오리고기의 첨가 수준이 냉장 저장 중 유화형 소시지의 품질 특성에 미치는 영향 (Effect of Addition Levels of Duck Meat on Quality Characteristics of Emulsion Type Sausages during Cold Storage)

  • 본 연구는 소시지 제조 시 오리고기와 돼지고기의 혼합비율에 따른 냉장 저장 중 품질 특성을 구명하고자 수행하였다. 처리구는 소시지 제조 시 사용되는 고기 함량을 기준으로 오리고기 100%(T1), 돼지고기 100%(T2), 오리고기 50% + 돼지고기 50%(T3), 오리고기 40% + 돼지고기 60%(T4) 및 오리고기 30% + 돼지고기 70%(T5)로 나누었다. 그 결과, 수분은 다른 처리구에 비해 T1이 유의적으로(p<0.05) 가장 높았고, T2가 유의적으로(p<0.05) 가장 낮게 나타났다. 단백질과 지방함량에 있어서는 T2가 다른 처리구에 비해 유의적으로(p<0.05) 가장 높게 나타났다. 명도의 경우, T1이 전 저장기간 동안 다른 처리구에 비해 유의적으로(p<0.05) 가장 낮은 명도를 보였다. 적색도는 다른 처리구에 비해 T1이 전 저장기간 동안 유의적으로(p<0.05) 가장 높게 나타난 반면, T2는 전 저장기간 동안 유의적으로(p<0.05) 가장 낮은 것으로 나타났다. 경도의 경우, 오리고기 40%와 돼지고기 60%로 제조한 T4가 다른 처리구에 비해 전 저장기간 동안 유의적으로(p<0.05) 높게 나타났다. 응집성의 경우, 냉장 저장 2주까지 T5가 다른 처리구에 비해 유의적으로(p<0.05) 높게 나타났다. 관능평가 결과, 육향, 맛 및 조직감에 있어서는 T5가 유의적으로(p<0.05) 낮은 것으로 나타난 반면, 다른 처리구 간에는 유의적인 차이가 없는 것으로 나타났다. 전체적인 기호도는 T5가 다른 처리구에 비해 유의적으로(p<0.05) 낮은 것으로 나타났다. 이상의 결과를 종합해 볼 때, 오리고기 소시지 제조 시 경도와 기호성을 좋게 하기 위한 근육 단백질의 혼합 비율은 오리고기 40%와 돼지고기 60%의 비율이 적당한 수준인 것으로 사료된다.

황사현상이 천식질환에 미치는 영향도 분석: 2005년부터 2008년 서울지역을 중심으로 (Relationship between Asian Dust and Asthma Disease in Seoul during 2005~2008)

  • This study investigates the relationship between Asian dust and asthma disease in Seoul, using data of Asian dust occurrences and the number of treatments for asthma between 2005 and 2008. The data include the number of treatments for asthma on the basic day paired with the average number of treatments for asthma on the compared days. The compared day is defined by the day of no Asian dust in same month and day of the week as the basic day, when Asian dust occurs. Also, the basic day is expanded to the day after three days from the day of Asian dust. The paired two sample t-test for the number of treatments for asthma on the basic day and the compared days revealed that the Asian dust occurrences are correlated with the asthma disease. The number of treatments for asthma is significantly increased on the one and two days after Asian dust occurs. On the other hand, there's no significant difference in the number of treatments for asthma between the days of Asian dust occurrence and the days of no Asian dust, which implies that people usually try not to go out when Asian dust occurs.

Quality Characteristics and Quantification of Acetaldehyde and Methanol in Apple Wine Fermentation by Various Pre-Treatments of Mash

  • The objective of this study was to compare the effects of adding lactic acid and pectinase, and chaptalization for the quality of apple wine and the production of hazardous compounds (methanol and acetaldehyde). The pH of all of the samples was below 4; therefore, mash seemed to be fermented without any issue. Total acidity was the highest in sample A due to lactic acid addition. Pre-treated groups (samples B, C, and D) showed higher total acidities than that of the control (P<0.05). Pre-treatments might influence the production of organic acids in apple wines. The control and pectinase added sample (sample B) had the lowest alcohol contents. Adding lactic acid produced more alcohol, and chaptalized samples produced more alcohol due to the addition of sugar. Adding pectinase with and without chaptalization was not effective for producing more alcohol. The control sample had significantly higher acetaldehyde content (2.39 mg/L) than the other samples (1.00~2.07 mg/L); therefore, pre-treatments for apple wine fermentation produced a lower amount of acetaldehyde. Among the pre-treated samples, samples C and D showed the lowest acetaldehyde content of 1.00 mg/L and 1.16 mg/L, respectively. On the other hand, a significantly higher amount of methanol was generated for sample A (1.03 mg/L) and sample D (1.22 mg/L) than that of the control (0.82 mg/L) (P<0.05). Adding lactic acid or chaptalization was effective in reducing methanol and acetaldehyde in apple wines.

Effect of sintering programs and surface treatments on monolithic zirconia

  • PURPOSE. To investigate the effect of sintering programs and surface treatments on surface properties, phase transformation and flexural strength of monolithic zirconia. MATERIALS AND METHODS. Zirconia specimens were sintered using three distinct sintering programs [classic (C), speed (S), and superspeed (SS)] (n = 56, each). One sample from each group underwent scanning electron microscopy (SEM) and grain size analysis following sintering. Remaining samples were divided into five subgroups (n = 11) based on the surface treatments: control (CL), polish (P), glaze (G), grind + polish (GP), and grind + glaze (GG). One sample from each subgroup underwent SEM analysis. Remaining samples were thermally aged. Monoclinic phase volume, surface roughness, and three-point flexural strength were measured. Monoclinic phase volume and surface roughness were analyzed by Kruskal-Wallis and Dunn tests. Flexural strength was analyzed by two-way ANOVA and Weibull analysis. The relationships among the groups were analyzed using Spearman's correlation analysis. RESULTS. Sintering program, surface treatment, and sintering × surface treatment (P ≤ .010) affected the monoclinic phase volume, whereas the type of surface treatment and sintering × surface treatment affected the surface roughness (P < .001). Type of sintering program or surface treatment did not affect the flexural strength. Weibull analysis revealed no significant differences between the m and σo values. Monoclinic phase volume was positively correlated with surface roughness in the SGG and SSP groups. CONCLUSION. After sintering monolithic zirconia in each of the three sintering programs, each of the surface treatments can be used. However, for surface quality and aging resistance, G or GG can be recommended as a surface finishing method.

목이 및 석이 메탄올 추출물의 유전독성 억제효과 (Antigenotoxic Effects of Methyl Alcohol Extracts from Auricularia mesenterica and Gyrophora esculenta)

  • This study was designed to demonstrate the antigenotoxic potential of methyl alcohol extracts from Auricularia mesenterica and Gyrophora esculenta against the frequency of micronucleate polychromatic erythrocyte(MNPCE) produced by benzo($\alpha$) pyrene in vivo. We used the mouse bone marrow test system to measure the effect of single and multiple treatments of each sample. Genotoxicity of benzo ($\alpha$) pyrene(150mg/kg, i.p.) as positive control was the highest at 36 hours. However, each sample per dose was not genotoxic, showing MNPCE values in the range of the control level. Treatments of methyl alcohol extracts both of Auricularia mesenterica and Gyrophora esculenta showed significant decreased frequencies of NMPCE induced by benzo($\alpha$) pyrene within 12 hours by single treatment(100mg/kg, oral). And also, the MNPCE level produced benzo($\alpha$) pyrene was decreased by the treatment of benzo($\alpha$) pyrene(5 to 200mg/kg, oral) of each sample, but significantly different redults were obtained with 100mg/kg. In the multiple treatment, the highest antigentoxic effects were demonstrated with 20mg/kg in the each sample, a range which induced inhibition indices of 54.2 and 56.3%, respectively.

Effect of Sample Preparation on Prediction of Fermentation Quality of Maize Silages by Near Infrared Reflectance Spectroscopy

  • Near infrared reflectance spectroscopy (NIRS) has become increasingly used as a rapid, accurate method of evaluating some chemical constituents in cereal grains and forages. If samples could be analyzed without drying and grinding, then sample preparation time and costs may be reduced. This study was conducted to develop robust NIRS equations to predict fermentation quality of corn (Zea mays) silage and to select acceptable sample preparation methods for prediction of fermentation products in corn silage by NIRS. Prior to analysis, samples (n = 112) were either oven-dried and ground (OD), frozen in liquid nitrogen and ground (LN) and intact fresh (IF). Samples were scanned from 400 to 2,500 nm with an NIRS 6,500 monochromator. The samples were divided into calibration and validation sets. The spectral data were regressed on a range of dry matter (DM), pH and short chain organic acids using modified multivariate partial least squares (MPLS) analysis that used first and second order derivatives. All chemical analyses were conducted with fresh samples. From these treatments, calibration equations were developed successfully for concentrations of all constituents except butyric acid. Prediction accuracy, represented by standard error of prediction (SEP) and $R^2_{v}$ (variance accounted for in validation set), was slightly better with the LN treatment ($R^2$ 0.75-0.90) than for OD ($R^2$ 0.43-0.81) or IF ($R^2$ 0.62-0.79) treatments. Fermentation characteristics could be successfully predicted by NIRS analysis either with dry or fresh silage. Although statistical results for the OD and IF treatments were the lower than those of LN treatment, intact fresh (IF) treatment may be acceptable when processing is costly or when possible component alterations are expected.

표면처리에 의한 오일팜 EFB 기반 펄프몰드의 흡수특성 변화 (Changes in the Water Absorption Properties of Pulp Mold manufactured with Oil Palm EFB by surface treatments)

  • The applicability of oil palm biomass, EFB(Empty Fruit Bunch) as raw materials for environmental friendly packaging material, pulp mold, was evaluated in this study. The changes in the water absorption properties of pulp mold by the addition of EFB and the surface treatments with PVA and AKD were analyzed by measuring the changes in the water absorption rate and the water contact angle. The each pulp mold sample was prepared by using laboratory wet pulp molder. And the water absorption rate of each samples were evaluated by measuring times for the absorption of a 0.1 ml water drop on the pulp mold sample surface. The addition of EFB to the pulp mold made of OCC resulted in the decrease of water absorption rate and the increase in the water contact angle. The surface treatments with PVA and AKD on the OCC pulp mold showed the significant reduction in the water absorption rate. However, in case of ONP pulp mold, the addition of EFB and the surface treatments with PVA and AKD showed no big changes in water absorption times. Those might be come from the finer surface structure of ONP pulp mold which were made of more finer and flexible fibers and more hydrophilic fibers. The results of this study showed the functional properties such as water absorption rate, could be controlled by the application of EFB and the treatments with AKD or PVA, especially in case of the OCC pulp mold.

Dyeability and Colorfastness of Knitted Fabrics with Natural Dye PinuxTM (Part I)

  • Dyeability and colorfastness of the blended knits of cotton/rayon (40/60; C/R) and wool/tencel (10/90; W/T) are examined using the natural dyestuff ($Pinux^{TM}$) manufactured from Pinus radiata pine bark extract. In addition, pre-treatments (such as bleaching, mercerization and cationization) are performed to improve dyeability and colorfastness. The $Pinux^{TM}$ powder dyestuffs produced by Pinux Co., Ltd. are used as dyestuffs and their properties are examined for dyeing concentration (0.5-2% (owb)), dyeing time (30-120 minutes) and dyeing temperature (30-$90^{\circ}C$). Dyeability is evaluated with K/S value at 400nm, which is the maximum absorption wavelength for $Pinux^{TM}$. The results show the dyeability of W/T sample containing protein fiber with $Pinux^{TM}$ is superior to all cellulose fiber C/R. A concentration of dyestuff greater than 1.5% (owb), dyeing time 120 minutes and dyeing temperature of $90^{\circ}C$ are the most optimized conditions. It shows that the dyeability of C/R and W/T samples are high in the condition of an acid-dyeing bath and that dyeability highly declined in alkaline bath due to the instability of the proanthocyanidin pigment. After analyzing the effect of bleaching, mercerizing and cationizing (as pre-treatments on dyeability) it was concluded that the dyeability of the C/R sample was enhanced by mercerization but no significant effect by cationization. However, the simultaneous treatment of cationizing and dyeing resulted in far improved dyeability compared to dyeing after cationizing pre-treatment. As for the W/T sample, the effect of cationization was more prominent than the C/R sample. Colorfastness to color changes in the control W/T sample was higher than that of C/R's level 1-2, and it increased to Level 2 when bleaching pre-treatment was given and when a simultaneous cationizing treatment was adopted to the dyeing process. Colorfastness to light in W/T control sample resulted in Level 3 and further increased to an excellent Level of 4 with bleaching and simultaneous cationizing during dyeing process.

Effect of Cold Plasma on Total Polyphenol Content and Anti-Inflammatory Activities of Peanut (Arachis hypogaea L.) Hull

  • In recent studies, cold plasma has been used to induce exudation of polyphenols and flavonoids from food materials, leading to enhancement of functional properties. And it is known that polyphenols interact with inflammation related metabolism. The objectives of this study were to investigate the effects of cold plasma treatments on the increase of total phenolic content (TPC), total flavonoid content (TFC), and anti-inflammatory activities of 'Sinpalkwang' peanut (Arachis hypogaea L.) hull. Plasma treatments were carried out using a dielectric barrier discharge gas exchange system at different radicals and temperatures (O3-25℃, O3-150℃, NOx-150℃). Significant differences in TPC, TFC, and inflammatory mediator such as nitric oxide (NO) and tumor necrosis factor a (TNF-α) in lipopolysaccharide stimulated Raw 264.7 macrophages were observed between treated and non-treated peanut hull samples (p < 0.001). Cold plasma treated samples showed higher content (TPC: 2.87-2.93 mg/g sample, TFC: 0.96-0.98 mg/g sample) than non-treated sample (TPC: 2.47 mg/g sample, TFC: 0.78 mg/g sample). Cold plasma treated samples showed lower content of NO (3.3-5.0 uM) and TNF-α (141.4-162.2 ng/mL) than non-treated sample (NO: 11.1 uM, TNF-α: 210.2 ng/mL). This study suggests that cold plasma has potential to improve functionalities of food materials and that cold plasma treated peanut hull can be used as immune enhancing materials.
