Bread-making Properties of Rice Flours Produced by Dry, Wet and Semi-wet Milling (건식, 습식 및 반습식 쌀가루에 의한 쌀빵의 특성 비교)

  • Rice flours produced by dry, wet, and semi-wet milling methods were used to investigate bread-making properties. Wet milled rice flours were produced by two different steeping temperatures of $25^{\circ}C$ and $55^{\circ}C$, properties of composite flour containing 70% rice flour and 30% wheat flour with the addition of vital wheat gluten were tested. Among rice flours, wet milled rice flour showed increased mixing time and dough stability determined by a mixograph. Wet milled rice flours produced higher loaf volume compared with dry of semi-wet milled rice flours. Wet-milled rice flour steeped at $55^{\circ}C$ appeared to produce good rice breads with relatively high loaf volume. Crumb hardness of bread prepared with wet milled rice flour was lower than the other breads and increased slowly during 3-day storage at $25^{\circ}C$.

Effects of Rice Diet and Bread Diet on Plasma Triglyceride, Insulin and Ghrelin Level after Endurance Exercise (밥 식이와 빵 식이가 지구성 운동 후 혈중 중성지방, 인슐린 및 그렐린에 미치는 영향)

  • In this study, the effects of a rice diet and bread diet on plasma triglyceride, insulin and ghrelin levels during low-intensity endurance exercise and recovery were investigated. Ten male students randomly received 2 different treatments: the rice diet and bread diet. On the first day, the participants performed 2 hours of treadmill running with 6% uphill at 50% $VO_{2max}$ after breakfast and then each consumed lunch and dinner. Blood samples were drawn 120 min before exercise and, right before exercise and, 60 min and 120 min after the start of exercise. On the second day, blood samples were drawn prior to breakfast, immediately after breakfast and, 60 min, 120 min, and 180 min after breakfast with no exercise treatment. Plasma triglyceride, ghrelin, glucose, and insulin levels were not significantly different between the two treatment groups on the first day. In addition, there was no difference in the carbohydrate and fat oxidation rate between the two treatments groups. However, plasma triglyceride levels in subjects that received the rice diet were significantly reduced by 14% when compared to subjects that received the bread diet at 180 min after consuming the breakfast diet on the second day. Ghrelin levels were significantly higher for subjects that received the rice diet than subjects that were given the bread diet. However, insulin in participants that consumed the rice diet was significantly lower than those that received the bread diet at 60 min and 120 min after consumption of the breakfast diet on the second day. Glucose levels in the subjects that were given the rice diet were significantly reduced by 10.3% when compared with participants that received the bread diet at 60 min. Therefore, the results of the study showed that a rice diet may be more effective in preventing cardiovascular diseases than a bread diet when combined with exercise.

Fermentation of Dough and Quality of Bread with Korean Pigmented Rice (흑미를 첨가한 반죽의 발효와 식빵의 품질)

  • This study was conducted to investigate the characteristics of dough and bread prepared by a Korean pigmented rice(KPR). The fermentation of the dough was promoted with a lower pH. Though the springiness and gumminess of the dough were low, but It was more tender and moist than that of control. Color of the bread showed red wine and the acceptabi]ity of the bread was higher than control evaluated by sensory test. The tissue of the bread has more small particles of starch than that of control and It was densely populated. The distribution tendency of the starch particles in the tissue of the bread was the more apparent in the KPR. And big starch particles like lens were observed in the dough with 10% of KPR. Mouse feeling of the bread was more sticky but, it was little clogging.

Eating Frequency of Rice vs. Bread at Breakfast and Nutrient and Food-Group Intake among Japanese Female College Students

  • We examined the association between eating frequency of rice vs. bread at breakfast and nutrient and food-group intake among 1771 female college students aged 18-20 years. The frequency of main staples at breakfast and the nutrient and food group intake for the previous month were assessed with a validated self-administered diet history questionnaire. We divided main staples into rice, bread, and noodles. As the eating frequency for noodles was almost negligible, we computed the difference of eating frequency of rice minus that of bread(mean = 0.7 times/week). Among 16 nutrients examined, the difference of eating frequency correlated significantly and negatively only with fat intake, especially saturated fatty acid (SFA) (r=-0.31, p<0.001), and significantly and positively with the intake of n-3 poly-unsaturated fatty acid, iron, sodium, protein, carotene, potassium, dietary fiber, and vitamin C (r=0.08-0.15, p<0.001) after adjusting for the energy intake, the residential area, the population size, and the living status with their families. In conclusion, the more frequent intake of rice compared to bread at breakfast correlated with the higher intake of the several vitamins and minerals, and the lower intake of fat, especially SFA. The only unfavorable aspect of the rice group was the higher sodium intake.

Combined Effects of Vital Gluten, Gum, Emulsifier, and Enzyme on the Properties of Rice Bread (활성글루텐, 검, 유화제 및 효소제의 복합첨가에 따른 쌀빵의 품질특성)

  • The effects of adding additives such as vital gluten, gum, emulsifier, and enzyme to rice flour on baking quality were examined. The effects of different gums on the pasting and dough properties of rice flour containing vital gluten were studied using a Rapid Visco Analyzer (RVA) and a Brabender farinograph. The RVA peak, breakdown, and final viscosities decreased with the addition of gums, while setback viscosity increased. The farinogram showed that rice flour supplemented with gums such as tara gum, guar gum, and locust bean gum (LBG) increased water absorption and dough stability, yielding strengthened dough similar to wheat flour dough. The addition of guar or tara gum/sodium stearoyl lactylate (SSL)/fungal $\alpha$-amylase (AMYL) or glucose oxidase (GO) blend improved the volume and reduced the crumb firmness of rice bread prepared from rice flour containing 14% vital gluten. Therefore, the combined addition of gum, emulsifier and enzyme into rice flour significantly improved the rice bread quality, allowing the decrease of the vital gluten level in rice bread formula.

Characteristics of white pan bread with roasted rice bran (볶은 미강을 첨가한 식빵의 품질 특성)

  • This study investigated the effect of roasted rice bran (RRB) on bread quality. Bread containing RRB showed small and specific loaf volumes. Baking and cooling loss rates of bread with RRB were lower than bread without RRB. The pH of bread decreased and total titratable acidity increased with increase in the amount of RRB. Water activity (Aw) and moisture contents of bread increased with RRB levels in bread. Bread containing RRB presented lower L value and higher redness (a) and yellowness (b) values. Crumb hardness, springiness, and gumminess increased, whereas cohesiveness decreased upon addition of RRB. Addition of 5% RRB resulted in higher scores in sensory evaluation than the control, however, bread with 15% RRB had the lowest score. Therefore, 5% RRB can be used in bread production.

Quality Characteristics of Pan Bread with Nurungji Powder (누룽지 분말을 첨가한 식빵의 품질 특성)

  • This study was to investigate the quality characteristics of white pan bread with added Nurungji, scorched rice. Nurungji powder at the level of 5% (N5), 10% (N10), 15% (N15), 20% (N20) was mixed with flour to make the bread. The overall effects of nurungji powder in pan bread were examined by investigating fermentation rates, volume change, farinograph and TPA analysis, color and preference evaluation. A control showed the highest fermentation rate by 60 min, but there was no significant difference between all samples. Farinograph analysis showed that the water absorption rate was the lowest in control and increased with the addition of nurungji powder. In contrast, in dough development time, control was the shortest and the N20 was the longest. Dough stability showed the best with control, N20 showed the lowest value, and Dough weakness increased significantly as the amount of rice powder was increased. According to TPA analysis it had shown significant differences in hardness and chewiness in the bread with Nurungi. Volume and specific volume tended to decrease as the amount of rice powder added increased. Sensory evaluation showed that the texture of bread had the highest with control, and the overall preference such as color, taste, and flavor showed the best with N15.

A Study on the Antioxidant Activity and Quality Characteristics of Pan Bread with Waxy Black Rice Flour and Green Tea Powder (흑미와 녹차 혼합분을 첨가한 식빵의 항산화성 및 품질 특성)

  • The antioxidant activity and quality characteristics of bread made from waxy black rice flour(WBRF) and green tea powder were investigated. The bread was manufactured with 1% of green tea powder and 10, 20, 30 or 40% of WBRF(w/w). The group of 40% of WBRF and green tea powder significantly showed the highest bread weight and volume. Lightness(L value) and yellowness(b value) decreased, but redness(a value) increased with increasing WBRF contents in mixture. Hardness, gumminess and chewiness were the lowest in the control group, but springiness was the lowest in the group of 40% of WBRF and 1% of green tea powder. The sensory scores of appearance, external and crumb color, grainy in the group of 40% of WBRF and 1% of green tea powder were the significantly lowest. Overall acceptabilities of the groups of 10% and 30% of WBRF with 1% of green tea powder were not significantly different from the control group. The group of 40% of WBRF and 1% of green tea powder showed the highest DPPH radical scavenging effect and TEAC content. Thus, if the mixture of green tea powder and WBRF would be used, it might be proper to use 1% of green tea powder and 10% of WBRF mixture considering the quality and antioxidant activity of bread.

Changes of Breadmaking Characteristics with the Addition of Rice Bran, Fermented Rice Bran and Rice Bran Oil (쌀겨, 발효쌀겨 그리고 쌀겨유의 첨가에 따른 제빵특성의 변화)

  • This study was conducted to evaluate the breadmaking characteristics of white bread when rice bran (RB), fermented rice bran (FRB) and rice bran oil (RBO) were added to the dough. Addition of RB to dough generally showed a decrease of the bread volume and increase of the bread weight which is related to the comparative decrease of gluten in the dough. Addition of RB also showed a decrease of lightness with yellowish color of RB and showed some rheological changes in dough. However, up to 5% RB addition, the dough showed a similar property of breadmaking with giving functional benefits compared to the control. Moreover 5% FRB addition to the dough improved the taste, flavor, and texture important to quality of bread. Substitutional use of RBO for shortening in dough result in comparative decrease of volume of dough. Addition of yellowish RBO influenced the increasing yellowness score, hardness, gumminess and brittleness, which is disadvantageous for the quality of white bread. However up to 50% RBO substitution for shortening made little rheological differences compared to the control. The 50% RBO substitution for shortening increased the score of flavor in sensory test even if there was an unfavorable quality point of white bread caused by a decreased volume and an increased hardness. From these results it could be suggested that the proper use of RB, FRB and RBO in breadmaking could improve the taste and flavor, giving beneficial function originated from rice bran to white bread.

The Study on Daily Meal Pattern in Seoul Families (서울 가정의 일상 식사내용에 관한 실태조사 연구)

  • The purpose of this study is to explore the daily meal pattern in Seoul families. The informations of this study were obtained from 443 housewives in Seoul during August 20 to September 20, 1994, by using questionnaires. The X2 test was applied to see the individual data. The following observations were made in this study. 57% of Seoul families had rice with side dish set three times a day, the first choice for rice substitute was bread In breakfast and noodle in lunch, 98% of the subjects had rice in dinner The change of tile meal pattern from boiled rice to bread and noodle was the result of social changes such as urbanization, heightening up of education level of woman and the resulting increase of woman employment. They were consumed 2~5 varieties of side dishes. The favorite were Kimchi and Cigag' and Guk. The major meal pattern In Seoul Is still the traditional one composed of boiled rice and side dishes.
