Standardization of the Recipe for Preparation of Korean Foods (I) -For the Focus on Soups- (한국음식의 조리법 표준화를 위한 연구(I) -탕반류-)

  • This study attempted to standardize recipe for preparation of Korean foods such as Kalbi tang (beef rib soup), Yukgaejang (Hot meat soup), and Seolnong tang (meat soup). We examined food amount included in recipes which were used by 3 groups such as cookbooks, food service institutions, and restaurants. 1. The first step in standardizing recipe, we analyzed cooking methods from 3 sources, then investigated to them about soups. Kalbi tang was investigated from 10 kinds of cookbooks, 9 places of food service institutions, and 3 places of restaurants. Yukgaejang was investigated from 13 kinds of cookbooks, and 18 places of food service institutions, and Seolnong tang was examined from 7 kinds of cookbooks, 5 places of food service institutions, and 2 places of restaurants. 2. The product which was made by standardized recipe was evaluated suitable for using by sensory panels, the recipe adjusted to the quantities and modified. When the testing was compeletly, the total yield volumn and portions by ten persons were determined as well as material weights and procedures, and the recipe was ready to be set up. For examples, standardized recipes for preparations of Kalbitang, Yukgaejang, and Seolnong tang were as followed; Yield volumn after cooking was 6.5 kg, optimum service temperature was 70$^{\circ}C$, preparation time was 6 or 10 hours for 10 persons, and service volumn per one person was 650 g, and it was presented weight of food materials, procedures, as well as references and cautions. We have in hand try to standardize recipe for preparation about several foods, for the sake of setting up it about Korean foods especially on the focus of soups. We expect that it will be general use of education for cooks as well as application in food service institutions, and does us good of cooking, saving times, economical benefits by regulating materials.

  • This study compared recipes of Korean Traditional steamed dishes, Noodles, Rice cake & Confectionary in Choi's Recipe ("Choi's Eumsikbeop") with those in other literatures written during the mid-Joseon Dynasty. Through this work, it aimed to explore the value of Choi's Recipe ("Choi's Eumsikbeop") in the history of cooking and the meanings of its recipes. Choi's Recipe ("Choi's Eumsikbeop") contains recipes for a total of 20 kinds of food. Specifically, there are seven kinds of Fermented dishes (kimchi (6), and salted fermented food (1)), four kinds of Steamed dishes, seven kinds of Confectionary and Sweet (rice cake (4), jeonggwa (1), and dang (2)), and two kinds of Noodles (dumpling (1), and noodle (1)). Among them, the steamed dishes revealed characteristics of 17th-century food as in other cooking books, and some of them utilized unique ingredients handed down only through head families. Moreover, some recipes showed different cooking methods using similar materials. This suggests the originality of the recipes in this cooking book.

  • In this paper, we implemented an interface that provides a better food ordering mechanism and enables real-time selection of recipe ingredient ratios for customized food orders from global customers. Providing appropriate food to global customers by arranging a selection of menu on the order system screen that shows the basic ratio of each recipe ingredient and provides a customized recipe ingredient composition ratio by configuring a recipe graph without a system for simply selecting and ordering food menus. By enabling interaction, it allows users to provide customized services through the ratio adjustment of various recipe ingredients in the food menu ordering device

  • School contraced foodservice was introduced to school lunch program In 1999. The satisfaction with school contracted foodservice quality was low because of the restriction on equiping school foodservice facilities, facilities education by recipe related to the quantity food production and preliminary education of menu recipe of large quantity production. This study was designed to evaluate condition of existing major equipment on school contracted foodservice. A questionnaire was developed and malled to 150 dietitians in seoul. Response rates were 70%. The analysis on buying equipment were analyzed according to length of dietitian. Preliminary education of menu recipe and facilities education by recipe related to the quantity food production were analyzed acceding to length of dietitian. content analysis was conducted regarding to dietitians' ideas on school contracted foodservice.

  • Structural Integration(SI), known popularty as 'rolfing', is a systematic programme of connective tissue manipulation. thomas w. Myers who has been working with Ida Rolf's recipe since 1975 presents an alternative and developed version(the Anatomy Trains 12-session recipe(ATR)) based on longitudinal myofascial continuities. In comparison with Ida Rolf's recipe, AR has the different base of myofascial meridian. while they have the same outline, principle, and intention. We intend to introduce an effective approach to postural correction and myofascial treatment through discussion on ATR.

  • This study was carried out to introduce the fuzzy theory to standardize recipe of Korean foods, such as Pibimbab, Deonjang chigae (soybean stew), and Kimchi chigae (Kimchi stew). That is recipe of Pibimbab using fuzzy theory. Before this recipe was introduced, it thoroughly analyzed a number of data on Korean food such as materials used by cook book, commercial food, restaurants, food service operation recipes, and home recipes. And then the recipe of Korean food, Pibimbab will be possible to be standardized by fuzzy theory. The theory of fuzzy set is a theory of graded concept. The theory has matured into a wide ranging collection of concepts and techniques for dealing with complex phenomena. It defined a Membership function of fuzzy set by analyzed four sorts of data on Korean food, Pibimbab, and it established the fuzzy model using the quantity of materials as input and sensory test scores as output. This study will contribute to develop standard recipe for Korean foods and expert system of recipes using computer system.

Customized Recipe Recommendation System Implemented in the form of a Chatbot (챗봇 형태로 구현한 사용자 맞춤형 레시피 추천 시스템)

  • Interest in food recipe retrieval systems has been increasing recently. Most computer-based recipe retrieval systems are searched by cooking name or ingredient name. Since each recipe provides information in different weighing units, recalculations to the desired amount are necessary and inconvenient. This paper introduces a computer system that addresses these inconveniences. The system is a chatbot system, based on web-based recipe recommendations, for users familiar with the use of messenger conversation systems. After selecting the most popular recipes by their names, and pre-processing to extract only information required for the recipes, the system recommends recipes based on the 100,000 data. Recipes are then searched by the names of food ingredients (included and excluded). Recalculations are performed based on the number of servings entered by the user. A satisfaction rate for the systems' recommendations was 90.5%.

  • The purpose of this study is to present basic data for systematic and effective basic medical education by developing a flipped learning class design model using smart tools and verifying its validity. To this end, in this study, a model proposal was developed based on literature review, and its validity was verified through expert review and field application. In this study, as a flipped learning class design model using smart tools, RECIPE(R: Ready, E: Establish a Plan, C: Create and Connect Media, I: Into the Classroom, P: Process-focused Assessment, E: Evaluation) model was developed. This model is a model that enhances the learning effect by applying an appropriate smart tool at each stage of designing flipped learning. As a result of applying this model to the development of'Anatomy'and'Neuroscience'lectures in the first semester of 2019, students' interest and satisfaction are high, and it is proposed as a specialized model in the field of basic medicine. Therefore, the RECIPE model developed in this study can be applied to various basic medicine-related classes, and it is expected that students will be able to understand basic medicine through the design of the flipped learning class based on this.

Contents and Value in Jasonbojeon Choi's Recipe book of Shin-chang Maeng's Family (신창 맹씨 종가 「자손보전」에 수록된 한글조리서 「최씨 음식법」의 내용과 가치)

  • This study explores the original text of a Korean recipe book written in the 17th century, which is hitherto unknown to food-related societies, and analyzes the characteristics of the recipes in this book. Choi's recipes in Jasonbojoen (子孫寶傳) are significant, as it is a rare instance of a Korean cookbook written by a woman-few pre-17th century recipe books of this type are known to have survived. This study made some important discoveries after analyzing this book. First, by using pasqueflower and cockscomb, it was possible to identify the era-specific characteristics of kimchi recipes from the 1400s until after the 1700s. Second, this book has historical value, as it shows that the combination of kimchi with cockscomb and the recipe for stuffed eggplant kimchi made only with a small portion of garlic and salt have existed for longer than was previously believed. Third, this book can serve as a valuable database for studies on historical changes in Korean food recipes, as the recipes in this book besides those related to kimchi are representative of recipes in cookbooks before the 17th century. Additionally, it appears that some recipes in the book use very unique minor ingredients that cannot be found in other books.

A study on the oxidation characteristics of Polybutadiene & Polyisoprene containing various types of antioxidants by DSC (산화방지제(酸化防止劑)를 배합(配合)한 Polybutadiene과 Polyisoprene의 DSC에 의(依)한 산화특성(酸化特性) 연구(硏究))

  • The purpose of this dissertation is to increase oxidation resistance for Polybutadiene & Polyisoprene, and to investigate the energetics of inhibited oxidation of Polybutadiene & Polyisoprene stabilized with various types of antioxidants using DSC. The results of the study are as fellows: 1. In the DSC SCREEN for the onset temperature of oxidation, Polybutadiene was faster than Polyisoprene for the samples containing no antioxidant in air. 2. In the DSC evaluation for Polybutadiene, Recipe BG-4 with 2.0phr compounds of antioxidant was the best effective, and Recipe BS-4 with 2.0phr compounds of antioxidant was the worst effective, and the degrees of effect of antioxidant were exhibited in the ranking of G-1, D, BHT, and SP, roughly. 3. In the DSC evaluation for the Polyisoprene, Recipe IG-4 with 2.0phr compounds of antioxidant was the best effective, and Recipe ID-4 with 2.0phr compounds of antioxidant was the worst effective, and the degrees of effect of antioxidant were exhibited in the ranking of G-1, SP, BHT, and D roughly. 4. In the study on enthalpy which depends on exothermal reaction, the enthalpy of Polyisoprene was gloater than that of Polybutadiene. However, the problem was not solved completely, and it needs further studies.
