Quality Properties of Appenzeller Cheese Containing Sasam(Codonopsis lanceolate) Wine (사삼주를 이용한 아펜젤러 치즈의 품질 특성)

  • This study was performed to develop a Korean natural cheese with traditional medical wine, making it different from foreign natural cheese. The effects of cheese with Sasam(Codonopsis lanceolate) wine(CLW) on the quality properties during the ripening period of natural cheese were investigated. The properties investigated were growth of lactic acid bacteria, characteristics of ripening, and sensory characteristics. Four vats of cheese were made on the same day from the same tank of fresh milk. Cheese samples were prepared with CLW at 2.0%, 4.0% and 6.0% of raw milk. Changes in gross composition, viable cell counts, pH, water soluble nitrogen(WSN), non casein nitrogen(NCN), non protein nitrogen(NPN), and proteolysis during maturation were measured. Polyacrylamide gel electrophoresis(PAGE) patterns were determined with control cheese. Viable cell counts of control and CLW cheese were not significantly different. The pH of CLW cheese increased gradually during maturation, and saponin levels and levels of NPN, NCN, and WSN were higher in CLW cheeses than control cheese. For most compositional data, the 4.0% CLW cheese was most similar to the control cheese. The PAGE pattern of cheese caseins indicated that the CLW cheeses degraded more rapidly than the control cheese. Control and 2.0% CLW cheese had good sensory scores, while scores for 4.0% and 6.0% CLW cheese were lower. However, sensory data depreciated with added levels of CLW, especially at a level of 4.0% or more. Further studies on levels of CLW and processing methods are required to improve sensory quality.

Comparison of Quality Characteristics among Chilled Loins Obtained from Jeju Black Cattle, Hanwoo and Imported Australian Beef (냉장한 제주흑우육, 한우육 및 호주산 수입우육의 품질 특성 비교)

  • The nutritional, physicochemical and sensory quality characteristics of chilled loins of Jeju Black Cattle, Hanwoo and imported Australian beef were compared. For nutritional properties, moisture and crude protein contents of Jeju Black Cattle beef were 65.91% and 17.39% respectively, the lowest among the comparison groups. On the other hand, their crude fat and crude ash contents were 15.89% and 0.79%, respectively, the highest among the comparison groups. There was a significant difference in crude ash content, but there was no significant difference in the other properties. The Fe and Zn contents of Jeju Black Cattle beef were 29.85 and 48.13 ppm, respectively, lower than those of Hanwoo beef, although the difference was not significant. These values were higher than those of Australian beef (p<0.05). There was no significant difference among the samples in contents of Ca, P, Na and Cu. The total amino acid and essential amino acid contents of Jeju Black Cattle beef were 16.81% and 9.08%, respectively, the lowest among the samples, although the difference was not significant. The ratio of essential amino acids to total amino acids of Jeju Black Cattle beef was 54.01%, the highest among the samples. The saturated fatty acid (43.25%), stearic acid (13.51%), linoleic acid (2.39%) and essential fatty acid (2.47%) contents of Jeju Black Cattle beef were the lowest. However, their unsaturated fatty acid (56.69%), oleic acid (47.80%) and MUFA/SFA ratios were the highest, and there were significant differences compared with Australian beef. There was no significant difference in the PUFA/SFA ratio. Among physicochemical properties, redness ($a^*$) of Jeju Black Cattle beef was the highest while melting point was the lowest (p<0.05). There were no significant differences in lightness ($L^*$), yellowness ($b^*$), pH, water holding capacity, cooking loss or shear force value. For sensory properties, raw meat aroma, cooked meat aroma and palatability of Jeju Black Cattle beef were superior compared to other comparison groups, with significant differences in comparison with Australian beef (p<0.05). However, there were no significant differences in taste, juiciness, or tenderness of cooked meat.

Quality Changes and Shelf-life of Seasoned Pork with Soy Sauce or Kochujang during Chilled Storage (간장과 고추장 양념 돈육의 냉장 중 품질 변화와 저장 수명)

  • The seasoned pork with soy sauce(SS) or Kochujang(SK) was manufactured using hind and fore leg as main raw material and the quality characteristics and shelf-life were investigated during storage at 5$\^{C}$ and 10$\^{C}$ after having packaged with air. The initial total aerobic plate counts(APC) of SS and SK were 5.24 and 5.75 log10 CFU/㎠, respectively. APC exceeded 7 log10CFU/cm2 after 10 days at 5$\^{C}$ and 6 days at 10$\^{C}$ far SS, and after 6 days at 5$\^{C}$ and 4 days at 10$\^{C}$ for SK, respectively. In the sensory test, the SS samples stored at 5$\^{C}$ and 10$\^{C}$ were assessed as lower than 3.0 points, the criterium of consumer acceptability, after 10 and 8 days, respectively. In the case of SK samples, the point of this time was at day 10 and 6, respectively when they were stored at 5$\^{C}$ and 10$\^{C}$. As storage time extended, pH and water content tended to decrease. Contrarily, the increase of TBA and VBN values was observed during storage and this was more pronounced at 10$\^{C}$ than at 5$\^{C}$ . The oxygen concentration in the package was 19.8 and 19.9% each for 55 and SK samples at the beginning but it was gradually decreased thereafter. On the other hand, the concentration of carbon dioxide was increased with the extension of storage. Based on the above results, the shelf-lives of seasoned pork were estimated to be 8 days for SS and SK stored at 5$\^{C}$ and 6 days for SS and 4 days for SK stored at 10$\^{C}$.

Identification of Faulty Red Pepper Powder Containing Seasoned Red-pepper Sauce (고추다대기 혼입 불량고춧가루 판별법 개발)

  • In this study, the experimental method has been investigated using molecular biological way to identify raw materials from seasoned red-pepper sauce which is one of the most popular spices in Korea. 6 kinds of seasoned red-pepper sauces were chosen as a sample containing chilli pepper, garlic, onion as a major ingredient and species specific primers were used for the identification of the raw material of processed food. Selected samples were pre-treated to remove salt (samples were washed with distilled water 3~4 times for desalting), after that, to amplify the extracted genes, whole genome amplification (WGA) kit was performed. Afterwards, PCR products were confirmed through the electrophoresis. As a result, 102, 180, 280 bp of specific PCR products were confirmed for each major ingredients such as chilli pepper, garlic, onion. From this study, the gene extraction method was validated for the identification of ingredients from the spices and it would be applied to distinction of low quality chilli pepper powder including seasoned red-pepper sauce illegally.

Effect of Decay Rate Coefficients with Sulfur Denitrification due to Salt in Seafood Wastewater (수산물 가공폐수내 염분이 황 탈질 반응속도 상수에 미치는 영향)

  • This study examined the effects of the salinity of seafood wastewater on the sulfur denitrification process. An examination of the denitrification efficiency showed that the optimal EBCT was 1hr at an influent T-N concentration of 20mg/L or lower and 2-3hr at an T-N concentration of 30mg/L. An examination of the denitrification efficiency according to the nitrogen load showed that the legal effluent water quality criterion was satisfied when the influent load was maintained within $0.496kg/m^3/day$. On the other hand, the reactor volume increased when this was applied to the site. Therefore, the influent load should be within $0.372kg/m^3/day$ considering the denitrification and economic efficiency. At a load of $0.248{\sim}0.628kg/m^3{\cdot}day$, the k value was $0.0890{\sim}0.5032hr^{-1}$. The batch experimental results according to the $Cl^-$ concentration showed that at an influent nitrogen concentration of 30.0mg/L, the effect of the denitrification efficiency was not large below the salinity of $7,000mgCl^-/L$, but inhibition occurred above $9,000mgCl^-/L$. Calculations of the reaction rate constant according to the $Cl^-$ concentration showed that the reaction rate constant was $0.1049{\sim}0.2324hr^{-1}$ at a raw wastewater concentration of ${\sim}5,000mgCl^-/L$. In contrast, the k value was $0.1588hr^{-1}$ at $7,000mgCl^-/L$ and $0.1049hr^{-1}$ at $9,000mgCl^-/L$.

  • Silk textile finishing has been studied for many years by many workers in order to meet more utilities for various endusers. Such studies, however, could not be successful because any natural fibers are hardly change their natures by artificial treating methods. Textile finishing is of course to improve the mechandise qualities and the poor natures of silk so that it may be available as the best textile fiber in the world. Sometimes, famous trade marked textile plays more power than its quality in the silk market, nevertheless, this should be over line of research activities. Meantime, the silk demand has been also transferred from ladies stocking to other clothes since nylon or other synthetic fibers were developed. That is why, the extension of silk demand should be developed by various research works. Specially, silk is known as difficult textile to handle it during washing or ironing process which happened to depress down the silk usage for house wives. In order to solve such problems, the reporter has been worked for many years and now, he believes that he has developed a proper finishing method to coversuch problems. The developed finishing method may be said to eligible with economical aspect and shorten the dry duration after water washing in half against normal silk textile without harming the specific silk nature. As all of us know, silk fiber starts to denature since it was spinned by silkworm and the fiber is formed as overlapped "S" type curves during its concooning process. After it is made as raw silk or sericin silk, it shows as straight line form, but it changes in to waved form in case refining or degumming process in order return to its original spinned form. Such nature is continued during its textile form and ends with hard ironing nature than other textile fibers. Mean while, the silk fiber keeps to continue its denaturing and this is iniciated by repeat of washing and drying which takes many years to reach its final stage, The reporter has found the iniciating denature of silk by his finishing process, with out heat, decreasing the swollen nature which ended with shortening the drying duration after wash. Each washing was carried out by soaking the previously weighed sample in cold water for one hour, then pressed the sample for ten minutes to eliminate its free water component before weighing with same condition. According to this, the treated silk showed much denaturing after the finishing, but the standard silk progressed the denaturing by and by with the repeat of washing and drying, finally reached the same swollen degree of treated silk, Such treating result explains that the treated silk happened to be stebilized nature by the treating immediately. On the other that the treated silk happened to be stebilized nature by the treating immediately. On the other hand, standard silk may reach to such condition by the time of worn out clothes after repeat of washing and drying for many years while the clothes will be no more useful. The decreased swelling nature has brought about the drying period in half against standard silk after all. Not only the tests of tenacity and elongation but also crease resistance recovery, stiffness and shrinkage tests were carried out after each washing and drying which he has found better result on the treated silk textile against the standard silk. The most important thing was to keep the textile feeling of silk by such finishing work before improve any poor nature of silk. The general silk has a nature to absorb smoke or dirt from its surrounding air and reaches to dirty color shade upon such exposure, but the treated one has improved such nature because of its artificial denaturing, another word, it keeps clean longer than the normal silk. Many previous finishing works could improve some specific nature of silk, but it happened to deprave other important natures. The reporters work is, however, specialized to improve the silk to be useful as Wash and Wear Silk without harming its standard natures. So far, this work happened to be a overall innovative finishing method of silk textile.

Physicochemical Quality Characteristics of Traditional Kamju Using Extruded Rice Collet Powder (압출 쌀 콜렛 분말을 사용한 전통 감주의 제조 및 이화학적 품질 특성)

  • This study was conducted to investigate the physicochemical quality properties and provide basic data for the activation of traditional Kamju of juice type product prepared by mixing malt and extruded rice collet powder. Malt extracts were prepared by extracting the mixture of malt and water at a weight ratio of 25:75 after soaking for 2 h at $45^{\circ}C$. Rice collet powder was prepared by adjusting the barrel temperature to $95^{\circ}C$, screw speed to $3.07{\times}g$, discharge port diameter to 7 mm and a raw material input to 50 kg/h, the powder was then ground to a particle size of 80 mesh. The physicochemical characteristics (pH, color, viscosity, reducing sugars, number of viable cells, free amino acids) and sensory evaluations were conducted at various time points during the saccharification and at different mixing ratios of the extruded rice collet powder to malt extract (5:95, 15:85, 25:75, 35:65, each at $55^{\circ}C$ for 9 h). As a result, with an increase in the proportion of the extruded rice collet powder and saccharification time, the physicochemical properties of traditional Kamju significantly improved (p<0.05). A mixing ratio of 35:65 rice collet powder to malt extract and a saccharification time of 9 h were found to be the most desirable conditions. However, based on the sensory evaluation, a mixing ratio of rice collet powder and malt extract of 25:75 and a saccharification time of 5 h resulted in the most preferable palatability of traditional Kamju (p<0.05). Therefore, the mixing ratio and saccharification time should be determined to provide a better choice with respect to the taste and economic aspects of traditional Kamju.

Effect of Olive Oil Substitution Ratio on Quality Characteristics of Low-fat Pork Patty (올리브유 대체 비율이 저지방 돈육 패티의 품질 특성에 미치는 영향)

  • This study investigated the effect of olive oil substitution ratio on physicochemical quality of pork patty. Five treatments were performed as follows: control (T0, 20% pork fat), T1 (pork fat 15% and olive oil gel 5%), T2 (pork fat 10% and olive oil gel 10%), T3 (pork fat 5% and olive oil gel 15%), and T4 (olive oil gel 20%). The moisture increased and fat amount was decreased in proportion to olive oil substitution ratio. The L* and a* values were highest levels in raw and cooked pork patty of T0, and the b* value was highly enhanced in of cooked pork patty of T4. The water holding capacity, moisture and fat retention were significantly increased, and the cooking loss, diameter reduction and shrinkage ratio were decreased by olive oil substitution ratio. The hardness, springiness and chewiness showed the highest level in T4, and the cohesiveness and gumminess were highest in T0. The reduction ratio of cholesterol in T1, T2, T3 and T4 were 13.8%, 21.6%, 34.5% and 49.0%, respectively, indicating that the content was lowest level in T4. The palmitic acid was the most abundant saturated fatty acid, and the oleic acid was the most abundant unsaturated fatty acid. The unsaturated fatty acid of pork patty was increased in proportion to olive oil substitution ratio. Therefore, the olive oil gel substitution of low-fat pork patty results in a positive effect on the physicochemical qualities due to reduced cholesterol and saturated fatty acids.

Sodicity Difference between Paddy and Upland Soil as Affected by Food Waste Compost Application (음식물쓰레기 퇴비 시용에 따른 논 토양과 밭 토양의 Na 집적 차이)

  • To compare the effect of food waste compost(FWC) application on the sodicity of paddy and upland soil, laboratory experiment was conducted. Six kinds of FWC made of various mixing ratio of food waste and pig slurry as raw material were applied to paddy soil under submerged condition and to upland soil in field water capacity, and were kept at $25^{\circ}C$ under laboratory incubation. The higher the mixing ratio of food waste on making FWC, the higher the FWC showed Na content and EC. Mineralized ratio of cations in FWC during incubation showed no difference between paddy and upland soil. It was high in the order of Na>K>Mg>Ca as 99, 94, 71, and 71%, respectively. NaCl contents of FWC applied to soils against SAR and ESP were fitted well to first linear regression with extremely high significance($R^2=0.99$). Increasing rate of SAR and ESP was higher in upland soil than paddy soil by 2.3 times. The difference was considered to be caused by dilution effect which was exerted by the application of more soil to water ratio to paddy soil than to upland soil on SAR analysis in consideration of cultivating condition. The calculated values of $([Ca^{2+}+Mg^{2+}]/2)^{1/2}$ used as a denominator on SAR calculation showed a little difference among FWC treatments by 2.1~2.4, while [$Na^+$] used as a numerator showed much variance by 3.1~9.5. Therefore, as a parameter for the assessment of FWC quality affecting soil sodicity, the use of only Na content in FWC was proposed without regarding Ca and Mg contents. Soil Ex. Na contents showed extremely high correlation($R^2=0.99$) with ESP. Moreover, because the former can be more easily determined than the latter, soil Ex. Na content was proposed as a new sodicity index.

  • Sucrose, glucose, starches hydrolyzates and raw starchy materials hydrolyzates were caramelized using various catalysis and the caramel products were analysed, in order to carry out the basic research for the replacement of caramel coloring. The results obtained were summarized as follows. 1. The caramel which was manufactured by sucrose syrup being pH 3.5 adjusted by sulfuric acid showed strong color intensity and hue as well as good stability in the solutions of table salt, tannin and alcohol. 2. The product caramelized from sucrose syrup being pH 9.5 adjusted by sodium carbonate showed very strong color intensity and black color component, and was quite stable in alcohol solution but not in table salt and tannin solutions. 3. The caramel products made from sucrose syrup using ammonium salts of strong acid like $NH_4Cl$ and $(NH_4)_2SO_4$ as catalyst showed strong color intensity and black color component but hazy apparence in solution of table salt, tannin and alcohol. 4. The product caramelized from glucose syrup being pH 9.5 adjusted by sodium carbonate indicated strong color intensity but weak red color component and was transparent in solution of table salt and alcohol but hazy in tannin solution. 5. In glucose caramel using $NH_4Cl$, $(NH_4)_2SO_4$, $(NH_4)_2CO_3$ and $(NH_4)_2SO_3$ as catalyst, $NH_4Cl$ plot was very weak in color intensity and insufficient in red color component but stable in solution of table salt, tannin and alcohol. In the case of $(NH_4)_2CO_3$, $(NH_4)_2SO_4$ and $(NH_4)_2SO_3$ plots, all products were strong in color intensity but little insufficient in red color component. On the stability in solutions, $(NH_4)_2SO_3$ plot was stable in two solutions expect tannin solution, $(NH_4)_2CO_3$ plot was only stable in alcohol solution and $(NH_4)_2SO_3$ plot was only stable in table salt solution. 6. When the acid hydrolyzed starch syrups without neutralization were caramelized using $(NH_4)_2SO_4$ as catalyst, the potato starch hydrolyzate caramel showed higher in color intensity being similar to its of glucose caramel than sweet potato starch hydrolyzate caramel and corn starch hydrolyzate caramel. 7. Dried sweet potato powder, dried acorns powders, the acorns (from Q. serrata THUNB and Q. acutissima CARR.) powders extracted with water for 7 days and with 50% alcohol solution for 24 hrs were hydrolyzed by sulfuric acid in autoclave at $3.5kg/cm^2$ as pressure for 60 mins, and were caramelized using $(NH_4)_2SO_4$ as catalyst. It was supposed that all of those products were poor quality on color and stability in solutions at the viewpoint of food coloring matter.
