  • We investigated the effect of red cabbage extract (RCE) on cell death in MDA-MB-231 human breast cancer cells. Cells were cultured in the presence 1.0, 1.5, and 2.0 mg/mL concentrations of RCE for 24 hours. MTT assays demonstrated that mitochondrial dehydrogenase activities decreased in a dose-dependent manner in cells (p<0.05). In contrast, the proportion of dual staining with Hoechst 33342/ethidium bromide (EtBr) for cell death increased in a dose-dependent manner in cells (p<0.05). Flow cytometry assays revealed that cell death caused by an apoptotic program increased in a dose-dependent (p<0.05). Also, increased ROS accumulation in cells, as revealed by DCF-DA staining, was observed in a dose-dependent fashion (p<0.05). The apoptosis suppressor gene Bcl-2 decreased significantly at the mRNA level. Pro-apoptotic genes Bax and caspase-3, genes that are related to the last stage of apoptosis significantly increased. The Bcl-2/Bax ratio which is an important indicator of apoptosis, was found to have significantly decreased dose dependence. These results taken together indicate that the effect of red cabbage extract induces cell death in MDA-MB-231 human breast cancer cells.

  • The use of drone-based hyperspectral image offers considerable advantages in high resolution remote sensing applications. The primary objective of this study was to select the optimal bands based on hyperspectral image for the estimation yield of the chinese cabbage. The hyperspectral narrow bands were acquired over 403.36 to 995.19 nm using a 3.97 nm wide, 150 bands, drone-based hyperspectral imaging sensor. Fresh weight data were obtained from 2,031 sample for each field survey. Normalized difference vegetation indices were computed using red, red-edge and near-infrared bands and their relationship with quantitative each fresh weights were established and compared. As a result, predominant proportion of fresh weights are best estimated using data from three narrow bands, in order of importance, centered around 697.29 nm (red band), 717.15 nm (red-edge band) and 808.51 nm (near-infrared band). The study determined three spectral bands that provide optimal chinese cabbage productivity in the visible and near-infrared portion of the spectrum.

  • In this study, we examined the immunostimulating characteristics of a hot water extract (RCW) and crude polysaccharides (RCP) of red cabbage. RCW and RCP did not show any cytotoxicity in B16BL6 cells and macrophages. Although the sugar compositions of RCW and RCP were similar, the uronic acid content of RCP was higher than that of RCW RCP significantly increased the production of various cytokines and NO, whereas RCW did not affect the production of cytokines and NO. In an ex vivo assay of natural killer (NK) cell activity, intravenous (i.v.) administration of RCP significantly augmented NK cytotoxicity against Yac-1 tumor cells at 3 days after RCP treatment. In an experimental lung metastasis model using B16BL6 melanoma cells, i.v. administration of RCP at a dose of $1,000{\mu}g$ per mouse significantly inhibited 47.3% of lung metastasis. These results suggest that crude polysaccharide isolated from red cabbage is a promising food ingredient for the prevention of tumor metastasis.

  • The aim of this study was to evaluate the individual glucosinolate (GSL), total phenol, total flavonoid, and vitamin C content, and antioxidant activity under various light quality condition, mainly focusing on red (R) to far-red (FR) light ratios in three Brassica sprouts (radish, Chinese cabbage, and broccoli). Three R/FR ratio of 0.6, 1.3, and 2.0 were exposed to 5-day old sprouts for 48 h in a controlled environment, and the targeted phytochemical contents and antioxidant activities were compared with three separate control plot of dark, fluorescent, and red:blue 8:2 conditions. Total GSL content was highest in broccoli among the cultivars throughout the respective treatments, and increased with the increasing of R/FR ratio in the broccoli sprouts, while the content showed non-significant results in the Chinese cabbage sprouts. The progoitrin, a major GSL in Chinese Cabbage and broccoli, content decreased by upto 38% and 69%, respectively, with decreasing the R/FR ratio compared to the control plots (fluorescent, red:blue 8:2, and dark condition). The contents of phenol, flavonoid, and vitamin C were lowest in dark condition in all the three Brassica sprouts. The total phenol content and antioxidant activities increased with decreasing the R/FR ratio in all the Brassica sprouts, while total flavonoid and vitamin C content showed different patterns depending upon the Brassica sprouts. These results suggest that additional use of FR is expected to improve the functional quality of Brassica sprouts in different ways.

  • This study was conducted to standardize the proper ingredient ratios of chinese cabbage kimchi by the sensory evaluation, chemical properties, and functional properties of antimutagenic effect and inhibitory effect on the growth of cancer cells from the ratios obtained from literatures. The standardized ratios of ingredient from the literatures was 13.0 of radish, 2.0 of green onion, 3.5 of red pepper powder, 1.4 of garlic, 0.6 of ginger, 2.2 of anchovy juice, 1.0 of sugar and the final salt concentration 2.7 in the proportion of 100 salted chinese cabbage. The standardized ratio of the ingredients exhibited better overall acceptability and less moldy smell and moldy flavor than any other ratio of ingredient in the sensory evaluation. The standardized kimchi with the above ratios of the ingredients, at final salt concentration of 2.5%, showed high reducing sugar contents and Leuconostoc sp. counts. All juices of the chinese cabbage kimchi showed not only high antimutagenicity against aflatoxin $B_1$ in Salmonella typhimurium TA100 but also strong inhibitory effect on the growth of AGS human gastric adenocarcinoma cells in SRB assay, especially these functional properties were the most effective at each standardized ratio of the ingredients. From the taste, chemical and functional properties, the standardized ratios of ingredients was 13.0 radish, 2.0 green onion, 3.5 red pepper powder, 1.4 garlic, 0.6 ginger. 2.2 anchovy juice, 1.0 sugar and the final salt concentration 2.5 in the proportion of 100 salted chinese cabbage.

  • For the convenience of transportation and improvement of the utility of raw chinese cabbage during harvest season, the condition of pretreatment for the raw chinese cabbage with pickle has been examined by preserving for one to ten days. The changes in the content of riboflavin and ascorbic acid in kimchi (pickled-seasoned chinese cabbage), which was manufactured by using the pickled cabbage as a main raw material, along with ginger, garlic, red pepper powder, rad-dish and fermented shrimp as seasonings, during ripening were investigated with specially referred to palatability. The yield of the pickled cabbage compared to the raw cabbage after treating with pickle was 62 to 65% in volume and 15 to 42% in weight. After 10 days of pickling of the chinese cabbage, one-third of total ascorbic acid was diminished but no change in riboflavin content was observed. During ripening of kimchi, riboflavin content in kimchi processed with the pickled cabbage has not been changed compared to the content in convention- ally made kimchi, however, slight decrease in ascorbic acid content in the kimchi processed with the pickled cabbage was as certained. The result of organoleptic test showed that the kimchi processed with the pickled cabbage became inferior to the conventionally made kimchi with the days of ripening.

  • This study was performed to define the physicochemical characteristics of food waste and food wastewater, and to find the effect of salinity variation experiment, the samples of 1, 2, 3 and 4 were prepared by the salinity of 1.0%, 1.5%, 2.0% and 2.5%, respectively. In experiment, aerobic composting reactors were operated by the model which was composed of half an hour's stirring and 2 hour's aeration per day, for 45 days. Seeds of vegetables of Chinese cabbage and red pepper were seeded at compost-free control, compost 1, 2, 3 and compost 4 for the sake of investigation of germination rate and growth rate of those. The followings are the conclusions that were derived from this study. 1. In food waste, the moisture content was 60%, organic compound content was 95%, total carbon was 47.5%, total nitrogen was 1.6%(therefore, C/N ratio was 30). The values of pH were 4.0 and 3.8 the values of salinity were 0.9% and 1.2%, and the values of conductivity were 7.8 mS/cm and 18.0 mS/cm, respectively. 2. In salinity experiment, the reduction rate of volume was increased(40%) when the salinity was decreased(1.0%). Also, the reduction rate of mass was increased(52%) when the salinity was decreased(1.0%). This fact denotes that salinity hinders the process of composting. 3. Germination rate and growth rate of Chinese cabbage are more excellent than those of red pepper(97.14%, 5.2:2.5 cm). 4. In Chinese cabbage, germination rate and growth rate at compost with the lowest salinity are more excellent than those at compost-free control(97:94%, 5.2:4.5 cm).

  • This study was conducted to develop the suitable nutrient solutions for variable Cruciferae leafy vegetables. l/2, 1 and 3/2 strength of nutrient solution recommended by National Horticultural Research Institute were supplied to plants in deep flow technique systems during 25 days. The growth of pak-choi and leaf mustard 'Asia curled' was highest in the 3/2 strength, and kaie 'TBC' in the 1 strength. Mean cation ratio of nutrient solution for pak-choi, leaf mustard and kale was K $49.5\%$, Ca $35.8\%$ and Mg $14.7\%$, which was obtained by calculating the uptake rates of water and nutrients. Suitable composition of the nutrient solution for Cruciferae leafy vegetables was N 14, P 3, K 6.8, Ca 4.8, $Mg 2m{\cdot}L^{-1}$. To examine the suitability of nutrient solution developed for Cruciferae vegetables (NSC), plants were grown 4 times from Sep. 2003 to Oct. 2004. When plants were grown in NSC, relative growth rate increased 1.1 to 2.5 times and vitamin C content 1.06 to 1.52 times. The proper plants to apply NSC for functional leaf vegetable production were leaf mustard 'Asia recurled', 'Redcurled' and 'Pamagreen', kale 'TBC', 'Portugal' and 'Hanchu collard', leaf broccoli 'New green', pak-choi, baby cabbage 'Red king' and 'Green king', flowering red chinese cabbage and Korean cabbage.
