Physicochemical properties of edible cricket (Gryllus bimaculatus) in different districts (산지별 식용 귀뚜라미의 이화학적 특성)

  • Insects have gained increasing attention as an alternative protein and nutrient rich food source for humans. This study was conducted to investigate the physicochemical characteristics and harmful components of edible crickets (Gryllus bimaculatus) in the 6 districts of Yeonggwang (YG), Jeongseon (JS), Wonju (WJ), Hwaseong (HS), Geochang (GC), and Chungju (CJ). The average crude protein and crude lipid contents on a dry basis were 64.34% and 16.60%, respectively. The crude protein content of CJ was the highest (67.40%), whereas YG (59.42%) had the lowest content. On the other hand, the crude fat content of YG was the highest (20.61%), whereas CJ (14.04%) had the lowest content. The unsaturated fatty acid contents were 57.97-63.93 g/100 g of the total fatty acid content in the crickets of the 6 districts. The major fatty acids of the crickets in the 6 districts were palmitic acid, oleic acid, and linoleic acid. Among the essential amino acids, valine, leucine, and lysine were the most abundant. GC had the highest total amino acids (57.93 g/100 g), whereas YG (48.65 g/100 g) had the lowest. Major mineral contents included potassium (K, 0.92~1.01 mg/100 mg) and phosphorus (P, 0.74~0.88 mg/100 mg). The mineral composition was fairly similar among the crickets. Crickets in the 6 districts were verified to have safe levels of residual heavy metals according to the Korea Food & Drug Administration (KFDA) advisory levels.

Temporal and Spatial Variation Analysis of Suspended Solids, Ionic Contents, and Habitat Quality in the Woopo Wetland Watershed (우포늪 수계에서 부유물, 이온농도 및 서식지 특성에 대한 시 ${\cdot}$ 공간적 변이 분석)

  • The main objective of present study was to evaluate how seasonal rainfall influenced natural habitat conditions of 10 metric habitat variables along with ionic conditions and suspended solids in the Woopo Wetland during August 2002-July 2003. Largest spatial variabilities in total suspended solids (TSS) occurred during the summer monsoon and the inorganic suspended solids (ISS), expressed as a inorganic proportion of total solids, showed linearly increasing trend from the upstream to downstream. This phenomenon was mainly attributed to counter flow of turbid water from the main Nakdong-River. During the flooding, ISS : TSS ratio showed large increases (92%) in the downstream than the upstream (43%). For this reason, transparency declined (mean=0.13 m, range=0.08-0.21 m) largely in the downstream reach and thus, chlorophyll-a concentration showed low values (range: $4.2-8.6\;{\mu}g\;L^{-1}$), indicating a direct influence on primary productivity or algal growth by inorganic turbidity. In the 2nd survey, ISS averaged 4.0 mg $L^{-1}$ (3.3-4.8 mg $L^{-1}$), thus the ISS decreased by 14 fold, compared to the ISS in the 1st survey during the flooding, while organic suspended solids (OSS) values were greater than those of ISS, indicating a dominance of organic solids. This condition was similar to solid contents in the 3rd survey, but showed a large difference compared to the 4th survey during the growing season. Habitat health assessments, based on 10 metric habitat variables, showed that QHEI values were greatest in the growing season (May) than any other seasons and largest spatial variations occurred in the 2nd survey. Overall, dataset suggest that seasonal episodic flooding during the monsoon may largely contribute nutrient cycling and sediment contents in the Woopo Wetland and Topyung Stream.

Effects of Aloe (Aloe vera Linne) on the Quality Attributes of Chiffon Cake (쉬폰 케이크의 품질 특성에 미치는 알로에의 영향)

  • Chiffon cakes were prepared using various concentrations of aloe gel to develop functional baking procedures. The quality characteristics of chiffon cakes prepared after addition of 20%, 40%, or 60% (w/w) aloe gel, substituting for the same levels of wheat flour, were investigated. No significant weight difference between cakes was observed. The height of cakes containing aloe gel was significantly greater than that of control cakes. The baking loss rate (BLR) of aloe gel decreased as the amount of gel increased, and cakes prepared using 60% (w/w) aloe gel had the lowest BLR. Moisture contents of cakes prepared using aloe gel were higher than that of control cakes. Cakes with 60% (w/w) aloe gel had the highest moisture content. The pore size of cakes with 60% (w/w) aloe gel was the smallest of all groups. Crumb color became whiter as the proportion of aloe gel increased. Lightness (L value) of control cake was lower than that of cake containing aloe gel. Redness (a value) of aloe chiffon cakes increased as the proportion of aloe gel rose. Yellowness (b value) of cakes with 40% (w/w) aloe gel was significantly higher than that of the control group. Other cakes showed no difference in b value compared with control cake. Hardness in all cakes prepared with aloe gel was significantly lower than that of the control group. Adhesiveness of control cake was significantly lower than that of other cakes. No significant between-group difference in springiness was observed. The cohesiveness of cakes with 40% (w/w) aloe gel was significantly lower than that of the control group and that of cakes with 20% (w/w) aloe gel. The gumminess and chewiness of control cakes were significantly higher than those of other cakes. The yellowness of cake with 60% (w/w) aloe gel was significantly lower than that of the other groups. Pore size decreased after the addition of aloe gel. There was no significant difference in appearance among cakes thus, all cakes were acceptable to potential consumers. Although no perceptible difference in aloe odor was evident, cakes with 60% (w/w) aloe gel scored significantly lower in flavor acceptance compared with other cakes. No significant between-cake difference in taste acceptance, perceived moisture level, or texture acceptability was observed. Cakes with 40% and 60% (both w/w) aloe gel were of significantly higher density than other cakes. Overall, the acceptability of cakes with 60% (w/w) aloe gel was lower than that of other cakes. Ultimately, the results indicated that quality can be enhanced by adding less than 40% (w/w) aloe gel to chiffon cakes as a substitute for wheat flour.

Development of a Home-based Nursing Intervention, Mothering Program for Low-Birth-Weight Infants (저체중출생아를 위한 가정간호형 모성역할중재 프로그램 개발과 그 효과에 대한 연구)

  • The purpose of this study was to develop a parenting intervention program and determine the efficacy of the program with low-birth weight infants and their mothers. Nine dyads for the experimental group and twelve dyads for the control group discharged from the Neonatal Intensive Care Unit of a University Hospital in Seoul were recruited for the study. For the intervention group, programmed education and support which focused on the maternal sensitivity of the infant's behavior. rearing environment. motherinfant interaction and infant care were given to each subject. Individual counseling and home visits were provided at discharge, one week after discharge. and one and three months of corrected age in every infant. Structured questionaires were administered and feeding interactions were videotaped and coded by a blinded certified observer. A Quasi-experimental design was conducted for this study. Postpartum depression, maternal self esteem. infant care burden, HOME. mother-infant interaction, and infant development were measured. Results were in favor of the intervention versus the control group. On the Beck depression inventory, intervention mothers showed decreasing trends in depressive symptom vs control mothers although, there were statistically no significant differences between the two groups at each time. The mean score of experimental group was 11.55(mild depression state) at discharge and became 8,6(normal state) at 1 month of corrected age. On the other hand, the mean score of the control group was 13.92(mild depression state) at discharge and became 14.0. Maternal self esteem in both groups improved over time. Infant care burden in both groups was also shown to increase over time. There was a significant difference between the two groups in HOME(p=.0340) at 3 months of corrected age. HOME scores of the experimental group and the control's were 31.10 and 25.58, respectively. Mothers' emotional and language responses were significantly high in the intervention group compared with the control group(p=.0155). Intervention group (53.33) showed a significantly high quality of motherinfant interaction compared with the in control group (42.80)(p =.0340). Intervention group mothers appeared have a better quality of mother-infant interaction behaviors. On the other hand, there was no statistical difference in the infant part between groups. Intervention group infants had higher trends in a general developmental quotient: although, there was no statistical difference between groups. The general developmental quotient of intervention infants was 102.56 and control's was 91.28. However, the developmental quotient of the domain of 'individuality-sociality' was higher in the intervention group infants compared with the control's(p=.0155). The concerns identified by parents revealed two domains of an infants' health management -knowledge and skills in caregiving of lowbirthweight-infants, characteristics of lowbirthweight infants, identifying a developmental milestone, coping with emergency situations and relaxation strategies of mothers from the infant care burden. Interview data with the mothers of low-birth weight infants can be used to develop intervention program contents. Limited intervention time and frequency due to time and cost limitations of this study should be modified. The intervention should be continuously implemented when low-birth weight infants become three years old. An NNNS demonstration appeared to be a very effective intervention for the mothers to improve the quality of mother-infant interactions. Therefore intervening in the mothers of low-birth weight infants as early after delivery as possible is desirable. This study has shown that home visit interventions are worthwhile for mothers only beyond the approach as an essential factor in ability of facilitating a growth fostering environment. In conclusion. the intervention program of this study was very effective in enhancing the parenting for the mothers of low-birth weight infants, resulting in health promotion of low-birth weight infants. The home-visit outreach intervention program of this study will contribute to the health delivery system in this country where there is a lack of continuous follow-up programs for low-birth weight infants after discharge from NICU, if it is activated as part of the home visit programs in community health systems.

Microbiological Quality of Agricultural Water in Jeollabuk-do and the Population Changes of Pathogenic Escherichia Coli O157:H7 in Agricultural Water Depending on Temperature and Water Quality (전라북도 지역 농업용수의 미생물학적 특성 및 온도와 수질에 따른 농업용수의 병원성대장균 O157:H7 밀도 변화)

  • BACKGROUND: Agricultural water is known to be one of the major routes in bacterial contamination of fresh vegetable. However, there is a lack of fundamental data on the microbial safety of agricultural water in Korea. METHODS AND RESULTS: We investigated the density of indicator bacteria in the surface water samples from 31 sites collected in April, July, and October 2018, while the groundwater samples were collected from 20 sites within Jeollabuk-do in April and July 2018. In surface water, the mean density of coliform, fecal coliform, and Escherichia coli was 2.7±0.55, 1.9±0.71, and 1.4±0.58 log CFU/100 mL, respectively, showing the highest bacterial density in July. For groundwater, the mean density of coliform, fecal coliform, and E. coli was 1.9±0.58, 1.4±0.37, and 1.0±0.33 log CFU/ 100mL, respectively, showing no significant difference between sampling time. The survival of E. coli O157:H7 were prolonged in water with higher organic matter contents such as total nitrogen (TN), and nitrate-nitrogen (NO3-N). The reduction rates of E. coli O157:H7 in the water showed greater in order of 25, 35, 5, and 15℃. CONCLUSION: These results can be utilized as fundamental data for prediction the microbiological contamination of agricultural water and the development of microbial prevention technology.

Influence of Seasonal incidence and Defoliation Degree of Marssonina Blotch on Fruit Quality and Shoot Growth of 'Fuji'/M.9 Apple Tree (갈색무늬병의 시기별 이병 및 낙엽 정도가 '후지'/M.9 사과나무의 과실품질 및 신초생장에 미치는 영향)

  • This study investigated the influence of seasonal incidence and defoliation degree caused by Marssonina blotch (Diplocarpon mali Harada et Sawamura) on shoot growth and fruit quality of 'Fuji'/M.9 apple tree. The occurrence of marssonina blotch in Gunwi region was observed from the mid of July 2009, and percentage of defoliation was about 10% in the end of October. In 2010, that started in the early of June. By the end of September, percentage of defoliation was 20% and it reached 50% in late October. Secondary growth of terminal shoot in 2010 was three times as much as that in 2009. In 2009, the soluble solid contents and the red color (hunter a value) during fruit maturation increased to $13.8^{\circ}Brix$ and 16.2, respectively. In 2010, the soluble solid content during fruit maturation remained in the $12.1-12.6^{\circ}Brix$ range after early October, and the red color began to increase after the end of September when the percentage of defoliation was 20%. As for fruit quality by defoliation degree, the red color decreased when defoliation percentage of bourse shoot at the end of October was more than 30%. Fruit weight and soluble solids also decreased when defoliation percentage was more than 50%. Fruit length and diameter of over 30% defoliation treatments begun to decrease after the middle of August, compared with those of under 30% defoliation treatment. Photosynthetic rate of the leaves that was located at the secondary growth of bourse shoot was similar to that of leaves which was located at the middle of bourse shoot. However, the size and the soluble solid content of fruit were not affected by photosynthesis activities of bourse shoot leaves which was develop in the secondary shoot growth.

The Applications of a Multi-metric LEHA Model for an Environmental Impact Assessments of Lake Ecosystems and the Ecological Health Assessments (호수생태계 환경영향평가를 위한 LEHA 다변수 모델 적용 및 생태건강성 평가)

  • The purpose of this study was to apply a multi-metric model of Lentic Ecosystem Health Assessments(LEHA) for environmental impact assessments of Cheongpyung Reservoir during 2005 - 2006 and assessed the ecological model values. The ecosystem model of LEHA was composed of eleven metrics such as biological parameters($B_p$), physical parameters($P_p$), and chemical parameters($C_p$), and determined the rank of ecological health by the criteria. The variables of $B_p$ were metrics of % sensitive species($M_2$, NMS) and insectivore species($M_5$, % $I_n$), which decrease as the water quality degradates, and these metric values were low as 1.5% and 32.4%, respectively. In contrast, the proportions of tolerant species and omnivore species as the other $B_p$ parameters were 43% and 62%, respectively, which indicate a degradation and disturbance of the ecosystem. Riparian vegetation coverage($M_9$, % $V_c$) as a variable of $P_p$, were higher in the 2nd than 1st survey, and decreased toward the dam site from the headwaters. This was due to a habitat simplification(modifications) by frequent bottom dredging of sand and rocks. The variables of $C_p$ were two metrics of specific conductivity($M_{10}$, $C_I$) as an indicator of ionic contents(cations and anions) and the Trophic State Index(TSI) based on chlorophyll-a($M_{11}$, $TSI_{CHL}$) as an indicator of trophic state. These metric values of $C_p$ had high temporal variations, but low spatial variations on the main axis of the reservoir along with the ecological health of a good condition. The environmental impact assessments using the LEHA multi-metric model indicated that the model values of LEHA averaged 30.7 in 1st survey(fair - poor condition) vs. 28 in 2nd survey(poor condition), indicating a temporal variation of the ecological health. The model values of LEHA showed a minimum(28) in the lacustrine zone(S5) and ranged from 29 to 30 in the other locations sampled, indicating a low longitudinal variation. Overall, environmental impact assessments, based on LEHA model, suggest that chemical water quality conditions were in good, but biological conditions were disturbed due to habitat modifications by frequent dredgings in the system.

  • This study investigated the effects of combined treatment of immersion liquids (adjusted pH 4.5 with Citrus junos concentrate (CL), pH 5.5 with Prunus mume concentrate (PL), or no pH adjustment, pH 6.5, control) and high hydrostatic pressure (HHP, 450 MPa) on shelf-life and quality of mackerel. In this study, we measured changes in viable cell counts, pH level, volatile basic nitrogen, thiobarbituric acid reactive substances, color analysis, volatile organic compounds, and sensory evaluation of mackerel at $4^{\circ}C$ for 20 days. CL/HHP and PL/HHP treatments reduced viable cell counts by 3 log cycles during storage compared to the control. Mackerel treated with CL/HHP and PL/HHP showed significantly lower TBARS and VBN levels as compared to the control. After combined treatment, lightness and whiteness increased but redness decreased. VOCs tests showed that contents of alcohol, acid, and ketones in mackerel fillet treated with CL/HHP and PL/HHP were relatively reduced. Especially, CL/HHP and PL/HHP suppressed production of sulfur. In the sensory evaluation, aroma, taste, salinity, hardness, and springiness of mackerel treated with combined HHP showed higher scores than the control. These results suggest that immersion liquids and HHP treatments may increase shelf-life of mackerel and maintain quality during storage at $4^{\circ}C$.

Effect of Age on Chemical Composition and Meat Quality for Loin and Top Round of Hanwoo Cow Beef (한우암소고기의 연령이 등심 및 우둔부위 일반성분 및 육질에 미치는 영향)

  • This study investigated the chemical composition, meat quality and volatile flavor compounds in loin and top round of Hanwoo beef (n=126) depending on different age groups (G1, <5; G2, 6-8; G3, >9 years old). The intramuscular fat content (%) was higher for loin and top round of G1 (p<0.05) than that in the other groups. There was no difference in age groups for the top round; however, the loin of G1 had lower protein content (p>0.05). Total collagen content was lower in the top round of G3 (p<0.05). The loin and top round muscles of G1 had higher $a^*$ values and lower Warner Bratzler shear force values than that in the other age groups (p<0.05). The loin muscles of G1 were lower in percentage of cooking loss and higher in the water holding capacity than the loin in the other groups (p<0.05). The loin of G1 had lower total content of saturated fatty acids, whereas the top round of G1 had higher total content of monounsaturated fatty acids and lower total content of polyunsaturated fatty acids than that in the other age groups (p<0.05). Alanine was the highest free amino acid in the loin of Hanwoo beef, followed by glutamine, glycine, isoleucine and proline. The loin of G1 had higher contents of threonine, alanine, valine, methionine, phenylalanine, leucine and lysine than those in the other groups (p<0.05). The loin of G3 contained higher 3-methylbutanal, furfural, octanal, 1-(acetyloxy)-2-propanone, 1-octanol, 2,5-dimethylpyrazine and 2-ethyl-2,5-dimethylpyrazine in volatile flavor components than the loin in G1(p<0.05).

Contamination Assessment of Water Quality and Stream Sediments Affected by Mine Drainage in the Sambo Mine Creek (삼보광산 수계 하천수질 및 퇴적토의 오염도 평가)

  • BACKGROUND: Mine drainage from metal mining districts is a well-recognized source of environmental contamination. Oxidation of metal sulfides in mines, mine dumps and tailing impoundments produces acidic, metal-rich waters that can contaminate the local surface water and soil. METHODS AND RESULTS: This experiment was carried out to investigate the pollution assessment of heavy metal on the water quality of mine drainage, paddy soils and sediment in lower watershed affected by mine drainage of the Sambo mine. The average concentrations of dissolved Cd (0.018~0.035 mg/L) in mine drainage discharged from the main waste rock dumps(WRD) was higher than the water quality standards (0.01 mg/L) for agricultural water in Korea. Also, the average concentrations of dissolved Zn, Fe and Mn were higher than those of recommended maximum concentrations (Zn 2.0, Fe 5.0, Mn 0.2 mg/L) of trace metal in irrigation water proposed by FAO (1994). The average contents of Pb and Zn in paddy soils was higher than those of standard level for soil contamination(Pb 200, Zn 300 mg/kg) in agricultural soil by Soil Environmental Conservation Act in Korea. Also, the concentrations of Cd, Pb and Zn in sediment were higher than those of standard level for soil contamination (Cd 10, Pb 400, Zn 600 mg/L) in waterway soil by Soil Environmental Conservation Act in Korea. The enrichment factor (EFc) of heavy metals in stream sediments were in the order as Cd>Pb>Zn> As>Cu>Cr>Ni. Also, the geoaccumulation index (Igeo) of heavy metals in stream sediments were in the order as Zn>Cd>Pb>Cu>As>Cr>Ni, specially, the geoaccumulation index (Igeo) of Zn (Igeo 3.1~6.2) were relatively higher than that of other metals in sediment. CONCLUSION(s): The results indicate that stream water and sediment were affected by mine drainage discharged from the Sambo mine at least to a distance of 1 km downstream (SN-1, SN-2) of the mine water discharge point.
