Utilization of Ascidian, Halocynthia roretzi -6. Processing and Quality Evaluation of Fermented Ascidian(II)- (우렁쉥이 이용에 관한 연구 -6. 우렁쉥이 젓갈의 제조 및 품질평가(II)-)

  • To optimize the processing conditions of fermented ascidian, Halocynthia roretzi, fermentation at low temperature with different salt contents, the effect of enzymes added, and the quality changes during fermentation were investigated. As the quality factors, changes in such components as free amino acid, volatile basic nitrogen(VBN), amino nitrogen, total creatinine, total carotenoid, extents of browning, reducing sugar and glycogen were determined. The quality was also evaluated organolatically by pannel test. Fresh deshelled and sliced ascidian were fermented for 50 days at $5{\pm}1^{\circ}C$ with different salt contents of 5, 10, $15\%$ (w/w) with enzyme contents of papain $0.1\%$ and protease-A $0.1\%$ VBN increased gradually during the 50 days of fermentation and showed $30{\sim}40mg/100g$ at 30, 35 and 45 days in case of salt contents 5, 10 and $15\%$ added with $0.1\%$ papain and protease-A, respectively. Amino nitrogen and the total creatinine increased until 20 days, hereafter tended to decrease gradually. Total carotenoid and glycogen also decreased during the fermentation. The results of sensory evaluation of fermented ascidian at $5{\pm}1^{\circ}C$ added $0.1\%$ papain or protease-A showed that the peculiar taste and flavor of ascidian was sustained for $30{\sim}40$ at least 20 days with $5\%$ NaCl and $35{\sim}45$ days of fermentation with 10 and $15\%$ NaCl.

Effect of Salt Concentration in Soil on the Growth, Yield, Photosynthetic Rate, and Mineral Uptake of Tomato in Protected Cultivation (토양 염류농도가 시설토마토의 생육, 수량, 광합성속도 및 무기양분 흡수에 미치는 영향)

  • This study was conducted to investigate the effects of high concentrations of salts in soil on the growth, yield, quality, photosynthetic rate, and mineral uptake of tomato ('House Momotaro') in pot cultivation. The growth of tomato such as plant height, top plant weight and root weight decreased as the concentrations of salts in soils increased. Yield decreased by 31% and 41% in EC 5.0 and $7.5dS{\cdot}m^{-1}$, respectively compared with the salt concentration of EC $1.5dS{\cdot}m^{-1}$. Yield reduction was caused by low mean weight and number of fruit if at high salt concentration in soil, and affected by low photosynthetic rate and water potential in leaf, The rate of blossom-end rot was highest (16.7%) in EC $7.5dS{\cdot}m^{-1}$ and increased as the concentrations of salts in soils increased. The contents of soluble solids and titratable acids showed a tendency to increase with increasing the concentrations of salts in soils. Photosynthetic rate, water potential and stomatal conductance in leaf decreased as the salt concentration in soil increased. The higher the salt concentration in soil, the lower the mineral uptake such as T-N, P, K, Ca and Mg but, the higher the content of Na.

Quality Characteristics of $Kalopanax$ $pictus$ and $Aralica$ $elata$ Shoot according to Their Salt Conditions (염장조건에 따른 엄나무와 두릅 순의 품질특성)

  • The quality characteristics of $kalopanax$ $pictus$ and Aralica elata shoots during their preservation were investigated according to the salt conditions and storage temperatures to improve the use of the shoots. The results were as follows: the pH of $kalopanax$ $pictus$ shoots duing their storage did not changes with 10% and 12% brine at $4^{\circ}C$ and with 12% brine at $10^{\circ}C$. The pH of $Aralica$ $elata$ shoots is at $4^{\circ}C$ tended to be similar to the $kalopanax$ $pictus$ shoot and decreased at the storage temperature of $10^{\circ}C$. The salinity of the $kalopanax$ $pictus$ and $Aralica$ $elata$ shoots tended to increase during their storage and did not change significantly as their storage temperature changed. The L values of $kalopanax$ $pictus$ and $Aralica$ $elata$ shoots tended to decrease gradually during their storage, and the salt concentrations appeared high. The b value of the $kalopanax$ $pictus$ shoot tended to increase and that of the $Aralica$ $elata$ shoots, to decrease gradually. The a value tended to increase gradually but did not differ with variations in the storage temperatures and salt concentrations. The strength and the hardness of the $kalopanax$ $pictus$ and $Aralica$ $elata$ shoots tended to decreased gradually during their storage and highest in 10% brine at $4^{\circ}C$, and those of $Aralica$ $elata$ shoots were highest in 8-10% brine at $4^{\circ}C$. The Chlorophyll contents of the $kalopanax$ $pictus$ and $Aralica$ $elata$ shoots tended to decrease during their salt storage and did not change significantly as the temperatures and salt concentrations changed. Therefore, it can be concluded that the quality of $kalopanax$ $pictus$ and $Aralica$ $elata$ shoots can be maintained when the are stored in 10% brine at $4^{\circ}C$.

  • The Purpose of this study was to improve the moisture related properties of viscose rayon fibers. Viscose rayon filament yarns were partially etherified to make CMC fibers. CMC fibers were converted to the sodium, calcium, and ferric salt forms by an ion exchange method. The property changes of ion exchanged CMC fibers were examined. Cation contents of fibers were varied depending on the degree of substitution of CMC fibers. The strength of Na, Ca, Fe-CMC was higher than H-CMC owing to the plasticization by moisture sorption and the crosslinking by cations. The moisture regain was increased by carboxymethylation and that of Fe-CMC showed the highest value. The degree of swelling determined by the water retention value was observed to be Na-CMC > Ca-CMC > H-CMC > Fe-CMC. The solution retention value was decreased in the order . Ca-CMC > Na-CMC > H-CMC > Fe-CMC.

Effects of Extraction Methods on In Vitro Biological Capacities and Rheological Properties of Polysaccharides from Red Pepper Stems

  • The purposes of this study were to produce polysaccharides from red pepper stems using different extraction methods and evaluate their chemical composition, in vitro biological capacities, and rheological properties. Two polysaccharides were extracted from red pepper stems using an autoclave and alkali treatments, and the extracts were named PAU and PAL, respectively. The contents of total phenolics and flavonoids were significantly higher in PAU than those in PAL. PAU exhibited greater scavenging activities on 2,2-diphenyl-1-picrylhydrazyl radicals, 2,2'-azino-bis(3-ethylbenzothiazoline-6-sulfonic acid) diammonium salt radicals, superoxide radicals, and nitrite compared to PAL, suggesting that PAU served as better antioxidants. Similarly, in vitro inhibitory abilities against carbohydrate hydrolyzing enzymes of PAU were higher than those of PAL. Steady shear rheological analysis demonstrated that PAU showed higher psuedoplastic shear-thinning behavior compared to PAL. Based on the results from dynamic shear rheological properties, it was found that both samples had predominantly viscous behavior rather than elastic behavior.

  • The development of automobile, vessel, rail road, and machine industry leads increase of foundry production used as their components, which cause a by-product, waste foundry sand (WFS). The amount of the WFS produced in Korea is over 900,000 ton a year, but most WFS buries itself and only 5~6% WFS is recycled as a material in construction materials. In this study, WFS is used as a fine aggregate for concrete. Five types of concretes aimed at the specified strength of 240$\pm$10 kgf/$cm^{2}$ , air contents of 4.5$\pm$1% and slump of 12$\pm$1.5cm were mixed with washed coarse seashore sand(WFS) in which salt was removed and then optimum mix proportion of concrete was determined. Moreover, basic properties such as setting time, workability, bleeding and slump loss of the fresh concrete with WFS were tested and compared with those of the concrete mixed without WFS. In .addition, both compressive strength of hardened concrete at each ages and tensile strength of it at the age of 28 days were measured and discussed.

Property Changes of Salt-seasoned Salmon Roe during Fermentation

  • In order to utilize chum salmon returned in the east coast of Korea, the changes in the properties of Yeonual-jeot (salted salmon roe) fermented at different temperatures were measured for obtaining the basic data for its commercial production. Moisture content of salted salmon roe was significantly lower than raw salmon roe, while other proximate components were in the reverse. pH was constant for 56 days fermentation at $5^{\circ}C$, but decreased with fermentation Reriod at 10 and $15^{\circ}C$. The contents of amino-nitrogen and VBN were almost in constant at $5^{\circ}C$ up to 28 days of fermentation, but increased very slowly at $10^{\circ}C$ and moderately at $15^{\circ}C$. TBA value, and the numbers of total viable cells and lactic acid bacteria increased over all fermentation periods, more at higher fermentation temperatures.

  • Pavement concrete subjected to severe environmental condition may be vulnerable to frost attack practically where de-icing chemicals are used. This study focused on the investigation of durability characteristics of pavement concrete incorporation polypropylene fibers and application feasibility of these into the pavements of local roads and highway. A series of labortory tests were performed with main experimental variable such as fiber types, fiber contents. and type of concrete mix. The test of compressive strength was executed as primary tests, before the durability tests such as a scaling resistance were performed. De-icing salt resistance test was progressed by recycling freeze and thaw in the presence of a 4% calcium chloride solution. The deteriorated surfaces were rated by visual inspection and the loss weight were measured at every 5 cycles.

Studies on Lectins from Marine Animal Chlorostoma argyrostoma turbinatum (해양동물 구멍밤고둥의 렉틴 성분 연구)

  • Two kinds of new lectins, CATL-I and CATL-II, were partially purified from the intestine of Chlorostoma argyrostoma turbunatum by physical saline extraction, salt fractionation, ion exchange chromatography and gel filtration. CATL-I and CATL-II were purified 39.4 and 15.8 fold with a yield of 8.8 and 7.4%, respectively. On polyacrylamide gel electrophoresis, CATL-I demonstrated one major and one minor bands. This lectin agglutinated human and other animal erythrocytes nonspecifically and also agglutinated murine splenic lymphocytes. Carbohydrate specificity of the lectins was determined by inhibition of the agglutinability by methyl-${\alpha}-_D$-galactopyranoside and $_L-rhamnose$ at a final concentration of 6 mM. The lectins contained relatively high amounts of acidic amino acids, but the contents of sulfur containing amino acids were very low or was not estimated. Immunochemical studies were carried out to identify some properties of marine animal lectins.

  • The inorganic compositions of traditional lye, and lyes prepared from the stalks of five different agricultural products: beans, wheat, barley, buckwheat and red peppers, were analyzed. Traditional lye was composed mainly of a weak alkaline salt, potassium carbonate as the major component and neutral salts, potassium chloride and potassium sulfate as minor components. The ash and lye contents of buckwheat have significantly higher then those of the rest agricultgural products. Bean and red pepper stalks lyes were composed mainly of potassium carbonate, similar to the composition of traditional lye, but also contained potassium chloride or sulfate. In contrast, postassium chloride was the major component of wheat and barley stalk lye.
