Variation of free Sugar and Amino Acid Contents of Pears During the Ripening Period (배의 성숙 중 유리당과 유리아미노산 함량 변화)

  • A variation of free sugar and amino acid contents of pears during the ripening period was determined by HPLC and amino acid analyzer. The research results are as follws: Fructose, glucose and sucrose were present in the pears. The contents of fructose was the highest, followed by glucose and sucrose in order. The contents of total sugar in Shingo and Youngsan was similar, but the contents of frucose in Shingo was lower and the contents of sucrose was higher than that of Youngsan (p<.001). During the ripening period, the contents of fructose and glucose gradually increased during the harvesting season and then somewhat decreased. The contents of sucrose increased continually, while the contents of total free sugar reached the maximum during the harvesting season, it was 10.41%, 10.29% in Shingo and Youngsan and then decreased gradually. The contents of total free amino acid in Shingo was higher than that of Youngsan. A variation ratio and the composition of amino acid in Shingo and Youngsan during the ripening period didn't make a significant difference. The major free amino acid of the pears was in the order of aspartic acid, serine, threonine, histidine, glutamic acid, valine, arginine, and alanine. During the ripening period, aspartic acid, threonin, serine, methionine, isoleucine, leucine, histidine, and Iysine increased gradually. Glutamic acid, alanine, valine, arginine didn't show much change. The contents of total free amino acid increased during the ripening period.

Effect of Ripening Period, Nitrite Level and Heat Treatment on the Chemical Characteristics of Turkish Dry Fermented Sausage (Sucuk)

  • In order to determine the potential for reduction of nitrite levels and ripening period with heat treatment, the effects of ripening period (1-13 days), nitrite level (45-195 ppm), and heat treatment (30-$90^{\circ}C$) on lipolysis, peroxide, TBA, proteolysis, and residual nitrite values of sucuk were investigated using response surface methodology. The ripening period significantly (p<0.01) increased lipolysis, peroxide, TBA, and proteolysis values and decreased residual nitrite values. The effects of additional nitrite levels were found to significantly affect peroxide and residual nitrite values. Significant amounts of the additional nitrite levels were reduced during processing and on the first day of ripening periods.

Environmental Mechanism on Seeding Stage and Ripening Period in Labour Saving-Direct Sowing Rice Culture (벼 성력재배를 위한 담수직파 파종시기와 등숙환경 분석)

  • Lodging and rainfalls during ripening periods and ripening patterns were studied by the different maturing varieties and different seeding dates in labour saving-direct seeding cultivation of rice. Period of emergency in earlier seeding plot was longer than later seeding plot and standing seedlings per unit area and rate of standing seedlings were more and high by the later seeding date. Number of panicles per unit area was decreased by the later seeding dates. On the other hand, the rate of effective tillers was lowest at later seeding plot. Days from seeding to flowering were shortened by the later seeding dates due to the increase of daily growth temperature and reduce of day length. There was much rainfalls during ripening period of early maturing varietal group, however not much rainfalls during ripening period of medium and late maturing varietal groups. The degree of lodging at field was severer by the amount of rainfalls during ripening period. Earlier seeding plots and earlier maturing varietal groups. of used varieties were revealed heavier lodging compared to later seeding plots and later maturing varietal groups. Yield and yield related characteristics were high and good by the earlier seeding dates, especially ripening rate was clear.

Quality changes of Oiji with various antimicrobial ingredients during fermentation (기능성재료를 첨가한 오이지의 숙성 중 품질 변화)

  • This study was carried out to observe the changes of Oiji quality during fermentation by preparing the samples with various functional ingredients (Chinese pepper(Sancho), onion, pine leaves) exerting antimicrobial effect. The pH values of all experiment groups decreased significantly in proportion to the ripening period(P<0.05). Control and Chinese pepper-added groups showed a rapid decrease in pH after 5 days of ripening, and Onion- and Pine leaves-added groups after 3 days of ripening. All experimental groups showed the lowest pH value at the 20th day of ripening. Rapid permeation of salt solution occured in all groups at the 3rd day of ripening. But the increase rate of salt permeation decreased gradually after 3 days of ripening. Lightness and redness in color decreased gradually in all groups, but the redness of Pine leaves-added group increased at the 30th day of ripening. Yellowness of control group was higher than that of others after 10 days of ripening(P<0.05), and the yellowness of pine leaves-added Oiji was the lowest among all after 5 days of ripening(P<0.05). The maximum cutting force of raw cucumber was observed at stem end followed by blossom end and middle part, and the Oiji samples also showed the same order at the early stage of ripening. In general, maximum cutting force of minor ingredient-added Oiji was higher than that of control and maximum cutting force was decreased at the 30th day of ripening. Onion-added group showed the highest value among all at the 40th day of ripening. Chinese pepper-added group was ranked low, but onion- and pine leaves-added groups were ranked high in sensory evaluation.

The Effect of the Addition of Encapsulated Collagen Hydrolysate on Some Quality Characteristics of Sucuk

  • The effect of addition commercial fish collagen hydrolysate and encapsulated fish collagen hydrolysate on the quality characteristics of sucuk (a traditional Turkish dry-fermented sausage) was investigated. Fish collagen hydrolysates were encapsulated with maltodextrin (MD) which has two different dextrose equivalent (12DE and 19 DE), with two different types of core/coating material ratios (10% peptide : 90% MD, 20% peptide : 80% MD). Than six group of sucuk dough (control, peptide, MD1210, MD1220, MD1910, MD1920) prepared and naturally fermented. The effects of the ripening period (28 d), treatment (peptide and encapsulated peptide addition) 'ripening period ${\times}$ treatment' interaction on sucuk's pH, lactic acid contents, $a_w$ values and moisture contents were statistically significant (p<0.01). The pH, moisture and $a_w$ decrease and lactic acid concentration increses during ripening period. The highest pH was observed with peptide added group (5.41), and encapsulated peptide added groups (4.76-4.77) were lower than the control group (5.26). Lactic acid concentration was affected from treatment and all treatment groups lactic acid concentration (0.185-0.190%) were higher than the control group (0.164%). Antioxidant and Angiotensin converting enzyme inhibition activities of water soluble protein extracts were significantly (p<0.01) increased during ripening time. Antioxidant activity reached the highest level at $28^{th}$ d. There was no significant increase observed after fermentation for both activities. Antioxidant activity of encapsulated peptide added (%39.56-40.48) groups were higher than control (34.28%) and peptide added (33.99%) groups except MD1920 (38.30%). The effect of the ripening period of the sucuk samples on TBA values was found to be statistically significant (p<0.01) while treatment and 'ripening period ${\times}$ treatment' interaction were not to be significant (p<0.05). The value of hardness was the highest in the encapsulated peptide added groups (29.27, 35.83 N), and it was 20.40 N and 15.41 N in the peptide added group and the control group respectively.

Incorporation of Selected Strains of Pediococcus spp. on Quality Characteristics of Dry Fermented Sausage during Fermentation and Ripening

  • This research investigated the physio-chemical and microbial quality characteristics of dry fermented sausage from selected Pediococcus strains: P. acidiliactici (PE1) and P. pentosaceus (PE2) as compared to commercial starter culture (COS) during fermentation and ripening. Treatments showed no substantial variation (p<0.05) in water activity (aw) values across the study period. PE1 and PE2 treatments exhibited similar (p>0.05) pH values and presented remarkable (p<0.05) lower volatile basic nitrogen (VBN) and thiobarbituric acid reactive (TBARS) content than COS treatment throughout the ripening period. However, the pH values in COS batch were considerably lower than others. PE1 samples presented a significant highest (p<0.05) counts both in lactic acid bacteria (LAB) and total plate count (TPC) than COS and PE2 treatments at 7 days fermentation, and it resulted in a similar and higher TPC count as COS after the ripening period. After the ripening process, treatments are ordered based on LAB counts as follows: COS>PE1>PE2. All batches presented similar redness and yellowness attributes since the 7 days of fermentation and in lightness across the study period. Treatments were similar (p>0.05) in springiness and chewiness traits across the study period and in hardness characteristics in the ripened products. Cohesiveness was higher in PE1 and COS batches. No variation (p>0.05) in aroma and sourness sensory attributes of treatments. The color attribute was highest (p<0.05) in PE1 and PE2 treatments and PE1 had the highest overall acceptability. The overall outstanding merit exhibited by PE1 can be utilized in the commercial production of high-quality dry fermented sausage.

Comparison of Quality Characteristics of Long-Term Matured Korean Soy Sauce (장기숙성 한식간장의 숙성 기간별 품질 특성 비교)

  • In this study, the quality characteristics of 30 kinds of long-term matured soy sauce collected from all over Korea classified according to ripening period were analyzed. The longer the soy sauce had to matured, the closer the pH was to neutrality. Acidity decreased as the ripening period increased. Total nitrogen and amino nitrogen content increased as the soy sauce matured. Moisture content decreased with the increasing soy sauce ripening period, and the content of pure extracts increased in proportion to the ripening period. The numbers of bacteria, fungi, and yeast increased in proportion to the maturation period. The content of P was highest in all soy sauce analyzed, followed by K, Ca, Mg, Fe and Zn. Mg and Ca contents decreased with maturing, whereas K increased with maturing.

Effect of Harvest Time on Yield and Quality of Rice (수확시기가 쌀의 수량과 품질에 미치는 영향)

  • The characteristics of yield and quality in 3 rice varieties according to harvest time of 40, 50, 60 and 70days after heading(DAH) was investigated to obtain basic information for the production of high quality rice. The protein content of milled rice increased significantly as increase the ripening period from 40 to 70DAH. The palatability value measured by rice taster was the highest in ripening period of 40DAH and decreased with increase of ripening period. The optimum time for harvest in terms of both rice yield and quality was 4050DAH in Daejinbyeo, and 4060DAH in Seojinbyeo and Chucheongbyeo, however, it was considered to be 4050DAH only for rice quality. The palatability value measured by rice taster showed a highly negative correlation with protein content of milled rice(1=-0.94$^{**}$) and cumulative ripening temperature(r=-0.79$^{**}$).

The contents of total sugar in Red fuji was relatively higher than that of Fuji. During the ripening period, the contents of fructose increased conspicuously for the harvesting season and then it decreased gradually. The contents of glucose increased gradually for the harvesting season and then it somewhat decreased. The contents of sucrose increased continually, while, the contents of total free sugar reached the maximum for the harvesting season and then it decreased gradually. A variation in the contents of free amino acid and composition during the ripening period didn't make a significant difference. The major free amino acid of the apples was in the order of aspartic acid, serine, threonine, glutamic acid, histidine, arginine, and alanine. During the ripening period, aspartic acid, threonin, serine, alanine, histidine, and arginine increased gradually. Especially, alanine, histidine, and arginine increased remarkably after the the harvesting season. Glutamic acid, valine, isoleucine, and leucine didn't show much change. The contents of total amino acid increased little by little as the apples ripened, dranstically increased during the harvesting season and slowly increased or slightly decreased after the harvesting seasom.

Changes in taste Characteristics of Traditional Korean Soy Sauce with Ripening Period (I) - Analysis of General Compounds and Sugars - (숙성 기간에 따른 전통 간장의 맛 특성 변화(I) -일반 성분과 당류 분석-)

  • This study was carried out in order to analyze the changes in general compounds and sugars of traditional Korean soy sauce with varying Meju concentrations (Meju-water ratios of 1 : 4 and 1.3 : 4) and ripening periods (up to 2 years). Along with ripening period, pH decreased and titratable acidity, total acidity and crude protein contents increased, which were higher in 1.3 : 4 than in 1.4. Buffering power increased significantly with increasing ripening period. Crude fat content was higher in 1.3 : 4 than 1 : 4. Moisture content decreased and pure extract content increased significantly with increasing ripening period, which was high in 1.3 : 4. Salt contents increased with increasing ripening period, but decreasd in soy sauce ripened for 2 years. As the result of sugar analysis, reducing sugar showed slow increase with increasing ripening period. Among detected free sugars, galactose was present in the highest concentration and the rest were in the sequence of glucose, fructose. Total free sugar content was highest in soy sauce ripened for 150days in 1 : 4 and 210 days in 1.3 : 4.
