Quality Characteristics of Health Concerned Funtional Cookies using Crude Ingredients (거친재료를 첨가한 건강기능성 쿠키의 품질 특성 연구)

  • Pysicochemical and sensory characteristics of health concerned funtional cookies using various levels of crude ingredients of resistant starch were investigated in this study. The 10% substituted group had significantly higher pH values compared to those of control. Spread factor of control group had significantly the largest value and the 30% substituted group had the lowest values(p<0.05). Results of sensory characteristics showed significantly higher hardness, crispness and yellowness with 20% substituted sample group at p<0.05. Acceptance test of cookies with 10% substituted sample groups showed higher savory taste, texture, and overall acceptability and they did not show significant differences with the 20% substituted groups.

  • Solid waste incinerator is expected to become widely used in Korea. The incineration of solid waste produces large quantities of bottom and fly ash, which has been disposed of primary by landfilling. However, as landfills become undesirable other disposal method are being sought. In this study, an experimental research is conducted to determine the geotechnical properties of municipal solid waste incinerator fly ash(MSWIF) in order to evaluate the feasibility of using the material for geotechnical applications. Basic pysicochemical characteristics, moisture-density relationship, strength, permeability, and leaching characteristics are examined. The results of MSWIF are compared to other MSWIF and coal fly ash which are used as construction material. In addition, the effectiveness of cement stabilization is investigated using various mix ratios. The result of stabilized mixes are compared to the unstabilized material. Cement stabilization is found to be very effective in reducing permeability, increasing strength, and immobilizing heavy metals. This results indicate that MSWIF with cement stabilization may be used effectively for geotechnical application.

  • The pysicochemical and bacteriological properties of yogurts made by single or mixed cultures of L. bulgaricus FRI025 and S. thermophilus CHI were investigated. L. bulgaricus FRI025 which was isolated from raw milk was selected as starter culture among 22 strains of lactic culture by measuring viscosity, flavor, growth and acid production ability. The acid production and number of viable cell were increased by using L. bulgaricus FRI025 and S. thermophilus CHI together in ratio of apporximately 1:1. The pH, titratable acidity, viable cell number and viscosity of yogurt were 4.08, 1.14%, $2.5{\times}10^{10}/ml$ and 2100 cp after 9 hours incubation at $40^{\circ}C$, respectively. The pH and viable cell number were decreased on the other hand titratable acidity and viscosity were increased after 7 days of storage at $4^{\circ}C$. The changes of quality did not show significantly after storage. The selected starter was much higher than commercial yogurt starter in the acid production and growth of starter. The yogurt nanufactured with selected starter was better than with commercial yogurt in sensory evalution such as taste, texture, flavor and overall acceptability.

  • 본 연구는 돈육과 계육의 부가가치를 높이고 영양생리학적으로 우수한 기능성의 육제품을 개발하여 국민건강의 증진에 기여하고 농가에 보다 높은 수입과 국내 축산식품의 원할한 생산, 유통을 돕기 위하여 계육과 돈육의 혼합비율에 따른 이화학적 특성 검사와 관능적 특성 및 물성차이 측정을 하였다. 계육 함량 60%까지의 소시지의 경우 이화학적 특성, 관능적 특성 및 물성차이 검사 결과 돼지고지 100%군과 큰 차이가 없는 것으로 나타났으며, 일반성분 검사결과 대조군에 비해 수분함량이 높고 지방 함량이 낮게 나타났으며, pH와 보수성에 있어서는 유사하게 나타나 계육의 이용용 증대를 유도하는 차원에서 60%까지 계육을 첨가하여 소시지를 제조해도 양질의 단백질 자원으로 제품의 질에 미치는 영향이 좋고 공학적으로도 적합함을 입증할 수 있었다.

Pysicochemical and Milling Characteristics of Paddy Rice with Harvesting Times (수확시기별 벼의 도정 및 이화학특성)

  • To investigate the effects of harvesting times on physicochemical and milling properties of rice, milling tests were performed applying laboratory milling systems. Milling and head rice yields were highest in rice harvested at the 45 days after heading at 76.49 and 94.43%, respectively. Milled rice grain harvested 45 days after heading showed the highest minimum viscosity, as shown in the amylogram curves, as well as the lowest consistency viscosity. Protein and amylose contents were highest in rice harvested at 35 days after heading, whereas the instrumental taste score was highest 45 days after heading.

Quality Characteristics of the Brown Sauce Prepared with Lentinus edodes and Agaricus bisporus (표고 버섯과 양송이 버섯 브라운 소스의 품질 특성)

  • To evaluate the potential possibility of Lentinus edodes as an a sauce ingredient of sauce, the physicochemical and sensory characteristics of Lentinus edodes and Agaricus bisporus brown sauce were compared. The same mother sauce was used to prepare the for preparation of two different types of sauce was the same. The contents of moisture, crude protein, and crude ash were not different. However, crude fat content was higher in Agaricus bisporus brown sauce and carbohydrate content was higher in Lentinus edodes brown sauce. The amounts of total free amino acids were 1,236.45 mg% in Agaricus bisporus brown sauce and 791.73 mg%, respectively in Lentinus edodes brown sauce. Major free amino acids in both sauces were glutamic acid, alanine, aspartic acid, and arginine. Amino acid derivatives content was higher in Lentinus edodes brown sauce (644.55 mg%) than in Agaricus bisporus brown sauce (595.87 mg%). Major amino acid derivatives were ammonia, taurine, and carnosine in Agaricus bisporus brown sauce and sarcosine, ammonia, -amino isobutyric acid, and phospho ethanolamine in Lentinus edodes brown sauce. The L, a and b values of Lentinus edodes brownumsauce showed a higher tendency those of Agaricus bisporus. The viscosity of Agaricus bisporus brown sauce and Lentinus edodes brown sauces were 1976.67 cP and 2686.67 cP, respectively. The sensory score of color was not different between the both sauces, but those of flavor, taste, and viscosity of Lentinus edodes brown sauce were higher than those of Agaricus bisporus brown sauce. Especially, the sensory evaluation score on the flavor of Lentinus edodes brown sauce (7.6) was recorded higher than that (5.1) of Agaricus bisporus brown sauce. From the As a results, the overall acceptability of Lentinus edodes brown sauce was judged to be superior to than that of Agaricus bisporus brown sauce.

Quality Characteristics of Cookies with Various levels of Functional Rice Flour (기능성 쌀 쿠키의 품질 특성 연구)

  • Pysicochemical and sensory characteristics of cookies with various levels of functional rice flour were investigated in this study. Dough pH of 10% substituted group and Spreadability of 20 and 30% substituted group had significantly higher values than that of control group. Density of Dough had significantly the largest value of 1.27 with 10% substituted sample group. The L value of brightness in control group had significantly the largest value of 69.31. The b value of 20% substituted sample group had significantly the largest value of 35.60. Results of sensory characteristics showed significantly higher savory aroma, savory flavor, hardness and brownness with 10% substituted sample group. Acceptance test of cookies with 20% substituted sample group showed higher overall acceptability than those of others. Quality caracteristics of 10 to 30% subsituted sample groups indicated significantly similar or higher values compared to those of control showing the possibilities of developments in health concerned funtional rice coopkies.

Effects of Plants, Rhizobacteria and Physicochemical Factors on the Phytoremediation of Contaminated Soil (오염 토양의 식물상 복원효율에 미치는 식물, 근권세균 및 물리.화학적 인자의 영향)

  • Phytoremediation is an economic and environmentally friendly technique to remediate contaminated-soil. In this study, the effects of plants, rhizobacteria and physicochemical factors on phytoremediation have been reviewed. For successful phytoremediation, the selection of plants is primarily important. To remediate soil contaminated with petroleum hydrocarbon, raygrass (Lolium multiflorum lam), white mustard, vetch (Vicia villosa), tall fescue (Festuca arundinacea), legumes, poplar, and Pine (Pinus densiflora) were mainly applied, and the removal efficiency of petroleum hydrocarbon were ranged 68 to 99%. Corn (Zea mays), raygrass (Lolium multiflorum lam), vetch (Vicia villosa), mustard, clover (Trifolium repens), and tall fescue (Festuca arundinacea) were used for the removal of polycyclic aromatic hydrocarbon, and their removal efficiencies were 50-98%. Rhizobacteria play significant roles for phytoremediation because they can directly participate in the degradation of contaminant as well as promoting plants growth. The following rhizobacteria were preferred for phytoremediation: Azospirillum lipoferum, Enterobactor cloacae, Azospirillum brasilense, Pseudomonas putida, Burkholderia xenovorans, Comamonas testosterone, Pseudomonas gladioli, Azotobacter chroococcum, Bacillus megaterium, and Bacillus subtilis. Pysicochemical factors such as pH, temperature, nutrient, electron acceptor, water content, organic content, type of contaminants are consequential limiting factors for phytoremediation.
