  • To decrease the rot of onion bulb during storage in simple house, later cultivar 'Changnyeungdaego' was dried after harvest on the field, ventilation house and non-ventilation house during 1 to 3days in 1997 and 1998. The maximum air temperature during pre-drying maintained highest in the non-ventilation house and lowest in the field, especially higher than 41.6$^{\circ}C$ at second and third day in 1997 and second day in 1998 on the non-ventilation house. Water content of onion bulbs showed 90.3∼89.5% at harvest and reduced 0.3∼l.8% in 1997, 0.2∼2.6% in 1998 after pre-drying, the rate of reduction was highest on the field and lowest on the ventilation house. Mean of maximum air temperature was 39.2$^{\circ}C$ in 1997 and 37.1$^{\circ}C$ in 1998 and relative humidity was 79.3% and 72.7% in July of 1997 and 1998, 78.2% and 79.1% in August of 1997 and 1998 during storage on the simple house after pre-drying. Rotting ratio of onion bulb showed higher in 1998 than 1997, but rotting appeared earlier 1997 than 1998. Total rotting rate as influenced by place and days of pre-drying was the lowest on the ventilation house, and highest on the non-ventilation. As the days of pre-drying increase, rotting rate of onion bulbs were lower. As above results, 1 or 2days of pre-drying on the ventilation house and 2 or 3days of pre-drying on the field were recommended to decrease the rotting onion bulb during storage.

  • This study was conducted to examine the antagonism of useful microbes against soybean sprout rotting pathogens and their effect on the growth of soybean sprouts. The antagonism against soybean sprout rotting pathogens and the effect on the growth of soybean sprouts were examined by using P. areofacience 14H-3, P. fluorescens R1-12 and B. cereus Yell, bacteria were shown to inhibit mycellial growth of Rhizotonia solani strongly. The results of this study are summarized as follows. P. areofacience 14H-3 and B. cereus Yell were highly antagonistic against Rizoctonia solani, while they were especially highly antagonistic against bacterial diseases. The effect of inhibiting the proliferation of soybean sprout rotting pathogens was also examined by adding the culture solution for antagonistic bacteria to the PDA. Both P. areofacience 14H-3 and P. fluorescens Rl-12 showed the inhibition rate of 78.8%, while B. cereus Yell did 52.9%. The fresh weight and length of soybean sprouts were measured after raising them with added antagonistic microbes and culture medium. Soybean sprouts treated with B. cereus Yell showed increased higher, compared with those not treated with it. Soybean sprouts were also raised in the culture solution with antagonistic bacteria to examine the growth of soybean sprouts. Soybean sprouts treated with the culture solution of 200 times showed better growth than those not treated with it. Analyze proximate composition in soybean sprout showed that moisture, ash, total sugar did not appear difference, but in case of crude protein B. cereus Yell(8.9%) increased about 2 times than control(3.6%), but occasion of crude fat and crude fiber were P. areofacience 14H-3, P. fluorescens Rl-12 increased about each 2 times than control. In occasion of vitamin, bacterial antagonist(9.4∼10.8mg%) was more higher than control(9.9mg%).

  • To elucidate the preservative characteristics of chestnuts, three varieties, Ungi, Okkang and Chuckpa, were stored in cellar, polyethylen film packing, and box with or without $\gamma-irradiation$, and chemical compositions, rates of sprouting and rotting were determined during the period of storage. The chemical compositions of raw chestnuts were: moisture, 59 to 63%; total sugar, 28 to 29%; reducing sugar, 0.1 to 0.2%; crude fiber, 0.6 to 0.9%; crude protein, 3.5%; vitamin C, 27 to 28mg%; and tannin, 50 to 58mg%. Total sugar and vitamin C were decreased during the period of storage, and of reducing sugar and tannin were increased. The rates after 6 months of storage after three vareitia were; 93 to 100% by the cellar storage; 35 to 57% by the box storage without $\gamma-irradiation$ and 1 to 4% with $\gamma-irradiation$; and none by the polyethylene film packing. The sprouting rate in Chuckpa decreased markedly as compared with the other two varieties. The rotting rates when stored for 6 months were: 4 to 6% by the box storage without $\gamma-irradiation$ and 7 to 12% with $\gamma-irradiation$; 5 to 8% by the polyethylene film packing; and 30 to 54% by the cellar storage. The rotting rate in Chuckpa was lower than the other varieties during the period.

  • The effects of water soaking and gamma irradiation on the storage quality of chestnuts (Castanea crenata) were investigated. Chestnuts weirs soaked in water for 48 hrs at room temperature, irradiated at 0, 0.15, 0.25 and 0.35 kGy of $\^$60/Co gamma ray, and then stored at 0$\^{C}$ and 95$\pm$2% RH for 9 months. Spouting was observed at the end of storage only in chestnuts that were soaked and irradiated at below 0.25 kGy. Rotting was found from the early stage of storage in all pre-treatment conditions, but the rotting rate of soaked chestnuts was higher twice than unsoaked ones after 9 months of storage. Weight loss was lower in soaked than unseated samples regardless of irradiation dose. Loss of flesh firmness was appreciably retarded as irradiation dose increased. Total sugar content decreased slowly in irradiated samples at the later periods of storage. Gamma irradiation resulted in the decrease of vitamin C content immediately after treatment, but retarded its loss rate during storage. Soluble tannin content was not affected by gamma irradiation at scout inhibition doses.

  • India has maximum genetic materials in early cauliflower, which grow in subtropical conditions. Different disease parameters like linear growth, maximum growth rate per day, AUDPC, apparent infection rate and percent diseased area were calculated in artificially inoculated plants. Apparent infection rate is not co-related with the black rot disease incidence and should never be considered during characterization of disease resistance and varietal screening. Based on the above disease parameters Kunwari-18, Phool Gobhi Kunwari, Kataki-7 and BT-10-2 were selected as moderately resistance to black rot in early cauliflower. These lines can be used for black rot prone area and also for black rot disease improvement programme. Considering the qualitative and quantitative parameters, slow rotting resistance cauliflower lines are selected as such for cultivation and would be best suited in integrated disease programme.

  • Most soybean sprouts grown in factories are sold on the market. When the soybean sprouts grow up to lateral root initiation, the rate and absolute amount of asparagine in the roots of all sprouts are comparatively low. To extract the greatest amount of asparagine from soy-sprouts, it is advantageous to grow sprouts more than 16 days. When sprouts were grown with ozonic water, it was possible to grow sprouts more than 16 days without any rotting problems. The content of asparagine in the sprouts were proportionally increased up to 16 days. When sprouts were grown in 0.2% of urea, the content of asparagine in sprouts were significantly increased. Soybean sprouts grown at $20^{\circ}C$ room temperature showed the highest yield rate and asparagine content, at the same time.

  • The rhizome rot of ginger, caused by fusarium oxysporum f.zingiberi, gives a great deal of damages to the ginger farming in Korea. Main symptoms to the disease include the yellowing and blighting of the stems as the rotting of rhizomes. The infection rate was 20 percent in Bongdong, Jeonbug, whereas 10 percent in Susan, Chungnam. The rate was higher at the farm where gingers had been cultivated for many years. To control the disease, soil fungicides Dowfum MC-2 and Tolene C-17 were turned out to be more effective than Di-Trapex nad Daconil. Treatment of Benlate to the rhizome pieces, which were cut for propagation, also showed a better result as compared with that of Othocide. Dual treatment of both Dowfum MC-2 or Tolene C-17 to the farm soil and Benlate to the rhizome pieces was recommended for the best chemical control.

  • The purpose of this study was to investigate secondary drying effects on garlic quality, and to define the optimal secondary drying conditions for garlic preservation. The secondary drying tests used garlic that was naturally dried once and stored at low temperature. After secondary drying, the garlic was stored in a warehouse at room temperature. Tests were performed at different low-temperature storage periods (60, 105, 150, 195, and 240 days), secondary drying temperatures (35 and $40^{\circ}C$), drying times (1, 2, 3 days), and room temperature storage periods (15, 30, and 45 days). The results were compared with a non-secondary drying condition control. In general, the $40^{\circ}C$-2 days dry conditions showed the lowest weight-loss rate (5%) and rotting rate during room temperature storage. The sprouting rate increased by 20% during the initial 15 day-room temperature storage, along with a small increase after 30 days of room temperature storage. Increases in drying temperature and the period of secondary drying conditions caused a decrease in firmness. In addition, the sprouting rate was 10% higher, and rotting rate 5~10% higher, for the non-drying condition, compared to drying conditions. Based on our results, the $40^{\circ}C$-2 days drying condition is the optimal secondary drying condition for garlic storage.

  • The influence of packaging methods(0.03mmPE, 0.05mmPE, 0.1mmPVC, VACUUM) and marketing temperatures(2$0^{\circ}C$, 1$0^{\circ}C$) on the shelf-life and quality were investigated in yam(Dioscorea). Respiration, weight-loss and rotting-rate was reduced in polyethylene film packaging in the order of VACUUM, 0.1mmPVC, 0.05mmPE, 0.03mmPE and the effect was more outstanding at 1$0^{\circ}C$ than 2$0^{\circ}C$. The ethylene concentration of PVC packaging group was higher than that of other packaging methods, which was related with sprouting. firmness was higher in low-temperature than in room-temperature. PPO activity was lower in vacuum than in other packaging methods, which was associated with browning. The shelf-life of yam was the longest in vacuum Packaging, 3 weeks at 2$0^{\circ}C$ and more than 4 weeks at 1$0^{\circ}C$.
