Effect of Maltodextrin Concentration and Drying Temperature on Quality Properties of Purple Sweet Potato Flour

  • The effects of drying temperature (55, 60, and $65^{\circ}C$) and addition levels of maltodextrin (MD) (10, 20, and 30%) on the physicochemical properties and nutritional quality of purple sweet potato flour were investigated. MD-added flours had higher $L^*$ values, water soluble index, total phenolic, and anthocyanin contents than untreated flour. However, $a^*$, $b^*$ values, water absorption index, and swelling capacity were dependent on the drying temperature and MD concentration. On the other hand, untreated flour had a higher ascorbic acid content compared to the MD-treated flour. Ascorbic acid contents decreased, whereas anthocyanin content was not significantly different, with increasing drying temperatures. MD was positively correlated with phenolic content, anthocyanin, hue angle, and water soluble index. However, there was no correlation between quality parameters and glass transition temperature. The best quality product was obtained when samples were pretreated with MD before drying, regardless of drying temperature.

  • Ginseng has been used as a medicinal herb in the world for more than two thousand years. Inspection of the quality of ginseng was made since many hundred years ago. Ginseng quality has been graded by several methodes, based on saponin contents, number of ginsenosides, shape of root and tissue elaborateness. In present. ginseng products are usually evaluated by saponin contents and number of ginsenosides. On the other hand, fresh and manufactured ginseng roots such as red. white and semi-red ginseng, Taegeuk Sam, are mostly graded by root shape such as root development and skin (epidermis) color, and tissue elaborateness. which is a conventional grading method. However, the root shape grading method has a risk of overlooking real medicinal properties of ginseng. So. both the medicinal ingredients and the conventional grading method should be considered for the proper evaluation of ginseng quality. Therefore, for the establishment of better method in evaluating ginseng quality, the relationships of root shape and useful components are required to be studied.

  • The present study attempted to explore the impact of art gallery visitors' motivation and perceived quality of experience on satisfaction. For this purpose surveys were conducted at art galleries. The factor analyses identified four dimensions (knowledge, leisure, yearn for culture and art, and relationship) of motivations and another four dimensions (esthetic/entertainment, education, escapist, and sense of belonging) of perceived quality of experience. Subsequently, regression analyses revealed the influence of motivations and perceived quality of experience on satisfaction. Based on the findings, managerial implications and suggestions for further studies were discussed.

A Study on the Equity Formation of Apparel Private Brand with TV Home-shopping (TV 홈쇼핑 의류 자체상표의 자산형성 연구)

  • The purpose of this study was to investigate the equity formation of private apparel brand according the service quality of TV home-shopping. A questionnaire was designed for the survey and the subjects were 383 female adults in Seoul and the Kyongnam province, Korea. The statistical analyses were carried out in the forms of frequency, factor analysis and path analysis of SPSS WIN 14.0. The findings throughout the research are as follows; First, the underwear sets and single item apparel sets with private brand had been well sold at better price. Second, the service quality of TV home shopping was perceived as the four factors of safety, contents, informative faculty and reliability. The reliability and contents factors had higher effects on the equity formation of private apparel brand. Third, the brand image, perceived quality, brand recognition as the cognitive dimension had influenced on the hedonic and utilitarian attitudes. The hedonic attitude and perceived quality had a great deal influence on the purchasing intend as the last behavior dimension.

  • This paper studied the relationship between the quality of perceived service and the consumer satisfaction on IPTV which is on the increase in the number of subscribers as the representative of a convergence service of the communication and broadcasting. Using the measurement tools of five factors such as the perceived service quality, the accommodation of information techniques, the consumer satisfaction, the intention of continuous use and the users' intention to recommend to others, the empirical study on IPTV users was taken. The results showed that the perceived serviced service quality, usefulness and easy access to IPTV have strong effects on the use and the users, intention to recommend to others.

Evaluation of Nutritional Quality of Convenience Store Meal Boxes according to Store Company and Meal Price (편의점 기업과 도시락 가격에 따른 편의점 도시락의 영양학적 질 평가)

  • Objectives: This study evaluated nutritional quality of convenience store meal boxes according to store company and meal price. Methods: In May 2020, 71 meal boxes from five major convenience store companies were collected. Respective weights of all dishes and food ingredients included in each meal box were measured with a digital scale. Information on nutritional contents was collected from nutrition fact panels on packages. Food group patterns, dietary diversity scores (DDS), and dietary variety scores (DVS) were analyzed. Nutritional contents, i.e., amounts of energy, protein, and sodium, and percentages of energy from carbohydrate, sugar, fat, and saturated fat were compared with respective standards based on the 2020 Dietary Reference Intakes for Koreans. Comparison was made among five companies (Company A, B, C, D, E) and three price groups (≦ 4,200 won, ≧ 4,300 and ≦ 4,500 won, ≧ 4,600 won). Multiple regression analyses were conducted to examine the difference of nutritional contents according to company and price, respectively while holding the other variable constant. Results: DDS, but not DVS, significantly differed among companies. The percentages of meal boxes meeting the nutritional standards of sodium significantly differed among companies; the percentage was highest in companies B (75.0%) and C (73.3%). "Company" was associated with amount of energy, protein, and sodium, and percentage of energy from saturated fat. "Price" was associated with the amount of energy and percentage of energy from carbohydrate. The average number of satisfied standards was highest in companies B (5.0) and C (4.0). About two-thirds of the meal boxes provided less amount of energy than the standard; the percentage of such meal boxes was highest in meal boxes with price of 4,200 won or lower. Conclusions: There were significant differences in the nutritional quality of meal boxes according to "company". Meanwhile, higher-priced meal boxes did not necessarily ensure better nutritional quality.

The Effect of Tourism Experience on the Quality of Life of the Elderly (노인의 관광경험이 삶의 질에 미치는 영향)

  • The study aimed to explore the association between tourism experience and the quality of life among the elderly over aged 65. Using a sample from Jeju, this study clarifies tourism experiences of the elderly and examines the relationship among tourism experience, six different life domains, and overall quality of life by generating theoretical and practical implications. Structural Equation Modeling approach was used to identify the relationships among the constructs. The results revealed that travel experience positively influences satisfaction with family, social, material, psychological, health, and leisure life domain. However, not all life domain satisfaction affects overall quality of life. Satisfaction with family, leisure, health, psychological well-being life domains was linked to overall life satisfaction among the elderly.

An Investigation on the Importance of Delivery Food Service Quality using AHP (AHP를 이용한 배달음식 서비스품질의 중요도 조사)

  • This study sought to find importance factors for the quality of delivery food service, identify the mutual importance of delivery food service quality studied in the preceding study, and derive the order of importance of each factor. To compare the priorities of factors determining the choice of quality of delivery food service, this study used a decision model using the appropriate Analytic Hierarchy Process (AHP) and carried out the process of quantifying the mutual evaluation. This process allows us to view the relative importance and priority of the selection factors. Through a prior study, the main factors of quality of delivery food service were classified and the main people of high importance were selected. According to the results of AHP the quality of deliver service is the main factor for the quality of delivery food service, and the quality of order service and food service is the key factor of the quality of delivery food service, which should take the upper hand in importance. This study results in how important specific factors are by giving relative self-weights to the lower factors, showing that convenience and accuracy always have the first and second place weight priorities in the lower factors, despite differences such as gender age and frequency of making them more convenient and accurate.

Effects of Lotus (Nelumbo nucifera) Leaf Hot Water Extracts on the Quality and Stability of Eggs using Ultrasonication Treatment during Storage

  • This study was performed to investigate the effects of lotus leaf hot water extracts treatment on the quality and stability of eggs using impregnation treatment through ultrasonication during storage. A total of 480 eggs were categorized into four treatment groups (n=30 each)-non-treated (CON), soaked for 30 min in lotus leaf hot water extracts without ultrasonication (T1), sonicated in distilled water (T2), and sonicated in lotus leaf hot water extracts (T3)-and stored for 15 d at 30℃. The egg weight, Haugh unit (HU), egg grade, albumen height, yolk color, eggshell thickness, eggshell breaking strength, and weight loss were measured for egg quality assessment. 2-Thiobarbituric acid reactive substance (TBARS) and volatile basic nitrogen (VBN) contents were measured as stability indicators. Additionally, total phenolic contents (TPC), total flavonoid contents (TFC), and 1,1-diphenyl-2-picrylhydrazyl (DPPH) radical scavenging activity were evaluated. The HU, egg grade, albumen height, and yolk color of T3 were significantly higher than those of CON (p<0.05). No significant differences in eggshell thickness and eggshell breaking strength are observed among the groups. The weight loss of T3 was significantly lower than that of the other groups during storage (p<0.05). The application of lotus leaf hot water extracts also significantly reduced TBARS and VBN (p<0.05). The TPC, TFC, and DPPH radical scavenging activity of T3 were significantly higher than those of the other groups (p<0.05). These results suggest that lotus leaf hot water extracts may be useful as a natural ingredient for improving the quality and stability of eggs during storage.

Effect of Oligosaccharides on Quality Characteristics and Antioxidant Activities of Prunus persica Batsch var. davidiana Max. preserved in Sugar (올리고당을 활용한 당절임 야생 복숭아의 품질특성과 항산화 효과에 미치는 영향)

  • In order to investigate the quality characteristics of Prunus persica Batsch var. davidiana Max. preserved in sugar, the quality characteristics were examined by dividing them into four groups: PS-A (P. persica preserved in sugar mixed with sucrose and oligosaccharides at a ratio of 100:0, w/w), PS-B (P. persica preserved in sugar mixed with sucrose and oligosaccharides at a ratio of 60:40, w/w), PS-C (P. persica preserved in sugar mixed with sucrose and oligosaccharides at a ratio of 40:60, w/w) and PS-D (P. persica preserved in sugar mixed with sucrose and oligosaccharides at a ratio of 0:100, w/w). The results were as follows: pH levels and soluble solid contents of PS-D sample were lower than those of the others, however total acidity value were higher. In case of Hunter's value, the 'L', 'a' and 'b' values of all samples were affected by addition of oligosaccharides. No great difference occurred among samples in reducing sugar contents. Organic acid content was significantly decreased with the lower addition of sucrose. The predominating organic acid components analyzed in all samples were lactic acid 156.15 g/100 g, tartaric acid 72.75 g/100 g and citric acid 32.90 g/100 g. The highest contents of total phenol and flavonoid, and DPPH and ABTS radical scavenging activity were $10.79{\pm}0.55mg\;GAE/mL$, $8.71{\pm}0.06mg\;CE/mL$ and 71.8%, 71.0% for PS-D, respectively. The results of this study indicated the use of oligosaccharides could increase the quality and antioxidant potentials of P. persica preserved in sugar.
