A communal feeding program has been managed mostly by the Sae Ma Eul Women's club of agricultural cooperatives during busy days of farming in rural Korea and spreading rapidly throughout the country since a couple of years ago. Four communal feeding villages from 3 provinces in Korea were purposively selected. The food and nutrient intake of 524 participants were measured by the Precise-Weighing method for 3 days from October $7{\sim}16$ 1976. Total amount of food consumed per participant per two meal day was 1456 grams, greater than national average. Two meals that the communal feeding program provided to farmers under the intensive work of harvesting were supplying enough calories and all other nutrients except the riboflavin. There was a variation among CF villages but overall the nutrient intake was good and had balanced meals. This investigation is a part of the study on nutrition supported by a grant from USAID.
Based on the nutritional component analysis data of the Rural Development Administration, the change in the main nutrients of vegetables for 40 years from 1981 to 2021 was investigated. Nutrients that showed a decreasing tendency during the investigation period in fruit vegetables were calcium, iron, thiamine, riboflavin, and ascorbic acid, etc. In root vegetables, it tended to decrease in calcium, thiamine, riboflavin, niacin, and ascorbic acid, etc. In leaf vegetables, it tended to decrease in iron, niacin, and ascorbic acid, etc. In leaf and stem vegetables, it tended to decrease in energy, phosphorus, iron, thiamine, riboflavin, niacin, and ascorbic acid, etc. In particular, it has been confirmed that vitamin reductions such as thiamine, riboflavin, niacin, and ascorbic acid, which have important meanings in vegetable intake, have occurred in vegetables over the past 40 years.

To explore the relationship between economic status and food and nutrient intake patterns, the 2001 National Health and Nutrition Survey result was analyzed. Dietary intake data of 6,978 Korean adults of 20 years and older who participated in the 2001 National Health and Nutrition Survey were used along with their demographic data. Economic status of the subjects was classified into the following 4 groups based on the self-reported average monthly income of household with reference to the minimum monthly living expenses (MLE) in 2001 : low < $100\%$ MLE $\leq$ middle < $200\%$ MLE $\leq$ high < $300\%$ MLE $\leq$ higher, Individuals in the higher income class had significantly higher mean intake for most of the nutrients including energy, protein, carbohydrate, fat, calcium, thiamin, riboflavin, niacin and vitamin C, and a higher percentage of energy intake from fat. In addition, they consumed more animal foods including meats, eggs, fish/shellfish, milk/dairy products and fats. On the other hand, the mean intakes of individuals in the lower economic class for calcium, vitamin A, and riboflavin were lower than $75\%$ of RDAs. And, there was a predominant difference in contribution of fat to total energy intake among the groups of different economic status. These results showed that household income is an important factor influencing the food and nutrient intake patterns of the Korean adult population. Although individuals at different age classes may respond differently to a change in economic status, developing and implementing nutrition policy and intervention programs for those nutritionally vulnerable groups should consider the economic status as an important factor to customize and differentiate the content of the Program. A dietary survey by 3-day food record, clinical examination, urinary riboflavin excretion, and erythrocyte glutathione reductase activity coefficient ( EGRAC ) were measured on forty -eight female college students residing in Seoul. Thirty -one students were on normal diet and seventeen were lacto - ovo vegetarians. The results are as following : (1) Students had lower intakes of energy, similar intakes of protein and higher intake of riboflavin compared to Korean RDA for their age group. Vegetarians were lower in energy and protein intakes but were similar in RF compared to omnivores. (2) Mean EGRAC values were $1.24{\pm}0.03$ for all subjects, $1.19{\pm}0.04$ for omnivores, and $1.32{\pm}0.06$ for vegetarians. Percentages of subjects with EGRAC values above 1.2 were 65% in all subjects, 55% in omnivores, and 82% in vegetarians. Therefore, it was concluded that vegetarians were more severe in biochemical lesions than omnivores despite the fact that their RF intakes were similar to omnivores. (3) Eighteen students who had EGRAC values above 1.2 were given daily supplementation of 5mg RF for one week and EGRAC determination was repeated. They all returned to normal range. (4) Correlation analyses showed that there was no significant correlation between the EGRAC values and dietary intakes of nutrients. Possible explanations for this were given. From these results, it was concluded that even though dietary RF intakes of the subjects were higher than Korean RDA levels, biochemical deficiency among the subjects was remarkably high if the criteria of EGRAC > 1.2 were used. More investigations are necessary to establish a criteria for biochemical deficiency and RDA levels of riboflavin for Koreans.

To explore the relationship between weight status and food intake pattern, the Nutrition Survey results of the 2001 National Health and Nutrition Survey were analyzed. Dietary intake data of Korean adults aged 20 to 64. years who participated in the 2001 National Health and Nutrition Survey, was used along with their demographic data. Subjects were classified into 4 groups based on the BMI value of subjects: underweight, normal, overweight and obese. For male adults, obese subjects had significantly higher mean intake of energy, protein, carbohydrates, and fat than normal subjects. In addition, obese male adults consumed more animal foods, especially more meats, than normal subjects. However, females obese subjects did not show higher intake of energy or fat. Although obese male adults showed higher energy intake, calcium and iron intake per 1000 kcal was lower than normal adults. Average calcium intake in females was low; about 70% of RDA regardless of obesity level. In addition, riboflavin and Vitamin A intake was lower in overweight and obese female than in normal females. Percentage of subjects with low fruit and vegetable intake (< 400 g per day) was also high in female subjects. These results showed that food and nutrient intake patterns of obese population were different between male and female adults. These dietary intake patterns need to be considered in developing and implementing nutrition policy and intervention programs to prevent and control obesity. Moreover, the National Survey and monitoring system should be developed for continuous and effective investigation on the relationship between obesity and dietary intake.
As Korea is expected to become super high aged society in 2026, nutrition is important elements of health in the elderly and affects their life. In epidemiological surveys, anthropometric and biochemical measurements represent important components of nutritional assessment in elderly. In the present study, we investigated anthropometric index, biochemical markers, and nutrient intake for elderly aged over 85 by using data on 71 elderly (24 men, 47 women) over 85 years which was obtained from Korea National Health and Nutrition Examination Survey in 2009. According to BMI values, the prevalence of underweight and obesity was 9.7% and 34.5% in men, and 7.9% and 26.4% in women. The prevalence of sarcopenia was 70.7% in men and 25.0% in women. However, plasma biochemical data are normal range in the older population. In nutrients intake, daily Intake of energy, protein, dietary fiber, water, thiamin, riboflavin, niacin, calcium, and potassium was inadequate considering the Dietary Reference Intakes for Koreans(KDRIs). In conclusion, elderly need to be educated nutrition and their health dietary life to prevent malnutrition, and standard of nutrition intake should be rearranged in elderly aged 85 over considering their antrhopometric index.
Objectives: This study was conducted to compare the nutrient intake of normal healthy adults with those having hypercholesterolemia. Methods: We analyzed data from the 6th Korea National Health and Nutrition Examination Survey (KNHANES VI). A total of 12,636 adults (5,223 males and 7,413 females) aged 19 or older were included in the study. Results: Males with hypercholesterolemia were older and had a higher waist circumference, body mass index, fasting blood sugar levels (FBS) and serum triglyceride (TG) concentrations compared to the normal group. Females with hypercholesterolemia were older and had higher FBS levels and serum TG concentrations compared to the normal group. While comparing nutrient intake by the 24-hour recall method, the male normal group showed a higher intake of fat, saturated fatty acid (SFA), monounsaturated fatty acid (MUFA), vitamin A and thiamin compared to the hypercholesterolemic group. However, the male normal group had a lower intake of iron and vitamin C compared to the hypercholesterolemic group. The female normal group had a higher intake of energy, protein, fat, SFA, MUFA, polyunsaturated fatty acids, cholesterol, riboflavin, and niacin compared to the hypercholesterolemic group, but had a lower intake of iron compared to the hypercholesterolemic group. A comparison of nutrient intake by food frequency questionnaire (FFQ) showed the following: There was no significant difference in nutrient intake between the normal men and women and those with hypercholesterolemia. After adjustment for confounding factors, nutrient intake by FFQ of the male normal group showed higher levels of n-3 fatty acid and vitamin C compared to the group with hypercholesterolemia. However, there was no significant difference in nutrient intake between the two groups of women. Conclusions: The average intake of n-3 fatty acids and vitamin C of the male group with hypercholesterolemia was lower than that of the normal group. However, since KNHANES is a cross-sectional study, prospective cohort studies are required to analyze the risk factors of hypercholesterolemia.
Working towards the compression of morbidity, we attempted to find the way to contribute to desirable aging and/or healthy old age. By looking into the factors affecting nutrient intake in middle-aged adults, we sought to find ways to improve their health status, Two hundred and fifty middle-aged adults from 40 to 60 years of age residing in Seoul and its vicinity were recruited for the survey. Subjects were interviewed for general characteristics, dietary habits lifestyle, status and food intake by a trained interviewer. Two -day food record was included in addition to the 1 -day 24 hr recall. Date were analyzed for the relationship among nutrient intake, health status, socio-economic status dietary habits and lifestyle using a statistical program (SAS) Although the mean energy intake of the subjects did not reach the recommenced dietary allowances(RDA), mean protein intake was well above the RAD for both sex groups(111.2% and 129.1% for men and women, respectively) The caloric contribution of fat was 15 to 20 % of total energy intake among different groups. Riboflavin was the most deficient nutrient and its mean intake reached only 71.0% of RDA for mean This seemed to be due to the lower intake of milk and dairy products among middle-aged Koreans who are more accustomed to traditional meals. Income and exercise habit were the most important factors influencing the nutrient intake of middle-age adults. Also, BMI, smoking habit, level of education regularity of meal, and hours of sleeping influenced the nutrient intake, In conclusion, middle-age adults appeared to have similar problems with the elderly in terms of nutrient intake and this age group should to included when considering nutritionally vulnerable groups in addition to the elderly and young children. The improvement in the nutrition status of middle-age adults is even more important because that could lead into the better health the elderly.
The increased number of elderly in Korea presents great challenges for community nutrition programs. Strategies to enhance elderly nutrition are needed, as well as dietary advice that are reality-based and tailored to the need of the elderly. The purpose of this study was to evaluate the overall effectiveness of an elderly nutrition improvement program(ENIP), by assessing changes in nutrition knowledge, attitudes, and behavior after program completion. ENIP was conducted in Suwon for 4 months in 1998 at 5 centers for the elderly. The program provided individual nutrition counseling and brief biweekly group education sessions. To stimulate participation and motivation, the elderly in two centers were served free milk packs(200ml) three time a week during the program(milk+education group), and the elderly in 3 other centers were served yoghurt on the program day(education group). Altogether, 102 subjects finished the program(milk+education group 67 ; education group 35). Data about nutrition knowledge, dietary attitudes, diet records(24 hour recall) and dietary habit was collected before(baseline) and after the program(follow-up). The Drop-out rate for the milk+education group(2.9%) was significantly lower than that for the education group(30.0%)(p<.001). The Nutrition Knowledge fo females milk+education group increased significantly after the program, but no significant differences were observed in other groups. Over 60% of all the elderly showed positive responses to the healthy eating attitudes. Energy, protein, vitamin A, riboflavin, Calcium and Potassium intakes improved in the male milk+education group. The Vitamin C intake improved in the male education group. Energy and vitamin A intakes improved in the female milk+education group and energy, vitamin A, thiamin, riboflavin, niacin, Ca nad P in the female education group. A stepwise multiple regression analysis was performed to examine the effects of food intake changes on overall nutrient quality. For all elderly, the fish intake explained 12.6% of the variance, followed by candy intake and vegetable intake(model $R^2$=19.6%). Dietary habits such as meal time regularity and salty food reduction were markedly improved in both groups. Sixty-one percent of the milk+education subjects stated their participation was voluntary and active, while 51% of education subjects did. Sixty four percent of the subjects stated their interest on diet increased remarkably through program participation. Considering the results, it is conjectured that ENIP had a great impact on nutrient intake, dietary attitudes and habits. Milk supplement showed no direct effects on elderly nutrition improvement, but it encouraged the program by reducing drop-out rates and inducing voluntary participation. Therefore milk supplement could enhance the community nutrition education program. Moreover it is strongly suggested that the ENIP be expanded to other communities.
To assess the quality of nutrient intake by area of Korean adults, a dietary survey with the 3-day record method was obtained from 324 subjects aged 40 years and older but younger than 70 (52.4 $\pm$ 8.7) living in a rural area (Ansung) and suburban area of a middle-sized city (Ansan). The quality of nutrient intake was assessed by analyzing Nutrient Adequacy Ratio (NAR), Mean Adequacy Ratio (MAR) and Index of Nutritional Quality (INQ). The average daily mean energy intakes were 1,832 ㎉ for Ansung and 1,842 ㎉ for Ansan, respectively. Daily intakes of fat for Ansung and Ansan subjects were 40.9 and 40.3 g, and those for protein were 75.1 and 73.1 g, respectively. The overall calorie: protein: fat ratio (CPF) of energy intake was 63 : 17 : 20. Daily mean intakes of protein, fat, calcium, phosphorus, iron, potassium, carotene, sodium, thiamin, and niacin were significantly higher in Ansung residents than in Ansan subjects (p < .05). The average intakes of energy, calcium, vitamin A were lower than Recommend Dietary Allowance (RDA) in both areas. Note, over 30% of the study subjects had less than 75% of RDA of calcium, vitamin A and riboflavin. The MAR was higher in Ansung than Ansan residents (0.86 and 0.85, respectively; p < .05). INQs were over 1 for most nutrients except calcium (0.87), and that of calcium and phosphorus was each significantly higher in Ansung than Ansan subjects. Based on these results, nutrient intake quality of subjects aged 40 to 69 years living in the surveyed rural area is comparable to that of semi-industrialized suburban area in Korea. Dietary deficiency in all of calcium, vitamin A, and riboflavin, however, was a common problem for both rural and suburban residents.
