어린이와 어머니의 떡에 대한 인식 비교 연구 (Comparison of children and mothers in opinion of ricecake)

  • To examine the opinions of consumers concerning the ricecake as a traditional food, we conducted the study of the cognition and interests of children and mothers ricecake for its popularization. Our subjects of study were elementary school children as the future consumers and their mothers as the present consumers. The results were as follows: children favored to eat much more western style food and sweet food than did mothers. All of children and mothers liked traditional food and ricecake, but children did not know how to prepare the traditional food and ricecake, indicating thenecessity of the education of ricecake-making. All of them were satisfied with the taste of ricecake 'on sale, but not with packaging designs and price of ricecake. Development of packaging designs was required for popularization of ricecake to spread worldwide.

서울지역 주부들의 세시음식에 대한 인지도 조사 (A Survey on the Perception of Housewives in Seoul Area toward Korean Traditional Holiday Foods)

  • This study was to investigate the perception of Korean traditional festival/holiday foods among the housewives in their 20's, 30's, 40's, and 50's residing in Seoul. Out of 350 questionnaires, 282 respondents were results The results were summarized as fellows: The most familial traditional holiday was Seollal on the New Year's Day(100%), and the most favored foods for respective traditional holidays are as fellows: tteokguk, rice paste soup, (98.23%) for Seollal on the New Year's Day; ogokbap, cooked rice mixed with five cereals (98.23%) for Daeboreum on the New Moon's Day of January 15; neuttitteok, zelkova ricecake, (20.64%) for Chopail on Buddha's Birthday; charyunbyeong cake (20.21%) for Dano on May 5; gyesamttang, chicken broth with ginseng, (89.72%) for Sambok, the hottest period of summer; songpyeon, pine cake, (96.45%) for Chuseok on August Moon Festival; patjuk, redbean stew, (98.94%) for Dongji on the winter solstice; and mandu, bun, (16.37%) for Seotdalgeumeum on the year-end day. Most of the respondents said that they ate traditional festival foods in compliance with the traditional manners and customs and that they made such traditional foods at home. They added that they wanted to team more about various recipes of the traditional foods and pointed out that traditional holiday foods had to be modernized in some way.

국내 . 외 전통음식 관련 관광상품의 현황 분석+ (The Study on the Present Status of Overseas and Domestic Tourism Products Focusing on Traditional Foods+)

  • The purposes of this study were to: a) investigate how other countries brought up their traditional food into the commercial market for tourists b) analyze present marketing status of the Korean traditional food in dealing with foreign tourists as consumers. Present marketing status of the overseas and domestic tourism products focusing on traditional foods was investigated through literature reviews and face-to-face in-depth interviews conducted with professionals in tourism business. As a result, the foreign tourism products focusing on traditional foods were diverse and these products were representative of the regional heritage brought together in an effect to increase understanding of traditional foods. In case of the tourism products focusing on Korean traditional cuisine, the popular programs were 'Making Kimch', 'Making ricecake' and 'Making Bibimbap' in which tourists participated have expressed great satisfaction. The results of this study would be used as an important data in developing unique tourism programs focusing on Korean traditional cuisine attracting foreign tourists.

강원 지역 농촌 주부들의 전통 식생활 습관에 관한 실태 조사(II) -자주 이용하는 전통음식 빈도와 시절식 및 전통 발효 음식 시행유무를 중심으로- (A Study of Korean Traditional Food, Fermented Food and Korean Traditional Holidays of Housewives Living in the Rural Area of Kang Won Do)

  • The housewives living in the rural area of Kangwondo were asked by using the questionaires about Korean traditional food, traditional fermented food, and traditional seasonal food enjoyed during traditional holidays. The results obtained are as follows; 1. Among Korean traditional foods, boiling rice, especially boiling rice and boiling mixed rice(70%) was the most frequently enjoyed. Hobakjook(17.1%) and popjook(10.5%) were enjoyed the most among jook. However, jook was not enjoyed as much as bah due to the difficulty of cooking method. 2. Doenjangkuk(94%) and mijokkuk(84.1%) which could be made easily and quickly were enjoyed most frequently among kuk, doenjangchigae(86.1%) and kimchichigae(78.1%) were enjoyed a lot among tchigae. 3. Gui was enjoyed a lot generally and kimgui(82.4%) and fishgui(78.1%) were enjoyed frequently. Especially, ojingogui was enjoyed most frequently compared with other areas. It is because squid is easily available in KangwonDo area. Hobakchon(51.8%) was enjoyed the most among Chon. 4. Pugochim(30.2%) among chim and kamjajorim(77.1%) among jorim were enjoyed the most due to the availability of pugo and kamja in the area. 5. Kongnamul(83.4%) and shigmuchinamul(66.3%) were enjoyed the most among namul. Chuinamul (28.7%) was the most frequently enjoyed among sannamul. 6. Kalkuksoo(69.8%) was the most frequently enjoyed ilpumfood. In addition, kalkuksoo(30.3%) and kamja ongsim(11.4%) which are traditional KangwonDo food, were enjoyed a lot. 7. For home party, Songp'yon(25.3%) and shik'ye(27.8%) were the most frequently enjoyed ricecake and korean beverage, respectively. 8. Korean traditional holidays in which traditional seasonal food was enjoyed, were in order of the New Yea.'s Day(97.9%), Chusok(95.6%), Sangwan(First Full moon day)(70.8%), Dong-ji(49.5%), Sambok (27.7%), Danoh(22.6%), and Hanshik(14.1%). Generally, Ipchun, Sam Jin's day, Yudu, and Chilsok were not enjoyed. 9. Korean traditional fermented food enjoyed were in order of kimchi(98.2%), koch'ujang(96.4%), toenjang(89.4%), kanjang(86.8%), makjang(74.5%), and jang-a-chi(66.4%). Especially, Koch'ujang was made by themselves in almost all homes. The Korean traditional foods frequently enjoyed were investigated. We have to keep and develop our traditional food and its cooking method for our offsprings.

서울지역 주부들의 혼례음식에 대한 인지도 조사 (A Study of Recognition of Housewives on Wedding Food in Seoul Area)

  • 본 연구는 서울 지역의 주부를 대상으로 하여 혼례음식(폐백과 이바지 음식)의 인식상황과 실태를 파악함으로써 혼례음식 발전의 기초자료를 제공하고자 얻은 결과를 요약하면 다음과 같다. 첫째, 폐백음식의 인식에 대해서는 '결혼 후 시댁에 인사를 드리는 것'이라는 응답이 55.2%, '옛날부터 내려오는 하나의 풍습'이 35.8%로 나타나 상당히 정확하게 알고 있는 것으로 나타났다. 폐백음식에 대한 중요도 인식수준은 전체 응답자의 10.2%가 '매우 중요하다'라고 응답하였으며, '중요하다' 48.5%, '중요하지 않다'는 11.9%로 나타나 폐백음식의 중요성에 대하여 공감하는 비율이 높게 나타났다. 특히 주부의 연령별로 20대 집단에서 30대 이상의 집단에 비해 '중요하지 않다'는 응답율이 높게 나타났다(p<0.05). 둘째, 폐백음식 준비방법으로는 '가정에서 직접마련'한다와 '시장이나 떡집에서 마련'하겠다는 응답이 비슷한 비율을 보였으며, 연령별 교육수준별(p<0.05)로 유의한 차이를 보였다. 폐백음식 장만시 드는 비용으로는 '30-50만원'이라고 응답한 비율이 50%로 가장 높게 나타났고, '10-30만원'29%>'50-100만원'18% 순으로 나타났다. 셋째, 선호하는 폐백음식으로는 '밤 대추고임'을 준비한다는 의견이 77.5%로 가장 높게 나타났으며, 그 다음으로 '떡류'>'육포'>'술'>'한과'등의 순으로 나타났다. 넷째, 이바지음식에 대한 의미로는 48.2%가 '신부측에서 마련한 음식을 시댁에 보내는것'이라고 응답하였으며, 이바지 음식의 필요성에 대해서는 '반드시 준비해야한다'라는 의견이 15.5%, '형편에 맞추어 준비한다'는 78.7%, '준비할 필요가 없다'5.8%로 나타나 전반적으로 이바지 음식의 필요성에대해서 공감대를 형성하고 있는 것으로 나타났다. 또한 취업주부가 '필요하다'라는 응답이 높게 나타났고, 종교적으로도 불교를 믿는 주부보다 기독교를 믿는 주부들에게서 유의적인 차이를 보였다(p<0.01). 다섯 번째, 혼례음식의 개선점으로 메뉴의 간소화> 가격을 저렴하게 하는 문제> 폐백음식 선택의 다양화 순으로 나타났다. 연령별로 40대 주부집단에서 '메뉴의 간소화' 응답율이 높게 나타났다(p<0.01). 이상의 같은 연구 결과로 보아 우리나라의 모범이 되는 혼례음식의 계승을 위해서 꾸준한 노력과 관심이 필요하다고 사료된다. 과거와 다른 신식혼례를 치르면서도 폐백을 드리고 이바지 음식 보내는 풍습은 계속 이어지고 있다. 이러한 혼례 풍습은 계속 이어질 것이기에 혼례음식이 가지고 있는 기복과 주술적인 의미를 되살리면서 저렴한 가격으로 누구나 손쉽게 장만할 수 있는 간편한 방법이 모색되어 전통을 살리면서 모범이 되는 혼례음식문화를 계승 발전시켜 나가야 하겠다.
