A computer vision based automatic intelligent sorting system for dried oak mushrooms has been developed. The developed system was composed of automatic devices for mushroom feeding and handling, two sets of computer vision system for grading , and computer with digital I/O board for PLC interface, and pneumatic actuators for the system control. Considering the efficiency of grading process and the real time on-line system implementation, grading was done sequentially at two consecutive independent stages using the captured image of either side. At the first stage, four grades of high quality categories were determined from the cap surface images and at the second stage 8 grades of medium and low quality categories were determined from the gill side images. The previously developed neuro-net based mushroom grading algorithm which allowed real time on-line processing was implemented and tested. Developed system revealed successful performance of sorting capability of approximate y 5, 000 mushrooms/hr per each line i.e. average 0.75 sec/mushroom with the grading accuracy of more than 88%.
Browning and color characteristics of stored mushrooms (Agaricus bisporus)following ionizing irradiation were investigated in connection with quality deterioration. The phenolic compounds of stored mushrooms showed a gradual decreasing tendency, while extractable browning pigments apparently rose from around 3days of storage under the conditions of $9{\pm}1^{\circ}C,\;80{\pm}7%$ RH and packaging with a corrugated paper box wrapped up in PE. ${\gamma}-irradiation$ at 2 to 3 kGy resulted in a significant reduction of their changes. Immediately after treatment, irradiated mushrooms were more discolored, i.e. a lower Hunter L value and higher Hunter a and b values than control. However, the subsequent storage for 15 days resulted in a preventive influence of ionizing energy on mushroom discoloration. This beneficial effect of ionizing energy was somewhat higher in the pilei than in the stipes of mushrooms and was found to increase lineally with increasing doses up to 3 kGy.
Turkey has a very rich fungal flora due to its phytogeographical position. The screening of chemical content and active substances of mushrooms becomes an important subject not only for Turkey but also for all over the world. In the last decade, Analyses on phytochemical and biological activity of fungi have gradually increased as a result of improvement in the number and quality of facilities. In the scope of the present research, four medicinal mushrooms; Morchella elata, Lactarius volemus, Cantharellus cibarius and Tricholoma terreum were analyzed for their fatty acid compositions and antioxidant capacities. The fungal species have been found with unsaturated fatty acid/saturated fatty acid ratio of 6.73 for Morchella elata, 4.12 for Lactarius volemus, 5.21 for Cantharellus cibarius, 3.73 for Tricholama terrum. In addition, the concentration of malondialdehyde which was an indicator of lipid peroxidation was also determined in these species. According to the results, free radical scavenging activity of Morchella elata and Lactarius volemus were found higher than the other species. Any of the mushroom species investigated were found having very high metal chelating activity. The results showed that the extract of Morchella elata and Lactarius volemus exhibited significant antioxidant activities. Hence, the mushrooms have a potential to be a natural antioxidant in food industries as antioxidant agent.

Environmental temperature is an important factor that affects the growth of mushrooms. Mushrooms grow well in a certain temperature range, but if mushrooms deviate from the appropriate temperature range, mushrooms growth and development quality will become worse, and even stop growing. In this paper, the status of the mushroom bacteria, the growth of the mycelium, the occurrence of the fruiting bodies and the growth of the fungus were investigated, o as to provide reference for cultivation management technology of mushroom precise cultivation.

Mushrooms as a health food with high protein, low calorie, and rich in a variety of vitamins and minerals, get more and more attention. While the artificial cultivation of mushrooms, besides temperature there is another important factor, that is humidity. There are a lot of research on the temperature,buttherelativeresearchof correlation between the mushroom and the humidity is less. In this paper, the growth status of mushrooms under different humidity conditions was investigated. Data reference is provided to improve the yield and quality of mushrooms.

High temperature and natural sun light are considered as the core conditions for high quality and large quantity of Phellinus baumii production. However still now on there has been a mistake of excessively cutting off the natural light by spreading the closing nets on the mushroom cultivating house. For an example there are many houses where the closing nets under the roofs be extended to cover the sides of the houses, which way prevents the mushrooms in the houses from receiving sufficient natural sun light and getting the temperature sufficiently to grow so that the quantity and quality of the produced mushrooms are lowered even though the mushrooms can grow in those conditions. In order to avoid this mistake, the closing nets must be placed on the roofs of the houses only without dropping them to cover the sides. Further more when the closing nets are placed triply at the beginning stage of Phellinus baumii's growth in the house, the nets restrain the internal temperature of the house going up and intercept the natural bright light flowing into the house so that the growing tardiness occur to the Phellinus baumii. Therefore the roof only must have been covered by the closing net for 65% cutting off the light until May, and then covered by double folded the net for June, triple folded the net for July and August, double folded the net for September, and the single net for October. When the ventilation in the house has been maintained until the house tightly balloon out through controling lifting force of internal air, the Phellinus baumii can grow well while the bed logs themselves aren't dried out. Marketing is also very much important as well as increasing quality and quantity of Phellinus baumii production.
Raw pine-mushrooms (Tricholoma matsutake Sing.) of four grades and those frozen were analyzed for proximate composition, smell pattern, volatile flavor compounds, and sensory evaluation. Proximate compositions of raw pine-mushrooms (A-C, regular grade) were $89.48{\sim}90.77%$ moisture, 6.81% ash excluding D (below regular grade) sample, $2.24{\sim}2.52%$ crude lipid, and $16.19{\sim}20.01%$ crude protein. Proximate compositions of frozen pine-mushrooms preserved for 6 months at -20 and $-70^{\circ}C$ showed no difference compared with raw pine-mushrooms. Results of smell pattern and multidimensional analysis revealed raw pine-mushrooms showed no differences among samples, but frozen pine-mushrooms differed significantly depending on the grade. Volatile flavor compounds of pine-mushrooms were analyzed using a purge and trap method with GC/MSD. Twenty-nine volatile compounds were identified, among which alcohols such as 1-octen-3-ol, 2-octen-1-ol, 3-methyl-butanol, and n-octanol were commonly found in all pine-mushroom samples. In sensory attributes, raw pine-mushrooms were not significantly different at 5% level, and sample D of frozen pine-mushrooms scored lower than samples $A{\sim}C$.
The traditional kochujang supplemented with mushrooms (Pleurotus ostreatus and Lentinus edodes) was prepared, and changes in quality characteristics during fermentation at ambient temperature were investigated. The moisture content of kochujang increased by addition of mushroom. The titratable acidity of mushroom-added kochujang was gradually increased during fermentation. Ethanol contents of mushroom-added kochujang decreased with the addition of oyster mushroom, but increased with the addition of oak mushroom. The amino-nitrogen contents increased gradually during fermentation, resulting in significantly higher contents of 9% mushroom-added kochujang than others. The a value of kochujang decreased greatly during fermentation, but L, a and b values showed significantly higher than the control. The growth of bacteria in kochujang was delayed by the addition of mushrooms. Bacterial and yeast counts at the end of fermentation were not influenced by the addition of mushrooms. Sensory evaluation test revealed that color and flavour of kochujang were improved by the addition of mushrooms, and higher score was obtained from the addition of oyster mushroom compared to oak mushroom.
Pine mushroom is excellent for its unique smell, nutrients and functional factors. The quality characteristics of Demi-glace sauce made from pine mushrooms that have not been used despite their value as good ingredients and mushrooms that have been added to various kinds of sauce were examined by differing pine mushroom and mushroom powder in stock. The more pine mushroom and mushroom powder was added, the content of minerals increased; however, the content of moisture decreased. Overall, viscosity was increased. The content of each mineral varied in proportion to pine mushroom and mushroom powder contents level. Sensory evaluation of pine mushroom added to demi-glace sauce showed difference in sweetness, savory taste overall. 0.2% addition of sweetness, 0.3% addition of savory taste, 0.2% and 0.3% addition of overall acceptability appeared as the best estimation. Specially, 0.2% addition was the highest in salty taste and color. As the two mushroom powder contents was increased, tastes of demi-glace sauce were not increased; rather, the appropriate amount of addition existed.
Since the growth and quality of oak mushrooms are sensitively affected by environmental conditions, an adequate environmental control is very essential to improve the yield and quality under protected cultivation. In this study, the diameter, thickness, length and hardness of cap and stipe, the dry weight, fresh weight and moisture content of the mushrooms were analyzed under the environmental conditions such as night air temperatures (control, $5{\~}11^{\circ}C$ and $12{\~}18^{\circ}C$), relative humidities in the daytime (control, humidifying for 6 h and 12 h), and wind velocities (control, fan-operation for 6 h and 12 h). At a lower night temperature, the quality of the mushrooms was improved, and considered to be optimum at $3{\~}8^{\circ}C$ in terms of fresh weight and quality. At $70{\~}80{\%}$ of relative humidity in the daytime, the fresh weight was increased, but the quality decreased. Considering the quality, the relative humidity in the daytime is adequate at around $50{\%}$. At 6 h of maintaining the wind velocity at $1{\~}2\;my{\cdot}s^{-1}$, the growth and quality were better, but the lightness became higher at 12 h although the fresh weight was reduced by evaporation. It is concluded that even though both of the yield and quality are not easily improved at a same time, optimum approaches should be required by using the relationship among environmental factors and the growth and quality.
