A study on the Development of Standardized Recipe and the Microbiological Assessment and Sensory Evaluation of Various Fish Dishes for Cook/Chill System for Kindergarten Foodservice Operations (Focused on Broiled Mackerel, Flounder Stew and Squid Bulgogi) (유치원 급식에 적용하기 위한 생선류의 Cook/Chill System용 표준레시피 개발 및 미생물적, 관능적 품질 평가에 대한 연구 - 고등어구이, 가자미조림 및 오징어불고기를 중심으로 -)

  • Standard recipes of various fish dishes for cook/chill system were developed to provide foodservice managers in kindergarten with more effective management system. Three kinds of fish dishes, Broiled Mackerel, Flounder Stew and Squid Bulgogi were selected as menu items in this study, and the standard recipes for these fish dishes were developed through the sensory evaluation, and microbiological analyses were performed to assure the quality of fish dishes. The microbial counts of the fish dishes which were chilled at 0∼3$^{\circ}C$ and stored for 10 days in refrigerator were as follows : Aerobic bacteria were not detected in Broiled Mackerel; however, those in Flounder Stew were 2.92${\pm}$0.01∼3.84 ${\pm}$0.06 Log CFU/g and those in Squid Bulgogi were 3.16${\pm}$0.01∼4.80${\pm}$0.02 Log CFU/g. Coliform bacteria were not detected in any fish dishes. All the sensory characteristics showed no significant differences between the first and third day of storage, except the feeling after swallowing of Flounder Stew. Overall acceptability scores of chilled stored foods in the first and third day were 6.87${\pm}$0.99 and 6.40${\pm}$1.40 in Broiled Mackerel, 6.87${\pm}$0.35 and 6.73${\pm}$1.10 in Flounder Stew, 6.13${\pm}$0.99 and 6.07 ${\pm}$0.80 in Squid Bulgogi, respectively.

Effects of Gums , Fats and Glutens Adding on Processing and Quality of Milled Rice Bread (Gum 질, 지방질 및 활성 Gluten 첨가에 따른 쌀빵 특성 비교)

  • Fermentation and morphological characteristics of rice bread baked with gums, lipids, and glutens added dough were investigated to establish the standard recipe for rice bread processing. All gum-type additives 1ed to successful formation of rice bread. Hydroxypropyl-methyl-cellulose among tested gums showed the best volume expansion and successful formation of rice bread. Addition of vegetable oils gave better effect on increasing the specific loaf volume and tenderness of rice bread than addition of the solid-type lipids such as margarin and lard during rice bread processing. Dry heating during baking of the rice bread gave more desirable effect on specific gravity of rice bread than wet heating. High-amylose rices such as Suweonjo, AC 27, and IR 44 showed better formation of rice bread in the case of adding 3% hydroxypropyl-methyl-cellulose, while Suweon 230 and Pusa-33-30 showed slightly better formation of rice bread in the case of adding the gluten and strong hard flour. The glutinous rice Hangangchalbyeo failed to the formation of rice bread in both cases of adding 3% hydroxypropyl-methyl-cellulose and the gluten and hard flour.

  • Breakfast is an important factor for health status of people. This study was carried out to investigate the dietary life related to breakfast of workers and to develope some nutritional convenient diets for the workers. The collected data were consisted of items about general characteristics of the subjects, breakfast pattern, factors affecting on breakfast and opinions on convenient foods. The subjects were classified into labor workers (n=202) and office workers (n=227) aged from twenties to fifties. The rate of skipping breakfast in workers was $31.5\%$ and higher according to the increase of age. Their favorite style of breakfast was mostly Korean traditional diets, but only $38.1\%$ of the subjects had cooked rice as breakfast. The main reason for skipping breakfast was that they had no time for it. But $65.4\%$ of total workers had experiences of using convenience diets. They had these kinds of diets because of convenience. These results suggest that recipe development of convenient breakfast is very important for the good dietary life of the workers.

  • It is difficult to make which customers want in restaurant industry because of IMF situation. Therefore, utilization of service marketing is needed by best effect through least investment in restaurant industry. The background of restaurant industry is not directly related to the improvement of tourism industry. We should give a hand to tourism and restaurant industry by holding international events. so the way of thinking among people is changing. And importing of famous foreign brand and opening shops are accellerating the improvement of tourism and restaurant industry. In this perspective, improvement factors of restaurant industry are as follows : the increase of pst time, the increase of disposable income, the increase of woman's having jobs and double income, requirement of people about health food, the increase of nuclear family, and the change of viewpoint among people. This restaurant industry is service industry, and it sells invisible service except the aspect of selling menu. In addition, in terms of menu, price reduction strategy should be done by cost reduction and restructuring. The ultimate purpose of marketing is to increase sales and to do this we should increase the number of customers in shops. That means we should create new customers and try to attract customers who used to be regular in the shops. Therefore, the demonstration of management ability and positive reaction is really needed. So the most important things in marketing are as follows: proper strategy for double consumption, increasing the number of customers through new specific menu, menu life cycle according to menu item, menu development by considering customer, making recipe, enhancement of product quality and cost reduction by customer's opinion. We should concentrate on national menu first, and try to develop menu for international market. It is absolutely needed that we set up the menu product strategy through menu marketing with various products and constant study related to menu marketing is to be done.

Asphalt Sealant Containing the Waste Edible Oil (폐식용유를 이용한 아스팔트 실란트)

  • This work is about the development or asphalt sealant using the waste edible oil. Asphalt sealant has been used for crack filler and bridge deck joint sealer Several plasticizers such as aromatic or paraffin process oils, DOP, Bunker C fuel oil, and waste edible oil were compounded with the basic components such as asphalt(AP-5), a thermoplastic elastomer(SBS triblock copolymer), a tackifying agent(petroleum resin), and stabilizers. Penetration, softening point, ductility, and elongation by tensile adhesion of those asphalt sealant compounds were measured. Their properties were changed largely depending on both the type and content of plasticizers. Waste edible oil and DOP were the best plasticizers for the low temperature tensile adhesion characteristics. Penetration and elongation by tensile adhesion of asphalt sealant compounds increased with the increase of waste edible oil content and decreased with the increase of talc content. The manufacture of asphalt sealant with low penetration and excellent low temperature tensile adhesion was possible by the recipe optimization.

The Effectiveness of Na Reduction Program for Cook in Child-care Center - Focus on Self-reevaluation and Strengthen Consciousness - (서울 일부 지역 어린이집 조리종사자 대상 나트륨 저감화 교육 효과 - 자기 재평가와 의식증가를 위한 교육 결과 -)

  • Objectives: The purpose of this study was to develop a Na-reduction education program and apply it for cooks who prepare meals in day-care centers. To development of the program was based on increasing the self-awareness of salinity, eating behaviors and enforcing skills of low-Na cooking. Methods: The study was carried out from April to October in 2013, fifty five cooks participated in this program. The Na reduction program composed of 4 sessions of education which included a 90-minute lecture and self-reevaluation of personal salt-sensitivity degree and three low Na recipe cooking classes. In order to measure the effectiveness of the program, the pretest and posttest of salinity of the soups provided by day care centers was conducted at registration and 5 month after the program with the same menu. Results: After the conduct of the program, salimeter using rate was increased from 8.2% to 94.6% after the program and the other measuring instruments using rate was gradually increased. We observed that the score on eating behaviors increased 1.51 points from 38.80 to 40.31 after the intervention program (p < 0.001). Further, increased knowledge and skill provided by the intervention program resulted in improved Na-reduction cooking capability. According to the results from analyzing the soup salinity, the salinity in watery soup was significant reduced from 0.556 to 0.449 0.107 and soybean-paste soup was significant reduced from 0.669 to 0.551 after the intervention program (p < 0.001). Conclusions: As the result of fact, the intervention programs that was based on self-reevaluation, to enforce practical skill and consciousness was effective to serve low sodium menu at day care centers.

Traditional Foods: Historical Perspectives and Future Prospects (문화와 과학의 융합적 관점에서 본 전통음식의 역사 및 미래)

  • Traditional cuisine reflects cooking traditions shaped by political, economic, social, cultural, and environmental conditions characterized by authenticity and uniqueness. Traditional food is not only a part of our cultural heritage but also a knowledge resource. Application of food science and technology in Korean traditional foods was reviewed from six points of view, including food preservation, fermentation, changes in food materials, utilization of food functionality, and packaging and development of cooking appliances. Books from disparate times were chosen in order to cover a wide range of materials from the past to the present. Food preservation and fermentation techniques were applied to various food materials. Combination of science and skills contributes to the accessibility of diverse food materials and better quality foods. Koreans use assorted and resilient plants, which have an abundance of functional substances such as food materials. Among cooking appliances, microwave oven and refrigerator are the most innovative products with huge influences on food eating patterns as well as lifestyle. Packaging effectively reduces post-harvest preservation losses, and better packaging has technical improvements for storage and distribution. Kimchi was chosen as an example in order to study technology from the past to the present. Availability of Kimchi cabbage, enrichment of functional ingredients, identification of useful microbial species, standardization of recipe for commercialization, prevention of texture softening, introduction of salted Kimchi cabbage and Kimchi refrigerators, and packaging were reviewed. The future of traditional foods in the market will be competitive. First, traditional foods market should be maintained to protect the diversity of food materials. Secondly, tailored foods for individuals should be considered using foods with functional properties. Information on health benefits would provide insights into health and traditional food products. Third, speedy transfer of new technology to the traditional food industry is needed to ensure food quality production and new opportunities in the market. Fourth, safety of traditional foods should be ensured without sacrificing the essential characteristics of culturally important foods. Improvement of logistics, distribution, and facility should be carried out. As demand for convenience foods increases, traditional foods should be developed into products.

Korea has long depended on rice for its staple food, but a sharp increase in population in recent years has brought about the shortage of rice, which makes it inevitable to import a great quantity of foreign rice. It is considered therefore that the development and utilization of other cereals than rice is a serious and pressing problem facing Korea. 2. Wheat and barley are the second largest products next to rice in Korea and it is desired that the composition of several kinds of wheat and barley be analysed and their nutrition which rates with differing degrees of hulling process be specified. 3. In this study, the experiment has been carried out in the following order: first, seven species were selected among various kinds of wheat and barley produced in Korea to analyze their respective composition, and to determine the most ideal degree of hulling process on 5 kinds among the 7 kinds: second, ratio of mixing rice with wheat or barley is increase the nutrition value and to seek selfsufficiency in staple food supply: third, economical and reasonable way of improving the nutrition value in the national dietary life is suggested by developing a simple and easy recipe which is also to the taste of the population. Efficacy of supplementary cementitious material and hybrid fiber to develop the ultra high performance hybrid fiber reinforced concrete

  • The rich recipe of ultra high performance concrete (UHPC) offers the higher mechanical, durability and dense microstructure property. The variable like cement/sand ratio, amount of supplementary cementitious material, water/binder ratio, amount of fiber etc. alters the UHPC hardened properties to any extent. Therefore, to understand the effects of these variables on the performance of UHPC, inevitably a stage-wise development is required. In the present experimental study, the effect of sand/cement ratio, the addition of finer material (fly ash and quartz powder) and, hybrid fiber on the fresh, compressive and microstructural property of UHPC is evaluated. The experiment is conducted in three phases; the first phase evaluates the flow value and strength attainment of ingredients, the second phase evaluates the efficiency of finer materials (fly ash and quartz powder) to develop the UHPC and the third phase evaluate the effect of hybrid fiber on the flow value and strength of ultra high performance hybrid fiber reinforced concrete (UHP-HFRC). It has been seen that the addition of fly ash improves the flow value and compressive strength of UHPC as compared to quartz powder. Further, the usage of hybrid fiber in fly ash contained matrix decreases the flow value and improves the strength of the UHP-HFRC matrix. The dense interface between matrix and fiber and, a higher amount of calcium silicate hydrate (CSH) in fly ash contained UHP-HFRC is revealed by SEM and XRD respectively. The dense interface (bond between the fiber and the UHPC matrix) and the higher CSH formation are the reason for the improvement in the compressive strength of fly ash based UHP-HFRC. The differential thermal analysis (DTA/TGA) shows the similar type of mass loss pattern, however, the amount of mass loss differs in fly ash and quartz powder contained UHP-HFRC.

A Literature Review on the Types of Joseon Dynasty Tteok (Korean Rice Cake) according to its Main Ingredient (주재료에 따른 조선시대 떡류의 문헌적 고찰)

  • This article examines the types of tteok (Korean rice cake) recorded in 21 old literatures of the Joseon dynasty (1392-1909) according to its main ingredients. Tteok varieties of the Joseon dynasty were categorized into jjin-tteok, chin-tteok, jijin-tteok, salmeun-tteok and guun-tteok and their changes in cooking method were discussed from the early to late eras of the Joseon dynasty. These can be summarized as follows. In the early, middle and late eras of the Joseon dynasty, there were 1, 15 and 84 kinds of tteok using non-glutinous rice as the main ingredient, and 6, 24 and 120 kinds using glutinous rice, respectively. Tteok using wheat flour was not found in the early Joseon dynasty, whereas 6 and 32 kinds were found in the middle and late eras, respectively. There were 1, 4 and 5 kinds of tteoks using buckwheat, and 5, 11 and 19 kinds using other ingredients such as yam, barley, elephant's ear, oat, and arrowroot flour, in the early, middle and late eras, respectively. The frequency of the main ingredient increased in the order of glutinous rice>non-glutinous rice>wheat flour>other ingredient>buckwheat flour during the Joseon dynasty and the ratio of tteoks using non-glutinous and glutinous rice flours was 1:1.5. The number and types of tteok were noted to increase abruptly throughout the Joseon dynasty. This may be associated with the commercial industrial development that prevailed in the late Joseon dynasty. Further study will be conducted on their recipes and ingredients recorded in these old literatures to develop a standardized recipe for the globalization of tteok.
