  • This study was carried out to determine the effect of enzymatically saccharified Korean rice wine lees powder (eKRWLP) on the quality characteristics and storage stability of curd yogurt. Yogurt with different contents [0.5-2.0% (w/w)] of eKRWLP was incubated with commercially available mixed lactic acid bacteria (Lactobacillus acidophilus, Streptococcus thermophilus, Bifidobacterium longum) at $40^{\circ}C$ for 18 h. The production of acid measured at pH and titratable acidity of yogurts increased with increasing eKRWLP content. After 12 h fermentation, titratable acidity of eKRWLP yogurt was 0.77-0.90% and was higher than that (0.72%) of yogurt made without eKRWLP. The viable cell counts of lactic acid bacteria in eKRWLP yogurts were increased in proportion to the addition of eKRWLP, and increased up to 8.01-8.13 log CFU/g after 12 h incubation. The repressive effect of whey separation in eKRWLP yogurt curd significantly decreased than that in Korean rice wine lees powder (KRWLP) yogurt. With sensory evaluation, yogurt with 0.5% eKRWLP obtained the highest scores among all eKRWLP yogurts. When eKRWLP yogurts and the control preparations fermented for 12 h were incubated at $4^{\circ}C$, their pHs and titratable acidities were slightly changed and the number of viable lactic acid bacteria were well maintained above $10^7CFU/g$ for 16 days.

  • This study aimed to apply the technology of increasing the volatile aromatic compounds in wine through mixed fermentation of Saccharomyces cerevisiae and non-Saccharomyces yeasts to make distilled soju. The expectation was to induce changes in metabolites such as volatile aromatic compounds before the distillation process, followed by concentrating these compounds through distillation to enhance the odor property of distilled soju. Additionally, the study aimed to examine the impact of mixed fermentation with S. cerevisiae and non-Saccharomyces yeasts on distilled soju's free amino acid content. As a result, when Hanseniaspora uvarum yeast was used, there was an increase in the content of low molecular weight volatile aroma compounds, particularly esters. Distilled soju co-fermented with S. cerevisiae and H. uvarum SJ69 exhibited similar amino acid content to distilled soju single-fermented with S. cerevisiae. However, distilled soju co-fermented with S. cerevisiae and H. uvarum S6, a decrease in amino acid content. Sensory evaluation results indicated a higher odor score in distilled soju co-fermented with S. cerevisiae and H. uvarum S6, suggesting that the mixed fermentation technology utilizing H. uvarum could contribute to improving the quality of distilled soju in the future.

  • The role of instruments in scientific inquiry is very important. As science and technology develop, science inquiry instruments are also changing. IoT-based inquiry tools and output data, which are newly introduced in science inquiry class, can play a role in reaching the goal of scientific inquiry. The aim of this study is to find the appropriateness of digital inquiry instruments based on Kirschner and Kreijns (2004).T he students who participated in this study were 8 middle school students located in Seoul and they investigated the quality of classroom air. During the four months of the inquiry activity, we had participant observation and retrospective interviews. We recorded the data, analyzed it, and coded it in terms of educational affordance. As a result, there are four educational affordance of digital inquiry instruments. First, it stimulates students' interest and motivation to learn basic knowledge for data processing, because digital inquiry instruments deals with real-life data. Second, the digital inquiry instruments as a complex sensor made a big data so it serves as an affordance that leads to hypothetical hypotheses. Third, because of the features and limitations of the digital inquiry instruments itself, it shapes and limits the design of the science inquiry method. Fourth, since the data is measured in real time, the amount of data is enormous. So the digital inquiry instruments serves as an affordance of increasing the information processing competence to analyze data. In order for science inquiry activities based on digital inquiry tools to be activated, various policy and economic supports are needed, such as the science environment, the contents of the software, software training, and guided learning materials.

  • Japanese red pines growing along the Taebaek mountains have been called "Kangsong" and considered to be superior in growth and wood quality. An attempt was made to determine whether their boundaries for planting may be expanded by testing their early growth at eight experimental plantations of the Republic of Korea. Seeds were collected from the six different natural populations including Uljin in Kyongbuk province. For the provenance test, they were planted in eight different regions including Taean in the spring of 1987. Experimental planting was a randomized complete block design with 3 replications. Height growth was measured at the ages of 2, 4, and 6 after planting, and the diameter at root collar at the age of 6 after planting. Significant variation in height growth was observed among the plantations. The height growth measured at the age of 6 after planting showed a positive correlation with the latitude of the test plantation, and the contents of phosphate, potassium and calcium in the soil. A negative correlation, however, was observed between the longitude of the test plantation and height growth. Ponghwa provenance appeared to be the best among the provenances in that the trees from the area grew 16% better in volume growth than the average of all the trees tested in the study, while the worst one was Kyongju from which trees grew 11% less than the average.

  • This study is conducted to utilize waste concrete powder made as a by-product manufacturing high quality recycled aggregate. The blaine fineness of the used waste concrete powder was 928 and $1,360cm^2/g$. As the main characteristic of waste concrete powder, it showed an angular type similar to cement, but hydrated products were attached on the surface of particles. In addition, the size of the particles of waste concrete powder was larger than OPC and in terms of chemical components it had higher $SiO_2$ contents. The viscosity of the paste that mixed waste concrete power decreased by 62% at the most, compared to the paste that only used OPC, and the final set time was delayed about two hours. As composition rates of waste concrete powder increased, the flow value decreased by 30% at the most according to the comparison with mortar that only used OPC, and sorptivity coefficients increased by 70%. The compressive strength of mortar decreased by 73% at the most as composition rates of waste concrete powder increased. According to the test results, it is desirable to use waste concrete powder by combining OPC appropriately(below 15%).

  • One-year old pear (Pyrus pyrifolia L.) trees of a new commercial cultivar 'Manpungbae', recently developed in South Korea, were planted in 2001 (planting year 1) and trained to four trellis systems: Y-trellis, Y-II-trellis, pergola, and vase-pergola. To evaluate training systems in the local area (southern Korea), tree growth responses were compared for each trellis system from planting years 3 to 8. For trees trained to Y-trellis and pergola systems, a high proportion of land covered by tree canopy was maintained over the study duration, with 70-80% coverage in year 8. Eight-year cumulative yield per tree was increased in the vase-pergola system with a low planting density and an additional scaffold. Compared with other systems, cummulative yield use efficiency was greatest in Y-II-trellis and pergola systems in years 5 and 8. Compared with Y-II-trellis and vase-pergola systems, the 8-year cumulative yield per hectare was two fold greater for trees trained to the Y-trellis (103 tons) and pergola systems (101 tons). Use of the pergola system improved average fruit weight and fruit soluble solid contents, as well as net income in year 8. Given that we observed reduced fruit productivity and increased labor hours (pruning and orchard work), we consider the Y-trellis and pergola systems to be less valuable trellis systems than the others evaluated.
