Varietal Difference of Eating Quality after Storage in Room Temperature (벼 상온 저장시 식미관련 특성의 품종간 차이)

  • Rice ageing describes the changes in physical and chemical properties of rice grains during storage that alter the eating quality of rice. The prevention of deterioration in palatability of rice during storage is important for stable supply. In this study, We conducted to select the variety with superior palatability after storage at room temperature. 'Yeonghojinmi' had much higher head rice ratio of milled rice than that of 'Ilmi', 'Junam'and 'Hwayeong'at similar moisture content of approximately 15%. Grossiness and stickiness were higher in 'Yeonghojinmi' than that of the others. Meanwhile, yellowness(b value) of cooked rice was lower in 'Yeonghojinmi' than that of the others. Of the four varieties, Yeonghojinmi was maintained good eating quality after storage in room temperature, which also contributed to differences in palatability, such as protein content, glossiness, stickiness and color of cooked rice.

Detection of Pulsed Photostimulated Luminescence Signals Emitted by Infrared Stimulation of Irradiated Spices during Storage under Two Conditions

  • Accumulated photon counts in immediate measurement after irradiation of marjoram, basil and thyme were shown to be below 625$\pm$162, 577$\pm$178 and 1261$\pm$640 Pc, respectively. The accumulated photon counts increased linearly with increasing irradiation doses up to 5 kGy and slightly increased from 5 kGy to 10 kGy. This trend was similar after storage periods. According to storage conditions, the difference of the accumulated photon counts was net clearly observed. The accumulated photon counts of irradiated spice samples decreased with increasing storage periods. The rate of decrease was higher in 5 and 10 kGy irradiated samples than that in 1 kGy, and in room conditions than that in darkroom conditions. The photon counts of the irradiated spice samples measured for 120 s were higher than those measured for 60 s. The irradiated spice samples showed higher photon counts than those of unirradiated samples in both room and darkroom conditions during all the storage periods. These results indicate that detection of irradiation was still possible after 24 weeks, although the PPSL signal of all spice samples decreased with increasing storage times.

Changes in Color and Textural Properties of Acorn Bread According to Added Amount of Soymilk (두유 첨가에 따른 도토리식빵의 색도 및 조직감 특성 변화)

  • The objective of this study was to prepare acorn bread added with soymilk in order to improve its quality and develop the best possible recipe. The loaf volume, color, texture and sensory evaluation of acorn bread added with soymilk 10~40% were measured during the storage period. The L-value significantly decreased upon addition of 40% soymilk. A-value increased, but b-value decreased. During the storage period, the L- and a- values increased except 2 days at room temperature and 7 days in a freezer, whereas b-value decreased. For textural measurement, hardness, springiness, gumminess and brittleness increased significantly upon addition of soymilk. However cohesiveness decreased for 2 days of storage, whereas gumminess and brittleness for 1 day of storage at room temperature. Freezer storage for 1 day reduced cohesiveness, and gumminess for 4 and 7 days, respectively, and brittleness after all storage periods. The sensory evaluation showed that acorn bread added with soymilk 20% produced the best results in color and taste. The bitter aftertaste increased according to addition of soymilk with lower scores. Softness, chewiness and overall preference decreased significantly. Therefore, 10% soymilk addition got the best scores in aftertaste, softness, chewiness and overall acceptances.

Influence of Sample Form, Storage Conditions and Periods on Accumulated Pulsed Photostimulated Luminescence Signals of Irradiated Korean Sesame and Perilla Seeds

  • A study was carried out to examine the effect of sample form and storage conditions on the accumulated PPSL signals. Korean perilla and sesame seeds were tested as whole samples and separated minerals. Radiation-induced PPSL signals of perilla and sesame seeds themselves significantly increased with irradiation dose up to 5 kGy. On the other hand, a slight decrease in the accumulated PPSL signals was shown at 10 kGy. Similar results were also found in separated minerals. The accumulated PPSL signals of irradiated samples decreased with increasing storage periods. The decay rate was higher in 5 or 10 kGy-irradiated samples than in 1 kGy, in room conditions than in darkroom conditions, and in sesame and perilla seeds themselves than in separated minerals. The accumulated PPSL signals of the irradiated samples measured fur 120 s were higher than those measured for 60 s. These results indicated that although the PPSL signal of all samples decreased with increasing the storage time, detection of irradiated samples was still possible after 12 months of storage regardless of sample form and measurement times (60 and 120 s) in both room and darkroom conditions.

Quality Changes of Satsuma Mandarin during Storage by Storage Warehouse (저장고 형태에 따른 온주밀감의 저장 중 품질변화)

  • Quality changes of satsuma mandarin (Citrus unshiu Marc. var. miyagawa) during storage by storage warehouse were investigated. Citrus were treated with 2000-folds diluted iminoctadime-triacetate solution and 1.5% chitosan with 0.5% CaCl$_2$ solution, and were at 30$\^{C}$ for 24 hr before storage. The citrus of about 12kg/26L plastic container were stored at room temperature, and at 4$\^{C}$ with 87% relative humidity. Decay ratio of citrus with precise temperature and humidity control were lower than the others during storage. Penicillium italicum Monilia candida Alternara citri, Mucor hiemalis, Phomopsis citri Botrytis cinerea, Phoma citricarpa Clomererella cingulata, Penicillium digitatum were identified as putrefactive microorganisms in citrus storage. Weight loss, moisture content of peel and flesh were decreased slowly during storage. 24% of original acid content were decreased at room temperature on 120 days storage, compared to 15∼18% loss on cold storage. Total sugar of citrus was decreased rapidly after 90 days, and vitamin C content were also decreased rapidly after 60 days during storage.

Changes in the quality and secondary metabolites of kohlrabi during storage (콜라비의 저장 중 품질 및 이차대사산물의 변화)

  • To determine the optimal shelf life for maintaining the high quality of kohlrabi, the changes in the physiological and secondary metabolites of kohlrabi stems during storage were investigated. The results showed that the kohlrabi maintained its marketable quality for two weeks at room temperature and for two months in cold storage ($4^{\circ}C$). Interestingly, the total phenol and flavonoid contents sharply declined along with the quality deterioration after two-week storage at room temperature. Moreover, insignificant changes in these compounds were observed for two months during the cold storage. The secondary metabolites of the kohlrabi were also influenced by its storage condition. The total phenol and total flavonoid contents of the kohlrabi significantly increased with the storage periods at low temperature, and significantly decreased with the storage periods at room temperature. In terms of the packaging, no significant difference in the total phenol content of the kohlrabi was found between the packaged and non-packaged types of storage. However, the flavonoid content of the packaged kohlrabi was higher than that of the non-packaged kohlrabi at the end of their storage. The content of glucosinolates, an anti-cancer ingredient was maintained during the storage, so the vegetables remained good sources of these compounds when stored in cold storage even for a long period. This study showed a close correlation between the secondary metabolites and the change in the quality of kohlrabi during storage. The results also suggested that secondary metabolites such as phenolics can be considered quality indicators of the shelf life of kohlrabi.

A Study on the Heat Flow Characteristics and High Efficiency Thermal Storage of Inflowing Warm Air in the Room (실내유입온기의 열유동특성과 고효율 축열에 관한 연구)

  • A study on the distribution characteristics of inflowed warm air is important to analyze warm air storage in a room. Also, in point of energy saving during heating, warm air flow characteristics occurred by circulation and distribution of inflowed warm air should be analyzed, and the storage efficiency should be considered in order to increase efficiency of heating system. For this study, in the real-sized model room, the temperature differences between inflowing warm air and inner room air are 10, 20, $30^{\circ}C$(3steps), and the flow rates of inflowing warm air are 0.5, 1, 2, 3m/s(4steps) respectively as dynamic parameters. Also, anemos and vane diffuser are used as inlet geometric condition. Consequently, on geometric conditions, high thermal storage efficiency can be obtained with the vane diffuser, and heat flow characteristics depend on the inflowing velocity more than reference temperature difference.

Control of Softening of Long-Term Stored 'Fuji' Apples at Low Temperature and Subsequent Shelf-life by Combination Treatment of 1-MCP and Ethylene (1-MCP와 에틸렌 혼용처리가 장기간 저온저장 후 상온에 보관된 '후지' 사과의 연화 억제에 미치는 영향)

  • The effect of 1-methylcyclopropene (1-MCP) at $1.0{\mu}L{\cdot}L^{-1}$ was compared with control and $10{\mu}L{\cdot}L^{-1}$ ethylene treatment to evaluate softening control of apple (Malus ${\times}$ domestica Borkh.) fruit for 180 days at $0.5^{\circ}C$ in the air, followed for 28 days at a room temperature. 1-MCP or 1-MCP+ethylene treatment maintained high fruit titratable acidity and firmness after 120 days during the cold storage, which was similarly observed for 28 days at a room temperature. 1-MCP treatment maintained fruit firmness more than 14 N during the cold storage and shelf-life at room temperature. Fruit surface red color was not consistently affected by the treatments during the cold storage but enhanced more than 4.0 by 1-MCP at 21- and 28-days of room temperature. Control or ethylene treatment advanced overall preceeding of fruit softening as rapid ethylene production and respiration rates at 90 days during the cold storage increased to a climacteric maximum. Therefore, pre 1-MCP-treated fruit maintained high fresh condition at a long-term low storage + approximately one month room temperature-storage under $10{\mu}L{\cdot}L^{-1}$ ethylene treatment.

Effect of Packaging and Storage Temperature on the Shelf-life Extension of Kidney Bean (Phaseolus vulgaris L.) (풋꼬투리 강낭콩 보관온도가 품질에 미치는 영향)

  • To extend the shelf-life of kidney bean (Phaseolus vulgaris L.) after harvest, we investigated the effect of packaging material and storage temperature. In case of film package, there was no weight loss during storage, but in paper-box package, remarkable weight loss occurred as storage period extended and storage temperature risen. Firmness of kidney bean was greater in low temperature than ambient temperature storage. Content of vitamin C was decreased rapidly during storage, and in paper package, low temperature storage group had lower decrease of vitamin C than that of room temperature. Total chlorophyll content was not difference among storage temperatures in film package treatments. However, in paper-box package, decrease of chlorophyll in room temperature storage was greater than that of low temperature ($8{\sim}10^{\circ}C$). In terms of freshness of kidney bean, we suggest that shelf-life by low temperature storage ($8{\sim}10^{\circ}C$) after PP film or paper package was 8 days, but that by room temperature storage after paper package was 4 days.

Sustainable Elements in Transformation of Dwelling Space of Urban Traditional Houses in Cheongju City of Korea (청주 도시한옥 주공간의 변용에 나타난 지속적 요소에 관한 연구)

  • The purpose of this study is to investigate the present status of dwelling spaces and deduct sustainable elements in transformation of them by comparing the restored drawings with the surveyed drawings focused on traditional houses that exist in the urban area of cheongju city in Korea. In alteration and extension of these traditional houses, scale of a private room became larger as it has been connected and expanded, the exterior main hall (Daecheong) became the interior living room, and the conventional kitchen was westernized and changed from K type to DK or LDK type. The toilet located at outside was installed by the attached aisle (Toetgan) inside and the existing room. The extension was completed with equipments, storage space, and rental accommodation. The conservative and sustainable elements in the various transformation of them are as follows. Firstly, it was to maintain 3 rooms such as main room (anbang)-main hall (daecheong)-detached room (gunnunbang). Secondly, it was to sustain the circulation of kitchen and arrangement of the - type worktable even though it was westernized. Thirdly, extension of storage space was completed less than 600 mm within the eaves. Although there were functionally and structurally many changes in 18 houses, 4 houses had maintained wooden floor of main hall, 5 houses long planked wooden floor of the attached aisle, and 12 houses rafter ceiling of the main hall and the attached aisle.
