Effect of Different Tumbling Marination Methods and Time on the Water Status and Protein Properties of Prepared Pork Chops

  • The combined effect of tumbling marination methods (vacuum continuous tumbling marination, CT; vacuum intermittent tumbling marination, IT) and effective tumbling time (4, 6, 8, and 10 h) on the water status and protein properties of prepared pork chops was investigated. Results showed that regardless of tumbling time, CT method significantly decreased the muscle fiber diameter (MD) and significantly increased the total moisture content, product yield, salt soluble proteins (SSP) solubility, immobilized water component (p<0.05) compared with IT method. With the effective tumbling time increased from 4 h to 10 h, the fat content and the MD were significantly decreased (p<0.05), whereas the SSP solubility of prepared pork chops increased firstly and then decreased. Besides, an interactive effect between CT method and effective tumbling time was also observed for the chemical composition and proportion of immobilized water (p<0.05). These results demonstrated that CT method of 8 h was the most beneficial for improving the muscle structure and water distribution status, increasing the water-binding capacity and accelerating the marinade efficiency of pork chops; and thus, it should be chosen as the most optimal treatment method for the processing production of prepared pork chops.

Effect of Baicalein on Nitric Oxide Production of TM3 Mouse Leydig cells stimulated with indomethacin (바이칼레인(Baicalein)이 indomethacin으로 유발된 생쥐 Leydig세포의 일산화질소 생성에 미치는 영향)

  • Objectives : Baicalein (3,3', 4', 5, 6-pentahydroxyflavone), a type of flavonoid, is a well-known antioxidant and anti-inflammatory ingredient found in Scutellaria baicalensis root. The aim of this study is to investigate the effect of baicalein on nitric oxide (NO) production in TM3 mouse Leydig cells stimulated by indomethacin (IN). Methods : TM3 cells were treated with IN (0.5 μM) and baicalein at concentrations of 12.5, 25, 50, and 100 μM for 24 hr, 40 hr, 42 hr, 44 hr, and 64 hr. After treatments, cell viabilities were measured with the modified MTT assay. The production of nitric oxide in cells was measured by Griess reagent assay. Results : Baicalein showed no cytotoxicity on IN-stimulated TM3. NO production in IN-stimulated TM3 treated for 24 hr with baicalein at concentrations of 12.5, 25, 50, and 100 μM was 95.8%, 94.86%, 89.97%, and 81.52% of the control group treated with IN only, respectively; NO production for 40 hr was 97.34%, 97.34%, 95.15%, and 87.42%, respectively; NO production for 42 hr was 89.12%, 90.14%, 89.74%, and 90.26%, respectively; NO production for 44 hr was 83.83%, 84.94%, 85.65%, and 86.85%, respectively; NO production for 64 hr was 94.12%, 95.38%, 94.21%, and 94.12%, respectively. Specifically, baicalein at concentrations of 12.5, 25, and 50 have been shown to most efficiently inhibit NO productions in 48 hr of treatment. Conclusions : Baicalein might have anti-toxicant effect on Leydig cells related with its inhibition of NO production in Leydig cells stimulated with IN.

Economic Effects of Sewage and Wastewater Treatment Service Sector: An Inter-industry Analysis (산업연관분석을 활용한 하수처리 부문의 경제적 파급효과 분석)

  • The economic effects of sewage and wastewater treatment service (SWTS) sector on other sectors have been rarely investigated in the literature. This paper attempts to apply an inter-industry analysis to looking into the economic effects of the SWTS sector. To this end, the most recently published 2012 input-output table is used here. In particular, the SWTS sector is specified as exogeneous to identify the economic effects of the SWTS sector on other sectors. Production-inducing effect, value-added creation effect, and employment-inducing effect are quantified based on demand-driven model. Supply shortage effect and price pervasive effect are also analyzed employing supply-driven model and Leontief price model, respectively. The results show that production-inducing effect and value-added creation effect of a unit of investment or production in SWTS sector are estimated to be 1.7076 and 0.7392, respectively. The employment-inducing effect of one billion of investment or production in the SWTS sector is computed to be 11.0498 persons. The shortage effect of the SWTS sector amounts to 0.8417 won. The overall price effect of the 10% increase in the price of SWTS sector is calculated to be 0.0115%. This quantitative information can be utilized in predicting the economic effects of the SWTS sector-related activities or policy-making.

  • This research was conducted to investigate the priming effect in Korean and English word production by Korean speakers. Picture-naming with distractors was used as experimental task. The type of target language, the type of distractor language and SOA(Stimulus Onset Asynchrony) were used as variables. Cross-linguistic priming effect and within-linguistic priming effect were mesured to investigate bilinguals' conceptual system.

The Inhibitive Effects of Yukgunja-tang on the Cerebral Ischemia (대군자탕이 뇌허혈에 미치는 억제 효과)

  • This experimental study was designed to investigate the effects of Yukgunja-tang(YGJT) on the inhibition of cerebral ischemia in rats. And We measured regional cerebral blood f1ow(rCBF) and pial arterial diameter(PAD) in cerebral ischemic rats, and cytokines production in serum Of cerebral ischemic rats. The results were as follows; Both rCBF and PAD were significantly and stably increased by YGJT(10 mg/kg, i.p.) during the period of cerebral reperfusion, which contrasted with the findings of rapid and marked increase in control group. In cytokine production of serum by drawing from femoral arterial blood after middle cerebral arterial occlusion(MCAO) 1 hr, IL-1β and TGF-β production of sample group were similar to that of control group, but sample group was decreased TNF-α production compared with control group, and was significantly increased IL-10 production in compared with control group. In cytokine production of serum by drawing from femoral arterial blood after reperfusion 1 hr, sample group was significantly decreased IL-1β and TNF-α production compared with control group, but TGF-β production of sample group was similar to that of control group, and sample group was significantly increased IL-10 production compared with control group. In cytokine production of serum by drawing from femoral arterial blood after reperfusion 4 hrs, sample group was significantly decreased IL-1β production compared with control group, and sample group was decreased TNF-α production in compared with control group, but TGF-β production of sample group was similar to that of control group, and sample group was increased IL-10 production compared with control group. This results were suggested that YGJT has inhibitive effect on the brain damage by inhibited IL-1β production and TNF-α production, but accelerated IL-10 production. We thought that YGJT should have an anti-ischemic effect through the improvement of cerebral hemodynamics and inhibitive effect on the brain damage.

  • Marine Microorganism strain 96CJ10356 produced extracellular polysaccharide (EPS-R) accompanied with cell growth. To improve the production of EPS-R, the effect of aeration rate was tested in a 5-liter jar fermentor with STN medium. The production of EPS-R was increased with aeration rate and after 72 hour cultivation, 12.20 g/l of EPS-R was obtained with an aeration rate of 1.5 vvm and the apparent viscosity was measured to be about 1000 cp with culture broth.

The Comparative Study of Anti-inflammation and Anti-oxidation in Accodance with Extraction Solvents of Jeondo-san (전도산(顚倒散)의 추출용매에 따른 항염 및 항산화 비교 연구)

  • Objective : The purpose of this study was to compare anti-Inflammation and anti-oxidation of Jeondo-San(JDS) extracted with two kinds of solvents, ethanol and water. Methods : Two kinds of JDS extractions were prepared 20, 50, $100\;{\mu}g/mg$. The Cytotoxicity was measured by MTT assay in Raw 264.7 cell. The anti-inflammation effects were measured by inhibitory efficacy on $PGE_2$, NO, TNF-$\alpha$, COX-2 and iNOS in Raw 264.7 cell. The anti-oxidation effects were measured by ROS inhibitory efficacy, intracellular GSH synthesis and DPPH Radical scavenging in HaCaT cell. Results : 1. All of JDS extraction groups had no cytotoxicity in Raw 264.7 cell. 2. All of JDS extraction groups showed significantly inhibitory effect on production of $PGE_2$. Inhibitory efficacy increased in accodance with concentration. 3. All of JDS extraction groups showed significantly inhibitory effect on production of NO. Inhibitory efficacy increased in accodance with concentration. 4. All of JDS extraction groups did not show significantly inhibitory effect on production of TNF-$\alpha$. 5. $100\;{\mu}g/ml$ JDS extracted with ethanol and $50\;{\mu}g/ml$, $100\;{\mu}g/ml$ JDS extracted with water showed inhibitory effect on iNOS expression. 6. All of JDS extraction groups showed significantly inhibitory effect on production of ROS. Inhibitory efficacy increased in accodance with concentration. Ethanol extractions were better than water extractions. 7. $100\;{\mu}g/ml$ JDS extracted with ethanol only produced GSH of $32{\pm}5.2%$. 8. All of JDS extraction groups showed significantly scavenging effect of DPPH radicals. Inhibitory efficacy increased in accodance with concentration. Ethanol extractions were better than water extractions. Conclusion : Two kinds of JDS extractions have not cytotoxicity and inhibit production of NO. JDS extracted with water was effective in anti-inflammation, JDS extracted with ethanol was effective in anti-oxidation.

The Effect of Perceive Service Quality of Local Content Production Policy on User Satisfaction, Reuse Intention, and Recommendation Intention (지역콘텐츠 제작지원 사업의 지각된 서비스 품질이 이용 만족, 재이용 의도, 추천 의도에 미치는 영향)

  • This study analyzed the effect of perceived service quality for the local content production policy on the service user satisfaction, reuse intention, and the recommendation intention. First, reliability, responsiveness, and adequacy were identified as the service quality evaluation criteria of the local content production policy. Second, all of the quality evaluation criteria had a positive effect on the service user satisfaction. Third, responsiveness had a positive effect on reuse intention, and responsiveness and reliability had a positive effect on recommendation intention. Fourth, the service user satisfaction had a positive effect on the reuse intention and recommendation intention. Therefore, this study has the significance of presenting a theoretical model for the service quality evaluation of the local content production policy, and suggesting perspective for the improvement of the policy.

Betaine Production by Two Stage Culture and Elicitor in the Cell Cultures of Lycium chinense Mill (구기자 현탁 세포배양으로부터 이단계 배양과 Elicitor에 의한 Betaine 생산)

  • The effects of carbohydrates, hormones and elicitors on both cell growth and betaine production were investigated in the cell cultures of Lycium chinense Mill. The maximum effect of glucose and sucrose was observed in cells cultured in the presence of 3% and 7% for cell growth and betaine production, respectively. The effect of hormones on cell growth and betaine production was prominent in the presence of 10 ${\mu}$M 2, 4-D, 10 ${\mu}$M NAA and 2.5 ${\mu}$M IAA, whereas cell growth and betaine production were excellent at 2.5 ${\mu}$M BA and 10 ${\mu}$M BA, respectively. Abiotic elicitors such as KCI, MnCl2 and NaCl exhibited an inhibitory role on cell growth in all treatment groups. Betaine production was increased according to increase of concentration of abiotic elicitors. methanol-soluble and insoluble components as biotic elicitor remarkably inhibited cell growth from 2 mg and 6 mg, respectively. Betaine production was increased maximally at 2 mg of biotic elicitors. When growth medium was switched to production medium at two stage culture, it resulted that cell fresh weight and dry weight decreased but betaine content increased about 2.2-fold.

  • Taurine Chloramine (Tau-Cl) inhibits production of nitric oxide(NO) and tumor necrosis factor-alpha (TNF-${\alpha}$) in activated peritoneal macrophages, similar In that previously reported for activated RAW 264.7 cells. In addition, the effect of Tau-Cl and taurine on superoxide anion (O$\_$2/$\^$-/) Production in murine peritoneal exudate polymorphonuclear leukocytes (PMN) was examined. Tau-Cl inhibited O$\_$2/$\^$-/ production in a manner that was dose-dependent and reversible, Taurine also inhibited O$\_$2/$\^$-/ production by stimulated PMN, but at higher concentrations and to a lesser extent than Tau-Cl. The effects of taurine on O$\_$2/$\^$-/ production was attributed to the in vitro formation of Tau-Cl catalyzed by PMN associated halide-dependent myeloperoxidase. In contrast, production of NO and TNF-${\alpha}$ by activated peritoneal exudate macrophages was inhibited by Tau-Cl while taurine was without effect. These data lend support to the notion that Tau-Cl may participate ill the inflammatory responses by modulating production of inflammatory mediators.
