Effects of Free-range Farming on Carcass and Meat Qualities of Black-feathered Taiwan Native Chicken

  • The effects of free-range farming, compared to a conventional production system, on carcass and meat qualities were studied using black-feathered Taiwan native chickens. Twenty 16-week old females were purchased separately from a free-range farm and a conventional production farm and used for this study. The results showed similarities in the live weight (roughly 2.1 kg), dressing percentage (69%) and meat percentage (19%) of deboned leg quarter. Significant differences (p<0.05) found for the free-range chickens included: a higher percentage of meat for the breast, an increased crude protein content and chewiness value for the breast, but decreased crude fat content and lower hardness and fracturablility values for the leg quarter. Significantly higher L* values were found for the breast and leg meat of conventionally produced chickens, whereas no significant differences were found for WHC and purge loss between the breast and the leg, and between the two production systems as well. Results of sensory evaluation showed a significant preference for leg over breast meat (p<0.05). The scores of all the attributes including aroma, flavor, firmness, tenderness, juiciness and overall acceptability of leg meat from free-range chickens were slightly higher than for conventional chickens, while the reverse was true for breast meat, though no significant difference could be found. Free-range Taiwan native chicken appeared to yield the best of the results, with flavorful yet tender leg meat for higher sensory satisfaction, and high-protein but low-fat breast meat for healthier diet choice.

에틸 알코올/물 혼합 용매에서 아크릴아미드의 분산 중합 (Dispersion Polymerization of Acrylamide in Ethanol/water Media)

  • 하이드록시프로필 셀룰로오스와 암모니움 퍼설페이트를 각각 입자 안정제와 개시제로 사용하여 에틸 알코올/물 혼합 분산매에서 아크릴아미드의 분산 중합을 다양한 중합 조건하에서 수행하여 생성되는 poly(acrylamide) (PAM) 라텍스의 평균 입자경, 라텍스 고분자의 점도 평균 분자량, 수용화 정도 등을 관찰하였다. 일반적으로 PAM 라텍스의 평균 입자경은 개시제의 농도, 분산매 중의 물의 농도, 중합 온도가 증가함에 따라 증가하였으나 단량체의 농도, 입자 안정제의 농도는 감소함에 따라 증가하였다. 라텍스 상태로 얻어진 PAM 고분자의 점도 평균 분자량은 단량체의 농도, 입자 안정제의 농도, 분산매 중 물의 농도가 증가함에 따라, 또는 개시제의 농도, 중합 온도가 감소함에 따라 증가하였다. 본 연구에서 얻어진 PAM 라텍스는 0.5~2.4 $\mu\textrm{m}$의 평균 입자경과 20000~335000g/㏖의 점도 평균 분자량을 나타내었으며 이들은 물중에 분산하였을 때 순간적으로 수용화되었다.

강원도 동해안 지역 정수장의 THMs 분포 (Distribution of THMs at Drinking Water Purification Plants in the East Coast Region of Gangwon-do)

  • Objectives: In an effort to examine the distribution of THMs (Trihalomethane) generated from chlorine disinfection by the drinking water treatment plants located on the east coast region of Gangwon-do, this study surveyed the distribution and concentrations of each component of THMs twice per month for 5 years from 2008 to 2012. Fluctuation pattern in the seasonal generation amount was identified. In addition, the correlation between the concentration of organic substances in water and THMs was assessed, along with stability of purified water quality supplied by the water treatment plants on the east coast by analyzing the composition ratio of each component that constitutes THMs and the detection frequency. Method: The research was done on purified water supplied by 29 water treatment plants in 7 cities and counties (Goseong-gun, Sokcho-si, Yangyang-gun, Gangneung-si, Donghae-si, Samcheok-si, Taebaek-si) located in Gangwon-do on the east coast. Water samples were collected twice a month from 2008 to 2012 and were investigate for chloroform, bromodichloromethane (BDCM), dibromochloromethane (DBCM), and bromoform, based on analysis through Purge-Trap (Tekmar 3000) devices using FID-attached GC (HP 6890, Hewlett Packard). Result: THMs concentration detected at Gangneung-si was 0.0086mg/L, Goseong-gun 0.0019mg/L, Donghae-si 0.0099 mg/L, Samcheok-si 0.0016 mg/L, Sokcho-si 0.0057 mg/L, Yangyang-gun 0.0027 mg/L and Taebaek-si 0.0038 mg/L. As the THMs composition rate, chloroform constitutes 51.4% followed bybromodichloromethane 22.3%, bromoform 15.2% and dibromochloromethane 11.1% respectively. Conclusion: Throughout the entire THMs survey areas and period, the maximum concentration was 0.072mg/L, which did not exceed the water quality standards (0.1 mg/L), and the overall average concentration was very low at 0.0044 mg/L.

  • Human body fluid and humor include not only sweat, joint fluid but also every fluids, for example, blood, essence, kidney essence and marrow. Historically, in the oriental medicine, there are a lot of efforts in order to preserve fluid and humor. In "Treatise on Cold Damage and Miscellaneous Disease (傷寒雜病論)", when treating cold damage, preservation of fluid and humor is put first. I tried to find out the relation about fluid and humor and pain treatment in "Treatise on Cold Damage and Miscellaneous Disease". So, I investigated sentences related to pains in "Treatise on Cold Damage and Miscellaneous Disease" "greater yang disease part" and commentaries of several chinese medical doctors. And I divide pain treatments into four categories. (fluid and humor sufficiency-exterior pattern, fluid and humor sufficiency-interior pattern, fluid and humor deficiency-exterior pattern, fluid and humor deficiency-interior pattern) At first, when treating pains of cold damage, there are many considerations about deficiency and sufficiency of fluid and humor through pulse condition and symptoms. Second, in pain-cases of fluid and humor sufficiency, purge methods is chosen. And in pain-cases of fluid and humor deficiency, tonifying methods is chosen. Finally, one of the main objects of "Treatise on Cold Damage and Miscellaneous Disease" is preservation and supply of fluid and humor.

수출용 진공포장 냉장 돈육 등심의 일반성분 및 물리화학적 품질변화 (Composition and Physico-Chemical Properties of Vacuum Packaged Korean Pork Loins for Export during Cold Storage)

  • 한국산 수출용 냉장 돈육 등심의 품질 특성을 조사하기 위해 수출 육가공업체 3개소에서 생산된 시료를 2$^{\circ}C$에서 50일간 냉장 저장하면서 일반성분과 물리화학적 특성 변화를 조사하였으며, 그 결과는 다음과 같다. 일반성분에서 수분은 I업체, 조단백은 II업체, 조지방은 II와 III업체의 시료에서 유의적으로 높게 나타났다(p<0.05). 물리화학적 특성변화에서 pH는 저장기간이 경과함에 따라 유의적으로 증가하였으며, 보수성은 II업체 시료가 유의적으로 높고, 저장기간이 경과함에 따라 유의적으로 증가하였다. 전단력은 II업체 시료가 유의적으로 낮았으며, 저장기간이 경과함에 따라 유의적으로 낮아졌다(p<0.05). 육즙손실은 II업체 시료가 유의적으로 많았고, 저장기간이 경과함에 따라 유의적으로 증가하였다. 가열감량은 저장기간에 따라 전반적으로 감소하는 경향이었다. 따라서 본 실험 결과 업체별 돈육의 품질 차이는 돼지 품종, 사육농가의 사육관리, 비육일수와 도축장에서의 도축방법, 냉각방법 등에 의하여 차이가 있는 것으로 판단되며, 이에 대한 추가 연구가 수행된다면 수출돈육의 품질향상을 가져 올 수 있을 것으로 판단된다.

국내산 진공 포장 냉장 돈육 뒷다리육의 이화학적 및 관능적 특성 (Physicochemical and Sensory Characteristics of Domestic Vacuum Packaged Pork Hams)

  • This study were carried out for investigation of physicochemical and sensory characteristics of shelf-life of Korean vaccum packaged chilled pork hams for export. The samples were stored at 0$\pm$1$^{\circ}C$ (A and B companies) and 2$\pm$1$^{\circ}C$ (C and D companies). In the proximate analysis of composition of hams, moistures were 75.36~76.57%, crude proteins 19.26~21.08%, crude fat 1.40~3.69% and crude ash 1.03~1.13%. TBA values were 0.192~0.264 mgMA/kg and did not change much during all storage times regardless of storage temperature. VBN values were 12.14~14.01mg / 100g after 50 days in the storage at $0^{\circ}C$, but the samples stored at 2$^{\circ}C$ exceeded 20mg/100g at 50 days. The values of pH were 5.71~6.50, which are higher than those of loins during all storage times. Purge losses were 1.23~1.98% at the initial time and 2.83~10.59% after 50 days. So, the variation among samples appeared to be large. Cooking losses appeared to be 33.86~56.24%. In the result of sensory evaluation of cooked meat, the ham of B company obtained good scores in all items. But, after 20 days, all samples were not significantly different in total acceptability.

새로운 대기압 플라즈마 소스를 이용한 결정질 실리콘 태양전지 인산 도핑 가능성에 관한 연구 (A Study on Feasibility of the Phosphoric Acid Doping for Solar Cell Using Newly Atmospheric Pressure Plasma Source)

  • Furnace is currently the most important doping process using POCl3 in solar cell. However furnace need an expensive equipment cost and it has to purge a poisonous gas. Moreover, furnace typically difficult appling for selective emitters. In this study, we developed a new atmospheric pressure plasma source, in this procedure, we research the atmospheric pressure plasma doping that dopant is phosphoric acid($H_3PO_4$). Metal tube injected Ar gas was inputted 5 kV of a low frequency(scores of kHz) induced inverter, so plasma discharged at metal tube. We used the P type silicon wafer of solar cell. We regulated phosphoric acid($H_3PO_4$) concentration on 10% and plasma treatment time is 90 s, 150 s, we experiment that plasma current is 70 mA. We check the doping depth that 287 nm at 90 s and 621 nm at 150 s. We analysis and measurement the doping profile by using SIMS(Secondary Ion Mass Spectroscopy). We calculate and grasp the sheet resistance using conventional sheet resistance formula, so there are 240 Ohm/sq at 90 s and 212 Ohm/sq at 150 s. We analysis oxygen and nitrogen profile of concentration compared with furnace to check the doped defect of atmosphere.

아질산염의 대체제로 고분자 키토산의 첨가가 저지방 소시지의 냉장 저장 중 이화학적 성상 및 미생물의 변화에 미치는 영향 (Evaluation of High Molecular Weight of Chitosan as a Replacer of Sodium Nitrite on the Physico-Chemical Properties and Microbial Changes of Low-fat Sausages During Refrigerated Storage)

  • 본 실험은 아질산염의 대체제로서 키토산과 젖산나트륨을 이용하여 저장성과 발색도 효과를 조사하기 위해 실시하였다. 그 결과 저장성에서는 아질산염의 대체제로서 젖산나트륨과 비교하여 저장 기간 중 차이점은 나타나지 않았지만 색도에서는 아질산염을 첨가한 시료에 비해 키토산과 젖산나트륨을 첨가한 시료의 적색도가 많은 차이를 보임으로써 키토산에 의한 아질산염의 완전대체는 불가한 것으로 판단된다. 하지만 접종한 Listeria monocytogenes는 아질산염 및 젖산나트륨과는 유사한 항균효과를 보여주고 있어서 키토산의 항균효과는 나타난 것으로 평가되며 앞으로 아질산염을 대체할 수 있는 천연소재의 개발이 필요할 것으로 판단된다.

  • Ozonic use of sterilization and heat treatment of raw material to extend the conservation period of food recently is increased by hard vegetable or microorganism sterilization purpose of fruit. If ozone can create as is easy comparatively because do air or oxygen by raw material and schedule period passes, there is advantage that do not leave the second contaminant because being gotten restored by oxygen. Also, because the effect is big to decolorization beside sterilization effect about microorganism, deodorization, disjointing of venomousness hazardous substance, food save, indoor air purge, good hand processing, hydrospace agricultural chemicals processing etc. the use extent is wide. This research ran parallel a sterilization experiment of E.coli colitis germs by ozone that manufacture ozonizer that use doped diamond maund electrode (BDD) by boron and searched special quality electrochemistry enemy of the ozonizer and is created. E.coli. After cultivate E.coli colitis germs during 37C 1 day is LB ship, after do ozonation, was sterilized more than 90% by ozone as result that examine sterilizing power by substance microscope and could confirm excellency of diamond electrode.

Hunter L 값에 따른 돈육의 육질 특성 연구 (Studies on Quality Characteristics of Pork Classified by Hunter L Value)

  • 본 연구에서는 육색에 따른 돈육의 육질특성을 파악하기 위하여 육색특성중 대표적인 Hunter L 값을 기준으로 설정하여 육의 이화학적 특성 및 관능특성을 분석하였다. 도축후 3, 5, 10, 15시간에 측정한 도체온도와 도축후 15시간까지의 온도 저하율은 Hunter L 값의 증가에 따라 유의적으로 낮았으며(p<0.05), 도축 직후와 24시간에 측정한 pH의 경우에도 명도가 증가할수록 유의적으로 낮았다. 물리적 특성에서 전단력은 L 값의 세 범위간에 유의성이 인정되지 않았으나, 보수성은 명도가 증가함에 따라 유의적으로 감소하였다(p<0.05). 조리감량에서는 유의적인 차이가 없었지만, 드립의 경우 명도가 높을수록 드립량이 증가되었다. 육색의 경우 CIE L*, a*, b*와 chroma, Hue 및 ΔE값은 육색명도가 증가할수록 유의적으로 증가하였다(p<0.05). 결론적으로 다른 육에 비해 육색명도(Hunter L) 값이 높은 육은 사후 온도가 높고, pH와 보수성이 낮으며, 드립이 많이 발생하여 소비측면에서 보면, 좋지 못한 외관으로 소비자가 구입을 기피할 수 있을 것으로 판단된다. 그러나 관능적 특성에 유의적인 차이가 인정되지 않아 보다 폭넓은 연구가 이루어져야 될 것으로 사료된다.
