정전특성(靜電特性)을 이용(利用)한 현미(玄米) 분리기(分離機)의 개발(開發)에 관한 기초(基礎) 연구(硏究) - 벼의 정전특성(靜電特性)에 관하여 - (Development of Brown Rice Separator Using Electrostatic Properties of Rice -Electrostatic Properties of Rice-)

  • As a preliminary step toward the development of a multipurpose electrostatic separator for agricultural use, this study investigated the effect of moisture level, geometrical characteristics and the electric field strength of a charging device on the electrostatic charging of brown rice, unhulled paddy, small stones and broken rice that are produced during the milling process. The results are summarized as follows. 1. Average electrostatic charge per unit mass of paddy is greater than that of brown rice. 2. Charge per unit mass of rice kernel increases linearly with moisture content and electric field strength of the charging device, presenting no correlations with length or thickness of rice kernel. 3. Frequency distributions in electrostatic charge per unit mass of paddy and brown rice kernels indicated that the portion, not overlapped, ranged from 10 to 29% with Japonica rice and from 32 to 49% with Indica rice. 4. The difference in moisture content between paddy and brown rice must be over 6%, if they are to be electrostatically separated to over 95%. 5. Theoretical portions of brown rice to be separated from a mixture primarily by the electrostatic charge and secondarily by the length or by the thickness were 95~100% and 27~76%, respectively. 6. Frequency distribution of electrostatic charge for broken kernels overlapped that of paddy and brown rice, which the small stones didn't.

식미에 영향을 미치는 쌀 곡립의 이화학적 특성 (Physicochemical Properties of Rice Kernels Affected on Palatability)

  • 식미 선발지표 개발을 위한 기초적인 자료를 제공하고자 밥 맛이 아주 좋다고 알려진 쌀과 밥 맛이 나쁘다고 알려진 쌀들의 이화학적 성분 특성을 분석한 결과는 다음과 같다. 1. 식미검정계를 통하여 단백질, 아밀로오스, 수분 함량들로부터 산출한 식미치는 고품벼가 84.4로서 높은 수치를 나타내어 팔공벼(61.6)와 큰 차이를 보였다. 2. 두 품종 모두에서 전체 지방산의 73%이상을 차지하는 oleic acid, linoleic acid가 고품이 팔공보다 높은 비율을 나타내었다. 3. 비전분 다당류는 rhamnose, fucose, ribose, arabinose, xylose, allose 순으로 분리되었으며 infernal standard인 allose를 기준으로 볼 때 두품종간 조성에 차이를 나타내었다. 4. 구성아미노산 조성비는 aspartic acid, glutamic acid 등이 높게 나타났으며 무기성분의 조성에는 차이가 없었다. 5. 신속점도계를 이용한 호화 특성에서 호화개시온도는 고품($69.8^{\circ}C$)이 팔공($72.8^{\circ}C$)보다 낮았다. 6. SEM을 이용하여 관찰한 전분입자는 다각형이었으며 고품이 팔공보다 형태가 더 선명하고 균질함을 보였으며 X-선 회절도에 의한 전분 결정강도의 차이는 크지 않음을 알 수 있었다.

영상처리를 이용한 현미의 온라인 품위판정 알고리즘 (On-line Inspection Algorithm of Brown Rice Using Image Processing)

  • An on-line algorithm that discriminates brown rice kernels on their echelon feeder using color image processing is presented for quality inspection. A rapid color image segmentation algorithm based on Bayesian clustering method was developed by means of the look-up table which was made from the significant clusters selected by experts. A robust estimation method was presented to improve the stability of color clusters. Discriminant analysis of color distributions was employed to distinguish nine types of brown rice kernels. Discrimination accuracies of the on-line discrimination algorithm were ranged from 72% to 85% for the sound, cracked, green-transparent and green-opaque, greater than 93% for colored, red, and unhulled, about 92% for white-opaque and 67% for chalky, respectively.

옥수수와 보리에서 Fusarium graminearum의 8-ketotrichothecenes 생성 (Production of 8-ketotrichothecenes by Fusarium graminearum on Corn and Barley)

  • The production of 8-ketotrichothecenes, deoxynivalenol (DON), nivalenol (NIV), and their monoacetyl derivatives was studied in rice and corn cultures using 8 isolates of Fusarium graminearum which were obtained from corn and barley samples. Higher concentrations of trichothecenes were produced on rice than corn, and production of the toxins on rice was enhanced by growing the fungi at $25^{\circ}C$. The isolates were used for evaluation of toxin production and pathogenicity after artificial inoculation to 5 corn and 3 barley cultivars. The kinds and the relative amounts of trichothecenes produced in cultures were consistent with those in infected kernels of corn and barley with some exceptions. As for DON chemotypes, the ratios of 15-acetyl-DON to 3-acetyl-DON were varied among the pathogen-cultivar interactions. The corn and barley cultivars showed the significant differences of resistance to the Fusarium isolates in disease severity and seedling blight, and resistance ranking to the different isolates was varied. However, significant correlations were observed between the total concentrations of trichothecenes in infected kernels of corn and barley and pathogenicities of the Fusarium isolates to the hosts.

Comparison of starch properties of rice varieties in different eating quality

  • Rice (Oryza sativa L.) is one of the most important food crops in the world. The eating quality of cooked rice is the most important trait japonica rice breeding in Korea. Rice varieties that produce kernels that are firm and fluffy after cooking are generally favored in countries such as India, Pakistan, and Indonesia. Whereas varieties with kernels that maintain its shape, glossiness, savory odor, stickiness, and tenderness when cooked are preferred in Korea. This study analyzed the major physicochemical components of rice grain associated with the eating quality of 20 japonica rice varieties. Physicochemical components such as the amylose content, protein content, amylographic characteristics of polished rice, and texture of cooked rice were tested using a Tensipresser as alternative indirect methods in determining rice eating quality. Evaluation of eating quality of cooked rice using sensory test was conducted with 20 well trained members. The 20 rice varieties in different eating quality showed amylose contents of 17~20%. The amylose content of rice varieties had negative correlation with peak viscosity, however positive correlation with setback viscosity was observed. The stickiness and adhesiveness of cooked rice showed correlation with the amylose content and amylopectin chain length distribution. Rice varieties with good eating quality showed less retrogradation of cooked rice and higher hot viscosity of rice flour in amylogram.

Physicochemical characteristics of rice variety for dry-milled flour

  • Rice (Oryza sativa L.) is one of the main agricultural crops in Asian countries, including Korea, and is considered as the most important staple food in the world. Rice is also processed into flour, which is consumed through various foods such as cake, noodle, bread, and confectionary. Rice flour quality is highly dependent on variety and milling conditions. Producing rice flour with fine particles is more difficult than wheat flour because of its grain hardness. The Korean rice varieties representing different amylose contents were selected for this study. The relationship between the morphological and starch characteristics of rice kernels and the appropriate varieties for producing good-quality, dry-milled rice flour were examined. The hardness of the rice kernels was determined by measuring the pressure at the grain breakage point. The damaged starch content of the rice flour was determined using a Megazyme starch damage assay kit. The particle-size distribution of the rice flour was measured as the volume-base distribution using a laser-diffraction particle size analyzer. The mean particle-size distribution of the dry-milled flour obtained was between $65.3{\sim}105.1{\mu}m$ among the rice varieties. The opaque, non-glutinous, Seolgaeng rice demonstrated a narrow peak at the fine size, whereas the entire particle-distribution range for other varieties was wide. Seolgaeng exhibited significantly lower damaged starch content of dry-milled flour than the other varieties (p < 0.05). Seolgaeng showed lowest in energy consumption on rice flour production with 200 mesh particle size. Accordingly, it is possible to produce dry-milled rice flour which is similar to wheat flour that would considerably reduce milling costs.

단립종 벼의 수분흡습특성 (Adsorption Characteristics of Short Grain Rough Rice)

  • In this study short gain rough rice(Chu-cheong) with initial moisture content of around 12%(w.b.) was exposed to 3 levels of relative humidity(70, 80 and 90%) and 3 levels of temperature(20, 25 and 3$0^{\circ}C$) of the air, in order to evaluate the adsorption characteristics of rough rice and the rate of cracked kernels which will serve as the basic data when developing the quality adjusting equipment. The result showed that the moisture content of rough rice increased rapidly during the early stages of moisture adsorption like other grains, and at least 70% of the adsorption occurred within the first 24 hours of exposure to the humid environment. Adsorption rate was more related to relative humidity than the temperature of air stream, and the higher the relative humidity, the higher the adsorption rate. And the Page's equation predicted best the adsorption process of this study. Experimental results for the crack generation during the adsorption process showed that the higher the relative humidity the more the cracked kernels, and that the temperature had little effect. An empirical equation was developed to predict the crack ratio for the conditions of this study, and Nishiyama model predicted better the crack generation than Hoerl model.

도정효율 증진을 위한 벼 품종특성별 현미선별체 적정크기 (Optimum Sieve-slit width for Effective Removal of Immature Kernels based on Varietal Characteristics of Rice to Improve Milling Efficiency)

  • 본 연구는 립선별기에서 미숙립 선별능력을 높임으로써 도정효율 증진과 완전미율 향상을 꾀하고자 품종특성을 고려한 립선별기 선별체 최적 조건 구명 시험이 수행되었고, 다음과 같은 결과가 얻어졌다. 1. 립선별기의 선별능력은 현미립 두께에 절대적으로 의존되었는데, 조사된 시험재료의 현미 평균 두께는 1.79(농안)-2.16 mm(대립벼1호)의 분포를 보였다. 2. 품종별 차이는 있었으나, 대체적으로 현미의 평균 립두께가 2.08 mm이상일 경우 1.9 mm 선별체, 2.00-2.08 mm 범위일 경우 1.8 mm 선별체, 1.90-2.00 mm 범위일 경우 1.7mm 선별체, 그 이하일 경우 1.7 mm 이하의 선별체가 정립 손실을 최소화하면서(0.1%이내) 완전미율을 향상시킬 수 있는 조건인 것으로 판단되었다. 3. 백미 품위에 미치는 선별체 분리효과는 미숙립 비율이 높은 품종일수록 크게 발휘되었다. 4. 현미선별 체 눈 크기를 0.1 mm씩 증가시킬 경우 품종별로 현미선벌체 통과물중에 정상립이 포함되어 발생되는 정상립 손실율이 0.5% 수준까지는 현미선별체 눈금크기 증가에 따라 미미하게 증가하였으나, 이 눈금 수준이상에서는 선별체 눈금 0.1 mm 증가에 따라 정상립의 손실율이 급격히 증가하는 것으로 보아 정상립 손실율 0.5% 수준의 눈금이나 그 보다 0.05~0.10 mm 아래 눈금의 선별체가 적당할 것으로 생각되었다.

  • 질소, 인산 및 가리비료 시용량에 따른 단백질함량의 변이를 추구하여 고단백계통육성시 선발효율을 높이고저 계통포장에서 질소시용량을 달리한 경우와 저단백 및 고단백계통을 삼요소영년비료시험구와 인산 및 가리시용량을 달리한 포장에 재배하여 현미내 단백질함량변이를 검토하였다. 1. 질소시용량을 증가시켜 줌에 따라서 현미내 단백질함량은 거의 직선적으로 증가하였으나 계통에 따라 변이양상의 차이가 있었다. 2. 계통간단백질함량의 변이는 질소시용량을 증가시킴에 따라 커졌고 저단백계통군에 비하여 고단백계통군의 질소시용량에 따른 변이가 더 컸다. 3. 질소비료시용량에 따른 단백질함량의 변이양상이 계통간에 차이가 큰 것을 고려하여 전계통중20% 정도의 고단백계통을 선발하면 유전적으로 단백질함량이 높은 계통을 안전하게 선발할 수 있다. 4. 실제 논 토양에서 비료의 삼요소중 단백질함량에 가장 크게 영향을 주는 것은 질소성분이며 인산 및 가리비료의 영향은 아주 적었다. 5. 인산 및 가리비료 시용량에 따른 단백질함량의 변이는 극히 적었다. 따라서 고단백계통선발시 인산 및 가리비료에 의한 환경변이는 고려하지 않아도 좋을 것이다.
