아몬드 첨가 설기떡의 품질 특성 및 항산화성 (Quality Characteristics and Antioxidant Activities of Sulgidduk Added with Almond Powder)

  • 본 연구는 설기떡에 쌀에 부족한 단백질 등 영양이 풍부한 아몬드를 첨가하여 설기떡의 건강 기능성을 향상하고자 아몬드를 6, 12, 15% 첨가한 설기떡을 제조하였다. 가용성 고형물 함량은 아몬드 첨가량이 증가할수록 유의적으로 감소하였고 환원당은 아몬드 첨가량이 증가할수록 유의적으로 감소하였다. pH와 산도는 아몬드 첨가량에 따른 변화가 없었다. 색도는 아몬드의 첨가량이 증가할수록 명도는 유의적으로 감소하였고, 적색도와 황색도는 유의적으로 증가하였다(P<0.05). 항산화능은 DPPH 라디칼 소거능 및 hydroxyl라디칼 소거능 모두 아몬드의 첨가량이 증가함에 따라 $IC_{50}$ 값이 감소하여 아몬드의 첨가량이 증가함에 따라 항산화능이 증가하였다. 이는 총페놀 함량이 아몬드의 첨가량이 증가함에 따라 농도 의존적으로 증가하는 결과에 기인하는 것이다. 관능검사 결과 강도 특성으로는 아몬드를 첨가할수록 색과 아몬드 향, 아몬드 맛에 대한 점수가 높게 나타났으며, 짠맛은 아몬드 첨가량이 증가할수록 높아졌다. 기호도에서 외관, 조직감, 전체적인 기호도는 아몬드 12% 첨가군에서 가장 높은 점수를 받았다(P<0.05). 이상의 결과로부터 설기떡에 아몬드 첨가 시 설기떡의 품질 특성 및 항산화능이 개선되었으며, 설기떡에 첨가하는 아몬드의 양은 12%가 적당한 것으로 생각되었다.

수입 식재료 및 친환경 농산물 사용에 대한 부산지역 초등학교 영양사의 인식 조사 (A Perception of Dietitians for Using Imported Foods and Pro-environment Farm Products for Elementary School Foodservice Operations in Busan)

  • The purpose of this study was to assess the use of food materials at elementary school in Busan area and provide school meal management with basic data to improvement of guideline. A survey was done by e-mail with a set of questionnaires, which was responeded by 122 dietitians in elementary school foodservice. The results were as follows; Sixty percent of the dietitians though to the general imported food materials had to use. Regarding mean score of using the imported food materials; safety was 2.12/5.00, freshness 2.48/5.00, sanitation 2.68/5.00, nutrition 2.73/5.00, preference 2.93/5.00, external form 3.09/5.00, package 3.12/5.00, and price 3.63/5.00. Thirty seven percent of the dietitians had purchase the pro-environment farm products(PEFPs) and 32.0% of them purchased those products for the students' health. But 52.4% could not purchase to the PEFPs because of expensive price. They had negative opinions about deficient supplying of PEFPs 4.51/5.00, too expensive price 4.34/5.00, and the truth or false in source of PEFPs 3.96/5.00. Most of them perceived that using the PEFPs had to apply the step by step. Among of them, 33.9% had the knowledge of PEFPs, but 16.4 of them did not know to the PEPPs. 57.4% of them hoped to purchase the food materials through a center of supporting school meal servcie(it called non-profit-making organizations).

뽕잎 추출액 첨가 김치의 품질 특성에 관한 연구 (A Study on Quality Characteristics of Kimchi with added Mulberry Leaves Extracts)

  • In this study, the effects of Mulberry leaves extract (ME) addition on the quality of Kimchi was investigated during 30 days of fermentation at $5^{\circ}C$. ME was added to salted cabbage at concentrations of 0% (C), 0.4% (ME1), 0.8% (ME2) and 1.2% (ME3) (w/w). The pH of Kimchi added above 0.8% ME was higher than that of Kimchi without ME after 12 days of fermentation. During overall fermentation, the titratable acidity of Kimchi with 1.2% ME remained at the lowest level. The degree of salinity decreased with increasing amount of added ME, whereas control groups showed the highest salinity. In L, a and b values of samples, the highest Figures of L and b were observed in control groups, and ME3 showed the highest value of a. In addition, the cutting force during the fermentation period was higher in all treated groups compared with control groups, and ME3 showed the highest hardness value. Moreover, growth of lactic acid bacteria and total bacteria were inhibited by addition of ME. In the sensory assessment, 0.4% ME improved the quality of Kimchi, showing the highest taste score and overall preference. Therefore, addition of 0.4% ME appears to be an acceptable approach to enhance the quality of Kimchi without reduction of acceptability.

쌀가루의 액화와 호화에 의한 누룽지 분말 가공조건 연구 (Studies on Processing Conditions for Nooroong-gi Powder by Liquefaction and Gellatinization of Rice Powder)

  • 숭늉 제조용 누룽지 가루의 제조방법을 개발하기 의하여 쌀가루를 액화시키고 호화시킨 다음 hot plate에서 태우는 방법을 조사하였다. 누룽지 가루는 태움정도에 따라 3가지로 구분하였다 그 결과 액화를 더 할수록 쌀가루 분산액의 DE값이 증가하고 점도가 감소하였으며 이 현상은 액화 2분내에 현저하였다. 누룽지 가루로 숭늉을 80~10$0^{\circ}C$에서 추출하였을때 처음 10분간에 80% 이상의 총 고형분이 추출되었으며 추출온도가 높을수록 추출수율이 높았다. 숭늉의 침전된 고형분의 부피와 탁도는 추출온도와 시간이 길수록 높은 값을 보여주었다. 3가지 누룽지 가루 중 가장 많이 태운 것이 숭늉의 고형분 수율과 탁도가 가장 높고 L값이 가장 낮았다. 또한 향미와 색에 대한 관능검사 결과는 가장 많이 태운 것이 가장 높은 점수를 보여 주었지만 중간정도 태운 누룽지 가루 숭늉의 기호도가 가장 높은 결과를 보여주었다.

발효숙성마늘 페이스트의 양을 달리하여 제조한 발효숙성마늘 양갱의 품질특성 및 항산화성 (Antioxidant Activities and Quality Characteristics of Fermented and Aged Garlic Yanggeng)

  • The quality characteristics and antioxidant activities of Yanggeng prepared with different amounts of fermented and aged garlic paste(0, 10, 20 or 30%) were determined. The pH of fermented and aged garlic Yanggeng decreased according to the amount of added fermented and aged garlic paste, whereas the acidity increased. In addition, the lightness of fermented and aged garlic Yanggeng decreased according to the amount of added fermented and aged garlic paste. In the texture analysis, hardness, cohesiveness and springiness of fermented and aged garlic Yanggeng were lower than those of the control. Total phenol content was highest in 30 % fermented and aged garlic Yanggeng. The antioxidant activities of fermented and aged garlic Yanggeng increased according to the amount of added fermented and aged garlic paste. The IC50 value of 30% fermented and aged garlic Yanggeng was 45.1 mg/g for DPPH and 29.6 mg/g for hydroxyl radical. The results of the sensory test showed that Yanggeng with 20% fermented and aged garlic paste had the highest score in appearance, overall preference and texture. Based on these results, it was suggested that the addition of 20% fermented and aged garlic to Yanggeng was appropriate for good food qualities both in terms of the physicochemical and antioxidative activities.

탈삽조건에 따른 대봉감의 품질 변화 (Effect of Astringency Removal Conditions on the Quality of Daebong Persimmon)

  • The application of persimmon for making new products was investigated by analyzing the degree of astringency removal, softness of fruit, and sensory properties of Daebong persimmons (Diospyros kaki L) treated with three different astringency removal methods of steeping in water, steeping in 1% salt solution, and vacuum packing at $40^{\circ}C$. The weight of persimmon fruit increased with increasing steeping time, but decreased with increasing vacuum packing time. The fruit steeped in $40^{\circ}C$ salt solution (1%, w/w) was not detected with soluble tannin and not developed color with ferric chloride after steeping for 9 h. A total of 12 h of steeping time was required for removing soluble tannin using other methods. The lightness (L) in color and hardness in texture decreased when storage time increased, regardless of astringency removal methods. In overall, the preference was shown with the highest score in persimmon steeped in salt solution for 9 h and 12 h that were vacuum packed at $40^{\circ}C$. In conclusion, the astringency removal condition of Daebong persimmon was good after being steeped on 1% salt solution for 9 h at $40^{\circ}C$.

도토리 분말을 첨가한 쿠키의 항산화활성 및 품질특성 (Antioxidant Activity and Quality Characteristics of Cookies Prepared with Acorn(Quercus species) Powder)

  • This study was conducted to investigate the effects of acorn (fruits of Quercus species) powder on the antioxidant activity and quality characteristics of cookies. Cookies were prepared with different amounts (0, 0.5, 1, 3 and 5% to the flour quantity) of acorn powder. The antioxidant activity was estimated by DPPH free radical scavenging activity and the total phenolic acid content in acorn powder and cookies. For analyzing quality characteristics, bulk density, pH of the dough, spread factor, loss rate, leavening rate, color, texture profile analysis, and sensory evaluations were measured. The moisture contents, a values, total phenolic acid content and DPPH free radical scavenging activity of cookies significantly increased with increasing acorn powder (p<0.001), while the pH of the dough, L values and b values of the cookies significantly decreased with increasing acorn powder (p<0.001). The consumer acceptability score for the 3% acorn cookie groups ranked significantly (p<0.05) higher than the other groups in overall preference, appearance, flavor, taste and color. From these results, we suggest that acorn is a good ingredient for increasing the consumer acceptability and the functionality of cookies.

Development of All-in-one Collar Shirt's Pattern for Males

  • Objective: The purpose of this study is to develop an all- in-one collar shirt with excellent appearance which is well suited to the body shape of the male adults. Background: As men's casual wear has recently become more casual and the number of cool biz wearing in the summer has increased, a variety of shirt colors have been preferred in addition to shirt collar. However, studies on the design and pattern development of men's casual shirt collars are very rare. So we have identified the necessity of various development and research of men's shirts. Method: We collected 8 all-in-one collar patterns for shirts from professional pattern books and men's shirt brands. Also, based on anthropometric data from the 6th Size Korea, we selected 5 subjects with measurements similar to the average adult men, manufactured shirts based on them and conducted a wearing test by 5 experts. Results: After selecting shirts with good fit and appearance, we developed a prototype of all-in-one collar. As for front appearance evaluation, E1 pattern had the most outstanding shape and size, and C1 pattern had the most natural creases and front adjustment curves. As for side appearance evaluation, C1 had the highest overall scores, and E1 pattern on outer line. As for back appearance evaluation, C1 pattern had the highest score. Conclusion: We suggested new all-in-one collar and shirt patterns. In addition, the prototype of the all-in-one collar shirt design was presented by reflecting results of the wearing test and preference survey. Application: The shirt's design and patterns could be manufactured using the developed patterns. It will fit well with the body shape of adult males and will be highly satisfied by them.

명태식해의 제조방법과 숙성조건에 관한 연구 (A Study on Preparing Method and Fermenting Condition of Myungtae Sikhae, Korean Fermented Fishery Food)

  • This study is conducted to find out the appropriate preparing method and fermenting condition through analysis of physicochemical, microbiological, sensory evaluation of Myungtae sikhae, Korean fermented fishery food which was prepared in simplified and conventional methods. During the fermentation of sikhae at 4℃, pH was decreased gradually, but acidity was increased and salinity was steady state. In this aspect, no significant difference was revealed between sikhae prepared in simplified and conventional methods. Under fermentation at 20℃ and kept at 4℃, pH was decreased to 4.6~4.9 for 15~20 days fermentation with steady state of salinity. However, acidity was changed in conversely. The content of reducing sugar with rapidly decreasing in the beginning of fermentation was continually decreased. The propagation of microorganism in th sikhae depends on the fermentation temperature rather than the preparing methods. Generally low propagation of microorganism began to increase gradually in the sikhae fermented at 4℃ comparing to that fermented at 20℃. In the sikhae fermented at 20℃ and kept at 4℃, the total count including lactic acid bacteria, was rapidly increased after 5 days' fermentation of sikhae is dominated by Lactobacillus sp. and the unique flavor and organic acid were contributed by this flora with Leuconostoc. sp. By the sensory evaluation, the best flavor was revealed in the sikhae, prepared in simplified method fermented for 30 days at 4℃. Until 20 days, sikhae fermented at 20℃ revealed higher score than fermented at 4℃. General preference for the sikhae fermented at 4℃ for 15 days prepared by simplified method and those fermented at 20℃ for 10 days. The sikhae, fermented at 4℃, showed less difference between preparing methods and preferable acceptability after being 25 days. The best acceptability of sikhae fermented at 20℃ showed after 15~25 days. In the final conclusion, the appropriate preparing method of sikhae is to use frozen Alaska pollack with simplified method and fermented at 20℃ for 5 days and then kept at 4℃.

곰취 분말 첨가 화쥐안(花捲)의 항산화 활성 및 품질특성 (Antioxidative Activities and Quality Characteristics of Steamed Roll with Added Ligularia fischeri (Ledeb.) Turcz. Powder)

  • Purpose: The purpose of this study was to investigate antioxidant activities and quality characteristics of the steamed roll added Ligularia fischeri (Ledeb.)Turcz. powder. Methods: Steamed roll were prepared with different amounts (0%, 0.5%, 1%, 1.5%, 2% to the flour quantity) of Ligularia fischeri powder. Results: As a result of measuring the normal component and the sugar content of the steamed roll added with Ligularia fischeri powder showed a tendency to increase as the added amount more significant increase (p<0.001). The pH of steamed roll significantly decreased with fermentation time (p<0.001) after again appeared a tendency to increased (p<0.001). The moisture of steamed roll were measured by significantly decreased as Ligularia fischeri powder content increased (p<0.001).The results of color value, L(lightness)and a(redness)values decreased with b (yellowness) increasing concentration of Ligularia fischeri powder (p<0.001). In texture analysis, gumminess, adhesiveness, cohesiveness, springiness decreased while chewiness and hardness increased as the amount of increasing concentration of Ligularia fischeri powder (p<0.001). According to the sensory evaluation, appearance, texture, moisture of 0.5% group received the highest score, color, flavor and overall acceptability were showed good results in 1% group (p<0.001). Concolusion: In summary, this study was considered that it can be manufactured as natural functional food that can sensory preference in 1%steamed roll added with Ligularia fischeri powder.
