민들레 추출액 농도에 따른 민들레 코팅쌀밥의 품질에 관한 연구 (Characteristics of Cooked Rice According to Different Coating Ratiosof Dandelion (Taraxacum officinale) Extracts)

  • 씻어 놓은 쌀에 민들레 추출액을 각각 20, 30, 40 $^{\circ}$Brix의 농도로 하여 쌀에 $5\%$를 첨가하며 10분 동안 5 mL/min의 속도로 분무하여 회전하며 코팅 쌀을 가공하였다. 대조군의 수분함량은 민들레 추출액 코팅 쌀보다 높게 나타났으며, D-40의 수분함량이 가장 낮았다. 색차계 측정값인 L값, a값은 코팅 수준이 증가할수록 낮아졌고 b값은 증가했으며, 밥을 지은 당일과 저장 2일 모두 같은 경향을 보였다 민들레 코팅 수준이 높은 쌀가루에서 DSC 호화 개시 온도는 높게 나타났으나 호화 정점 온도는 낮게 나타났다. 텍스쳐 측정결과 코팅 수준이 높아질수록 경도, 부착성, 탄성, 응집성, 씸힘성, 검성이 증가했고, D-20이 가장 바람직하게 평가되었으며 저장 2일 후도 같은 경향을 보였다.

The Influence of Different Fiber and Starch Types on Nutrient Balance and Energy Metabolism in Growing Pigs

  • A repeated $4{\times}4$ Latin square design was conducted with eight ileal cannulated castrates to examine the effect of source of starch and fiber on nutrient balance and energy metabolism. Pigs were fed on one of the four experimental diets: Control diet (C) mainly based on cooked rice; and diets P, S and W with the inclusion of either raw potato starch, sugar beet pulp or wheat bran supplementation, respectively. With the exception of an increased (p<0.05) energy loss from methane production with diet S observed, no significant differences (p>0.05) in the ratio of metabolizable energy (ME)/digestible energy, the utilization of ME for fat deposition and for protein deposition, energy loss as hydrogen and urinary energy were found between diets. The efficiency of utilization of ME for maintenance was lower (p<0.05) with diets P and S than with diet C. The inclusion of fiber sources (sugar beet pulp or wheat bran) or potato starch reduced the maintenance energy requirement. The fecal energy excretion was increased (p<0.05) with either sugar beet pulp or wheat bran supplementation, while it was unaffected (p>0.05) by addition of potato starch. In comparison with diets C and P, a lowered ileal or fecal digestibility of energy with diets S and W was observed (p<0.05). Feeding sugar beet pulp caused increased (p<0.05) daily production of methane and carbon dioxide and consequently increased energy losses from methane and carbon dioxide production, while it did not influence the daily hydrogen production (p>0.05). An increased (p<0.05) proportion of NSP excreted in feces was seen by the supplementation of wheat bran. Higher NSP intake caused an increased daily amount of NSP in the ileum, but the ileal NSP proportion as a percentage of NSP intake was unaffected by diets. Feeding potato starch resulted in increased daily amount of starch measured in the ileum and the proportion of ileal starch as a percentage of starch intake, while no significant influence on fecal starch was found. Higher (p<0.05) daily amount of fecal starch and the proportion of fecal starch as a percentage of starch intake were found with fiber sources supplementation compared with diets C and P. By increasing the dietary NSP content the fecal amount of starch increased (p<0.01).

Physicochemical Properties of a Giant Embryo Mutant Induced by T-DNA Insertion in Rice

  • This study was conducted to determine the physicochemical properties of a giant embryo rice 'P47JB-4-B-5-B' derived from the cross between 'P47', a mutant of 'Hwayoung' induced by T-DNA insertion, and 'Junam'. The grain appearance and chemical components of the embryo were analyzed and compared with a donor cultivar, 'Hwayoung'. The proportion of embryo weight to grain weight of 'P47 JB-4-B-5-B' was 2.2 times heavier (6.7%) than that (3.1%) of 'Hwayoung'. Total free amino acid content (75.81 mg/100 g) of 'P47JB-4-B-5-B' was 2.1 times higher than that of 'Hwayoung'. The GABA content in brown rice was 14.06 mg/100 g in 'P47JB-4-B-5-B' and 6.8 mg/100 g in 'Hwayoung'. Especially, the GABA content in brown rice of 'P47JB-4-B-5-B' remarkably increased (about 33 times from 1.48 mg to 44.81 mg/100 g) 2 days after germination. Continuous frequency distributions and transgressive segregation in embryo length and width were observed in the $F_2$ population of the cross between 'P47' and 'Cheongcheong', indicating that the giant embryo was controlled by quantitative trait loci. However, embryo length and width demonstrated high broad sense heritability, implying that giant embryonic traits could be selected in earlier generations in comparison with other quantitative traits.

청주박을 이용한 저식염 고추장의 양조 (Effect of Sake Cake on the Quality of Low Salted Kochuzang)

  • 전분질원의 일부로 청주박을 이용하고 식염의 일부를 알코올과 마늘로 대체한 저식염 고추장을 제조하였다. 숙성 중의 amylase 활성도는 청주박의 배합비가 증가할 수록 대체로 증가하였으나 protease의 경우는 25% 배합구에서 높았다. 청주박의 배합비가 증가할수록 고추장 숙성 중의 호기성 세균과 곰팡이수는 감소하였다. 또 숙성 중의 pH 변화와 환원당량의 증가는 적었으나 적정산도와 알코올 및 아미노태 질소량은 증가하였다. 70일 숙성시킨 고추장의 맛과 향기는 쌀 대신 청주박을 25% 배합한 구에서 우수하여 저식염 고추장 양조시청주박을 일부 배합함으로써 품질의 향상을 기대할 수 있었다.

Phylogenetic Diversity of Dominant Bacterial and Archaeal Communities in Plant-Microbial Fuel Cells Using Rice Plants

  • In this study, the phylogenetic diversities of bacterial and archaeal communities in a plant-microbial fuel cell (P-MFC) were investigated together with the environmental parameters, affecting its performance by using rice as a model plant. The beneficial effect of the plant appeared only during a certain period of the rice-growing season, at which point the maximum power density was approximately 3-fold higher with rice plants. The temperature, electrical conductivity (EC), and pH in the cathodic and anodic compartments changed considerably during the rice-growing season, and a higher temperature, reduced difference in pH between the cathodic and anodic compartments, and higher EC were advantageous to the performance of the P-MFC. A 16S rRNA pyrosequencing analysis showed that the 16S rRNAs of Deltaproteobacteria and those of Gammaproteobacteria were enriched on the anodes and the cathodes, respectively, when the electrical circuit was connected. At the species level, the operational taxonomic units (OTUs) related to Rhizobiales, Geobacter, Myxococcus, Deferrisoma, and Desulfobulbus were enriched on the anodes, while an OTU related to Acidiferrobacter thiooxydans occupied the highest proportion on the cathodes and occurred only when the circuit was connected. Furthermore, the connection of the electrical circuit decreased the abundance of 16S rRNAs of acetotrophic methanogens and increased that of hydrogenotrophic methanogens. The control of these physicochemical and microbiological factors is expected to be able to improve the performance of P-MFCs.

Fumonisin B1 Contamination of Cereals and Risk of Esophageal Cancer in a High Risk Area in Northeastern Iran

  • Introduction: Fumonisin B1 (FB1) is a toxic and carcinogenic mycotoxin produced in cereals due to fungal infection. This study was conducted to determine FB1 contamination of rice and corn samples and its relationship with the rate of esophageal cancer (EC) in a high risk area in northeastern Iran. Methods: In total, 66 rice and 66 corn samples were collected from 22 geographical subdivisions of Golestan province of Iran. The levels of FB1 were measured for each subdivision by thin layer and high pressure liquid chromatographies. The mean level of FB1 and the proportions of FB1 contaminated samples were compared between low and high EC-risk areas of the province. Results: The mean of FB1 levels in corn and rice samples were 223.64 and 21.59 ${\mu}g/g$, respectively. FB1 contamination was found in 50% and 40.9% of corn and rice samples, respectively. FB1 level was significantly higher in rice samples obtained from high EC-risk area (43.8 ${\mu}g/g$) than those obtained from low risk area (8.93 ${\mu}g/g$) (p-value=0.01). The proportion of FB1 contaminated rice samples was also significantly greater in high (75%) than low (21.4%) EC-risk areas (p-value=0.02). Conclusion: We found high levels of FB1 contamination in corn and rice samples from Golestan province of Iran, with a significant positive relationship between FB1 contamination in rice and the risk of EC. Therefore, fumonisin contamination in commonly used staple foods, especially rice, may be considered as a potential risk factor for EC in this high risk region.

우분에 왕겨 혼합수준이 지렁이의 생육과 분립 생산에 미치는 영향 (Effects of Mixture Ratios of Cow Manure and Rice Hull on the Growth of Earthworm (Eisenia Foetida) and Cast Production)

  • 본 실험에서는 우분과 왕겨의 혼합수준을 달리하여 지렁이 먹이로 이용하였을 때, 지렁이 생육과 증식에 미치는 영향과 지렁이 분립의 생산량 및 화학적 조성을 조사하여 우분의 효율적인 Vermicomposting의 기초자료로 이용하고자 실시하였다. 그 결과를 요약하면 다음과 같다. 먹이의 탄질율은 $20.43{\sim}31.16$으로 왕겨 혼합수준이 증가함에 따라 탄질비도 높아졌으며 실험기간 동안 지렁이의 생존율은 $97.6{\sim}98.4%$로 나타났다. 산자수는 왕겨혼합구가 $824{\sim}844$ 마리로 순수 우분구의 769마리보다는 유의하게 높게 나타났다(P<0.05). 산자중은 $8.00{\sim}11.80g$ 으로 왕겨 혼합수준이 높을수록 유의하게 높아져 왕겨 40% 혼합구가 가장 높았다(P<0.05). 지렁이 분립생산은 왕겨 혼합수준이 높을수록 낮게 나타났으며 소화량은 이와는 반대로 왕겨 혼합수준이 높을수록 높은 경향이었다. 분립의 탄질율은 왕겨 혼합수준이 높을수록 높아져 왕겨 40% 혼합구가 다른 구보다 유의하게 높았다(P<0.05). 중금속 함량은 왕겨 혼합수준이 높을수록 낮아지는 경향이었다.

발효 팽이버섯폐배지의 볏짚 대체 급여가 사료의 면양 체내 이용성 및 거세한우의 성장에 미치는 효과 (Effects of Dietary Replacement of Rice Straw with Fermented Spent Mushroom (Flammuliua velutipes) Compost on Availability of Feeds in Sheep, and Growth Performance of Hanwoo Steers)

  • 본 연구는 팽이버섯 재배 후 폐기물로 방치되어온 팽이 버섯 폐 배지를 거세한우 사육용 조사료로의 사료적 가치를 규명하기 위해 반추위 누관이 장착된 면양 3두를 이용한 대사시험과 12개월령의 거세한우 24두를 이용하여 20개월령까지 8개월간 사양 실험을 실시하였다. 대사시험의 경우 시판 한우 비육 전기용 배합사료(70%)와 볏짚(30%, 건물 기준)을 급여하였으며(대조구, CON) 시험구의 경우 발효 팽이버섯 폐 배지(fermented spent mushroom compost, FSMC)를 대조구 볏짚 급여량의 30% (FSMC-30) 또는 60% (FSMC-60, 건물 기준) 수준으로 대치하여 급여하였다. 거세한우를 대상으로 한 사양시험 사료 역시 대사시험과 동일한 방법으로 제조된 발효 팽이버섯 폐 배지를 동일한 비율로 볏짚을 대치하여 급여하였다. 면양 반추위액의 pH는 발효팽이버섯 폐 배지가 포함된 시험사료(FSMC-30 및 FSMC-60)에 의한 영향을 받지 않았다. 반추위액의 암모니아의 농도는 사료 급여 후 3시간에서 볏짚의 60%를 FSMC로 대치하여 급여한 처리구(FSMC-60)에서 암모니아 농도가 가장 높았다(P<0.045). Acetate 조성비율은 사료 급여 후 1시간 및 3시간에서 볏짚대신 발효팽이버섯 폐 배지를 60% 대치 급여한 처리구(FSMC-60)에 비하여 볏짚을 급여한 대조구에서 더 높았다(P<0.001). 이와는 반대로 propionate 조성 비율은 모든 반추위액 채취 시간에 걸쳐 FSMC-60 처리구에서 가장 높은 것으로 나타났다(P<0.027~P<0.002). Butyrate의 경우 타 처리구에 비하여 볏짚대신 발효팽이버섯 폐 배지를 30% 대치 급여한 처리구(FSMC-30)에서 사료 급여 30분 전(P<0.031)과 급여 후 1시간(P<0.011) 및 6시간(P<0.039)에 높은 조성 비율을 보였다. Propionate에 대한 acetate의 비율($C_2/C_3$)은 FSMC-60 처리구에서 가장 낮은 것으로 나타났다. 시험사료의 건물(EDDM), 조단백질(EDCP), 조지방(EDEE) 및 NDF(EDNDF) 유효 분해율은 볏짚에 대한 발효팽이버섯 폐 배지 대치에 의한 영향을 받지 않은 것으로 조사되었다. 조단백질(P<0.031)과 NDF (P<0.006)의 전장 소화율은 조사료로서 볏짚만을 급여한 처리구에서 높았지만 발효팽이버섯 폐 배지를 볏짚의 60% 수준으로 대치 급여한 처리구(FSMC-60)에서 가장 낮은 것으로 나타났다. 거세한우의 총 증체량 및 평균 일당증체량은 시험사료에 의한 영향을 받지 않았다.

Effect of Additive on the Chemical Composition of Tra Catfish (Pangasius hypophthalmus) By-product Silages and Their Nutritive Value for Pigs

  • Two experiments were conducted to determine i) the fermentation characteristics of catfish by-product (C) ensiled with rice bran (RB) or sugarcane molasses (M) in different ratios, and ii) the digestibility of the silages in growing pigs. In the ensiling experiment, there were three ratios of C, ensiled with RB or M, of 8:2, 7:3 and 6:4 (wet basis for C and air-dry basis for RB and M). The six treatments were CRB8:2, CRB7:3, CRB6:4, CM8:2, CM7:3 and CM6:4, with 3 replications per treatment and seven sampling times. The pH of CRB7:3 and CRB6:4 decreased (p<0.05) from the first week and stayed stable until 8 weeks of ensiling, but the pH did not decrease in CRB8:2. The pH of CM8:2, CM7:3 and CM6:4 decreased rapidly from the first week until week 8. Dry matter (DM) and crude protein (CP) contents were slightly lower when catfish by-product was ensiled with RB than with M. Ammonia content in all treatments increased (p<0.05) during ensiling. Lactic acid content in silages with molasses increased from the first week, with the highest value at week 4. However, the lactic acid content in CRB8:2 did not increase with time and had the lowest value of all treatments. Acetic acid proportions of total volatile fatty acids were low at day 0, with the highest value at day 7, decreasing slowly until 8 weeks. The butyric acid proportion was highest at day 0 and decreased up to week 8. The proportion of propionic acid increased during ensiling. The digestibility experiment had a 4${\times}$4 Latin-square design and included 4 castrated crossbreed (Yorkshire${\times}$Landrace) male pigs fed four diets. The basal diet (BD) included rice bran, broken rice and maize meal, and the other three diets included fish meal (FMD) or catfish by-product ensiled with rice bran (CRBD) or sugarcane molasses (CMD). The silages chosen were those which gave the best results in the ensiling experiment for each additive. The coefficient of total tract apparent digestibility (CTTAD) of DM and organic matter (OM) was not significantly different among treatments. The CTTAD of CP was not different among the silage diets, but was lower in BD (p<0.01). The CTTAD of ether extract (EE) was higher in the catfish by-product silage diets than in FMD and BD. There was no significant difference in the digestibility of DM, OM, CP and EE between the fish meal and the by-product silages. In conclusion, catfish by-product can be successfully preserved by ensiling. Moreover, the total tract apparent digestibility of OM, CP and EE in ensiled catfish by-product was comparable with that of fish meal.

자연산 및 양식산 메기의 미네랄 함량 및 영양평가 (Nutritional Assessment and Mineral Content of Wild and Cultured Catfish Silurus asotus)

  • This study was performed to evaluate mineral contents of catfish Silurus asotus. As a result of mineral content, the mean content of the macro mineral was (in descending order): K (310.36-412.66 mg/100 g), P (186.42-223.02 mg/100 g), Na (35.32-57.87 mg/100 g), Mg (22.88-31.87 mg/100 g), Ca (9.05-13.07 mg/100 g). In comparison, the mean content of the micro mineral was (in descending order): Fe (0.26-0.95 mg/100 g), Zn (0.26-1.02 mg/100 g), Cu (ND-0.08 mg/100 g), Mn (0.01-0.03 mg/100 g). A proportion of mineral intakes with the dietary reference intakes for Koreans (KDRIs) set by the Korean Nutrition Society. Nutrient uptake proportion of mineral intakes was (in descending order): P (62.16%), K (20.71%), Mg (16.82%), Fe (13.02%), Zn (11.38%) Cu (10.94%), Na (6.59%), Ca (3.09%), Mn (0.96%). The mineral content was compared with the major protein food sources according to the Korea Health Statistics (2013) such as polished rice, pork, chicken, beef, eggs and milk. The calcium content contains; lower level of milk and eggs, chicken whereas higher levels of rice, pork and beef. Catfish has less iron content than major protein food source. Phosphorus and potassium contain higher level of major protein food sources.
