고혈압 노인과 건강한 노인의 항산화 영양상태 비교

  • 최근 노인인구의 증가와 함께 식생활의 변화에 의해 사망원인의 변화가 일어나고 있다 한국인의 주요 사망원인 중 뇌혈관 및 심장질환 등 순환기계 질환에 의한 사망이 증가하고 있는 추세이며, 심장순환계 질환의 위험요인인 고혈압의 이환률도 65세 이상 노인에게서 증가하고 있다. 고혈압은 만성질환으로 산화적 스트레스를 증가시키는 질환이므로 본 연구에서는 건강한 노인과 고혈압 노인의 체내 항산화 영양상태를 비교하기 위해 울산지역 50세 이상 노인을 대상으로 하였다. 대조군은 질환이 없거나 골다공증, 위장질환과 같은 기타 질환을 가진 사람 96명이었으며, 고혈압환자군은 고혈압을 가진 모든 질환자 118명이었고, 항산화 영양소 섭취나 혈장내 항산화 영양상태에 영향을 미치는 성별, 연령, 흡연 및 음주상태를 보정하여 비교하였다. 고혈압환자의 평균 유병기간은 6.1년이었으며, 항산화 비타민 섭취량은 비타민 A, retinol, $\beta$-carotene과 비타민 C 섭취량 모두 고혈압 유무에 따른 유의적인 차이가 나타나지 않았으나 고혈압환자의 섭취량이 높은 경향을 보였다. 한국인영양권장량과 비교한 결과 대조군의 비타민 A 섭취는 권장량의 86.2%, 고혈압환자군은 권장량의 103.0%를 섭취하여 고혈압군에서 유의적으로 높았고, 권장량의 75% 이하 섭취자의 비율은 대조군에서 46.9%, 고혈압군에서 41.5%로 조사되었다. 비타민 C 섭취는 대조군에서 권장량의 176.6%, 고혈압군에서는 189.0%로 나타나 질환의 유무에 관계없이 두 군 모두 권장량의 170%이상을 섭취하고 있었으나 권장량의 75% 이하를 섭취하는 사람의 비율이 대조군에서 13.5%, 고혈압군에서 17.0%로 고혈압군에서 높게 나타났다. 혈장 비타민 C의 농도는 대조군 15.3 mg/L, 고혈압환자 15.9mg/L, 혈장 $\beta$-carotene 농도는 대조군 0.21mg/L, 고혈압환자 0.22 mg/L로 나타나 고혈압 유무에 따른 차이가 없었고, 혈장 비타민 A,E 농도 및 총 항산화능력은 대조군에 비해 고혈압환자에게서 유의적으로 높게 나타났다. 또한 혈장 지질과산화물의 농도도 유의적이지는 않지만 고혈압환자에게서 높은 경향이 나타났다. 따라서 고혈압에 따른 항산화 영양상태를 비교한 결과 전반적인 항산화 비타민의 섭취량, 혈중 비타민 농도 및 총 항산화능력이 예상과 달리 대조군 보다 고혈압환자에게서 유의적으로 높게 나타났다. 이런 결과는 질환자들이 자신이 가진 질병의 진전을 막거나 치료의 목적으로 치료제를 복용하고, 식이요법을 실시하고 있기 때문으로 사료되며, 고혈압과 같이 산화적 스트레스가 증가하는 질환의 경우 체내 항산화 체계 반응이 이러한 변화에 효율적으로 대처하기 위한 방향으로 증가되었을 가능성이 있을 것으로 사료된다. 특히, 본 연구의 대상자들의 유병기간이 6.1년으로 비교적 길기 때문에 질환의 진행정도에 따른 항산화 상태를 측정하거나 비교적 질환으로 판정된 직후의 사람들의 대상으로 한 연구 등 더 많은 연구가 필요하다.

Development of a Semi-quantitative Food Frequency Questionnaire Based on Dietary Data from the Korea National Health and Nutrition Examination Survey

  • Objective : This study was carried out to develop a semi-quantitative food frequency Questionnaire (SQFFQ) for estimating average dietary intake to determine the risk factor for lifestyle-related diseases in a conjoint cohort study. Design : We developed an SQFFQ for genomic epidemiological studies based on the data in the'98 Korea Health and Nutrition Examination Survey. A subset of data on informative food items was collected using the 24-hr recall method with 2,714 adults aged 40 or older living in middle-sized cities or in rural areas in Korea. The cumulative percent contribution and cumulative multiple regression coefficients of 17 nutrients (energy, fat, carbohydrate, protein, fiber, iron, potassium, sodium, calcium, phosphorus, vitamin A, retinol, $\beta$-carotene, vitamin $B_1$, vitamin $B_2$, niacin and vitamin C) of each food were computed. Results : Two hundred and forty-nine foods, which were selected based on their 0.9 cumulative percent contribution, and 254 foods, which were selected based on their 0.9 cumulative multiple regression coefficients, respectively, were grouped into 97 food groups according to their nutrient contents. Several popular Korean foods, which were missing from the list due to the seasonality of the survey, were included. The portion sizes were derived from the same data set. The SQFFQ covered 84.8 percent of the intake of 17 nutrients in the one day diet record data of our 326 cohort study subjects. Conclusions . The final list included 103 food items. The foods list in the SQFFQ described herein accounted for 84.8 percent of the average intake of 17 nutrients. Therefore, the list could be used for the assessment of the baseline dietary intakes of the conjoint cohort studies.

Nutritional characteristics of horsemeat in comparison with those of beef and pork

  • This study was conducted to determine the nutritional characteristics of horsemeat and bone meal in comparison with those of beef and pork presented by Dietary Reference Intakes For Koreans. Longissimus muscle and large metacarpal bone samples were collected from 20 fattened Jeju horses. Muscle samples were subjected to proximate analysis, assays for fatty acid profile and minerals, and bone samples to mineral assays. Horsemeal had similar levels of protein (21.1 vs 21.0 or 21.1%) and lower levels of fat (6.0 vs 14.1 or 16.1%) compared with beef or pork, respectively. Horsemeat had much higher levels of palmitoleic (8.2 vs 4.4 or 3.3%) and $\alpha-linolenic$ (1.4 vs 0.1 or 0.6%) acids than beef or pork, respectively. Linoleic acid was much higher in horsemeat (11.1%) and pork (10.1%) than in beef (1.6%). PUFA:SFA and n-6:n-3 ratios in horsemeat were 0.29 and 10.2, respectively. There were no big differences in mineral contents between horsemeat, beef and pork. For daily recommended mineral intakes of male adults (Dietary Reference Intakes For Koreans), phosphorus, sodium, potassium, iron, zinc and copper can be provided up to 24, 2.5, 6.7, 21, 26 and 40%, respectively, by 100 g raw horsemeat, but calcium and manganese levels are negligible. Horse cannon bone had much higher mineral contents especially in calcium (10,193 mg/100 g), phosphorus (5,874 mg/100 g) and copper (0.79 mg/100 g). Thiamin, riboflavin, niacin and retinol contents were 0.20, 0.21, 1.65 mg/100 g and $30{\mu}g/100g$, respectively. But ascorbic acid and beta-carotene were not detected. Our data demonstrated that higher levels of palmitoleic and $\alpha-linolenic$ acid in horsemeat than in beef and pork may be beneficial for human health. Horsemeat and bone meal are a good source of some minerals and vitamins.

Development of a Semi-Quantitative Food Frequency Questionnaire for Assessing the Usual Dietary Intake of Korean Adolescents (우리나라 청소년의 일상식이섭취량 평가를 위한 반정량적 식품섭취빈도조사지의 개발)

  • This study was performed to develop the semi-quantitative food frequency questionnaire (SQFFQ) for assessing the usual dietary intake of Korean adolescents. For that, we used 24 hour recall data from the 2005 NHANES(the Third Korean National Health and Nutrition Examination Survey). The cumulative percent contribution and cumulative multiple regression coefficients of 17 nutrients(energy, protein, fat, carbohydrate, fiber, calcium, phosphorus, iron, sodium, potassium, vitamin A, retinol, ${\beta}$-carotene, thiamin, riboflavin, niacin, vitamin C) of each food were computed. Among 687 food items, 265 food items were selected and grouped depending on similarities in ingredients, nutrient profiles, and/or culinary usage and re-added food items which were excluded for seasonal effect. Finally, total 19 food groups, 87 food items, were included in SQFFQ. Food intake frequency was quantified using nine categories. The portion size was classified depending on the average size of each selected food item. Each portion size was then categorized as one of three amounts: small (0.5 times), medium (1 times), and large (1.5 times). The SQFFQ covered 91.9% of the intake of 17 nutrients in 2005 NHANES and 86.6% in 2001 NHANES. Therefore, by testing the validity of developed SQFFQ using nutrient intakes, this list was valid to evaluate the usual daily intake in Korean adolescents.

Relationship among Consumption Frequency of Snacks Containing Trans Fatty Acid, Food Behaviors, Body Composition, and Nutrient Intakes of Adolescents Living in Kwang-ju Area (광주지역 일부 청소년의 트랜스지방 함유 간식의 상대적 섭취빈도에 따른 식행동, 체성분 조성, 영양소 섭취량 비교)

  • The objective of this study was to investigate the consumption pattern of snacks-containing trans-fatty acid in adolescents living in the Kwang-ju area of Korea, and to analyze the relevance toward their eating behaviors, body composition, nutrient intakes, and consumption frequency of snacks-containing trans fatty acid. A survey questionnaire was developed in order to investigate general environmental factors, eating behavior, nutritional knowledge, and the consumption frequency of snacks-containing trans fatty acid. A total of 312 middle school students were surveyed. The collection rate was 97% and ultimately 282 cases were analyzed. Anthropometric measurements, body composition data, and nutrient intakes were also collected. The consumption frequencies for snacks-containing trans-fatty acid were negatively correlated with food behavior scores (p<0.01) however, pocket money and snack intake frequency per day were positively correlated with consumption frequency. Also, snack consumption frequency had some correlation with the subjects' anthropometric measurements and body composition data such as total body water (p<0.01), body protein (p<0.01), body minerals (p<0.01), and skeletal muscle mass (p<0.01). Finally, the consumption frequency of snacks-containing trans fatty acid was significantly correlated with calcium intake (p<0.05), it also showed correlations with vitamin A, retinol, ${\beta}-carotene$, and folic acid intake, although statistical significance was not verified.

Change in the Chemical Composition of Chestnuts (Castanea crenata) from Different Periods (국내산 밤의 시기별 영양성분 변화)

  • Compositional changes of the Korean chestnut (Castanea crenata) including Daebo, Tsukuba, Tanzawa and Okkwang were investigated in order to characterize them from different periods (immature, mature and storage period). Proximate compositions of mature cultivars were higher than that of the immature cultivars. Between minerals, K (263.0-420.6 mg/100 g) and P (45.8-69.6 mg/100 g) of Tanzawa were highest, and they gradually increased during storage. Tsukuba, in mature period, showed the highest contents of total essential amino acids and glutamic acids as savory amino acids. Major fatty acids were palmitic acid and linolenic acid in four cultivars. In addition, linoleic acids, as ${\omega}$-6 fatty acids, were increased during the storage period. Tanzawa, in the mature period, presented the highest levels of sucrose, however, tsukuba, in the storage period, showed relatively higher free sugar content than others. ${\beta}$-Carotene, as a provitamin A, of Tsukuba in the mature period was highly detected among them, and vitamin C of Tsukuba and Tanzawa was more plentiful than others.

A Study on the Status of Antioxidant Nutrients and Lipid in the Middle-aged Korean Men Living in Taegu (대구지역 중년 남성의 혈중 항산화성 영양소와 지질상태에 관한 연구)

  • Serum levels of antioxidant vitamins and lipids were determined along with anthropometric measurements in 174 healthy male subjects with mean age of 50.3$\pm$6.8 years from Taegu area in Korea. Body mass index (BMI) and waist/hip(W/H) ratio of the subjects were 23.18$\pm$2.46 and 0.88$\pm$0.04, respectively and their systolic and distolic blood pressures were 127.8$\pm$15.5 and 83.9$\pm$10.8mmHg. Twenty one percent of the subject had BMI over 25. Average seum levels of total cholesterol, LDL- and HDL-cholesterol and triglyceride were 187.7$\pm$34.9, 117.6$\pm$33.5, 41.1$\pm$9.0 and 140.7$\pm$83.6mg/dl, respectively. Sixteen percent of the subject had LDL-chole-sterol over 130mg/dl. Serum level of lipid peroxide measured as thiobarbituric acid reactive substances(TBARS) of the subject was 2.01$\pm$0.77 MDA nmoles/ml and those of $\alpha$-tocopherol, retinol. ascorbic acid and sum of $\alpha$- and $\beta$-carotene were 9.59$\pm$3.11$\mu\textrm{g}$/ml, 1.15$\pm$ 0.38$\mu\textrm{g}$/ml, 10.5$\pm$3.8$\mu\textrm{g}$/ml and 64.6$\pm$43.$\mu\textrm{g}$/dl, respectively. About 14% of the sujects had low vitamin E status of less than 7.0$\mu\textrm{g}$/ml,. while 6% had low vitamin C status of less than 4.0$\mu\textrm{g}$/ml, Serum vitamin E showed positive correlations with total cholesterol and LDL-cholesterol and triglyceride, but no correlation with TBARS. Fatty acids of serum total lipid were composed of 42.9% as saturnted. 19.3% as monounsaturated and 36.7% polyunsaturated fatty acids(PUFA). N-6 and n-3 PUFA were 27.7% and 8.3% of total fatty acids. N-6/n-3 PUFA ratios were negatively correlated both with serum total cholesterol and TBARS.

Reanalysis of 2007 Korean National Health and Nutrition Examination Survey (2007 KNHANES) Results by CAN-Pro 3.0 Nutrient Database (2007년도 국민건강영양조사 결과 재분석 : CAN-Pro 3.0 식품영양가표의 활용)

  • This study aimed to reanalyze energy and nutrient intakes of 2007 Korean Nutrition and Health Examination Survey (KNHANES) using CAN-Pro 3.0, a commonly used nutrient analysis software in Korea. Food items and their codes were selected from 2007 KNHANES dietary intake file and converted to food codes of CAN-Pro 3.0 nutrient database (NDB). Of the 1,324 total food items, 1,155 items were converted by direct matching, 123 items were matched using other items in CAN-Pro 3.0 NDB and 42 items were matched using external sources. Consumption frequencies of items converted by direct matching contributed 94.5% of total consumption. Nutrient intakes of 4,091 participants of 2007 KNHANES, over 1 year old, were recalculated using CAN-Pro 3.0 NDB and compared with intakes in 2007 KNHANES dietary intake file. Intakes for energy and all nutrients except protein and Vitamin C calculated by two NDBs were significantly different by paired t-test (p < 0.001), but significantly correlated by Pearson' correlation coefficients (p < 0.001). Percent differences between the NDBs ranged from 0.3% to 15.1%, low for protein, energy, vitamin C, iron, vitamin B$_2$ (below 5%) but high for phosphorus, retinol, vitamin A, and $\beta$-carotene (over 10%). Age group, sex, and their interactions significantly influenced six nutrients (p < 0.05). Intake levels of zinc, vitamin B6, vitamin E, folate and cholesterol were not available in 2007 KNHANES but were calculated by CAN-Pro 3.0. Mean intake levels of zinc, vitamin B$_6$, vitamin E, and folate by age and sex groups revealed that some groups had mean levels below RI (Recommended Intake) or AI (Adequate Intake) levels. Intake level of cholesterol was higher than the recommended level (below 300 mg/day) in some groups, especially males. Results of the present study indicate the need for comparable and more comprehensive NDB to be used for dietary assessment of KNHANES and other researches. More rigorous evaluation of nutrients which have not been reported in KNHANES is needed.

Quality Characteristics of Curd Yogurt with Sweet pumpkin (단호박 가루를 첨가한 호상요구르트의 품질 특성)

  • Sweet Pumpkin (Cucurbita maxima) is rich in minerals, vitamins, and dietary fibers and has less fat. It is thus effective for dieting and for preventing constipation. Sweet Pumpkin contains vitamin A, particularly beta-carotene, which is turned into retinol in the body and helps protect the vision. It is currently on the spotlight as a vision care, anticancer, and diet food, among others, but because it is hard to find yogurt made of Sweet Pumpkin, in this study, Sweet Pumpkin powder was added to yogurt for promotion as a new health food. Yogurt was made with 0, 0.5, 1, 2, and 3% Sweet Pumpkin powder, and the color properties (brightness, redness, and yellowness), viscosity, pH, and acidity were measured through a sensory test (color, flavor, taste, overall acceptability). The storage stability at five-day intervals for one day, five days, ten days, 15 days, etc. was also experimented on. For the color properties, the greater the amount of Sweet Pumpkin powder added, the greater the decrease in the lightness (L) value, but the redness (a) and yellowness (b) values increased (p<0.001). For the viscosity, it was decreased for five days and then increased by 47-68% for ten days. This showed a significant difference in storage stability period: one day (p<0.001), five days (p<0.01), and ten days (p<0.01) (except 15 days). Further, there was a significant difference in pH and acidity [pH: for one day (p<0.001), five days (p<0.01), and ten days (p<0.01); acidity: one day (p<0.001), ten days (p<0.05), 15 days (p<0.001)]. No significant difference in pH was shown, however, for 15 days, and in acidity for five days. The results of the sensory test are highly estimated in the order of 1%>2%.3%>0%>0.5%. The study results indicate that the addition of 1% Sweet Pumpkin powder is most suitable for manufacturing Sweet Pumpkin yogurt.
