Biogas Production Performance according to the Saturated and Unsaturated Fatty Acid Contents (포화·불포화 지방산 함량에 따른 바이오가스 생산 성능)

  • 우리나라 음식물 폐기물은 수분함량 및 유기물 함량이 높기 때문에 부패와 악취, 침출수의 원인이 된다. 하지만 이를 혐기 소화 처리한다면 구성성분에 따라 60-80%가 생분해되어(한국유기성폐자원학회, 2001) 친환경적으로 처리가능하고, 혐기소화 결과물로 발생한 메탄가스를 대체에너지로 사용할 수 있어 유기물을 효과적으로 처리할 수 있다. 그러나 유기성 폐기물은 계절 및 지역에 따라 구성성분의 비가 다르며, 성분 중 지방 함량이 많을 때 바이오가스 생산이 지연되어 생산효율 감소의 주된 원인이 된다(Kafle and Kim, 2013). 전국음식물 폐기물 중 지방함량이 높은 어육류의 발생량은 3차 조사(환경부, 2008)에 비해 2배 이상 증가하였고, 향후 음식 섭취의 서구화로 인한 육류 소비가 증가할 것으로 예상된다(환경부, 2013). 따라서 본 연구는 지방함량이 높은 유기물의 효율적 처리를 위해 지방산 종류에 따라 포화 불포화 지방산을 포함하는 부산물의 혐기소화 능력 및 바이오가스 생산 성능을 구명하는데 목적이 있다. 본 연구 결과, 불포화 지방산 함량이 높은 수준인 부산물의 바이오가스는 629.96-749.14 mL/g VS 이며, 포화 지방산 함량이 높은 수준의 부산물은 560.18-715.43 mL/g VS 였다. 불포화 지방산 함량이 25.31%-46.26%로 많아질수록 초기 순응기간은 13일에서 25일로 증가하였고, 총 바이오가스 생산량의 90%가 생산되는 기간인 T90은 57일에서 72일로 증가하여 바이오가스 생산 속도가 감소한 것으로 판단된다. 포화 지방산은 함량이 24.10-48.74%로 증가할수록 초기 순응기간의 변화는 없었고, T90은 69일에서 62일로 감소하였다. 또한 불포화 지방산이 많은 유기물은 모두 바이오가스 생산 과정에서 2단계의 지연현상을 보였지만, 포화지방산은 함량이 증가하여도 1단계의 지연현상을 보였다. 이러한 차이는 두 지방산에 관여하는 미생물의 차이(Diana, 2007)와 불포화 지방산의 굴곡된 형태가 지방산과 미생물이 상호 작용 방식에 악영향 미치기 때문으로 판단된다(Diana, 2013). 결론적으로, 두 지방산의 소화 방식은 차이가 있으며, 불포화 지방산 함량이 많은 유기물은 탄수화물 함량이 많은 유기물을 10% 이상 혼합하여 지연상을 감소시킬수 있다(Kim, 2017). 포화 지방산 함량이 많은 유기물은 초기 지연 현상 해결을 위한 연구가 추가적으로 요구된다.

he Effects of Supplemental Levels of Bamboo Vinegar on Growth Performance, Serum Profile and Meat Quality in Fattening Hanwoo Cow (죽초액의 첨가수준이 비육 한우암소의 육생산성, 혈액성상 및 육질에 미치는 영향)

  • Effects of supplemental levels of Bomboo vinegar(BV) on growth performance, serum profile and meat quality in 15 Korean native Hanwoo cows was investigated. Concentrate diet was supplemented with Bamboo vinegar with 3% and 6% of the diet. Daily weight gain was increased slightly at 3% BV, but it was decreased in 6% BV. Feed intake was decreased(P<0.05) at 6% BV. Glucose concentration of serum profile was decreased(P<0.05) at 3% and 6% BV. Total protein and cholesterol concentrations were increased(P<0.05) at 3% and 6% BV. BUN concentration was increased(P<0.05) at 3% BV. In carcass characteristics the longissimus muscles of all BV treatments showed no significant(P<0.05) effects, but back fat thickness was decreased significantly(P<0.05) in 6% BV. Marbling score was increased significantly(P<0.05) at 3% BV, thus improving the meat quality. Cut meat production was not difference by treatment. Crude fat content of proximate chemical composition in longissimus muscle was increased(P<0.05) in 3% BV. Shear force and cholesterol contents were decreased(P<0.05) in 3% and 6% BV. The 16:0 of fatty acid composition in longissimus was decreased(P<0.05) whereas 18:1 was increased(P<0.05) at 3% and 6% BV. The composition of saturated fatty acids(SFA) was decreased(P< 0.05), whereas unsaturated fatty acids(USFA) was increased(P<0.05) in 3% BV. Odor and appearance of sensory evaluation were not difference by treatment. Taste was improved significantly (P<0.05) in 3% and 6% BV with the peculiar and savory taste of Hanwoo being more emphasized. The results of this experiment indicated that 3% BV improved the marbling score and crude fat content, decreased the shear force and cholesterol contents, increased the USFA composition, and improved the taste of sensory evaluation in Korean native Hanwoo cows.

The Nutritive Value of Grains from Barley Cultivars (Wooho, Youngyang, Yuyeon) (청보리 종실의 품종별(우호, 영양, 유연) 사료가치 평가)

  • This study was conducted to investigate the nutritive value of grains from barley cultivars (wooho, youngyang and yuyeon) for substitution of the feedstuffs as corn and soybean meal. In results of proximately analysis, the crude protein concentration was significantly higher (p<0.05) in barley grains than in corn and the crude fat concentration was significantly lower (p<0.05) in barley grains than in soybean meal. The metabolism energy of barley grains was significantly lower (p<0.05) than corn and it was higher (p<0.05) than soybean meal. The in vitro results of pepsin digestibility was significantly higher (p<0.05) in soybean meal than in barley grains and corn, and it was similar barely grains with corn. Barley grains significantly higher (p<0.05) the composition of saturated fatty acids than corn and soybean meal, while lower (p<0.05) the compositions of unsaturated fatty acids and essential fatty acidsin barley grain. The composition of linolenic acid, concentration of lysine and mineral was significantly higher (p<0.05) in barley grains than in corn, while lower (p<0.05) than soybean meal. Therefore, the barley grains is sufficient for substitution of corn. Moreover, the barley grain of yuyeon has high concentrations of crude protein, metabolism energy, lysine and minerals compared with barley grains of wooho and youngyang.

Meat Quality of Belly and Shoulder Loin According to Various Producing District (산지별 돈육 삼겹살과 목심의 품질특성)

  • This experiment was carried out to investigate characteristics of pork quality according to various producing district. The results of whole component analysis of pork according to diverse producing district were showed high level of fat content in Jeju island-belly and shoulder loin than other pork samples. And saturated fatty acid contents of Jeju island-belly and shoulder loin of pork were showed 46.6 and 41.6%, respectively, and unsaturated fatty acid contents of Jeju island-belly and shoulder loin of pork were showed 50.3 and 58.4%, respectively. Chungbuk-pork was relatively showed high level of cholesterol content than other pork samples. On the other hand, cholesterol contents of Jeju island-belly and shoulder loin of pork were showed 565.6 and 507.6 ${\mu}g/g$, respectively. Skatole contents of Jeju island-belly and shoulder loin of pork were showed low level(0.013 and 0.065 ${\mu}g/g$) than other pork samples. This results mean that Jeju island-belly and shoulder loin of pork have less order than other pork samples. The chewiness of texture that consumers feel the biggest difference in palatability of meat showed significantly high level(376.5 g) in Jeju island-belly of pork(p<0.05). This result represent that Jeju island-belly of pork have the best sense of the texture than other pork samples. $L^*$(lightness) value of ground pork was generally showed high value in belly than shoulder-loin of pork. However, $a^*$(redness) value of ground pork showed high value in shoulder-loin than belly of pork. And there was no significant difference in $b^*$(yellowness) value among the samples(p>0.05). The results of sensory test(taste, flavor, texture and palatability) from pork according to various producing district showed good flavor and palatability in Jeju island-belly of pork but there was no significant difference among the samples(p>0.05).

Effects of Seeding Dates and Growth Periods on the Growth Characteristics, Dry Matter Yield and Feed Value of Corn for Silage in Paddy Field (논토양에서 파종시기와 재배기간이 사일리지용 옥수수의 생육특성, 건물수량 및 사료적 가치에 미치는 영향)

  • This study was carried out to investigate the effects of the seeding dates and growth periods on the growth characteristics, dry matter yield and feed value of corn for silage in paddy field. The experimental design was arranged in a randomized block design with three replications. Treatments consisted of five seeding dates, 1 May (T1), 8 May (T2), 15 May (T3), 22 May (T4) and 29 May (T5). And harvesting time homologized by August 24. Therefore, growing periods were 115 days (T1), 108 days (T2), 101 days (T3), 94 days (T4) and 87 days (T5), respectively. In maturities at harvest time, T1, T2, T3, T4 and T5 were full dent, early dent, late dough, dough and early dough stage, respectively. Plant height and numbers of root system were highest in T5 (p<0.01), but leaf length was higher in T4 than others (p<0.05). Dead leaf, tip filling degree and ear circle were higher in T1 than others (p<0.05, 0.01). Leaf width, ear height, leaf number, ear length, stem diameter, stem hardness and brix were not significantly different among the treatments. Dry matter yield and TDN yield were higher in the order of T1 > T2 > T3 > T4 > T5 (p<0.01). Crude protein, crude ash, NDF, ADF and crude fiber were significantly higher in T4 (p<0.05, 0.01). But crude fat was the highest in T1, T3 was the lowest as compared to other treatments (p<0.01). Total EAA(essential amino acids) were higher in order of T4 > T3 > T1 > T2 > T5, and total NEAA (nonessential amino acids) were higher in order of T1 > T4 > T2 > T3 > T5, and total amino acids were higher in order of T4 > T1 > T3 > T2 > T5. But no significant differences were found among the treatments. TUFA (total unsaturated fatty acid) and TSFA (total saturated fatty acid) were in order of T1 > T2 > T3 > T5 > T4 (p<0.01). Minerals were the highest in T4 (4,721.25 mg/kg), and T2 (2,970.80 mg/kg) was the lowest as compared to other treatments (p<0.05). Based on the above results, seeding dates could be recommended as early May, and harvest times is yellow ripe stage for qualitative and quantitative production of corn for silage in rice paddy field soil.

Effect of Dietary Supplementation of Yeast Culture on the Performance, Nutrient Digestibility and Physico-Chemical characteristics of the Pork in Growing-Finishing Pigs (효모배양물의 수준별 급여가 육성·비육돈의 생산성, 영양소 소화율, 돈육의 이화학적 특성 및 지방산 조성에 미치는 영향)

  • Two experiments were conducted to investigate the influence of dietary supplementation of yeast culture on the nutrient digestibility, performance and meat quality in growing-finishing pigs. Corn-soy basal diets contained 20, 18, and 16% CP and 3,265kcal/kg ME at different growth stages. One hundred and twenty pigs(8wk-old) were allocated into four supplementation levels of yest culture (0, 0.1, 0.2, 0.4%) in Expt 1. Weight gain, feed intake and feed efficiency were periodically recorded for 112 days. A metabolic feeding trial was conducted to measure the nutrient digestibility. Physical and chemical characteristics of the Longissimus Dorsi muscle(LM) from the pigs were measured at the end of experiment (Expt 2). In Expt 1, weight gain and feed efficiency were not different among the dietary treatment groups during the overall period. The digestibilities of protein and fiber were greater in 0.1% and 0.2% yeast culture-supplemented groups than in control (P<0.05). However, fat and ash digestibilities were not improved by the dietary treatment. In Expt 2, the LM protein content in 0.1% yeast culture-supplemented group, but not in 0.2% or 0.4%-supplemented group, was greater than that in the control group (P<0.05). The LM pH, purge loss, cooking loss and color were not affected by the dietary treatment. The LM shearing force was less in 0.2% yeast culture-supplemented group than in the control group (P<0.05). Other LM physicochemical properties did not differ between the dietary treatment groups. Total saturated and unsaturated fatty acids percentages and total cholesterol content of the LM did not differ across the dietary treatment groups.

Effect of Lipid on the Protein Denaturation in Cooking Fish Meat (어육 조리시 지질이 단백질 변성에 미치는 영향)

  • The present work aims to estimate the effect of heat treatment on the in vitro protein digestibility and formation of trypsin inhibitor or trypsin indigestible substrate(TIS) of raw and defatted flounder. It was also carried out to assess the formation of lipid-protein complexes under the conditions of different ratio of lipid addition. The in vitro protein digestibility increased when steamed for 5 min showing $88.09\%$ in raw and $90.56\%$ in defatted samples, respectively. After 40 min steaming, the digestibility decreased by $2{\sim}4\%$. As for microwaving, heating for 1 min resulted in slight increase of digestibility, however, heating for 7 min did decrease of digestibility by $3{\sim}4\%$ for both raw and defatted materials. There was no difference in fatty acid composition found with heat treatment. The major fatty acids of flounder meat were $C_{16:0},\;C_{16:1},\;C_{18:1},\;C_{20:5},\;C_{22:6}$ and the ratio of the unsaturated to saturated was 67.3:32.6. Fat oxidation and nonenzymatic browning were enhanced by heat treatment and protein solubility decreased necessarily as the brown pigment formation increased. On the other hand, the effects on the digestibility and TIS of the complexes formed from interaction of lipid and myofibrillar or meat protein of flounder were examined. The interaction of protein with lipid was considered to mostly contribute to the drop of digestibility of fish products. The digestibility of myofibrillar protein was $93.72\%$ for flounder, and it generally decreased as the amount of lipid added to protein and reaction time increased. Also mixed and heated samples were more active in digestibility decline than those mixed after heating. The result probably indicated that lipid-protein interaction was involved in the drop of digestibility which coincided with protein denaturation.

Changes of Lipid Components and Pigments in Apple Peels during the Storage under Sub - atmospheric Pressure (사과의 감압저장중(減壓貯藏中) 과피지질성분(果皮脂質成分)과 색소(色素)의 변화(變化))

  • The changes of lipid components in apple peels which effects physiological characteristic in apple storage, and pigment which is important base in quality, were investigated in terms of temperature and pressure. The results obtained were as follows ; The contents of total lipid of Ralls which is resistant to cold temperature were higher than those of Fuji. The contents of total lipid of Fuji and Ralls were decreased up to about 60 days and then increased up to the final stage of storage. Especially, the increasing rate at low temperature storage was greater than at normal temperature storage. In the case of Fuji, the contents of neutral lipid of normal temperature were increased up to 90 days, while those of low temperature were decreased up to 60 days and then increased up to 90 days. The contents of glycolipid, in both Fuji and Ralls were decreased up to about 30 days and then increased up to about 60 days and the decreased up to 90 days. The contents of phospholipid in Fuji were decreased during storage, while those in Ralls were appeared very slight changes. The ratios of unsaturated fatty acid to saturated fatty acids in neutral lipid of Fuji were decreased during storage, but those of Ralls were increased. Those of glycolipid of Fuji were decreased up to 60 days and then increased up to 90 days, while those in Ralls were increased during storage. In both Fuji and Ralls, those of phospholipid increased during storage and were high in order of sub-atmospheric pressure at $1^{\circ}C$ (SAP-L), normal atmospheric pressure at $1^{\circ}C$ (NAP-L), sub-atmospheric pressure at $20^{\circ}C$ (SAP-N) and normal atmospheric pressure at $20^{\circ}C$(NAP-N) for storage condition. The contents of chlorophyll of Ralls were higher than those of Fuji and the decreasing rate was the lowest in SAP-L. The changes of carotenoid and anthocyanin contents were the greatest increasing at NAP-N and colouring was delayed at SAP-L.
