Organoleptic Quality Assessment of Dairy and Nondairy Products Supplemented with Ginger Oil: A Preliminary Study

  • The root of ginger (Zingiber officinale) contains gingerol, which is known to be responsible for its pharmacological activity. The essential oil extracted from ginger has been found to have various pharmacological effects. Thus, interest in the development of various beverages using ginger oil has recently increased. Therefore, in this study, the organoleptic quality assessment of cow milk, yogurt, kefir, soy milk, oat milk, and almond milk was conducted by supplementing them with oil extracted from ginger at various concentrations (supplemented with 0.5% increments from 0% up to 2%). A poor grade was obtained in the organoleptic quality evaluation, owing to the strong odor of ginger oil. However, when compared to that of the control, the samples supplemented with 0.5% ginger oil showed a good grade of organoleptic quality assessment. Therefore, this study is considered valuable as it is the first study to review the organoleptic quality assessment by supplementing milk, yogurt, kefir, soy milk, oat milk, and almond milk with ginger oil. Additionally, in order to improve organoleptic quality assessment, it is critical to estimate how much ginger oil supplementation concentration could be reduced and whether ginger oil exhibits various bio-activities at this concentration.

Global Oil Prices and Exchange Rate: Evidence from the Monetary Model

  • The study empirically examines the impact of monetary fundamentals along with global oil prices on the Pak-rupee exchange rate using the monthly data over 2001-2020. Employing the cointegrating vector autoregressive with exogenous variables (VARX) and vector error correction model with exogenous variables (VECMX), the study analyzes the impact of domestic monetary fundamentals while considering the foreign variables as weakly exogenous. In order to account for the structural breaks in the data, the Lagrange multiplier (LM) unit root test with two structural breaks has been used (Lee & Strazicich, 2003). The empirical results reveal that the domestic and foreign monetary variables significantly explain the exchange rate movements in Pakistan both in the long run and in the short run. The dynamic properties of the monetary model of exchange rate have been analyzed using the persistence profile analysis and generalized impulse response functions (GIRFs). The results reveal that the responses of shocks to domestic monetary fundamentals are consistent with the predictions of the monetary model of the exchange rate. Furthermore, being a net oil importer, a rise in global oil prices significantly depreciated the Pak-rupee exchange rate over the period of study. The global financial crisis (GFC) and pandemic (COVID-19) were also found to cause the Pak-rupee exchange rate depreciation.

  • Essential oil of the root of Angelica dahurica Benth et Hook(Umbelliferae) was investigated. Essential oil was obtained from the dried roots by steam distillation and fractionated by column chromatography. Each isolate or fraction was identified by GC, GC-MS and spectral analysis. It was found to contain eleven monoterpenes such as ${\alpha}-pinene(4.74%),\;campben, {\beta}-pinene,\;myrcene,\;{\alpha}-phellandrene,\;{\delta}-3-carene(39.4%),\;{\alpha}-terpinene,\;{\rho}-cymene,\;{\beta}-phellandrene,\;{\alpha}-terpinene,\;terpinolene\;and\;also\;found\;to\;contain\;4-vinylguaiacol,\;iso-elemicin,\;{\beta}-elemene$, caryophyllene, ligustilide, osthol and seven tentatively identified sesquiterpenes.

  • Essential oil of the root of Angelica gigas Nakai (Umbelliferae) was investigated. Essential oil was obtained from the dried roots by steam distillation and fractionated by column chromatography. Each isolate or fraction was identified by GC, GC-MS and spectral analysis. It was found to contain eleven monoterpenes such as ${\alpha}-pinene,\;camphene,\;{\beta}-pinene,\;myrcene,\;{\alpha}-phellandrene,\;{\Delta}-3-carene,\;{\alpha}-terpinene,\;p-symene,\;limonene,\;{\gamma}-terpinene$ and terpinolene and also found to contain 4-vinylguauacol, myristicin, elemol, ${\beta}-eudesmol,\;{\alpha}-eudesmol,\;four\;sesquiterpenes\;involving\;{\Delta}-elemene$. Four sesquiterpenes and five sesquiterpene alcohols were tentatively identified by comparison of their mass spectra.

  • This paper presents a case history of piping failures on power plant. The root cause of the failure was defined to set the optimal countermeasures. The failure comes from transient vibration and the 1st stress increased at the hydraulic oil supply system of control valves for high pressure steam turbine.

Presence of Two Apocarotenoids in Volatile Constituents of Onosma dichroanthum

  • Volatile constituents obtained by water distillation from the aerial parts and root of Onosma dichroanthum Boiss (Boraginaceae) native to the north of Iran were investigated by GC and GC/MS for the first time. Palmitic acid (39.61%) and decane (31.39%) were the major components in the root while decane (26.26%) and phytol (25.52%) were the predominant constituents in the aerial parts. Ketones, aldehydes, alkanes, fatty acids, oxygenated diterpenes and sesquiterpenes were characterized as the most phytochemicals in the aerial parts. Alkanes and fatty acids were identified as the main groups in the root volatile substances. There were two ketone derivatives, belong to apocarotenoids, in the aerial parts; β-ionone and hexahydrofarnesyl acetone.

Raman spectroscopic analysis to detect olive oil mixtures in argan oil

  • Adulteration of argan oil with some other cheaper oils with similar chemical compositions has resulted in increasing demands for authenticity assurance and quality control. Fast and simple analytical techniques are thus needed for authenticity analysis of high-priced argan oil. Raman spectroscopy is a potent technique and has been extensively used for quality control and safety determination for food products In this study, Raman spectroscopy in combination with a net analyte signal (NAS)-based methodology, i.e., hybrid linear analysis method developed by Goicoechea and Olivieri in 1999 (HLA/GO), was used to predict the different concentrations of olive oil (0 - 20%) added to argan oil. Raman spectra of 90 samples were collected in a spectral range of $400-400cm^{-1}$, and calibration and validation sets were designed to evaluate the performance of the multivariate method. The results revealed a high coefficient of determination ($R^2$) value of 0.98 and a low root-mean-square error (RMSE) value of 0.41% for the calibration set, and an $R^2$ of 0.97 and RMSE of 0.36% for the validation set. Additionally, the figures of merit such as sensitivity, selectivity, limit of detection, and limit of quantification were used for further validation. The high $R^2$ and low RMSE values validate the detection ability and accuracy of the developed method and demonstrate its potential for quantitative determination of oil adulteration.

소리쟁이 뿌리 열수 추출물의 폴리페놀 함량 및 추출물의 항산화 효과 (Polyphenol Contents of Rumex crispus Root Extract with Hot Water and its Antioxidative Effect)

  • This study was conducted to investigate the extraction characteristics including total polyphenol compound content (TPC) and the antioxidative effect of Rumex crispus root extract on commercial corn oil. Extraction yield was increased with extraction temperature but decreased with extraction ratio. No significant differences in aromatics content were found among the extracts prepared with various extraction conditions; extraction ratio, extraction temperature, extraction pH and composition of extractant. Total flavonoid content of the extract was increased with extraction temperature and extraction pH, and highest value of it was found when extractant composition of ethanol in water was 75%. Total polyphenol compound content (TPC) of the extract with 10 fold extraction ratio showed the highest value, but no significant difference in TPC was found with extraction temperature. Reducing power and DPPH (${\alpha}$,${\alpha}$-diphenyl-${\beta}$-picrylhydrazyl) radical scavenging ability (RSA) of the extract in spectrophotometric absorbance were decreased with extraction ratio but increased with extraction temperature and showed 63.1%~98.4% and 67.6%~86.7% of those of ascorbic acid in reducing power and DPPH RSA, respectively. The antioxidative effects of the extract on corn oil were 84.8~93.0% of that of commercial butylated hydroxytoluene, the antioxidant index value was highest when the ethanol composition to water in extractant was equal ratio.

도라지 추출물로부터 천연계면활성제의 개발 (Development of a Natural Surfactant from Extracts of Platycodon Grandiflorum)

  • 화장품용 천연계면활성제를 개발하기 위해 도라지(platycodon grandiflorum) 껍질에서 유기용매를 이용하여 추출물을 얻었다. 도라지 추출물의 화장품용 계면활성을 측정하기 위해 계면장력, 용해도, 기포력, 분산력, 유화력, 유화활성, 유화안정성을 측정하였고 피부자극을 평가하기위해 첩포시험을 실시하였다. 도라지 사포닌 함량이 0.005 wt%일 때 castor oil에 대한 계면장력은 11.5 dyn/cm로 비교대상인 Tween 40이나 quillaja bark보다 낮은 계면활성을 보여주었다. 도라지 추출물은 화장품에 유상으로 사용되는 olive oil, soybean oil, canola oil에 대해서도 우수한 유화활성과 유화안정성을 나타내었다. 2~5%의 도라지 추출물과 글리세린을 사용한 피부자극 시험에서는 도라지 추출물은 약간의 피부자극을 보여 주었다. 결론적으로 도라지 추출물은 화장품용 계면활성력은 양호하나 다소의 피부자극을 보여주었다.

까마중-에탄올 추출물의 기능적 특성과 항산화 효과 (Functional Properties and Antioxidant Effects of Solanum nigrum-Ethanol Extract)

  • Functional properties of Solanium nigrum-ethanol extract were investigated, nitrite scavenging ability(NSA) and antioxidant activities based on thiobarbituric acid(TBA) value were measured. The contents of potassium in fruit and root, calcium in leaf were the highest mineral components in each parts of Solanium nigrum. Total aromatics contents(TAC) was order of fruit>root>leaf, total flavonoid contents(TFC) in leaf was 6 and 10 times, total phenolic compounds contents(TPC) in leaf was 15 and 30 times of those in fruit and root, respectively, and TFC was high with TPC increase. NSA of leaf-ethanol extract was 61.9% on pH 1.2, 53.5% on pH 3.0, 54.8% on pH 4.0 and 14.3% on pH 6.0, where as NSA of root and fruit-ethanol were considerably low to 3.5~7.9% over pH 1.2~6.0. TBA value of soybean oil with the dosage of leaf-extract showed few differences from control within 3 days, but it fairly decreased with considerable antioxidant effect to 47.6% of the control in 8 days.
