A Study on the Difference of Perceptions of Seafood and Processed Seafood Products: The Case of University Students in Busan and Gyeongsang Area (수산물 음식과 수산물 가공식품에 대한 인식 조사: 부산·경상도 지역 대학생을 중심으로)

  • The purpose of this study is to understand the perception of fishery products and processed food of marine products in college students through empirical analysis. 446 questionnaires were used in the analysis. As a result of the empirical analysis, the frequency of consumption of aquatic food was 2~3 times a week, the place of intake was good for taste of home and aquatic foods, respectively. Purchase motifs of processed fish products are easy, the frequency of ingestion is 3 to 4 times a week, the criteria for selection were always consumed, and the taste was considered to be high when purchased. The perception of nutrition and necessity of consumption of aquatic foods was high and radioactivity was low. 133 male students (57.8%) and 98 female students (45.4%) were aware of the aquatic traceability system. The college students generally has a high preference for the taste of marine products and high frequency of consumption, and they recognized that nutritional excellence and necessity were positive. The marketing strategy should be developed by developing proper product considering the age level and sex of consumers. The limitation is that they are college students in Busan and Gyeongsang provinces and coastal areas.

Annual Changes in Cholesterol Intake and Serum Cholesterol Level of Korean from 1962 to 1995 Year (1962년부터 1995년까지 한국인의 혈청콜레스테롤 농도와 콜레스테롤 섭취량의 연차적 변화)

  • To estimate annual changes in age adjusted mean of serum cholesterol and cholesterol intake in Korea during the past years, data from 21 literatures regarding for serum cholesterol level of Korean or National Nutrition Survey Reports from 1962 to 1995 were extracted for this study. Age standardization for mean serum cholesterol level was adjusted being based on Korean population composition in 1995. Mean of Korean serum cholesterol level depicted an increasing tendency from 1962 to 1995. Magnitude of changes in mean of serum cholesterol was big in the age old groups over 60th decade, but sex difference in the pattern was not observed. The estimated mean cholesterol intake was higher in the urban population than those of rural's and it increased linearly from 1969 to 1995. Major food sources for cholesterol were egg(39.3%), anchovy(8.3%), seafoods(35.2%) meat(13%) in 1995. From the results, it was estimated that mean serum cholesterol and daily cholesterol intake of Korean would be 178 mg/dl and 278mg/day in 1995, respectively.

Characterization of Plasmids from Multiple Antibiotic Resistant Vibrio sp. Isolated from Molluscs and Crustaceans

  • This study investigated the role of plasmids and their relationship with the multiple antibiotic resistance of 30 Vibrios sp. isolated from molluscs and crustaceans sampled from the Kerala coastal waters of India. The biochemical identification and antibiotic resistance profiles were determined, followed by the plasmid profiles, conjugation and transformation efficiencies. The results showed a considerable difference in the level of bacterial resistance to various antibiotics; while all 30 strains were found to be MAR Vibrios sp. and their resistance patterns varied. All the strains were resistant to amoxycillin, ampicillin and carbeniciliin. 87% were resistant to rifampicin; 74% to cefuroxime; 67 to streptomycin; 53% to norfloxacin and ciprofloxacin and 47% to furazolidone and nalidixic acid. In addition to their antibiotic resistance, the plasmid DNA of the MAR Vibrios strains isolated from the molluscs and crustaceans was also studied. Nine strains isolated from crustaceans and molluscs were found to harbor 1-3 plasmids with sizes varying from 5. 98 kb to 19. 36 kb. The average transformation efficiency was about $5{\times}10^{-8}$ and the conjugation efficiency varied from $2.1{\times}10^{-3}$ to $10^{-9}$. A further study of antibiotic resistance patterns may be useful to test the extent of drug resistance in seafoods and help to devise a nationwide antibiotic policy.

A Study on Nutritional Status of Allergic Patients and Food allergens in Korea (알레르기 환자의 현황 및 영양상태에 관한 연구)

  • This study was designed to investigate clinical features, allergy-inducing substances as well as foods, and nutritional behavior of allergic patients. Sixty-eight adult male and 78 adult female patients were surveyed by using the self-developed questionnairs. The results were as follows: 1. The common target organs of allergic symptoms included bronchus, skin and nose. 2. 37.7% of the subjects did not recognize their allergy inducing substances. Among the known substances, house-dust mite, food, temperature and weather change, pollens, smoke, air pollution materials, drugs and even stress provoked symptoms. 3. As for the food allergy, a number of foods were found to be implicated in allergic reactions. These foods included pork, chicken, seafoods such as mackerel, crab & shrimp, milk, egg, peanut, apple and pupa. Symptoms and signs of food reactions included urticaria, asthma, and rhinitis. 4. The nutrition adequacy ratio (NAR) of energy was below 0.75 for male patients and about 0.80 for female patients. And 24.0% of the subjects were regarded as excellent, 31.5% as fair, and 44.5% as poor in food related behavior evaluation.

A Study on the Basis and Formation Process of Kimchi's Uniqueness (김치 독자성의 근거와 형성 과정에 대한 고찰)

  • The Chinese Sigyeong records the foods of the Primitive Pickling Period, pickling being a universal vegetable storage method, but does not indicate the origin of the pickled vegetables or the location of the source of transmission. Kimchi mainly used salt and sauce-based soaking materials at the beginning of the Fermented Pickling Period (beginning in the 1st to 3rd centuries A.D.), and it differed from the Chinese method, which used alcohol and vinegar. In the Umami-Flavored Pickling Period (beginning in the 14th and 15th centuries A.D.), jeotgal, fermented seafoods, were added, and pickles with a completely new identity were created, one different from any other pickles in the world. Lastly, entering the Complex Fermentation and Pickling Period (beginning in the 17th and 18th centuries), the technical process evolved using a separate special seasoning containing red pepper as the secondary immersion source after pickling in brine, the primary immersion source. As a result of this, kimchi was transformed into a food with a unique form and taste not found anywhere else. The unique characteristic of kimchi is that the composition of original materials, a combination of salted marine life and vegetable ingredients, is its core identity, and there is a methodological difference in that it is completed through a second process called saesaengchae (生菜)-chimchae (沈菜).

A Future Economic Model: A Study of the Impact of Food Processing Industry, Manufacturers and Distributors in a Thai Context

  • Purpose: This study attempted to analyze the impacts of the backward linkage and output multipliers, and investigate the price fluctuation and the price forecast amongst the manufacturing sectors associated with food processing industrial output of Thailand. Research design, data and methodology: The Thailand Input-Output table with a size of 180 x 180 sectors from 2005, 2010, and 2015 was utilized while the secondary data of the time series from January 2002 to December 2021 were processed via a multiplicative model and Box-Jenkins model. Results: The backward linkage analysis indicates that canning and preserving of the meat sector majorly utilized the factors of production from the slaughtering sector; canning and preservation of fish and other seafoods sector largely used those factors from the ocean and coastal fishing sector; and the sugar sector used those of the sugarcane sector. Notably, the output multiplier analysis indicated that output multipliers of those 3 manufacturing sectors were highly increased; meanwhile the price fluctuation continually existed in all forms. Besides, the price forecast suggested that prices of chicken and sugarcane tended to be higher; whereas, the price of shrimp was unstable. Conclusions: Food processing industry contains the favorable components to be one of the industries of the future of Thailand.

Distribution and Serotyping of Listeria monocytogenes in Seafood Processing Plants

  • Listeria spp. were isolated from the samples submitted from various seafood plants such as raw materials, products, swab samples of plants floor and conveyor belts through the whole processing procedures. All the samples were collected from 3 kinds of seafood plants such as a imitation crab meat plant, jeotgal plant and frozen seafood plant. And also serotypes of the identified L. monocytogenes were determined. Among the 301 strains of isolated Llsteria spp., 96 strains, 179 strains and 26 strains were identified as L. monocytogenes, L. innocua and L. welshimeri, respectively. While among the 145 strains of Listeria spp. isolated from the imitation crab meat plant, $74\;(51.0\%)$ strains, $64\;(44.1\%)$ strains and $7\;(4.8\%)$ strains were identified as L. monocytogenes, L. innocua and L. welshimeri, respectively. In the case of the 126 strains of Listeria spp. isolated from the frozen seafood plant, $22\;(17.5\%)$ strains of L. monocytogenes,$93\;(73.8\%)$ strains of L. innocua, and $11\;(8.5\%)$ strains of L. wdshimeri were detected. Among the 30 strains isolated from a jeotgal plant, $22\;(73.3\%)$ strains of L. innocua and $8\;(26.7\%)$ strains of L. welshimeri were detected. The detection rates of L. monocytogenes, one of the very important food poisoning bacteria especially in frozen and/or refrigerated seafoods, were relatively high as $77.1\%$ (74/96 strains) in a imitation crab meat plant and $22.9\%$ (22/96 strains) in a frozen seafood plant, but not detected from jeotgal plant. Distribution of L. monocytogenes serotypes and characterization were examined. The serotypes of 96 L. monocytogenes isolated from pork skin, pork fat, the floor and conveyor belts were 1/2a $(59.4\%)$, l/2b $(6.2\%)$, 1/2c $(12.5\%)$ and unknown serotypes $(21.9\%)$. Unknown serotypes were divided into three specific groups by the O antigen they have.

Blood Heavy Metal Concentrations of Korean Adults by Seafood Consumption Frequency: Using the Fourth Korea National Health and Nutrition Examination Survey (KNHANES IV), 2008 (국민건강영양조사 제4기 2차년도 (2008)를 이용한 어패류 섭취빈도에 따른 한국 성인의 혈중 중금속 농도 조사)

  • To determine blood heavy metal concentrations by seafood consumption in Korean adults, blood cadmium, mercury, and lead concentrations in a representative sample of 1,709 Koreans participated in the Fourth Korea National Health and Nutrition Examination Survey (KHANES IV-2) in 2008 were analyzed by age and seafood consumption frequency. The mean blood cadmium, mercury, and lead concentrations were $1.14{\pm}0.73{\mu}g/L$, $5.50{\pm}3.83{\mu}g/L$, and $2.56{\pm}1.22{\mu}g/dL$, respectively. The subjects aged ${\geq}$ 50 years had significantly higher blood cadmium concentrations than the subjects aged 20~39 years. Blood mercury concentrations of the 50's were significantly higher than those of the 20's and 30's (p < 0.05). Approximately, 43% of males and 22% of females had blood mercury concentrations > $5.8{\mu}g/L$ which is a blood mercury level equivalent to the current Reference Dose. Only 2 subjects had lead concentrations > $10{\mu}g/dL$, the standard lead level by the Centers for Disease Control and Prevention, USA. The subjects consuming pollack, mackerel, anchovy, corvina, shellfish, and salted seafood at least once a week had significantly higher mercury concentrations than the subjects consuming those seafoods less than once a month. However, there were no clear relationships between blood cadmium and lead concentrations and seafood consumption frequencies.

Middle School Students' Perceptions of Seafood and Its Use in Foodservice in Busan (부산지역 중학생의 수산물에 대한 인식 및 학교 급식에서의 수산물 이용정도)

  • This study was conducted to analyse middle school students' perceptions of seafood as well as their eating experiences and favorite cooking methods for seafood. It also examined the frequency and use of seafood on school lunch menus. Questionnaires were distributed to 739 students in 5 middle schools in the Busan area. On a scale of 5.00, the average scores for perceptions toward seafood were as follows: 3.67 for health & nutrition, 3.53 for taste, 2.53 for smell, 2.77 for convenience. The male students had significantly_(p<0.05) higher perception scores for health & nutrition, taste, and smell than the female students. Among 38 types of seafoods, the highest percentages for eating experiences included seaweed_(99.2%), anchovies_(99.1%), fried fish paste_(98.6%), shrimp_(98.4%), crab_(98.2%), squid_(97.9%), sea mustard_(97.8%), mackerel_(97.7%), dried squid_(97.3%), and hair tail_(96.9%). However, the majority of students had eaten a limited amount of seafood. The degree of seafood intake at home was significantly_(p<0.01) higher than at school. The students' favorite cooking methods for seafood were in the order of grilling, stir-frying, steaming, deep-fat frying, and soup. However, the middle school lunch programs primarily served as soup, seasoning, stir-fried, braised, deep-fat fried, and grilled, respectively. The main reasons for leaving seafood on a plate were inconvenience due to the fishbones_(62.7%), tasteless_(45.4%), and disliking the smell_(35.7%). Improvements that students wanted for seafood on school lunch menus included removal of fishbone for convenience_(67.0%), taste_(52.0), and increased variety of seafood types_(38.2%).

Protein Nutritional Quality of Precooked Seafood as Predicted by the C-PER Assay (C-PER방법(方法)을 이용(利用)한 수산단백질(水産蛋白質) 품질(品質)의 예측(豫測))

  • A study was undertaken to evaluate the nutritional quallity of protein from precooked seafoods. Procedures for evaluation included protein efficiency ratio(PER) using the rat, computed PER(C-PER) and discriminant computed PER(DC-PER) techniques. These procedures involve the determination of in vitro digestibility and amino acid composition of the sample prior to computation of C-PER and CD-PER value in laver was higher. For the oyster, the C-PER value was very close to the PER value obtained from the rat assay. The difference between DC-PER value and rat-PER or NPR was slightly lower than that between C-PER and rat-PER except oyster and laver. Seafood samples which posses a high in vitro protein digestibility may need the DC-PER procedure could offer more advantages in predicting the protein quality of seafood samples than the DC-PER procedure which showed poor in vitro digestibility.
