Quality Characteristics of Spring Napa Cabbage Kimchi Harvested at Different Times (봄배추의 수확시기가 김치의 품질특성에 미치는 영향)

  • The purposes of this study were to prolong the storage period and maintain quality of kimchi made from spring napa cabbage, which is used less frequently than winter napa cabbage. The results show that the firmness of kimchi from early July, the latest harvest period, was significantly higher than that of kimchi from mid-June. However, as maturation proceeded, no significant difference was observed following the harvest period when kimchi was stored for 8 weeks. Regarding pH and acidity, which are highly related to maturation of kimchi, pH generally decreased from the initial storage period while acidity increased. In the sensory evaluation, appearance was best in kimchi manufactured in late June according to manufacturing and maturation periods (p<0.05). After 4 and 8 weeks of storage, kimchi manufactured in early July had the highest scores with no significant difference. Texture and overall acceptability also showed no significant difference in each processing period.

  • The presence of multiple populations is now well-established in most globular clusters (GCs) in the Milky Way. In light of this progress, here we suggest a new model explaining the origin of the Sandage period-shift and the difference in mean period of type ab RR Lyrae variables () between the two Oosterhoff groups. In our models, while matching the observed color-magnitude diagrams, the difference in is naturally reproduced as the instability strip is occupied by different subpopulations with increasing metallicity. The instability strip in the metal-poor group II clusters is populated by second generation stars (G2) with enhanced helium and CNO abundances, while the RR Lyraes in the metal-rich group I clusters are mostly produced by first generation stars (G1) without these enhancements. This population shift within the instability strip can create the observed period-shift between the two groups, since both helium and CNO abundances play a role in increasing the period of RR Lyrae variables. The presence of more metal-rich Oosterhoff group III clusters having RR Lyraes with longest can also be reproduced, if more helium-rich third generation stars (G3) are present in these GCs.

  • We examined the effects of dietary nutrient content, feeding period, and feed allowance on compensatory growth, food use, chemical composition, and serum chemistry of juvenile olive flounder Paralichthys olivaceus. We placed 720 juvenile fish into 24 400-L flow-through round tanks (30 fish per tank).A $2{\time}2{\time}2$ factorial design (diet: control (C) and high protein and lipid (HPL) ${\time}$ feeding period: 8 and 6 weeks ${\time}$ feed allowance: 100% and 90% of satiation) was applied. Fish were hand-fed twice daily, based on the designated feeding schedule. Weight gain and food consumption were affected by both the feeding period and feed allowance, but not by diet. The food efficiency ratio was not affected by diet, feeding period, or feed allowance, but the protein efficiency ratio and protein retention were affected by diet and feeding period, respectively. We found that the full compensatory growth of fish was not achieved at a restricted feeding allowance.

  • The period of a recent streamcipher proposal Edon80 is analyzed. The designers of Edon80 had projected a period of $2^{103}$ Even though this could indeed be the average keystream Period, we show that for a randomly chosen key-IV pair, there exists a non-dismissible probability that the produced keystream will be of relatively short period. More explicitly, a keystream of period. $2^{55}$ may appear with probability $2^{-71}$, and one can show the existence of at least one key-lV pair producing a period $2^{11}$ keystream.

Variation of Application Period of Cold Weather Concrete in Korea (우리나라 한중콘크리트 적용기간의 변화)

  • In this paper, the changes of the period of cold weather concrete in Korea with the elapse of age are discussed to investigate the influence of elapse of age on period of cold weather concrete. The climate data of Korean Meteorological Administration(KMA) ranging from 1971 to 2000 was used. The period of cold weather concrete was calculated by following the specification of Korea Concrete Institute(KCI), American Concrete Institute(ACI) and Architectural Institute of Japan(AIJ), respectively. Previous research by the authors used the climate dada of KMA from 1961 to 1990 and research conducted by Kim M.H. used the climate data from 1931 to 1980 were also compared with the period of present paper. According to the results, in present paper, the period of cold weather concreting by KCI was calculated about 95days on average and the period by ACI was 101 days on average and the period by AIJI was 92days on average. For the variation of the period with the elapse of time, the period of cold weather concrete by KCI and ACI in present paper was shortened by as much as 5${\~}$6days compared with that of previous paper 10years ago. However, the period of cold weather concreting by AIJ did not exhibit a marked reduction in the period compared with that of previous paper by the author. But the period by Kim following AIJ exhibited a decrease in the period compared to the period by present paper by as much as 3days. For regional influence, the period of cold weather concreting in southern part of Korea was found to be much shorter than those at northern part. This may be due to the rising of mean temperature caused by global warming effect.

COMPENSATORY GROWTH AND NUTRIENT UTILIZATION IN CROSSBRED HEIFERS DURING REVIVAL PERIOD FED UREA MOLASSES LIQUID DIET

  • Five crossbred heifers(Holstein Friesian $\times$ Hariana) aged about one year and average body weight 157.0 kg were used to observe the effect of UMLD with restricted amount of wheat straw (500 g/100 kg body weight) on body weight gain and nutrient utilization. After seven months feeding the animals were switched to a revival diet consisted of wheat straw and concentrate mixture, for an additional six months. Fortnightly body weights were recorded and metabolism trials were conducted at the end of the two experimental periods. Results indicated that the average daily gain were 57.0 and 413.3 g in two feeding systems. This showed a sub-optimum growth during UMLD feeding which was compensated when good quality revival diet was available. Though, the nutrients intake were significantly (p < 0.01) lower in UMLD feeding period as compared to revival diet feeding, but digestibility of all the nutrients were alike statistically. It can be concluded that UMLD with restricted amount of wheat straw can be fed as scarcity feed for a short period, without causing irreparable loss to the animals, provided sufficient feed nutrients are available after the scarcity period.

Changes in the Quality Characteristics of Yuzu (Citrus Junos Sieb.) after Ozone Water Washing Treatment, Sterilization and Storage Period (오존수 세척 처리에 의한 유자의 품질 특성 변화 및 저장기간별 살균 효과)

  • The purpose of this study was to investigate the effects of sterilization, storage period and washing yuzu, according to the washing method, during the storage period. The results showed that the fungus size increased as the storage period increased, and no mold occurred in the yuzu washed with ozone water until 20 days. After 30 days of storage, a mold of 124.1±13.9 mm2 was observed. The no-treatment sample had a fungus of 814.5±72.8 mm2 in size on day 0 and the fungus the largest fungus was 6,362±636.7 mm2 on day 30. In the case of water treatment, the fungus was 286.4±31.5~4,836.4±484.6 mm2 in size. The results of the study confirmed that washing yuzu with ozone water has a sterilizing effect.

Existence of Amino Acids in Defined Culture Medium Influences In Vitro Development of Parthenogenetic and Nuclear Transfer Porcine Embryos

  • This study was designed to investigate the effect of essential amino acids (EAA) and/or non-essential amino acids (NEAA) on the development of parthenogenetic and somatic cell nuclear transfer (SCNT) porcine embryos in vitro. To evaluate the timing of amino acids supplementation, activated oocytes were cultured in NCSU23-PVA with EAA, NEAA or NEAA+EAA (AAs) during specific periods as below: EAA, NEAA or AAs were supplemented during Day 0 to 6 (whole culture period: ALL), Day 2 to Day 6 (post-maternal embryonic transition period: POST-MET), Day 5 to Day 6 (post-compaction period: POST-CMP), Day 0 to Day 2 (pre-maternal embryonic transition period: PRE-MET), or Day 0 to Day 4 (post-compaction period: PRE-CMP). Supplementation of NEAA decreased cleavage rates in PRE-MET and PRE-CMP and also decreased blastocyst rates in POST-CMP. On the other hand, EAA significantly enhanced blastocyst formation rate in POST-MET and no detrimental effect on embryonic development in other groups. Interestingly, NEAA and EAA had synergistic effect when they were supplemented to the medium during whole culture period. Supplementation of AAs also enhanced SCNT porcine embryo development whereas BSA-free medium without AAs could not supported blastocyst formation of SCNT embryos. In conclusion, existence of EAA and NEAA in defined culture medium variously influences the development of parthenogenetic and SCNT porcine embryos, and their positive effect are only occurred when both EAA and NEAA are supplemented to the medium during whole culture period. Additionally, AAs supplementation enhances the blastocyst formation of SCNT porcine embryos when they are cultured in the defined condition.

Local Seismic Activity around the Lützow-Holm Bay, East Antarctica

  • The seismic monitoring at Syowa Station$(69^{\circ}S,\;39^{\circ}E: SYO)$, located on the continental margin of the Eastern Dronning Maud Land, East Antarctica, began in 1959. Phase readings of the earthquakes have been reported since 1967 and have been annually published as part of the Data Report Series of the National Institute of Polar Research since 1968. An observation of a tripartite seismic network was carried out at SYO for a period of three years from 1987 to 1990. Epicenters of local earthquakes were determined for the first time by using the array network for the three-year period. Many different types of earthquakes, such as the mainshock-aftershock type, twin earthquake, earthquake swarms, etc., were detected during the period. After this, local events around SYO have been detected empirically from their waveforms recorded on seismograms. The seismic activity for the period of 1987-1990 was higher than that of the following decade. Earthquake epicenters, occurring during that period, were highly localized along the coast and in the central part of the $L\"{u}tzow-Holm$ Bay (LHB). Nine local earthquakes, recorded during the period of 1990-1996, showed many different types of events. The seismicity for the period of 1990-1996 was very low and the magnitudes ranged from 0.1 to 1.4. The locations of some events were determined by using the single station method for SYO, i.e., using the particle motions of the initial phase and S-P time. Two local events were detected in 1998 and one event in 2001. It would be estimated that the stress concentration was related to the glacial rebound around the LHB. Afterwards, we will be able to eventually examine the relationship between the seismicity around Antarctica and deglacial phenomena such as crustal uplift, and sea level change within the earth environmental system.

Quality Characteristics and Comparison of Microbial Community in Traditional Doenjang by Aging Period in Gyeongnam Province (경남지역 전통 된장의 숙성기간에 따른 품질 특성 및 미생물 군집 비교)

  • This study investigated the microbial community and quality characteristics of traditional soybean pastes (doenjang) based on the aging period in Gyeongnam province. The samples were collected from seven regions in Gyeongnam Province (Goseong, Hadong, Haman, Hamyang, Sacheon, Sancheong and Uiryeong). Contents of moisture, salinity, pH, and acidity of doenjang after 210 days aging were 56.40~65.21%, 9.05~16.08%, 4.88~6.86 and 0.64~2.14%, respectively. Lightness significantly decreased over the aging period, while the redness tended to increase over the aging period. Yellowness was from 21.39~26.81 to 21.10~28.36. Reducing sugar content was from 0.31~1.45% to 0.11~3.13%. The amino-type content increased from 141.87~495.13 mg/100 g to 328.53~823.67 mg/100 g. In contrast, the ammonia-type content declined from 136.74~364.70 mg/ 100 g to 128.62~331.00 mg/100 g. The overall total microbial count did not significantly differ, but it tended to decrease in sample GD4. Fungus declined overall or was not detected. Coliform groups were not detected in all samples. Lactobacillus and Bacillus cereus tended to decrease over the aging period. The common fungus and bacterium were Aspergillus oryzae and Tetragenococcus halophilus, respectively. After the aging period, the predominant fungi were Candida versatilis, Candida apicola, and Debaryomyces hansenii. The predominant bacteria were Tetragenococcus halophilus and Cronobacter sakazakii.
