Safety Assessment of Genetically Modified Foods and Food Additives in Korea

  • Genetically modified foods and food additives are derived from organisms that have been inserted foreign genetic materials by recombinant DNA techniques to improve the quality or any other pur-poses. The problems such as toxicity, allergenicity and antibiotics resistance in the safety of genetically modified foods are usually concerned. In Korea, the safety of foods is ensured by the Food Sanitation Act. Although there is no specific provision regarding the genetically modified foods in it, any foods that might cause negative effect(s) on public health or human life are prohibited to sell in the market. In order to systematically evaluate safety of genetically modified foods, the Korea Food and Drug Administration (KFDA) promulgated "Guidelines regarding review of safety assessment data for genetically modified foods and food additives (KFDA Notification 1999-46)". The objectives of these guidelines are to ensure safety of genetically modified foods and food additives. In order to evaluate the safety of genetically modified foods. KFDA operates a special expert committee composed by experts from government, universities, research institutes. and consumer's unions. Recently. manufacturers and consumers are interested in the issues on safety and labeling of genetically modified foods, because of increment of imported genetically modified crops and processed foods. Since government and consumers unions have different viewpoints, their positions regarding the issue are different each other. Therefore, the regulation of labeling on genetically modified foods is prepared and should be enforced at July 2000 in Korea. in Korea.

남녀대학생들의 한국전통음식에 대한 지식 및 평가에 관한 연구 - I. 지식 및 섭취실태를 중심으로 - (A Study on University Student' Knnowledge and Opinion of the Korean Traditional Foods - I. The knowledge and consumption of the Korean traditional foods -)

  • The objectives of this study were to investigate university students' knowledge of traditional dishes and seasonal festive foods, and to estimate the level of consumption in Korea. The result of the study indicated that their level of knowledge of the seasonal festive foods was very low on as average. The reason was that, because each family prepared only one or two festive dishes on seasonal festival days, these students had few opportunity of being acquainted with other kinds of festive foods. In case of traditional foods university students ate some traditional foods. However, they age other kinds of traditional foods such as Jun-Gol and San-Juk less than once a month because of the difficulty in cooking these foods everyday. Finally, the students showed their intention to eat more traditional foods and festive foods if they can find these types of foods easily. The findings of this study suggested that, in order to increase the consumption of our traditional foods, it is necessary to encourage the establishment of many traditional food stores and to provide an easy access to these stores. Furthermore, every effort should be made to develop various kinds of food materials and easy recipes which can be used at home.

  • With the rapid growth of high-school food service in a short period as a result of the extensive implementation of school service, contract food service as well as the use of pre-prepared food ingredients has been increased. The purpose of this study was to evaluate the time required in various phases of product flow, temperature, pH, Aw, microbiological quality of foods served in high school in Seoul area and to analyze the hazardous factors to find out efficient control methods. Comparison was made between the schools using prepared food and raw materials in terms of microbiological quality. However, no distinguishable difference in the quality of foods was found between them. Therefore, the use of prepared food seemed no impose more hazard than using raw materials.

식품 구매 기간에 따른 음식물 쓰레기 감량을 위한 가정의 식생활 실태 조사 (A Survey on the Dietary Home Lifestyle for the Reduction of Food Wastes by the Period of Food Purchase)

  • The goal of this study was to determine a method of reducing food wastes in the dietary home lifestyle. Statistical analyses were conducted of 491 questionnaires answered by housekeepers living in Daejeon city. The data were analyzed by SAS program and the results are summarized as follows. Among the respondents, 51.53% answered that they purchased the foods in consideration of the family number, 60.45% that they occasionally throw away foods because the date of expiry had passed, i.e., the foods threw away by mistake of storage, 68.23% that they make side dishes at a time for three meals in a day, 52.95% that they make three or four kinds of side dishes, 82.28% that they prepared meals according to the favorite foods of the family, 48.04% that they left food at home, and 47.32% that they threw away foods because too many foods had been prepared. The major reasons for food wastes at home were listed as meal leftovers (32.72%), vegetable trimming (31.29%), and non-planned purchase (25.77 %). The perception of housekeepers on the reduction of food waste were listed as the preparation of accurate meal quantity (50.92%), planned purchase (28.31%), development of recycling foods (14.05%), and reduction of side dishes (6.72%). Further reduction of food wastes of dietary home lifestyle can be summarized to emphasize the preparation of accurate meal quantity, planned purchase, development of recycling foods, and reduction of side dishes. In addition, studies should be conducted to examine the systematic administration method and standard education for the reduction of food wastes.

미국 거주 한인들의 전통음식에 관한 인식조사(I);이용실태와 개선방안을 중심으로 (The Korean Americans’ Knowledge on Korean Traditional Foods (I) -Actual State of Utilization and Improvement Measures-)

  • This study was conducted to investigate the actual state of utilization of Korean traditional foods by Korean Americans residing in L.A. area and to provide come policies, to improve their attitudes for Korean traditional foods. The proper period preparing traditional foods was the occasion of family events(47.0% )and Korean festivals(40.8%). Festival foods were prepared in Sulnal( =New Year's Day), Chusok( =the Korean Thanksgiving Day), Daeborum( =the 15th of January by the lunar calendar), Dongji( =the winter solstice) and Tano( =the 5th day of the 5th by lunar month), respectively. Sixty five percent of all the respondents expressed their wish to hand down the cooking methods of traditional foods. However, only28.6% of the respondents at their twenties replied positively on this matter. To maintain and develop traditional foods abroad, it is necessary that older generations sometimes offer opportunities to meet with them to the coming korean generations to taste traditional foods and that Korean food companies establish special selling agencies abroad and export standardized traditional foods. And furthermore, if tourism corporations and cooking schools hold a food exhibition and or a food-tasting party, occasionally, in conjunction with the embassies and legations abroad, the utilization of traditional foods will increase.

전북지역(全北地域) 주부(主婦)들의 식생활관리(食生活管理) 실태(實態)에 관(關)한 조사연구(調査硏究) (A Survey on the Status of the Homemakers' Meal Management in Jeonbuk Area)

  • A survey was made, from May to June 1991, to reveal the current situation of the meal management of the homemakers in Jeonbuk area. The results obtained from 464 homemakers were summerized as follows. The meal expenses were planned and managed mostly by the homemakers (93.3%). The 31.1% homemakers expended 200,000-300,000 Won a month for meals and the average expenditure was 294,106 Won. Among the homemakers who responded, the 34.0% managed their account books for meal expenses. With decreasing age(p<0.05), increasing education level (p<0.001), and increasing the income(p<0.01), the number of those who managed the account book tended to be higher. Usually they bought their foods at the market place (52.1%) and they did every other days(33.2%). The 46.9% planned what to buy and chose the best ones among the foods they planned to buy at the market. The percentage of those who prepared their menus planned in advance was only 5.5%. The most homemakers cooked for themselves (96.8%). On cooking and buying foods, the 48.2% considered their husbands first and the 64.4% regarded the tastes and needs of their families as the most important thing. The majority (66.2%) regarded the dinner as the most important among those three times of meals. The 39.6% prepared Kimchi twice a month. The foods they prepared for each meal were usually 4-5 kinds (43.2%). Mostly they prepared meals three times a day (49.1%). The average times spent in preparing and cleaning the tables for lunch and breakfast were 41.6, 96.2 minutes respectively. The homemakers who had jobs tended to spend less time in preparing and clearing the tables than those who had not (p<0.01, p<0.001). The 58.0% had complaints in that the food prices were too high and their moneys for meal preparation were insufficient and the 16.6% had difficulty in satisfying the tastes of their families.

원재료, 조리기구와 조리원 손에 의한 급식소 조리음식의 미생물오염 실태 분석 (Analysis of Contamination of Bacteria from Raw Materials, Utensils and Workers' Hands to Prepared Foods in Foodservice Operations)

  • 급식규모와 운영형태가 유사한 3곳의 급식소를 대상으로 원재료, 조리기구 및 조리종사원 손과 최종조리음식간의 미생물 오염실태를 분석한 결과는 다음과 같다. A 급식소에서는 닭볶음탕, 잡채, 비빔밥, 콩나물무침에서 황색포도상구균이 검출되었다. 닭볶음탕은 조리종사원의 손, 재료를 손질한 도마, 양파에서 황색포도상구균이 검출되었으므로 조리종사원의 손이나 도마를 통한 교차오염이 발생한 것으로 판단된다. 잡채는 조리종사원의 손, 당면을 삶아 건진 바구니, 양파와 양파를 손질한 도마에서 모두 황색포도상구균이 검출되었으므로 이들 간의 교차오염이 발생했을 것으로 생각된다. 비빔밥과 콩나물무침은 해당일 조리를 담당한 종사원의 손에서 황색포도상구균이 검출되었으므로 조리종사원 손에 의한 오염이 발생한 것으로 판단된다. B 급식소의 쥐어채조림은 원재료의 황색포도상구균이 조리과정에서 그대로 전이되어 조림 후에도 검출되었다. C급식소의 오징어채무침에서는 대장균이 검출되었다. 오징어채무침은 가열조리공정을 거치지 않는 메뉴로서 원재료인 오징어채에서 검출되었던 대장균이 그대로 최종조리 후까지 전이된 것으로 판단된다. 급식소 최종음식의 안전성 확보를 위해서는 위생적인 원재료의 구매와 사용, 조리종사원 개인위생의 개선, 조리기기의 철저한 세척 및 소독관리가 선행되어야 할 것으로 사료된다.

  • A hazard analysis which included watching operations, measuring temperatures of foods throughout preparation and display, and sampling and testing for microorganisms of total plate counts and coliform bacteria was conducted in various phases of product flow of Naeng-myeun (Cold noodles) and Pi-bim bab (mixed rice) prepared at Korean restaurants. Large numbers of total plate counts were counted from the cooked foods after handling and holding. Ingestion of these foods must be considered high risk. Critical control points identified were, pre-preparation, food handling after cooking, and holding on display in product flow of Nang-Meon and pre-preparation, preparation, and holding on display in product flow of Pi-bim bab. It need for effective quality control of Nang-Meon and Pi-bim bab that training program consist of surveillance, education of the staff, standard operation procedures, forbidding dangerous processes and control of critical points.

전라북도 향토음식의 조리법 표준화 및 영양분석 분석(제1보)-전주비빔밥, 콩나물국밥, 민물장어구이, 애저찜, 아귀찜- (Recipe Standardization and Nutrient Analysis of Local Foods of Cheollabuk-do Province(The First Report))

  • As the incidence of diet-related diseases increase, much attention has been focused of traditional foods. Traditional foods are ultimately based on local foods. However, there has been little study looking into the recipes and nutritional value of local foods. Therefore, the present study was designed to standardize recipes and analyze the nutrients of some representative local foods of Cheollabuk-do Province. Their foods were Cheonju pibimpap, kongnamulgukpap, minmuljangokui, aejeotchim and aguytichim. Test recipes for each food were prepared, being based on various information obtained from personal interviews, literature surveys of restaurant recipes. Then test recepe was subjected to sensory evaluation. All characteristics of each food were judged as "satisfactory". The analysis of nutrient composition revealed that in general energy content was low whereas protein content was as high as recommended reguirement in all foods except for kongnamulgukpap. Vitamin content was generally high but contents of calcium and iron were relatively low in all foods. Cheonju pibimpap was rich in dietary fiber. Dietary fiber content of Cheonju pibimpap was 16.6g per serving size. All foods contained considerable amounts of essential amino acids. The major fatty acide were oleic acid, linoleic acid and glutamic acid, oleic acid being the highest in terms of composition ratio.ion ratio.

시판 음식의 조리 단계별 HACCP 설정을 위한 연구 (I) 탕류(갈비탕, 설렁탕, 장국)의 위해분석 (Hazard Analysis and Critical Control Point of Korean Soups prepared at Korean Restaurants: Hazard Analysis of Tang (Galbitang, Sullungtang, Jangkuk))

  • A hazard analysis which included watching operations, measuring temperatures of foods throughout preparation and display, and sampling and testing for microorganisms of total plate counts and coliform bacteria was conducted in various phases of product flow of Korean soups (Galbitang, Sullungtang, Jangkuk) prepared at Korean restaurants. Cooked foods were sometimes held at room temperature long enough to permit multiplication of bacteria that might have been present. This was confirmed by the finding of large numbers of aerobic mesophilic colonies ($10^6$) in samples of such foods after handling and holding for several hours before served. These bacteria decreased down to $10^1{\sim}10^2$ while the contaminated Tang were served. And internal temperature of Tang served was approximately $70^{\circ}C$. Critical control points identified were, pre-preparation, handling after cooking and holding on display. Guidelines were suggested for effective quality control of Tang (Korean soups) production. Handlers of these foods need to be informed of the hazards and appropriate preventive measures.
