한 미생물군 시료가 가장 높은 값을 나타내었고, 환원당의 추출량과 추출율에서는 각각 8번, 8번 및 27번 미생물군 시료가 가장 높은 값을 나타내었다. 분해율은 전당의 추출율도 상당히 높으면서 환원당의 추출이 가장 높았던 실험구들이 각각의 해조에서 가장 높은 분해율을 나타내는 결과를 얻었다. 따라서 이들 자연계에서 채취한 미생물군 시료중에 해조 조체를 파괴시키고, 또한 해조에 다량 함유되어 있는 당을 비롯한 유용성분의 추출을 용이하게 하며, 해조를 가수분해시키는 효소를 가진 미생물이 존재할 것으로 판단되었으며, 또한 이들 미생물군에서 단일 또는 복합 해조가수분해 미생물 및 효소의 생산이 가능할 것으로 기대되었다.

해조류 5종의 아미노산 조성 및 계통 다양성 비교 분석 (Comparative Analysis of the Amino Acid Composition and Phylogenetic Diversity of Five Seaweed Species)

  • 해조류는 풍부한 필수 영양소 공급으로 인해 귀중한 해양 자원으로 여겨지며 특히 단백질과 아미노산이 풍부하게 함유되어 있다. 한국에서는 500종 이상의 해조류가 서식하며 그 중 50종 이상이 식품용으로 이용되어 일상 식단의 중심 역할을 한다. 본 연구는 한국에서 가장 흔히 섭취되는 해조류 5종(매생이, 톳, 김, 다시마, 미역; Capsosiphon fulvescens, Hizikia fusiforme, Porphyra yezoensis, Saccharina japonica, Undaria pinnatifida)의 단백질 구성 아미노산을 분석하였다. 고성능 액체 크로마토그래피 분석 결과, 아스파르트산, 글루탐산, 알라닌, 류신이 가장 풍부한 아미노산 성분임을 알 수 있었다. 주성분 분석에서는 이 다섯 종류의 해조류가 아미노산 구성에 따라 세 개의 군집으로 분류될 수 있었고, 이는 부분적으로 계통 분류 결과와 일치하였다. 다양한 아미노산 중에서도 글루탐산, 아스파르트산, 알라닌이 구분을 주도하는 주요 아미노산이였다. 특히, 가까운 계통적 근접성을 보이는 Undaria pinnatifida와 Capsosiphon fulvescens는 뚜렷하게 유사한 아미노산 프로필을 나타내었다. 그에 비해 Porphyra yezoensis와 Saccharina japonica는 계통적 관계를 공유하더라도 다른 아미노산 구성을 보였다. Hizikia fusiforme는 두 분석 모두에서 독특한 군집으로 나타났다.

한국 남서해안 흑산도와 홍도의 조간대 해조류 생물량과 군집구조의 계절적 변동 (Seasonal Variation in Biomass and Community Structure of Intertidal Seaweeds at Heuksando and Hongdo, Southwestern Coast of Korea)

  • Seasonal variation in marine macroalgal community structure was examined at the intertidal zones of Heuksando and Hongdo, Shinan, Korea, from July 2008 to May 2009. In total, 86 macroalgal species were identified, including 12 green, 19 brown, and 55 red algae; 67 species at Heuksando and 70 species at Hongdo, were observed. Annual seaweed biomass was 252.44 g dry $wt/m^2$ at Heuksando and 217.67 g dry $wt/m^2$ at Hongdo. The dominant seaweed in importance value (IV > 15) differed between the sites: Sargassum thunbergii at Heuksando and Corallina pilulifera at Hongdo. The vertical distribution pattern of seaweeds from the upper to lower intertidal zones at Heuksando was Gloiopeltis spp., Ulva spp. - S. thunbergii, S. fusiforme, Hildenbrandia rubra - S. thunbergii, C. pilulifera. On the rocky shore of Hongdo, seaweed zonation was distinct: Porphyra yezoensis, Gloiopeltis spp., Ulva spp. - C. pilulifera, S. fusiforme, Myelophycus simplex - Chondrus ocellatus, C. pilulifera, and Carpopeltis affinis. Annual seaweed coverage, richness index (R), evenness index (J'), and diversity index (H') values were greater at Hongdo (41.35%, 12.82, 0.59, and 2.50 respectively) than at Heuksando (31.54%, 11.93, 0.44, and 1.87 respectively), which may indicate that the seaweed community at Hongdo is more stable relative to the one at Heuksando.
