This study was conducted to investigate the effect of medical herbs extracts on physicochemical characteristics of cooked rice. Three types (CLP 1, CLP 2, CLP 3) of extracts were prepared using 11 medicinal herbs, respectively. Polished rice was cooked with different concentration of medicinal herbs extracts by electric cooker. The moisture contents in cooked rice were decreased by increased concentration of herbs extracts, while total polyphenol contents were significantly increased. DPPH radical scavenging activities of cooked rice obviously were increased as herb extracts level increased. The consistency and setback value of the rice flour was reduced at all of the extracts, while breakdown and initial pasting temperature was increased. Color of cooked rice was shown different comparing to the control. However, the hardness, adhesiveness, springiness, cohesiveness and gumminess of cooked rice was increased depending on the concentration of extracts. These results showed that medicinal herbs extracts, which can benefit human health, is inducing the changes of physicochemical characteristics of cooked rice.

The physical properties of reconstituted instant rice produced by three different dehydration methods were evaluated. The rehydration ratios of reconstituted instant rice produced by air dehydration at 9$0^{\circ}C$ (process A) had higher values than those produced by freeze dehydration (process C) during entire range of rehydration. After 4min of rehydration time at 95$^{\circ}C$ , the moisture contents of reconstituted instant rice produced by process A and C were higher values than those of control(151.47%, dry basis) which was cooked by electric cooker. Regardless of dehydration method, the sizes of reconstituted instant rice (6min, 95$^{\circ}C$) had larger values than those of control. The values of hardness (H), stickiness (S) and S/H ratio of reconstituted instant rice (6min, 95$^{\circ}C$) produced by high temperature (7min, 15$0^{\circ}C$) air dehydration (process B) as the first stage prior to air dehydration at 9$0^{\circ}C$ were almost the same as those of control. The H of reconstituted instant rice decreased, while S and S/H ratio increased with increasing rehydration time. The higher values of whiteness(L) and lower values of yellowness (b) represented in reconstituted instant rice (6min, 95$^{\circ}C$) than those of control.
Jungkwa is traditional food in Korea and difficult to prepare. This study proposes to use a rice cooker to simplify the process of preparing ginseng jungkwa. The following is the summary of the study. This study examined low calorie sweeteners (xylitol, oligosaccharide, stevioside, erythritol) instead of sugar for ginseng jungkwa to satisfy customers' health needs. After adding sugar, xylitol, oligosaccharide, stevioside, and erythritol to ginseng jungkwa, moisture and sugar content were measured. Based on the results, the ginseng jungkwa made with xylitol had a low moisture content, but it had the highest sugar content. The ginseng jungkwa with xylitol had average sweetness equal to that of sugar. In addition, L-values were highest with stevioside whereas the b-values and a-values were highest with sugar. Hardness and springiness were highest in the ginseng jungkwa added with sugar while adhesiveness was highest in the ginseng jungkwa added with oligosaccharide. In a sensory evaluation, the appearance, flavor, taste, texture, and overall preference were highest for the oligosaccharide added ginseng jungkwa. In the end, the best low calorie sweetener for rice cooker prepared ginseng jungkwa proved to be oligosaccharide.
Bacterial contamination of cooked rice was analyzed to evaluate the microbial safety. Thirty raw rice samples were collected in Korea and cooked in an electric rice cooker. Mesophilic aerobe, food-poisoning Bacillus cereus group, and their toxin genes were determined on cooked rice. The percentage of total mesophilic aerobe based on 1-3 log CFU/g was 27% among the samples. Bacillus spp. in MYP selective medium was similar to the number of mesophilic aerobe, whileas Bacillus spp. was detected in most samples after enrichment. Thirty-seven isolates from 30 cooked rices were identified as B. thuringiensis, B. cereus, B. valismortis, B. pumilus, B. coagulans, B. licheniformis, Geobacillus stearothermophilus, and Brevibacillus laterosporus. Twenty isolates (54%), more than half of the isolates, were B. thuringiensis while nine (27%) were identified as B. cereus. All B. thuringiensis isolates possessed non-hemolytic toxin genes and interestingly, seven B. cereus among nine isolates possessed emetic toxin genes. More B. thuringiensis was present on the cooked rice than B. cereus and most B. cereus possessed emetic toxin genes rather than diarrheal toxin genes. Therefore, food-borne outbreak due to B.cereus on the cooked rice kept at room temperature might be examples of emetic food-poisoning.
This study was undertaken in order to elucidate the elimination of phenthoate residues by washing and cooking processes of rice which if the most important food crop in Korea. When contaminated rice was washed with distilled water three times, the removal rate of total phenthoate was 51%. The removal rate in the successive washings was 37.3% (wash filtrate 7.8%, wash sediment 29.5%) in the first, 14.3% (wash filtrate 6.2%, wash sediment 8.1%) in the second and 8.9% (wash filtrate 5.8%, wash sediment 3.1%) in the third washings. More than half of the residue was removed by the first washing and most residues were found in the sediment rather than in the filtrate of the rice washings. The residue rate of phenthoate after cooking by an electric rice cooker was 41%, indicating that the removal rate after cooking was 59%, because phenthoate is thermally stable at the cooking temperature. In conclusion, phenthoate residues contaminated in rice grains are grcatly removed in the washing process and it is desirable to wash the grains before cooking in order to decrease the hazards from pesticide residues such as phenthoate. Reduction factor of phenthoate in rice cooking is proposed to be 0.4.

The changes in physicochemical properties of cooked rice stored in an electric rice cooker at different temperature (63, 66, 69 and $72^{\circ}C$) were investigated. The growth of thermophilic bacteria was gradually increased in all samples with storage time up to 6 hours and increased rapidly afterward. The bacterial growth rate was higher during storage at low temperature than at high temperature, and the bacterial number generally reached the maximum at 18 hours of the storage. The number of bacteria in sample stored at $63^{\circ}C$ was increased to $10^6$ CFU/g after storage for 6 hours. The heat treatment at 6 hours of storage decreased the bacterial number to $10^5 $ CFU/g at 8 hours of storage. Bacterial number was gradually increased with storage time after the first heat treatment. When the sample was reheated after 8 hours of storage, the bacterial number was reduced to the level at which off-odor was not detected after storage for 24 hours. During the storage, moisture content of heat-treated sample was lower than that of sample stored at $63^{\circ}C$ but higher than that of sample stored at $72^{\circ}C$. The L value of heat-treated sample was higher than that of the sample stored at $72^{\circ}C$, but lower than that of the sample stored at $63^{\circ}C$. The b value showed an opposite trend to the L value with regard to the storage temperature. Changes in texture were not remarkable during the storage for the sample heat-treated and stored at low temperature. The occurrence of off-odor and browning was depressed in the heat-treated sample, and the texture and overall eating quality were more acceptable than the samples stored at low temperature.

In this paper, we propose a medication reminder system using IoT platforms and products to help old adults keep track of their medication schedule, one of 10 Korean instrumental activities in daily living (K-IADL). An interworking architecture based on the oneM2M standard platform is designed to allow various IoT products to be connected each other through interworking proxy entities. A prototype system for the medication reminder service is developed, which consists of a pair of off-the-shelf pill bottle and container box embedded with an NFC tag and reader respectively, three types of actuators including a LIFX LED lightbulb, Musaic speaker, Microsoft Band 2, and smartphone applications. The experiment shows that our medication reminder system can make alarms for old adults to take their pills appropriately considering where they are and when they have food inferred from data collected from sensors including ultrasonic sensor and rice cooker, fostering them to keep their medication routine.

The structures of induction heating type pressure rice cooker are consisted of oven. top heater plate and locking ring. Because the pressure is applied to their structures, those should be necessary to do the safety evaluation. In this paper, structure analysis is performed for oven structures by using finite element method and as a results, optimal thickness is achieved. Especially, analysis fur anisotropic layered material is performed because oven is made of both stainless steel and aluminum. And both von Mises and Tsai-Wu failure criterion are applied for safety factor. Parametric method is used in order to get the optimal thickness for oven and top heater plate.
The purpose of this study was to improve and hand down traditional dining habits. Questionnaires were distributed to rural house wives in Kangwon-do. The results were as follows; 1. 30.8% of the respondents was 40 to 49 years old. 35.2% of their education was primary school. 49.5% of them had husbands and children. 44.2% of them had 3 to 4 family members. 26.9% of them earned 8 to 11 millon won yearly. 2. Their housing environment showed that 52.5% of housing was a Korean traditional house or Hanok. 72.1% of kitchen was a stand-up one. 66% of fuel was oil. 3. 99.3% of the respondents had refrigerators. 66.3% electronic range, 95.9% electronic rice cooker, 97.2% gas range, 59.6% mixer, 62% electronic fry pan respectively. 4. 73.5% of the respondents got information about Korean traditional food from seniors or friends. 36.6% of them learned new recipe from TV, newspapers and magazines. 43.3% of them thought their concern about meals was average. 48.4% of them paid much attention to prepare meals for themselves. 52.7% of them spent a half to one hour for preparing dinner. 48.3% of them ate processed foodstaffs often. 31.5% of them dined out once every two or three months. 5. 79.5% of them had rice for breakfast, 74.5% for lunch, and 98.4% for dinner respectively. 96.2% of the respondents made Kimchi and 55% among them had two kinds of Kimchi. 91.1% of them had two to three kinds of dishes except Kimchi for breakfast. 68% of them used a synthetic flavoring. 6. 16.2% of the respondents ate beef once a week, 40% pork, 23% chicken, 3% dog meat respectively. 37% of them ate mackerel pike, 25.5% mackerel once a week, 11.6% hairtail, 25.5% mackerel pike, 25.6% yeemunshu, 13.7% tuna respectively. Freshwater fishes such as mudfish, trout and Israel carp were their favorite onces.
