The Effects of Salt and NaNO2 on Fatty Acid Composition, Free Amino Acids, Microbial Counts and Sensory Characteristics of Dry-cured Ham Processed under Korean Environment (소금과 아질산염 처리수준이 자연숙성 건염햄의 지방산 조성, 유리아미노산, 미생물수 및 관능적 특성에 미치는 영향)

  • The study analyzed the effects of salt concentration [high salt (HS) and low salt (LS)] and sodium nitrite ($NaNO_2$), which are typically utilized in Korean processing facilities, on fatty acid composition, free amino acids, microbial counts and sensory characteristics of processed dry-cured ham. Four different treatments were considered: three hams (11.30 kg) salted with 92 g/kg salt (w/w) (HS), three hams (10.65 kg) treated with HS and 100 ppm $NaNO_2$ (HS+$NaNO_2$), three hams (11.42 kg) salted with 62 g/kg salt (w/w) (LS), and three hams (10.62 kg) treated with LS and 100 ppm $NaNO_2$ (LS+$NaNO_2$). Fatty acid composition analysis revealed significantly (p<0.05) higher saturated fatty acid and lower (p<0.05) unsaturated fatty acid in the HS+$NaNO_2$ group compared with the other groups. Glutamate, alanine and lysine free amino acids were higher than the other free amino acids. The processing conditions did not significantly affect the free amino acids of biceps femoris muscles, except for the proline content (p>0.05). In sensory evaluation, the fermentation aroma of the LS group was higher than that of the HS group. The aerobic counts consistently ranged from from $2.3{\times}10^2$ to $1.11{\times}10^4$ CFU/g. Escherichia coli including strain O157:H7, Staphylococcus aureus, and Salmonella spp. were not detected.

  • The purpose of this study is to evaluate freezing-thawing and surface scaling resistance in order to examine the frost durability of concrete in a chloride-inherent environment. The mixing design for this study is as follows: 3 water binder ratios of 0.37, 0.42, and 0.47; 2-ingredient type concrete (50% OPC concrete and 50% ground granulated blast-furnace slag), and 3-ingredient type concrete (50% OPC concrete, 15% fly ash, and 35% ground granulated blast-furnace slag). As found in this study, the decrease of durability was much more noticeable in combined deterioration through both salt damage and frost damage than in a single deterioration through either ofthese; when using blast-furnace slag in freezing-thawing seawater, the frost durability and surface deterioration resistance was evaluated as higher than when using OPC concrete. BF 50% concrete, especially, rather than BFS35%+FA15%, had a notable effect on resistance to chloride penetration and freezing/expansion. It has been confirmed that surface deterioration can be evaluated through a quantitative analysis of scaling, calculated from concrete's underwater weight and surface-dry weight as affected by the freezing-thawing of seawater.

Fluorescent Crack Sensor in a Polymeric Material (고분자 재료의 형광 크랙센서)

  • A styrylpyrylium salt (DHSP) was synthesized and then photodimerized to obtain a cyclobutane-type dimer (DHSP dimer). Methacryloyl group was incorporated into DHSP dimer to obtain DMSP dimer. Based on FT-IR analysis of a crosslinked DMSP dimer, it was considered that the cyclobutane structure reversed to styryl C=C bonds upon crack formation. Fluorescence measurement of DHSP in solid state (excitation at 385 nm) showed emission centered at 626 nm, while DHSP dimer revealed very weak emission. Fluorescent emission from microcracks in a film of crosslinked DMSP dimer was observed upon exposure to $330{\sim}385\;nm$ light.

A Study on the Surface Crystallization of Glass (표면결정화유리에 관한 연구)

  • In this paper the conditions of surface crystallization of glass were studied. The basic glass which is apt to crystallize, with $SiO_2$ 72.50, $Al_2O_3$ 5, 00, $Na_2O$ 8.00 $K_2O$ 3.50, CaO 5.00, MgO 3.00, $B_2O_3$ 3.00 Wt% is chosen. The strain point and softening point of this glass is 4$25^{\circ}C$ and 778$^{\circ}C$ each, and between the two temperatures we could get grystal on its surface by immersion in salt baths during some controlled hours. The kind of crystal on the surface of glass was confirmed by X-ray diffraction analysis and the change of the thickness of crystalline layers depending on temperature and time, was surveyed by using optical microscope. The results are as follows; 1. The chloride group is more suitable than sulfate group for the treating salt. 2. In the condition with 50 LiCl.50NaCl at 62$0^{\circ}C$ for 2 hrs and with 50 LiCL.20-30 NaCl.30-20 $CaCl_2$ at 72$0^{\circ}C$ for 15-20 min. we could get the best crystalline layers. 3. The crystal was silica-O and petalite with a little tridymite and nepheline. 4. The thickness of crystalline layers increased with increasement of temperature and time.

  • Volatile flavor compounds in salt fermented big eyed herring were analyzed by vacuum simultaneous distillation solvent extraction/gas chromatography/mass spectrometry/olfactometry and aroma extract dilution anlaysis. A total of 44 volatile compounds were detected by GC/O analysis. Of these, 23 were positively identified, and composed of aldehydes(7), esters(5), ketones(4), sulfur containing compounds (3), aromatic hydrocarbons(2), alcohol(1) and nitrogen containing compound(1). Predominant odorants (Log3FD$\geq$5) in sample were ethyl butanoate(bubble gum /sweet candy-like), 3 methylbutyl butanoate (almond /nutty), 1 octen 3 one(earthy/mushroom like), (E,E) 2,6 nonadienal(roasted wheat/grainy), dimethyl trisulfide(soy sauce /cooked cabbage like), 2 acetylpyrazine(nutty/baked potato like) and unidentified compound(RI=1867, seaweed like).

Analysis of Properties of UV Corona on Insulator in Salt Water Environments (염수 환경 열화 상태를 모의한 절연애자의 자외선 코로나 특성 분석)

  • In this paper, the UV corona camera was developed using the solar blind and Multi Channel Plate(MCP) technology for the target localization of UV camera. UV camera developed a $6.4^{\circ}{\times}4.8^{\circ}$ of the field of view as a conventional camera to diagnose a wide range of slightly enlarged, and power equipment to measure the distance between the camera and the distance meter has been attached. The UV camera was developed and measured using a UV image, as applied voltage increased ultraviolet images of the phenomenon could be obtained. And we investigated properties of UV corona image on insulator in salt water environments. From the results, the breakdown voltage was decreased and UV images were taken at low voltages and the UV image is rapidly increased with increasing High voltage.

  • This paper was carried out to estimate pollution levels of various insulators in tunnel and establish cleaning period in each tunnel section. We estimate pollution level that is attached to insulators in environmental pollution area, industrial area, salt damage area. These results that the pollution quantity and conductivity were increased by pollution accumulation period. However, the conductivity showed each other big difference in each tunnel. In particular, the conductivity showed big in environmental pollution(tunnel A) and salt damage(tunnel C) area, It is considered to prevent accident that manage establishing periodic state of cleaning plan. Also, the Grease that spread on the insulator surface in existing is considered that it can prevent accident for long-term by restrain use.

Source Identification and Estimation of Source Apportionment of Ambient PM2.5 at Western National Park Site in USA (미국 서부 국립공원 지역의 미국 서부 국립공원 지역의 PM2.5에 대한 오염원 확인 및 기여도 추정)

  • The objective of this study was to estimate the $PM_{2.5}$ source apportionment at the Pinnacles National Monument IMPROVE site in western coastal USA. The PMF was applied to identify the existing sources and apportion the $PM_{2.5}$ mass to each source. To analyze local source impacts from various wind directions, the NPR analysis was performed using source contribution results with the wind direction values measured at the site. Also, PSCF was applied to identify the locations by point sources relative to the back trajectories. A total of 1,634 samples were collected from March 1988 to May 2004 by IMPROVE sampler and 32 chemical species were analyzed by PIXE, PESA, XRF, IC, and TOR methods. The PMF modeling identified seven sources and the average mass was apportioned to gasoline vehicle, secondary sulfate, aged sea salt, secondary nitrate, wood/field burning, diesel emission, and soil, respectively. In this study, the average mass was apportioned to gasoline vehicle (33.0%), secondary sulfate (25.7%), aged sea salt (17.8%), and secondary nitrate (10.1%). Also, this study suggests the possible role for source apportionment study of $PM_{2.5}$ at similar areas such as wildness, national park, and coastal areas in Korea.

Role of Osmotic and Salt Stress in the Expression of Erythrose Reductase in Candida magnoliae

  • The osmotolerant yeast, Candida magnoliae, which was isolated from honeycomb, produces erythritol from sugars such as fructose, glucose, and sucrose. Erythrose reductase in C. magnoliae (CmER) reduces erythrose to erythritol with concomitant oxidation of NAD(P)H. Sequence analysis of the 5'-flanking region of the CmER gene indicated that one putative stress response element (STRE, 5'-AGGGG-3'), found in Saccharomyces cerevisiae, exists 72 nucleotides upstream of the translation initiation codon. An enzyme activity assay and semiquantitative reverse transcription polymerase chain reaction revealed that the expression of CmER is upregulated under osmotic and salt stress conditions caused by a high concentration of sugar, KCl, and NaCl. However, CmER was not affected by osmotic and oxidative stress induced by sorbitol and $H_2O_2$, respectively. The basal transcript level of CmER in the presence of sucrose was higher than that in cells treated with fructose and glucose, indicating that the response of CmER to sugar stress is different from that of GRE3 in S. cerevisiae, which expresses aldose reductase in a sugarindependent manner. It was concluded that regulation of CmER differs from that of other aldose reductases in S. cerevisiae.

  • The degree of contamination in outdoor insulation system is one of the most importance factor to determine the level of insulation, and the salt is known as the most dangerous contaminants in the most region of the world. In a macroscopic point of view, as shown through the preceding study, the generation and deposition of salt contaminants has a great relation with the geographical conditions and the meteorological conditions, such as, wind velocity, wind direction, precipitation and so forth. However, in the aspect of microscopic analysis, the pollution mechanism has a great relation with aerodynamic properties of insulator, originated from the profile of insulators, and the non-uniform deposition is unevitable. So, in this investigation, we had make a experiment to seize the electrical properties of non-uniformly contaminated insulator. The results of this investigation could be used as a good groundwork in the determination of outdoor insulation design.
