The fatty acid contents of egg yolk from various chicken eggs such as general egg, ginseng egg, gamgoal egg and docosahexaenoic acid (DHA) egg were analysed during storage at 4$^{\circ}C$ for 3 weeks. The major fatty acids of all egg yolk oils were oleic acid (18 : 1) and palmitic acid (16 : 0). The contents of both fatty acids reached maximum at the first or second week and decreased at the third week. DHA was detected from 4 kinds of eggs stored for 2 or 3 weeks. The n-6/n-3 ratio was obtained under recommended intake range in fresh gamgoal egg and in general and DHA eggs stored far 0~3 weeks. For 3 weeks, polyunsaturated fatty acid / monounsaturated fatty acid/ saturated fatty acid (P/M/S) ratio of DHA e99 did not chance, but that of ginseng e99 gradually increased. The P/M/S ratio was generally maintained under recommended intake range in general egg stored for 3 weeks, in ginseng egg stored for 2 weeks and in DHA egg during all the storage period.
This study was conducted to investigate the effect of plant oils or egg white powder and wheat fiber on the quality properties of hamburger patties. Beef patties were manufactured from the control oil (tallow, 10%), CP (canola oil, 10%), OP (olive oil, 10%), COP (corn oil, 10%), and SP (sunflower oil, 10%). The patties that contained plant oils had lower cooking loss than the control patties. The CIE $L^{\ast}$-values before cooking were highest for the SP treatments and lowest for the control patties. In terms of the fatty acid composition, the plant oil treatments, regardless of cooking, had higher monounsaturated/saturated fatty acid (M/S) ratios than the control patties, but had lower trans fatty acid contents than the control samples. In the sensory evaluations, the color and overall acceptability were more highly evaluated in the control patties than in the patties that contained plant oils.

Demonstration of the highly positive correlation between blood cholestrol levels and heart disease has made consumers wary of the fats in meat, milk and eggs. The egg, as perhaps the single largest common source of cholesterol, has been cited by many members of the medical and scientific world as a food contributing to heart disease. In light of decreasing per capita egg consumption and continuing dietary egg cholesterol controversy, many researchers have focused their efforts on egg nutrition. The results reported, however, are often contradictory. In spite of the disputable scientific evidence, the egg has been labelled (erroneously) as a highly cholesterogenic food. The objective of this presentation is to present a general picture of the problem and discuss our laboratory findings relevant to the problem. An isotope technique was utilized to incorporate $^{14}C$-cholesterol into egg yolk lipoproteins and study the metabolic fate of dietary ovo-cholesterol in rats. Two hundred and fifty micro-curies of 4-$^{14}C$-cholesterol, emulsified in corn oil, were orally administered to five Single Comb White Leghorn laying hens. Eggs were collected, hard-boiled, and the hot dried egg yolk powder (HEY) was prepared. Total radioactivity excreted via feces was determined. The rat groups fed egg yolk powder excreted more than 95% of the ingested ovo-cholesterol, whereas the rat chow group excreted only 47%. No difference was observed between HEY and CEY treatments. Therefore, an unknown lipid factor present in egg folk accelerates cholesterol turnover rate and excretion via feces.
This study was carried out to investigate feeding of bacteria by Tigripus japonicus (Copepoda : Harpacticoida) under axenic culture. The ovigerous females and nauplii were grown with feed of aquatic bacteria. Growth of RT bacteria strain was suppressed by feeding of co-existing T. japonicus. T. japonicus of non-axenic culture was observed with oil bead in the egg sac. On the other hand, early nhauplius stage did not develop to the next stage without stage took bacteria as food. And the adult of T. japonicus may utilize the baxteria as nutrient source for egg development.

Two experiments were conducted to evaluate the feeding values of sesame oil meal (SOM) and to investigate the effects of its dietary supplementation on egg production in laying hens. In experiment I, the values of true metabolizable energy (TME), nitrogen corrected true metabolizable energy (TMEn) and true amino acid availability (TAAA) were determined by force-feeding 16 ISA-Brown roosters and collecting the total excreta from the birds, The TME and TMEn of SOM were 2.30 and 1.99 kcal/g, respectively, and the average TAAA of 15 amino acids was $76.93\%$. In experiment 2, a total of ninety, 48 weeks old ISA-Brown layer were randomly divided into 9 groups of 10 birds each and assigned to three experimental diets containing 0, 5 and $10\%$ SOM for 4 weeks (30 birds per treatment). The inclusion of SOM into laying hen diets at the 5 and $10\%$ level did not affect production and quality of egg. The C18:3 $\omega$3 content of egg yolks in the $10\%$ SOM group was higher than the other groups, but not significantly. There were no adverse effects on blood parameters in layers fed treated diets containing $5\%$ or $10\%$ SOM, The results indicate that SOM can be used for layers diet up to $10\%$ without any significant negative effects on egg production and quality.
The purpose of this study was to develop Zingiber officinale Roscoe powder(ginger powder) sweet rice muffins. The process included substituting sweet rice flour for cake flour and adding ginger powder. The mixing conditions for the ginger powder sweet rice muffins were a control and three levels of ginger powder (A), whole egg (B), and soybean oil (C) using central composite design, and were optimized by response surface methodology. The optimization was analyzed with regard to physical, textural, and sensory properties. Among the sensory properties, variables that appeared to show significant values, such as appearance, flavor, softness and overall quality were used to identify optimums. The numerical and graphical methods used in this study determined that the optimum formulation for ginger powder sweet rice muffins was 8.39 g of ginger powder, 215.37 g of whole egg, and 54.40 g of soybean oil. Ginger increases appetite, enhances metabolism and reduces the speed of aging. These health advantages of ginger provide evidences that ginger powder sweet rice muffins are a good healthy snack, particularly for the elderly.

This experiment was designed to examine the effects of supplemental vitamin D on laying performance, metabolic profile and egg quality of hens fed diets containing different fat sources and levels. Lohman strains (n = 480) were assigned to one of 10 diets: basal diet (BD), BD plus 2.5 and 5.0% sunflower oil (SO) or tallow (T) at vitamin D provided $1{\times}$ and $3{\times}$ of the current recommendation. The experiment lasted from week 30 to 44 of age. Each diet was tested in 12 replicate cages of 4 hens. Production, metabolism, and egg quality data were subjected to three-way ANOVA. Both fats decreased feed intake (FI) as compared to BD. Increasing SO and T levels linearly decreased and quadratically increased FI, respectively. The dietary factors did not affect egg production (EP) and egg weight. Vitamin D supplementation increased and decreased EP when diets contained SO and T, respectively. Feed conversion efficiency (FCE) for hens fed SO was lower than for hens fed T. However, increasing T level improved FCE, whereas increasing SO level worsened FCR. Vitamin D supplementation increased serum vitamin D and glucose concentrations. Vitamin D supplementation also caused a decrease and an increase in serum vitamin D concentration when diets contained SO and T, respectively. Serum glucose concentration for hens fed SO was lower than hens fed T. Increasing fat level linearly increased serum triglyceride and VLDL concentrations, regardless of the fat type. Increasing SO level linearly decreased serum cholesterol concentration. Vitamin D supplementation did not alter lipid metabolites. The dietary factors did not affect serum total protein, Ca, and P concentrations. As compared with BD, feeding SO decreased dry tibia and ash weights more than feeding T. Vitamin D supplementation tended to increase dry tibia weight and decrease tibia ash weight. Eggshell strength and thickness, yolk and albumen indexes, and Haugh unit were not responsive to the dietary factors. Eggshell strength quadratically increased with increasing T level. Yolk color for hens fed SO was lower than for hens fed T. The dietary factors did not affect most of yolk fatty acids. Increasing SO level quadratically decreased yolk $C_{18:2}$ concentration. Vitamin D supplementation increased and decreased yolk $C_{18:2}$ concentration when diets contained SO and T, respectively. In conclusion, increasing fat level improved laying performance without altering metabolic profile and egg quality. Vitamin D supplementation had minor alteration effects on laying performance, metabolic profile, and egg quality in response to fat feeding.

The combined effects of washing, sanitization and coating of eggshell on the physical and microbiological quality during storage were evaluated at $4^{\circ}$ and $30^{\circ}C$. The interior qualities of the eggs were assessed by weight changes, yolk index, albumen index, Haugh unit value, and microbial contamination of egg shell and egg white during 30 days of storage in untreated, washed, or sanitized and mineral oil-coated eggs. The results suggest that these changes were faster in higher temperature ($30^{\circ}C$) than lower temperature ($4^{\circ}C$) storage, and washed eggs deteriorated faster than untreated eggs. The sanitized and coated eggs maintained the best quality during storage in all parameters measured. The shelf-life of washed, sanitized and coated eggs could be extended 4-5 fold compared to that of washed or untreated eggs.
The structural function of three egg membrane layers and cuticle layer, and the effectiveness of 5 film coatings (chitosan, starch, gelatin, dextrin, mineral oil) on the prevention of Salmonella enteritidis penetration was investigated using confocal scanning laser microscopy (CSLM). Diameters of outer membrane fibers, inner membrane fibers and limiting membrane particles in eggshell were $1.5{\sim}7.2$, $0.8{\sim}2.0$ and $0.1{\sim}1.4\;{\mu}m$, respectively and average thicknesses were 10.0, 3.5, $3.6\;{\mu}m$, respectively. Average thickness of cuticle layer was $6.0\;{\mu}m$ and cuticle layer covered $40{\sim}80%$ of total eggshell surface. Average coating films thickness for chitosan, starch, gelatin, dextrin and mineral oil were 2.2, 2.5, 3.9, 3.6 and $5.0\;{\mu}m$, respectively. After immersion process eggshell surface was almost completely covered by coating films. Chitosan coating was most effective among 5 film coatings in inhibiting growth of Salmonella enteritidis. Penetration process of Salmonella enteritidis through eggshell was investigated by multicolor imaging using CSLM and plate counting. Cuticle layer was the most important structure in blocking the penetration. Among 5 film coatings, chitosan showed the best and similar effectiveness with cuticle layer.
