The purpose of this study was to determine the optimum amounts of vegetables to use for flavoring chicken head soup base. The effects of the amounts of ginger and onion on the sensory properties of chicken head soup base were examined, and the optimum amounts were determined using response surface methodology. Sensory properties that were evaluated were yellowness, turbidity, bloody flavor, chicken-brothiness, organ meat-like flavor, and sweet taste. The increased amounts of ginger and onion led to a decrease in bloody flavor and organ meat-like flavor. The optimum levels of ginger and onion were determined to be 40g and 50g, respectively. Chicken head soup base prepared with optimum amounts of vegetables contained more arginine, tryptophan, inosine monophosphate (IMP), and hypoxanthine than plain chicken head soup base. It also had less hexanal, which is related to fat rancidity.
The study was made for storage test of Yackwa, which is typical cookies of Korea and contain about 20% of vegetable oil. As the result of investigation the variation of POV and AV of oil contained in Yackwa which was stored in packed or unpacked state for 60 days, at the temperature of $5^{circ}C$ or $30^{circ}C$ respectively, it was found that the Yackwa of AV, about 2, and POV, about 20, was considerably stable for storage. This result of the good storage condition of Yackwa containing a considerable amounts of Vagetable oil which proceed the rancidity, is derived from the formed film on the surface of Yackwa by the sugar syrup afterwards.
Applications of the second generation of electronic nose in various field such as new food product development, slight rancidity during induction period, classification of similar products, discovery of odor, and odor reduction were reviewed. The possibilities of using electronic noses in areas that are difficult to analyze so far would be done in the future. It is believed that the utility value is expanded not only in the food industry but also in other areas.

The present study was conducted to investigate the effects of components obtained from Zanthoxylum schinifolium and Zanthoxylum piperitum on rancidity and quality of Kwamegi (semi-dried Pacific saury, Coloabis saira). Ethanol extract (ZS) of Zanthoxylum schinifolium leaves or the essential oil (ZP) obtained from pericarp of Zanthoxylum piperitum in 1 or 20% ethanol solution was sprayed to the Pacific saury before Kwamegi preparation at its final concentrations of 0.125~2 ppm in the Kwamegi. The prepared Kwamegi was vacuum packed with multi-layered film (polyethylene/polyamide/EVOH/polyethylene, thickness 80 μm) and kept at -20${^{\circ}C}$ until use. After opening the package Kwamegi was stored at 4${^{\circ}C}$ for 1, 3 and 7 days during which rancidity tests and sensory evaluation were carried out. Acid, peroxide, and thiobarbituric acid (TBA) values increased with storage time but reduced significantly by the addition of ZS at the concentrations of ≥G0.125 ppm and ZP≥F0.25 ppm. The effects of ZS and ZP were dose-dependent and more pronounced as storage time prolonged. The ZS and ZP also reduced dimethyamine and trimethyamine (TMA) contents which were increased with time, while they prevented the decrease of trimethyamine oxide. The ZS at the concentration of ≥G0.25 ppm and the ZP at >0.5 ppm were needed to maintain TMA less than 4.5 mg/100 g for 3 day storage at 4${^{\circ}C}$. Sensory evaluation of the Kwamegi exhibited a slightly higher preference with the ZS and ZP treated ones at the level of 0.25~0.5 ppm. It is concluded that very low amounts of ZS and ZP are effective in suppression of rancidity of Kwamegi and could be utilized for its quality management.
Deep fried instant noodles, biscuits, and cookies were prepared, using the same beef tallow as their fat ingredient. In addition to wheat flour and beef tallow, the common and major ingredients, the deep fried instant noodle contained 1.5% salt before frying, the biscuits 20.0% sucrose and 10.0% nonfat milk solid before baking, and the cookies 20.0% sucrose before baking. The three products and a portion of beef tallow, which was to be used as control, were stored in an incubator at $47.0{\pm}1.5^{\circ}C$. The peroxide value and the free fatty acid value of the control and the extracted fat were determined regularly during the storage period. The fat incorporated in the biscuits exhibited far greater stability to rancidity development than that of the control with regard to both peroxide value and free fatty acid value development. However, the fat incorporated in the deep fried instant noodles and the cookies showed much poorer stability than that of the control. Factors like a deep frying process and/or the presence of a significant amount of salt in the deep fried instant noodles appeared to promote the rancidity development of the fat incorporated in the product. On the other hand, Maillard type browning reaction products in the biscuits seemed to retard effectively the rancidity development of the fat incorporated in the product.
In this study, the effects of feeding citrus byproducts on various qualities of pork during cold storage were investigated, such as water holding capacity, drip loss, meat color, storage stability, rancidity, and antioxidant activity. Pork samples (195 days old, $115{\pm}3\;kg$, female) used for the experiment was divided into three groups: T0(pigs not fed citrus byproducts), T1(pigs fed 3% and 5% citrus byproducts during growth and the finishing period, respectively), and T2(pigs fed 6% and 10% citrus byproducts). The loin used for the experiment was obtained from 5 pigs of each group, vacuum packaged, and then stored at $3^{\circ}C$ for 4 weeks. There was no difference among T0, T1, and T2 for pH, water holding capacity, or drip loss. As for the meat color of the loin, T1 and T2 showed higher redness($a^*$ value) during early chilling but showed higher yellowness($b^*$ value) during late chilling. T1 and T2 showed higher electron donating ability and lower volatile basic nitrogen, total plate count, and TBA values than T0, regardless of the chilling period. Thus, feeding citrus byproducts improves the storage stability of chilled pork in terms of rancidity and antioxidant activity.

In the refrigerated storages of fishery products, the lipid oxidation of the meats had been the major deterioration factor. For the effective utilization of mackerel, Scomber japonicus, and yellow corvenia, Pseudosciaena manchuria, which are major costal fish in Korea, and were studied about oxidative rancidity during the refrigerated storage at $-18^{\circ}C$ and the effect of different temperatures upon the cooked meat. We detected the results followed. 1. The Induction period of refrigerated storages had 20 days for fresh meat and 60 days for cooked meat. 2. Peroxide and TBA value of cooked meats had half amount values In the comparison with those of fresh meats, 3. Values of mackerel had double amount than those of yellow corvenia in peroxide and TBA value as if the different values come from different fish species, 4. The rancidative degree of the different temperatures on the samples had the least amount at $-5^{\circ}C$ among several kinds of storage temperatures.

Water adsorption characteristics and lipid rancidity of fresh and roasted Peanuts were investigated at $25{\sim}60^{\circ)C$ and $11{\sim}85%$ relative humidity. peanuts of 50g were reached to the equilibrium water content in 14 days at $40^{\circ}C$, in 30 days at $25^{\circ}C$, respectively, in all of the relative humidity. BET monolayer water contents were $2.19{\sim}2.69%$ in fresh peanuts and $2.47{\sim}2.67%$ in roasted ones as dry basis at $25{\sim}40^{\circ)C$. Zero order reaction rate of peroxide value(POV) were $8{\sim}21times$ lower as $0.032day^{-1}$ and $0.142day^{-1}$in fresh peanuts than those of $0.663day^{-1}$ and $1.120day^{-1}$ in roasted peanuts at water activity of 0.51, but those were showed the relatively smaller differences according to the water activity and temperature. The critical peroxide value(POV) and carbonyl value(CV) were determined as 15.0meq/kg and 4.7meq/kg at $60^{\circ}C$$0.51a_w$ by the regression analysis between chemical and sensory evaluation.
In the present paper, the effect of sodium sulfite treatment on tile inhibition of browning reactions occurring in the storage of dried oyster was tested and the supplementary effect of antioxidantsaddedwasalsomentioned. Dried oysters treated with sodium sulfite solutions as described in the previous paper(Lee and Choi, 1977) were stored in the bottles with silica gel bags at room temperature with or without the application of antioxidants. The ethanol solution of an antioxidant mixture(BHA, BHT, plus, synergists) was sprayed on the surface of cooked oyster before drying. The density of brown pigment was determined spectrophotometrically by measuring the absorbance at 420 and 440 nm of both fractions of pigment extract, namely chloroform-methanol and water soluble fractions, which represent the brown color developed by fat oxidation and Maillard reactions respectively. TBA value was also measured for the oxidative rancidity in oysters during the storage. It appeared from the results that the 0.5 M sodium sulfite-60minute treated samples showed better effect after 150 day storage at room temperature. Controlling tile pH of treating solutions, did not reveal so much different in inhibitory effect in the aspect of color but a more reduction of tyrosine and reducing sugar was resulted with acidic solution than with alkaline solution. The development of brown color in dried oyster seemed to be leaded rather by the oxidative rancidity of lipids than sugar-amino reactions particularly in a long-term storage since the browning of chloroform-methanol fraction progressed more rapidly than of water. soluble fraction. The application of antioxidant, therefore, could largely retard the browning of the product as appeared in the results that sodium sulfite treated oyster with addition of antioxidant kept the best color during the storage.
Pork was cooked using three kinds of instrument [electric pill (EG) for 5min., microwave oven (MW) for 6min. and reheated using a MW] and then extracted with $80\%$ methanol. The Ames test was performed on the methanol extracts, employing the S. typhimurium tester strain, TA100. The methanol extract of cooked pork showed high mutagenicity ion the 5.0 mg/plate without the S9 mix, but a higher mutagenicity was induced with the S9 mix With increasing refrigeration $(4^{\circ}C)$ and freezing $(-18^{\circ}C)$ periods the extracts showed higher mutagenicities and TBA values, and the same results where shown with reheating. Correlations of the mutagenicity (-S9 mix) and rancidity of the pork cooked by EG, according to storage at and $-18^{\circ}C$ and reheated by MW (1 min), were r=0.85, 0.86, 0.98 and 0.83, respectively. When the MW was used for reheating, the refrigeration storage (r=0.98) showed a higher correlation coefficient than for that stored frozen (r=0.83). From the structure of cooked pork, as observed by SEM, many vapor pathways were viewed in the pork reheated using themicrowave oven.
