Prevalence and Thermal Stability of Enterobacter sakazakii from Unprocessed Ready-to-Eat Agricultural Products and Powdered Infant Formulas

  • Enterobacter sakazakii, designated as an unique microbial species in 1980, may cause bacteremia, necrotizing enterocolitis and infant meningitis. The distribution and the thermostability of E. sakazakii in unprocessed ready-to-eat (RTE) agricultural products of 252 and in 25 powdered infant formulas (PIF) were analyzed. Eighty one, 50, 43, and 47% of brown rice, pumpkin, potato, and carrot samples, respectively, had aerobic plate counts (ARC) in the range of 5 log CFU/g or more. Almost all the other products sampled had APC of approximately 2 log CFU/g. Fifty three, 75, 67, and 68% of banana, pumpkin, soybean, and carrot had Enterobacteriaceae counts approximating 3 log CFU/g. Sixty six percent of the brown rice tested had Enterobacteriaceae counts approximating 5-6 log CFU/g. E. sakazakii was isolated from 3/25(12%), 4/23(17%), 1/24(4%), and 1/27(4%) of PIF, brown rice, laver, and tomato samples, respectively. D-values were 3.52-4.79 min at 60 and $D_{60}-values$ were similar as the isolates reported. Thermal inactivation of four thermovariant E. sakazakii strains during the rehydration of PIF with hot water were investigated. At $50^{\circ}C$, the levels of E. sakazakii decreased one log CFU/g for 4-6 min and thereafter the levels remained stable for 20 min. At $60^{\circ}C$, inactivation by about 2 log CFU/g occurred for 20 min. Therefore, the unprocessed agricultural products might be a source of contamination for PIF when used as an ingredient after drying and pulverization. Rehydration of PIF for infant feeding with a water temperature of $60^{\circ}C$ rather than $50^{\circ}C$, as recommended by the manufacturers, may be helpful in the reduction of potential E. sakazakii risk.

냉동 건조 조건에 따른 이유식용 당근의 품질 특성 (Quality Attributes of Carrot Pieces for Baby Foods Prepared under Different Freeze Drying Conditions)

  • 본 연구에서는 생후 9-12개월 된 영아에게 재 수화시킨 후 숟가락으로 떠서 먹일 수 있는 비교적 입자가 큰 알갱이 형태의 이유식용 냉동건조 당근의 최적 건조조건을 결정하였다. 이를 위하여 가열판 온도와 압력을 달리하면서 당근을 냉동 건조시킨 후, 냉동건조시간과 물리적 특성 및 관능적 특성을 측정하였다. 냉동건조시간은 가열판 온도가 높고 압력이 높을수록 감소하였다. 관능적 특성 중 당근의 색, 연한 정도 및 당근의 향미는 가열판 온도가 감소함에 따라 증가하였다. 또한 압력은 냉동 건조 당근의 관능적 특성에 큰 영향을 주지 않았다. 이유식용 냉동 건조 당근의 제조 시 바람직한 특성을 가능한 한 최대로 하면서 건조시간은 가능한 한 최소로 할 수 있는 최적조건은 가열판 온도는 $43^{\circ}C$, 압력은 700 micronHg로 결정되었다.

건조방법에 따른 양송이버섯의 물리적 특성에 관한 연구 (Physical Characteristics of Mushroom(Agaricus bisporus) as Influenced by Different Drying Methods)

  • 양송이버섯을 열풍건조, 진공건조, 동결건조를 이용하여 건조하고 건조조건 및 방법에 따른 물리적 특성을 비교 분석하였다. 양송이버섯은 초기수분함량이 90%(w.b.) 이상의 높은 수분함량을 가진 농산물이며, 건조방법에 따른 건조시간을 비교 분석한 결과 열풍건조시 가장 빠른 건조시간(12 h)을 나타내었으며, 동결건조의 경우 열풍건조에 비하여 약 8시간정도 오래 걸리는 것으로 나타났다. 색차를 나타내는 ${\Delta}E$값은 높은 온도와 빠른 풍속, 그리고 낮은 진공도에서 점차 증가하는 경향을 나타내었다. 전체적인 색도변화는 동결건조된 양송이버섯이 생버섯과 비교할 때 변화가 가장 적었으며, 열풍건조된 양송이버섯은 색차가 크게 나타났다. 갈변도 변화는 열풍건조에서 높은 값을 나타내었고 동결건조에서 갈변도 변화가 가장 적었으며, 건조풍속 및 진공도의 영향보다 건조온도의 영향을 더 많이 받는 것으로 나타났다. 표면 경도의 경우 열풍건조에서 가장 높은 값을 나타내었으며 반면에 동결건조에서 경도변화가 가장 적었다. 재수화 특성을 분석한 결과 동결건조의 경우 조직사이의 공극이 크기 때문에 열풍건조 및 진공건조의 경우보다 흡수량이 많았으며 흡수되는 시간도 초기에 급격히 증가하는 경향을 보였다.

홍조류 추출물을 이용한 오미자의 탈수 및 건조 (Dehydration of Omija (Schisandra chinensis B.) using Red Algae Extract as a Hypertonic Agent)

  • 홍조류 추출물(RAE)를 이용하여 오미자 절편을 탈수, 건조한 후, 열풍건조 처리된 시료와 복원율, 총 페놀 함량 등을 비교, 분석하였다. 처리 농도에 따른 시간 별 탈수양은 농도가 높을수록 탈수효율이 좋았으며, 경제적 측면을 고려하여 RAE 40%를 최적 탈수제 처리 농도조건으로 수립하였다. 복원율에서는 열풍건조에 비해 RAE 처리 시료가 더 좋은 복원율을 보였고, RAE 40% 처리 오미자의 경우 총 페놀 함량이 1304.8 mg GAE/100 g으로 999.5 mg GAE/100 g인 열풍건조보다 높은 결과를 보였다. 따라서 본 연구 결과, RAE를 이용한 오미자의 탈수, 건조는 기능성 성분 손실을 최소화하고 신선한 시료의 본래 상태로 복원될 수 있는 효율적인 건조 방법이라고 판단된다.

Effects of Blanching Methods on Nutritional Properties and Physicochemical Characteristics of Hot-Air Dried Edible Insect Larvae

  • Global meat consumption is increasing worldwide, however, supply remains lacking. Several alternative protein sources, such as cultured meat, plant-based protein production, and edible insects, have been proposed to overcome this shortage. Interestingly, edible insects are characterized by superior digestive and absorptive qualities that make them the ideal replacement for traditional protein production. This study aims to further the processing ability of insect protein by investigating the effects of various pre-treatment methods, such as blanching (HB), roasting (HR), and superheated steam (HS), on the nutritional properties and physicochemical characteristics of proteins extracted from Hermetia illucens larvae. The drying rate, pH value, color analysis, amino and fatty acid profile, as well as bulk density, shear force, and rehydration ratios of the above pre-treatment methods, were explored. HS was found to have the highest drying rate and pH value analysis showed that HB and HS samples have significantly higher values compared to the other modalities. Raw edible insects had the highest value in the sum of essential amino acid (EAA) and EAA index when compared to EAAs. HB and HS showed significantly lower bulk density results, and HS showed the highest shear force and the highest value in rehydration ratio, regardless of immersion time. Therefore, taking the above results together, it was found that blanching and superheated steam blanching pre-treatment were the most effective methods to improve the processing properties of H. illucens after hot-air drying.

Successful Treatment of Scabies-Induced Life Threatening Anemia in a Wild Raccoon Dog (Nyctereutes procyonoides)

  • A free-range wild raccoon dog (Nyctereutes procyonoides) was rescued with cachexia. Physical examination revealed generalized hyperkeratosis and alopecia typical of scabies as well as hypothermia (35.6℃). The patient was obtunded and severely dehydrated (10%). Hematological parameters included a low packed cell volume (PCV; 15%) and hemoglobin concentration, leukocytosis, and hypoglycemia. A blood smear revealed different subtypes of hypochromic leptocytes, indicating a regenerative response against severe anemia. This case was initially tentatively diagnosed as a severe anemia due to chronic external bleeding presumed to be caused by scabies-induced skin injuries. Darbepoetin alpha (DPO), iron dextran, and fluralaner were administered at the initial presentation, and supportive care including oxygen supplementation, warming, and nutritional support was provided. However, on day 5, the PCV dropped to 5.9% presumably caused by rapid rehydration due to drinking water ad libitum. DPO was boosted on days 5 and 6 along with daily iron dextran. On day 21, the PCV had recovered to 19.8%, and a blood smear evaluation showed a strong regenerative response. This case shows that even if severe anemia occurs in a raccoon dog, it can be managed with an appropriate response. In particular, since the rehydration rate due to food intake is faster than the hematopoietic response rate of raccoon dogs, the PCV may decrease rapidly in the early stage of treatment; therefore, diagnostic examination and additional medical management for hematopoiesis are necessary.

Physicochemical Characteristics of Kohlrabi Slices Dehydrated by the Addition of Maltodextrin

  • Kohlrabi (Brassica oleracea var. gongylodes L.) slices were dehydrated with maltodextrin (MD) at concentrations of 20, 30, and 40% (w/w), and the dried samples were compared with the freeze-dried and hot-air dried samples regarding various physicochemical qualities. The MD-treated samples had better results than those of freeze-dried or hot-air dried samples in terms of rehydration ratio and color. The total phenolic content of the MD-treated sample was similar to that of the freeze-dried and higher than that of hot-air dried sample. The ascorbic acid content of the MD-treated samples was also higher than that of the hot-air dried one. These results suggest that kohlrabi can be dehydrated with MD instead of hot air.

  • The hydrolyzed-lactose milk for the lactase-deficient subject is sweeter than whole milk, and some subjects dislike its taste. To overcome this shortcoming the dried liposomes containing ${\beta}$-galactosidase to digest lactose in milk after drinking were prepared and examined the possible application of this dried liposomes to the lactase-deficient subjects. To improve the stability of conventional liposome suspension, the dried liposomes in the presence of trehalose were prepared by the dehydration-rehydration vesicles method. Small unilamellar vesicles, prepared with egg phosphatidyl cholesterol, and cholesterol, were mixed with ${\beta}$-galactosidase solution and then ;up[jo;ozed. The freeze-dried liposome was rehydrated and centrifuged. The resultant multilamellar vesicles were mixed with trehalose(4g/g lipid) and then lyophilized to produce final dried liposome. Trehalose increased the entrapping efficiency of liposomes by 3 fo1d compared to the liposomes without trehalose (13% vs. 46%).

건조전처리로서 삼투건조의 이용 (Utilization of Osmotic Dehydration as Pretreatment prior to Drying)

  • In the drying process, many undesirable physicochemical changes occur that influence dried food product qualities. Pretreatments method is used to reduce the deterioration of dried food product qualities such as color, flavor, texture, rehydration ability and retention of nutrients. The methods of pretreatments are blanching, chemical treatment and osmotic dehydration. Osmotic dehydration is a water removal process which is based on placing foods in a concentrated osmotic solution or in a dry osmotic material. A large number of process variables have a significant effect on process and final product quality. In order to improve final product quality it is necessary to know the role of each process variable and understand the mecanisms throughout the process. Osmotic dehydration is a valuable processing tool with great future in minimal processing of fruits and vegetables.

소아 설사의 약물치료 (The Rational Use of Drugs in the Management of Diarrhea in Children)

  • Worldwide, diarrhea remains one of the most common illnesses among children. Oral rehydration therapy (ORT) is the cornerstone of diarrhea treatment. Yet, the rates at which ORT is used are still disappointingly low. Additional treatment interventions include antimotility drugs, antisecretary drugs, adsorbents, probiotics, antibiotics, oral immunoglobulin, micronutrient supplementation. Drugs are generally not necessary. However, selected probiotics may reduce the duration and intensity of diarrhea. Zinc is beneficial especially to malnourished children with diarrhea. Antibiotic treatment is effective mainly in shigella and cholera infection. Other drugs may be effective but require further investigations.
