현미 비정상립이 도정특성에 미치는 영향 (Effects of Abnormal Kernels in Brown Rice on Milling Characteristics)

  • This study was conducted to find out effects of abnormal kernels of 0 to 30% in brown rice on quality characteristics during milling using friction type test mill. The average hardness values of abnormal and normal brown rice kernels were 6.52 kg$_f$, 8.48 kg$_f$, respectively. According to the increase of abnormal kernels in brown rice, grain temperature, required electrical energy, the broken kernels ratio, and the weight of solid matter on the surface of milled rice were increased due to crush of the abnormal kernels during milling, which proves that abnormal kernels in brown rice should be removed before milling to improve milling characteristics.

Major Characteristics Affecting the Sensory Quality of Rice Marketed in Korea

  • A total of 284 milled rice (MR) marketed in Korea were analyzed for grading characteristics (head rice, broken kernels, chalky kernels, and damaged kernels%), color characteristics (L-, a-, b-values, and whiteness), protein content (%), and the cooked rice (CR) sensory quality to investigate the key characteristics affecting the overall sensory quality of rice marketed in Korea. Relatively high correlation with the overall sensory quality of the CR was found in color characteristics such b-value of the CR (r=-0.779) and MR (r=-0.545), the a-value of the CR (r=0.513), and the whiteness (r=0.298) of the MR, compared to protein (r=-0.150), and the moisture (r=0.158) contents of the MR and the percentage of head rice (r=0.195). Partial least squares (PLS) regression of the CR b-value with various characteristics of the MR showed that CR b-value was increased with MR b-value effectively, followed by protein content, damaged kernels, chalky kernels, and colored kernels of MR while it was decreased with whiteness and moisture content for the MR.

In Vitro Digestibility of Rice and Barley in Forms of Raw Flour and Cooked Kernels

  • Digestion properties of 3 types of cereals, white rice, brown rice, and barley, were measured after cooking or grinding. Regardless of the processing methods, white rice showed the highest rate and the greatest extent of digestion, whereas barley showed the lowest values. During the early digestion period, cooked white rice kernels had a larger k (kinetic constant) value than uncooked white rice flour, indicating that cooking induced faster digestion than grinding. In the case of brown rice and barley, the cell wall in cooked kernels remained intact and resulted in a lower k values than those of uncooked flour. However, after 3 hr of digestion, the total digestion extent was greater for the cooked brown rice and barley than that for uncooked flours. The high content of slowly digestible starch (SDS) in cooked brown rice and barley might be due to the starch fraction which was protected by the cell wall. The resistant starch (RS) content, however, was greater for the uncooked flours than that for cooked kernels. The cooked kernels of 3 cereal samples tested showed higher glycemic index (GI) values than the uncooked flours.

기계시각을 이용한 현미의 개체 품위 판별 알고리즘 개발 (Algorithm for Discrimination of Brown Rice Kernels Using Machine Vision)

  • An ultimate purpose of this study was to develop an automatic system for brown rice quality inspection using image processing technique. In this study emphasis was put on developing an algorithm for discriminating the brown rice kernels depending on their external quality with a color image processing system equipped with an adaptor magnifying the input image and optical fiber for oblique lightening. Primarily, geometical and optical features of images were analyzed with paddy and the various brown rice kernel samples such as a sound, cracked, peen-transparent, green-opaque, colored, white-opaque and brokens. Secondary, geometrical and optical parameters significant for identifying each rice kernels were screened by a statistical analysis(STEPWISE and DISCRIM procedure, SAS wer. 6) and an algorithm fur on- line discrimination of the rice kernels in static state were developed, and finally its performance was evaluated. The results are summarized as follows. 1) It was ascertained that the cracked kernels can be detected when e incident angle of the oblique light is less than 2$0^{\circ}C$ but detectivity was significantly affected by the angle between the direction of the oblique light and the longitudinal axis of the rice kernel and also by the location of the embryo with respect to the oblique light. 2) The most significant Parameters which can discriminate brown rice kernels are area, length and R, B and r values among the several geometrical and optical parameters. 3) Discrimination accuracies of the algorithm were ranged from 90% to 96% for a sound, cracked, colored, broken and unhulled, about 81 % for green-transparent and white-opaque and 75 % for green-opaque, respectively.

Secondary, an algorithm for discrimination of the rice kernels in static state was developed on the basis of the geometrical and optical parameters screened by a statistical analysis(STEPWISE and DISCRIM Procedure, SAS ver.6). Brown rice samples could be discriminated by the algorithm developed in this study with an accuracy of 90% to 96% for the sound , cracked, colored, broken and unhulled , about 81% for the green-transparent and the white-opaque and about 75% for the green-opaque, respectively. A total computing time required for classification was about 100 seconds/1000 kernels with the PC 80486-DX2, 66MHz.

Analysis of Broken Rice Separation Efficiency of a Laboratory Indented Cylinder Separator

  • Purpose: Using a laboratory indented cylinder separator, broken rice separation experiments were conducted and the characteristics of the separation process were studied to provide information for developing a prototype indented cylinder broken rice separator. Methods: Rice (Ilmi variety) milled in a local RPC was used for the experiment. Rice kernels were classified into four groups according to their length l; whole kernels (I > 3.75 mm), semi-whole kernels (2.5 < I < 3.75 mm), broken kernels (1.75 < I < 2.5 mm), and foreign matters (I < 1.75 mm). A laboratory grain cleaner, Labofix '90 (Schmidt AG, Germany) was used for the experiments. Experiments were designed as a $4{\times}4$ factorial arrangement in randomized blocks with three replications. Cylinder rotational speeds (17, 34, 51, 68 rpm) and trough angles (15, 37.5, 60, $82.5^{\circ}$) were the two factors and feed rates (25, 50 kg/h), indent shapes (Us, $S_1$ type), and indent sizes (2.5, 3.75 mm) were treated as the blocks. Two 125 g samples and one 125 g sample were taken at the cylinder outlet and from the trough, respectively. The whole, semi-whole, and broken kernel weight ratio of the samples and feed was determined by a rice sizing device. From these weight ratios, purities, degrees of extraction and coefficient of separation efficiency were calculated. Results: Trough angle, cylinder speed, and their interaction on the coefficient of separation efficiency were statistically significant. Cylinder speed of 17, 34, and 51 rpm made the most effective separation when the trough angle was $15^{\circ}$ or $37.5^{\circ}$, $60^{\circ}$, and $82.5^{\circ}$, respectively. Maximum values of coefficient of separation efficiency were in the range of 60 to 70% except when the indent size was 2.5 mm and were recorded for the combinations of low cylinder speed (17 rpm) with medium trough angle ($37.5^{\circ}$ or $60^{\circ}$). Indent shape did not appear to make any noticeable difference in separation efficiency. Conclusions: Due to the interaction effect, the trough angle needs to be increased appropriately when an increase in cylinder speed is made if a rapid drop of effectiveness of separation should be avoided. In commercial applications, $S_1$ type indents are preferred because of their better manufacturability and easier maintenance. For successful separation of broken kernels, the indent size should be set slightly bigger than the actual sizes of broken kernels: an indent size of 3.0 mm for separating broken kernels shorter than 2.5 mm.

Relationships between kernel quality of appearance and yield characters in japonica and Indica rice cultivars

  • Subspecific difference of the percentage of white immature kernels (WIK) between japonica and indica rice cultivars was analyzed in relation to ripening temperature and yield characters. Thirty-three Chinese and 10 Japanese rice cultivars, including 32 japonica and 11 indica, were cultivated with three different cropping seasons for three years. The results were as follows: (1) Indica had less number of panicles, larger number of spikelets per panicle with higher yield, and longer and narrower kernels than japonica. In japonica, Chinese cultivars had less number of panicles and larger number of spikelets per panicle than Japanese cultivars. In addition, WIK was significantly higher in Chinese cultivars than in Japanese cultivars, because of the higher percentage of milky white kernels, even at similar temperature conditions during ripening. On the other hand, WIK in indica was not significantly different between the production areas and between the cropping seasons. (2) Regardless of subspecies, WIK in a large number of Chinese cultivars increased with increasing temperature during ripening within 20 days after heading, while this relation was uncommon in Japanese cultivars, showing the low temperature response. However, some Chinese cultivars had the low WIK with the low temperature response. (3) WIK in japonicawas positively correlated with 1000-kernel weight, spikelet density, kernel width and thickness, but negatively correlated with panicle length and grain filling percentage, while in indica it was positively correlated with panicle number per area, grain filling percentage, brown rice yield and kernel width, but negatively correlated with kernel length. These results indicated that WIK in both subspecies had a close relation to kernel size, and that WIK was high in japonica cultivars with wide and thick kernels and in indica cultivars with short and wide kernels.

수도의엽신별 생육효과에 관한 연구 (Studies on the Productivity of Individual Leaf Blade of Paddy Rice)

  • 실험 I. 질소의 시비량을 달리 하였을 때 출수기에 있어 실비의 효과 및 전엽처리에 따른출수후의 각엽위별 엽신이 등숙 및 수량에 미치는 영향을 알고저 포장시험을 한바 그 결과는 다음과 같다. 1. 질소시비에 따른 1주평균 수수 및 1수당 경화수는 질소의 시비량이 많을수록 증대되었으나 등숙율, 제현비율 및 현미천립중은 질소시비량이 많을수록 저하되었다. 2. 출수기 실비시비에 따른 등숙률 및 현미천립중은 표준구보다 질소시비량이 많을수록 증대되었으며 정조중은 통계적인 유의차는 인정할 수 없으나 수치적으로 증대되었다. 3 전엽처리에 따른 등숙율, 정조중, 현미천립중 및 제현비율은 전엽의 정도가 클수록 현저히 저하되었다. 4. 엽위별 존치엽수의 조합에 따른 등숙율, 정조중현미천립중 및 제현비율은 엽신 1매를 존치하였을 때는 $L_1(지엽)>L_2>L_3>L_4$순으로 저하되었으며, 엽신 2매를 존치하였을 때는 상위엽과 조합될수록 증대되었다. 그리고 엽신 3매를 존치하였을 때도 같은 경향을 보였다. 5. 전엽처리에 따라 엽위별 엽신수가 감소될 경우에는 존치엽면적이 넓고 엽신건물중과 엽신질소함량이 증대될 때에 등숙률, 정조중, 현미천립중 및 제현비율이 증대되었다. 6. 시비량의 증대는 존치엽수와 관계없이 등숙률 및 현미천립중을 저하시켰으나, 실비의 시용은 이와는 반대의 결과를 보였다. 정조수량은 기비 및 추비량의 증대에 따라 증대되는 경향을 보였으며 실비의 효과는 존치엽수가 적을 경우에는 많을 경우보다 저하되었다. 7. 엽신이 차지하는 등숙률 및 현미수량에 대한 생산효과는 50% 이상이었으며 천립중은 10%에 불과하였다. 질소의 시비량의 증가에 따라 등숙율 및 천립중에 대한 엽신의 영향은 증대되었다. 기비량의 증가에 따라 현미중에 대한 엽신의 영향은 증대되었으나 수전기의 추비량이 증가될수록 그 영향은 저하되었다. 8. 엽위별 엽신이 등숙율, 현미중 및 천립중에 미치는 생육효과는 $L_1(지엽)>L_2>L_3>L_4$순이었으며 질소의 시비량이 많을수록 $L_1$$L_2$의 생산효과가 증대되는 경향을 보였다. 시험 II. 질소의 시비시기를 달리 하였을 때 전엽처리에 따른 출수후 엽위별 엽신이 등숙 및 수량에 미치는 영향을 알고저 포장시험을 한바 그 결과는 다음과 같다. 1. 1주당 평균 수수는 기비로부터 출수전 22일까지 시비된구와 분시된구에 있어서 증대되었으며 경화수는 출수전 36일부터 15일까지 시비된구가 증대되었다. 등숙율은 기비구로부터 출수전 15일까지는 무비구보다 저하되었으며 출수전 8일 이후에 시비된 구는 증대되었다. 가장 저하된 구는 출수전 29일구였다. 정조수량은 출수전 29일부터 22일 시비구가 가장 증대되었다. 현미천립중은 출수전 22일부터 8일까지의 시비된구가 다소 높았다. 2. 전엽처리에 따른 등숙율, 정조중, 현미천립중 및 정현비율은 전엽의 정도가 클수록 모두 현저히 저하되었으며 처리간에 고도의 유의차를 보였다. 3. 엽위별 존치엽수와 그의 조합에 따른 등숙율 정조중, 현미천립중 및 제현비율은 엽신 1매가 존치되었을 때는 $L_1(지엽)>L_2>L_3>L_4$순으로서 상위엽이 존치될수록 증대되었다. 엽신 2매시는 상위엽과 조합되었을 때 등숙율, 정조중 및 제현비율이 증대되었으며 현미천립중의 증대에는 지엽이 가장 크게 작용한 것 같았다. 엽신 3매를 존치하였을 때도 상위엽과 조합된 것일수록 증대되었다. 4. 전엽처리에 따라 엽위별 엽신수가 감소될 경우 엽면적 엽신건물중 및 엽신질소함량과 등숙율 및 정조중간에는 정의 상관을 보였으나 현미천립중간에는 시비시기에 따라 일정한 경향을 보이지 않았다. 5. 시비시기가 출수기에 가까울수록 전엽에 의한 등숙율 및 천립중은 저하되었으며 존치엽수가 적어질수록 그 경향은 증대되었다. 출수기 이후의 추비는 존치엽수의 증대에 따라 등숙율 및 천립중을 증대시키며 존치엽수가 적을 경우에는 출수기에 가까운 시기에 시비가 정조수량을 증대시켰다. 6. 시비시기에 따른 각기관별 생산효과는 등숙율에 있어서는 시비시기가 늦어질수록 엽신의 생산효과가 크며 무비구에 있어서는 엽신과 간의 생산효과가 동일하였다. 현미수량에 대한 생산효과는 시비시기에 구애됨이 없이 간의 생산효과는 50%이상을 찾 하였으며 무비구에 있어서는 그 경향이 더욱 증대되었다. 현미천립중은 간에 의하여 지배되며 엽신의 영향은 근소하였다. 7. 엽위별 엽신이 등숙율, 정조중 및 현미천립중에 미치는 생산효과는 시비시기가 늦어짐에 따라 상위엽일수록 생산효과가 증대되는 경향을 보였다. 전생육기간을 통하여 분시된구는 등숙율 및 정조수량에 있어서는 지엽과 2위엽이 거의 같은 정도였으나 현미천립중에 있어서는 지엽이 전엽의 생산량의 60%이상을 차지하였다.

비료시용방법(肥料施用方法)이 동할발생(胴割發生)과 미질(米質)에 미치는 영향(影響) (The Influence of Fertilization on the Cracked Kernels of Rice Grain and Rice Quality)

  • 동할발생조건(胴割發生條件)에 대(對)한 미립(米粒)의 형태(形態)나 성분함량(成分含量)의 영향(影響)을 알고저 비료시용방법(肥料施用方法)을 달리하여 재배(裁培)한 벼의 동할립(桐割粒)과 건전립(健全粒)을 구분(區分)하여 분석(分析)해본 결과(結果) 동할발생(桐割發生)은 삼강(三剛)벼가 락동(洛東)벼보다, 만기수확구(晩期收穫區)가 적기수확구(適期收穫區)보다 많았으며 3요소외(三要素外)에 규산질비료(珪酸質肥料)를 병용함으로서 동할율(桐割率)이 감소(減少)되었다. 동할립(桐割粒)은 건전립(健全粒)에 비(比)하여 천립중(千粒重) 및 미립(米粒)의 체적(體積)(립장(粒長)${\times}$립폭(粒幅)${\times}$립후(粒厚)), 립장(粒長), 립장(粒長)/립폭(粒幅)이 컸으며 품종간(品種間)에는 미립(米粒)의 립장(粒長)/립폭비(粒幅比)가 큰 삼강(三剛)벼가 락동(洛東)벼보다 동할율(胴割率)이 높았다. 동할(胴割)이 비교적(比較的) 잘 되는 삼강(三剛)벼는 미립내(米粒內) 규산함량(珪酸含量)이 낮았고 인산함량(燐酸含量)이 높았으며 동할(胴割)이 잘 안되는 락동(洛東)벼는 그 반대(反對)이었다. 그래서 삼강(三剛)벼는 미립내(米粒內) 규인비(珪燐比)가 낮았고 락동(洛東)벼는 높았으며 비료삼요소(肥料三要素)에 규산(珪酸)을 시용(施用)함으로서 그 함량비(含量比)를 높일수 있었다.

쌀 완전립과 불완전립의 이화학적 특성 비교 (Differences in Physicochemical Characteristics between Head and Incomplete Rice Grains)

  • 완전립과 불완전립의 이화학적 특성을 검토한 결과를 요약하면 다음과 같다. 1. 무기질, 단백질 함량은 불완전미가 완전미에 비해서 높았으며, 지방산의 조성과 맛에 관여하는 아미노산의 조성 분포에도 차이가 있었다. 2. 호화된 완전미 쌀가루의 점도가 불완전미 쌀가루에 비해서 높았다. 3. 완전미 쌀 배유 전분의 아밀로오스 함량 및 쇄장길이는 완전미가 불완전미보다 높았으며, 호화 엔탈피도 높았다. 4. 완전미가 불완전미에 비해서 경시적인 가수분해도가 높았다.
