Effects of Pulsed Electric Fields on Juice Expression Characteristics of Malus pumila Fruit (고전압 펄스 전기장 처리가 사과의 착즙 특성에 미치는 영향)

  • The effects of pretreatment by pulsed electric fields (PEFs) on the juice expression characteristics of the Malus pumila fruit were investigated. Fresh fruits were divided into quarters, were produced on a laboratory scale (100 g apples per lot) by pretreatment with electric fields at two different field intensities (1, 2 kV/cm; n=50, 100, 200, and 400 pulses), and were then pressed at room temperature. Relative to the control samples, the juice yield increased with increasing field intensities. The total phenolics and antioxidant activity were higher in the juice from the PEF-treated fruit than in the juice from the untreated fruit. There was no significant difference in soluble-solid and reducing sugar contents between the PEF-treated and untreated fruits. These results suggest that PEF pretreatment may be useful for increasing the juice yield, total phenolics, and antioxidant activity of the Malus pumila fruit.

Effect of Removing P.E film-Mulch at Budding Stage of Tobacco on the Change of Moisture and Mineral Content in Plow Layer Soil and Nutrient Uptake. (생육중반기 피복제거가 작토층의 수분 및 무기성분 변화와 연초양분흡수에 미치는 영향)

  • This experiment was carried out to Investigate the environmental changes of rhizosphere, behavior of nutrient components in soul, and nutrients uptake and growth response of the tobacco plant in the condition that mulch as polyethylene film, had been removed on the ridge at the 50th day after transplanting in comparison with continuous mulching condition. The results obtained were as follows; 1. After rainfall, soil moisture content In the plow layer was greatly increased without mulch in comparison with that of the plot with mulch. As a result, leaf water potential of tobacco plant without mulch was higher than that with mulch. 2. Available nutrients such as $NH_4-N, \;NO_3-N$, and total salts in the plow layer of the plot without mulch tended to be Increased, and especially accumulated on the surface layer owing to the redistribution of soil water by rainfall during the latter growth stage after removing mulch. 3. Nutrients uptake by tobacco was much more enhanced in the plot without mulch and resulted in higher contents of total nitrogen, $NO_3-N, \;P_2O_5, \;and K_5O$ in the tobacco leaf Especially higher content of nitrogen caused the delay of maturity resulting In the increased of dry weight of top part of tobacco in the plot without mulch toned to be Increased in comparison with that in mulching condition. Content of total nitrogen, $NO_3-N$, and nicotine in flue-lured leaves was much higher in the plot without. mulch than in mulching condition, but lower content of reducing sugar in the plot without mulch resulted in lower quality of tobacco.

Quality Characteristics of Commercial Kimchi Paste (시판 김치 양념의 품질특성)

  • Purpose: This study was conducted to obtain basic data for the quality characteristics of commercial kimchi pastes. Methods: The physicochemical, microbial, and sensory quality characteristics of kimchi paste purchased from 12 companies (KP 1-12) were investigated. Results: Commercial kimchi pastes contained a moisture content of 61.60-82.99%. The pH and titratable acidity of samples were 4.88-5.92 and 0.56-1.58%, respectively, and salinity was on average, 3%. The reducing sugar content was approximately 67.35 mg/mL, and those of KP 8 was higher by approximately 100 mg/mL. American Spice Trade Association (ASTA) value of kimchi pastes varied based on the samples. The commercial kimchi pastes contained capsaicin and dihydrocapsaicin at 1.51-7.84 and, 0.54-2.26 mg/100 g, respectively; sodium and potassium contents were 383.32-1,563.45 mg/100 g and 264.49-571.95 mg/100 g, respectively; and the Na/K ratio was 1.21-5.48. The number of aerobic bacteria and lactic acid bacteria detected from 5.00 to 8.00 log CFU/g. The number of yeast and mold detected from 0.50 to 2.66 log CFU/g. Coliform was detected at approximately 3-4 log CFU/g, whereas Escherichia coli was detected only in KP 3 and KP 7. Overall acceptability of kimchi paste showed a higher score in KP 1. The commercial kimchi pastes showed higher salinity and Na/K ratio and E. coli was detectedin some kimchi paste samples. Conclusion: Therefore, further studies are required to lower the Na/K ratio, for recipe developments, and the standardization of quality and hygiene safety of kimchi paste.

Changes in Physicochemical Properties of Industry-type Kochujang during Storage (공장산 고추장의 저장기간중 이화학적 특성의 변화)

  • Changes in physical and chemical characteristics of industry-type kochujang were investigated during 105 days of storage at $37^{\circ}C$. Reducing sugar content of kochujang decreased rapidly up to the 15th day of storage and then decreased slowly thereafter. Total free amino acid contents decreased by 22.3% after 60 days and by 35% after 90 days of storage. The activities of amylase and protease did not show any significant changes, however, the activity of neutral protease increased slightly. The moisture content and water activity of the kochujang decreased linealy during storage and the correlation coefficient between the moisture content and water activity showed 0.964. Apparent viscosity of kochujang increased with an increase in storage time. It was found that water activity was more responsible for the increase of apparent viscosity than water content.

Effect of Ozone Treatment for Sanitation of Chinese Cabbage and Salted Chinese Cabbage (배추 및 절임배추의 위생화를 위한 오존살균기술의 이용)

  • To retain the fresh taste and flavor of Kimchi, ozone treatment was applied for kimchi food materials. In this study, Chinese cabbage and salted Chinese cabbage, the highest portion of Kimchi materials, were treated by ozone ($3{\sim}9$ ppm) and their microbiological and chemical characteristics were investigated. Initial number of total aerobic bacteria of Chinese cabbage and salted Chinese cabbage were $1.3{\sim}10^7$ and $7.1{\sim}10^6$ CFU/g, respectively. However, when ozone was treated, the number was decreased and this decrease of bacterial number was maintained during storage. Yeast and mold populations were $6.0{\times}10^3$ and $1.2{\times}10^3$ CFU/g in Chinese cabbage and salted Chinese cabbage, respectively; however, an ozone treatment also decreased the yeast and mold populations. Other physical and chemical characteristics of ozone treated sample such as color, hardness, contents of ascorbic acid and reducing sugar of Chinese cabbage and salted Chinese cabbage were not different when compared with control.

Changes on Browning Characteristics of Chicory Roots by Roasting Processes (치커리의 볶음처리에 따른 갈색화 특성 변화)

  • Browning chracteristics were investigated for Chicory roots(Cichorium intybus L.) when roasted at different conditions of 120 to $180^{\circ}C$ in temperature and 10 to 40min in time. The soluble solid of water extracts obtained from roasted Chicory roots increased slowly with increasing roasting temperature and time, but it decreased above $160^{\circ}C$. The contents of reducing sugar and amino-type nitrogen in aqueous extracts obtained from roasted Chicory roots decreased rapidly with increasing the roasting time and temperature. Browning color intensity in aqueous extracts of roasted Chicory roots increased with increasing the roasting temperature and time, Hunter's color L and b values of Chicory powder decreased with increasing the roasting temperature and time, while Hunter's color a and ${\Delta}E$ values continuously increased with increasing the roasting temperature and time.

Yield Performance and Nutritional Quality of 'Agakong' Soybean Harvested in Drained-Paddy and Upland Fields

  • The study was conducted to evaluate the performance of the popular isoflavone-rich soybean 'agakong' in upland and in drained-paddy fields. Analysis revealed no significant variation in terms of plant height, number of seeds per pod, number of nodes, and 100-seed weight between the two cropping system. Number of pods was significantly higher in paddy field(234.2kg 10a$^{-1}$) compared to those harvested in the upland field, which was later manifested on the yield where paddy soybeans obtained 278.1kg 10a$^{-1}$ whereas upland only obtained 179.3kg 10a$^{-1}$. This observed difference in yield was attributed to the observed higher amount of N in the paddy soil (0.907%) as compared to the upland soil (0.458%). In terms of nutritional content, protein and phytic acid contents were the only parameters that showed significant differences while oil, sugar, reducing power and fatty acids were all comparable in paddy and filed condition. Protein content was higher in upland soil (47.4%) than that of the paddy (44.9%) soil. On the opposite, phytic acid was higher in paddy (2.90%) than in upland (1.09%). This study showed that the yield of soybean is generally a factor of soil N, drained-paddy field production of soybean is comparable to upland-filed production with the benefit of increasing phytic acid content while maintaining its nutritional value.

Quality Characteristics of Kochujang Prepared with Soy Powder (콩가루를 첨가한 고추장의 품질 특성에 관한 연구)

  • To improve the sensory acceptability of Kochujang with added Meju powder, Kochujang was prepared with added raw soy powder and roasted soy powder were added instead of Meju powder. These Kochujang were fermented for 45 days at $25{\pm}3^{\circ}C$ and examined for changes in their physicochemical properties and sensory characteristics. Results were as follows. In the moisture content and acidity of Kochujang, the group with added Meju powder was the highest. There were no significant differences in the lightness (L value), although the group with added with Meju powder and raw soy powder were decreased in lightness over days of storage. For redness (a value), the group with added raw soy powder was the highest, and the group with added raw soy powder was decreased with increasing storage days. For yellowness (b value), the group with added roasted soy powder was the highest, and there was no significant difference over storage days. The reducing sugar content of Kochjang to which roasted soy powder was added was the highest, and the amino-nitrogen contents of Kochjang to which Meju powder was added was the highest In sensory evaluation, the Kochjang with added roasted soy powder had the best score in taste and overall acceptability. Therefore, these results suggest that roasted soy powder can be applied to Kochjang for enhanced sensory preference.

Quality Properties of Pear Vinegars with High-Acidity under Different Fermentation Conditions (고산도 배식초 제조 시 발효조건에 따른 품질특성)

  • High-acidity vinegar was manufactured using pear concentrate by fed-batch fermentation without additional nutrients, and the physicochemical properties and volatile components were investigated at different fermentation stages (Stages 1-4) and at various initial alcohol concentrations (IAC; 6-9%). The levels of reducing sugar, free amino acids, total phenolic content, total flavonoid content, and radical scavenging ability increased slightly during Stage 4 (high-acidity vinegar), which was affected by alcohol feeding. The contents of approximately 20 types of volatile compounds differed between the moderate- and high-acidity vinegar samples, as determined by solid-phase microextraction/gas chromatography-mass spectroscopy. The level of acetic acid in high-acidity vinegar increased according to the initial alcoholic content applied. The high-acidity vinegar produced by fed-batch culture at an IAC of 6-7% showed improved physicochemical and volatile properties as compared to the moderate-acidity vinegar.

Characteristics of A New Flue-cured Tobacco Mutant Line KF 8832-85 (황색종 연초 돌연변이 계통 KF8832-85의 특성)

  • A new flue-cured tobacco mutant line BU 8832-85 was developed at Taegu Experiment Station, Korea Ginseng and Tobacco Research Institute in 1994. KF 8832-85 was resulted from a cross of flue-cured cultivars NC 95$\times$NC 2326, and developed by a pedigree system of breeding ; initial selection was made by plant type and resistance to bacterial wilt(BW) disease(heudomonas solanaceamm) in the F2 generation under the natural field conditions infested with the pathogen. One white flowered plant was occurred by spontaneous mutation in a certain line among the F3 generatioin while the others were pink. Six plants from the seeds by selfing were selected at the field infested with the pathogen among 240 populations with white flowering in the F4, KF 8832-85 was selected based on yield and leaf quality trials among 6 lines in Fs generation. BCF 8832-85 was compared with its Parent for certain agronomic and chemical characteristics at Taegu Experiment Station in 1993 and 1994. The results showed that KF 8832-85 have white flower, the stalk height was approximately that of NC 2326 but averaged about loom taller than NC 95. It produced ground suckers as much as NC 95, and did not breakdown leaf at the same as WC 2326. KF 8832-85 have high resistance to bacterial wilt disease. Yield of KF 8832-85 was 10 and 18% higher then that of NC 2326 and WC 95, respectively. Price per Kg was equal to that of NC 2326. The contents of nicotine and reducing sugar did not differ significantly from NC 95, while total nitrogen was significantly lower than NC 95. Therefore, the new mutant line is genetically stable for agronomic and chemical characteristics and provides a source of bacterial wilt disease resistance for use in breeding resistant flue-cured cultivars.
