보호자의 영양지식 및 식생활태도와 영유아의 영양상태와의 관계연구 - 전주지역 영양플러스 참여자를 중심으로 (Study on the correlation between nutrition knowledge, dietary attitudes of guardians, and nutritional status of infants and toddlers - Nutrition-Plus program in Jeonju)

  • 본 연구는 전주시의 영양플러스 사업에 참여 중인 115명의 보호자의 영양지식 및 식생활태도 수준을 파악하고 영유아의 영양상태와의 관계에 대하여 조사하였다. 이를 통하여 영유아의 바람직한 성장발달을 위한 영양관리와 보호자대상의 효율적인 영양교육을 제시하고자 하였으며, 그 결과를 요약하면 다음과 같다. 영양지식의 총점은 15점 중 12.97점이며 '철분이 부족하면 빈혈에 걸리기 쉽다'가 99.1%로 가장 높은 정답률을 보였고, '철분은 동물성보다 식물성 단백질에 많이 함유되어 있다'가 62.6%로 가장 낮은 정답률을 보였다. 식생활태도의 총점은 75점 만점 기준 53.38점이며 '술은 절대로 마시지 않는다'가 3.95점으로 가장 높게 나타났고, '우유제품을 매일 먹는다'가 2.85점으로 가장 낮은 식생활태도 점수를 보였다. 보호자의 일반적 특성에 따른 영양지식과 식생활태도는 교육수준과 가족구성에서 통계적으로 유의한 차이를 보였다. 6 ~ 24개월 영유아의 전체 평균 %EER은 97.56%이며, 영양지식 수준이 '높음'은 98.81%, '보통'은 97.87%, '낮음'은 93.73%로 영양지식 수준이 '높음'의 %EER이 다른 군에 비해 높았다. 25개월 이상의 유아의 %EER은 81.47%이며, 영양지식 수준이 '높음'은 84.17%, '보통'은 82.31%, '낮음'은 71.20%로 영양지식 수준이 '높음'의 %EER이 다른 군에 비해 높았다. 6 ~ 11개월 영아의 전체 평균 미량 영양소 섭취율은 칼슘, 인, 티아민, 리보플라빈, 나이아신은 100%이상으로 적절하게 섭취하고 있으나 철은 92.38%, 비타민 A는 92.46%, 비타민 C는 95.50% 섭취하고 있었다. 12개월 이상의 유아는 칼슘에서 보호자의 영양지식 수준이 '높음' (97.71)과 '보통' (92.79)이 '낮음' (77.66)보다 칼슘 섭취량이 유의적으로 높았다. 전체 평균 섭취율은 인, 비타민 A, 티아민, 리보플라빈, 비타민 C는 100% 이상으로 섭취하고 있으나 칼슘은 92.01%, 철은 92.31%, 나이아신은 93.67%로 부족하게 섭취하였다. 식생활 태도 수준에 따른 %에너지 필요추정량, 탄수화물, 단백질, 지방에 대한 섭취 에너지 백분율 모두 통계적으로 유의한 차이가 없었다. 미량영양소인 티아민의 섭취량은 보호자의 식생활 태도 수준이 '보통' (142.67)일 때 '높음' (121.03), '낮음' (119.56)보다 유의적으로 높았다. 12개월 이상의 유아의 미량 영양소의 섭취량 백분율을 분석한 결과, 인 섭취는 보호자의 식생활태도 수준이 '보통' (135.43)일 때 '높음' (114.62), '낮음' (124.74) 보다 유의적으로 높았다. 보호자의 교육수준은 영양지식 및 식생활태도와 각각의 양의 상관관계를 보였고, 보호자의 영양지식과 식생활태도 간에도 유의적인 양의 상관성이 나타났다. 보호자의 영양지식과 영유아의 칼슘 (r = 0.303, p < 0.01), 철 (r = 0.277, p < 0.01), 비타민 C (r = 0.221, p < 0.05), 리보플라빈 (r = 0.188, p < 0.05)의 섭취량 간에 유의적인 양의 상관관계가 나타났다. 본 연구결과를 종합하면, 전주시 영양플러스 사업에 참여하고 있는 영유아 보호자의 영양지식과 식생활태도 수준은 대체로 높은 수준이었으나 이를 실생활에 적용하는 하는데 부족함이 있으므로 영양플러스 교육내용 및 교육매체에 대한 재검토가 필요하겠다. 향후 영양플러스 사업이나 영유아대상의 영양사업에서 보호자의 실질적인 영유아 영양관리 실천 기술과 지식을 향상시킬 수 있는 영양교육이 보다 강화되어야 할 것이다.

Dietary sugar intake and dietary behaviors in Korea: a pooled study of 2,599 children and adolescents aged 9-14 years

  • BACKGROUND/OBJECTIVES: Dietary sugar intake, particularly added sugar and sugar-sweetened beverages, has received worldwide attention recently. Investigation of dietary behaviors may facilitate understanding of dietary sugar intakes of children and adolescents. However, the relationship between dietary sugar intake and dietary behaviors in the Korean population has not been investigated. Thus, this study aimed to estimate dietary sugar intake and food sources according to sex as well as examine the relationship of dietary sugar intake with frequent snacking and dietary patterns among Korean children and adolescents. SUBJECTS/METHODS: We pooled data from five studies involving Korean children and adolescents conducted from 2002 to 2011. A total of 2,599 subjects aged 9-14 years were included in this study. Each subject completed more than 3 days of dietary records. RESULTS: Mean daily total sugar intake was 46.6 g for boys and 54.3 g for girls. Compared with boys, girls showed higher sugar intakes from fruits (7.5 g for boys and 8.8 g for girls; P = 0.0081) and processed foods (27.9 g for boys and 34.9 g for girls; P < 0.0001). On average, 95.4% of boys and 98.8% of girls consumed snacks during the study period, and total sugar intake showed a significantly increasing trend with increasing energy intake from snacks (P < 0.0001 for both sexes). Two dietary patterns were identified by cluster analysis: Traditional and Westernized patterns. Total sugar intake was higher in the Westernized pattern (56.2 g for boys and 57.2 g for girls) than in the Traditional pattern (46.5 g for boys and 46.3 g for girls). CONCLUSIONS: These results suggest that multilateral and practical development of a nutrition education and intervention program that considers dietary behaviors as well as absolute sugar intake is required to prevent excessive sugar intake in Korean children and adolescents.

직장인 남성의 스트레스와 식생활 태도에 관한 분석 (Analysis on Stress and Dietary Attitudes of Male Employees)

  • This study was conducted to vitalize life through analysis on lifestyles, stress and dietary habits of male employees. For this study, questionnaire survey and physical measurements to examine BMI and waist circumference were performed with male employees in four companies located in Gyeongnam. Total 350 copies of the questionnaire were distributed and 327 ones were finally analyzed. The results of analysis on dietary liferelated problems and stress were as follows. First, according to BMI, 56.9% were overweight and waist circumference recorded less than 90 cm in 90.5%. For lifestyles, 54.1%, 79.2%, 60.9% and 52.3% smoked, drank alcohol, didn't exercise and didn't sleep sufficiently. Second, for the correlation with job stress, the subjects graduating junior college or lower academic institution, production employees and sleeping insufficiently showed higher compared to the others. Analysis on the correlation with life stress found that conjugal relation stress was higher in alcohol-drinkers, the males not taking dietary supplements, those with a normal weight or more compared to underweight ones. Stress from relation with a child was higher aged 35~49 years than in those aged 20~34 years, and stress from economic life was higher aged less than 50 years, in those graduating junior colleges compared to those graduating colleges, in those sleeping insufficiently. Health life stress was found to be higher in those without religion compared to those with it such as Protestant Christianity and Catholicism, in alcohol drinkers and in those sleeping insufficiently and having a disease. Based on this, in order to improve the lifestyles and dietary habits and release stress effectively, practical nutrition education program should be carried out.

Development of an Evidence-based Nutritional Intervention Protocol for Adolescent Athletes

  • [Purpose] Effective nutritional intervention can help reduce the risk of nutritional problems and improve athletic performance in adolescents. The five A's (assess, advise, agree, assist, and arrange) model is widely used as the theoretical framework for advice on nutrition, smoking, drinking, and physical activity and it recommends that practitioners in primary health care promote behavior change to facilitate positive outcomes. This model has also been useful in understanding the underlying processes of behavior change. This study aimed to develop both a novel evidence-based nutritional intervention protocol, rooted in sound nutritional theory, and a customizable nutritional intervention program to support sustainable healthy eating, enhance nutrient intake, and improve athletic performance in adolescent athletes. [Methods] In this study, we adapted the 5 A's behavioral change model and motivational interview to develop a theoretical framework to help adolescent athletes change their behavior and achieve their goals. [Results] During each step of the 5 A's protocol, a customized nutritional intervention protocol was developed by nutrition experts for each of adolescent athletes. Each plan was developed to improve the eating habits of adolescent athletes through group education and counseling. All nutritional counseling sessions were designed to enable participants to apply nutritional knowledge and practical action plans to their training and competition conditions to enable each of them to achieve individual athletic goals and facilitate self-management. [Conclusion] A theoretical and evidence-based nutritional intervention protocol was developed to identify and address obstacles to healthy dietary habits in adolescent athletes. This could be used as the basis for further studies aimed at improving nutrient intake and athletic performance in adolescent athletes.

경북지역 일부 초등학생의 비만도에 따른 생화학 검사치와 식습관 (The Differences of Biochemical Status and Dietary Habits according to the Obesity Degree among Obese Elementary School Students in the Gyungbuk Area)

  • The prevalence of obesity in children has steadily risen during recent years in developed countries. Child obesity has become a major concern to health providers since it has grown to epidemic proportions over the past few decades. This study was conducted to investigate the biochemical status, dietary habits and life styles according to the obesity degree among obese children residing in the Gyungbuk area. The subjects were 148 elementary school students (boy 103, girl 45) and classified as mildly obese (n = 56), moderately obese (n = 61) and severely obese (n = 31) by the obesity index. The average body weight and height increased significantly according to the obesity degree (p < 0.05, p < 0.001). Serum cholesterol concentration came under the normal level in all groups. Serum AST activity increased according to the obesity degree but it was not significant. Serum ALT activity increased according to the obesity degree (p < 0.05). Dietary habit score was lower significantly according to the obesity degree (p < 0.01). Life style of the subjects was significantly different for the level of 'healthy state (p < 0.05)', 'body perception (p < 0.01)', 'watching TV and video (p < 0.05)', 'normal sleeping hour (p < 0.05)' and 'degree of stress (p < 0.05)' according to the obesity degree. A positive relationship between obesity index and blood pressure, ALT has been shown in the subjects. Obesity index and dietary habit scores were negatively associated. Therefore, these results suggest that a practical nutrition-exercise education program for the prevention of child obesity should be provided to elementary school children. 제2형 당뇨환자의 당화혈색소(HbA1c) 수치 조절에 미치는 영향요인 (Factors Affecting the Control of HbA1c in Type 2 Diabetic Patients)

  • 연구목적: 본 연구는 제2형 당뇨환자의 당화혈색소 수치 조절에 미치는 영향요인을 파악하기 위한 서술적 조사연구이다. 연구방법: 본 연구는 2015년도 1월부터 12월까지 시행된 제6기 3차 년도 국민건강영양조사 자료 중 검진조사와 건강설문조사를 이용하였으며 설문에 참여한 전체 대상자 검진조사와 건강 설문조사에 참여한 전체 대상자 7.380명 중 제2형 당뇨환자로 분류된 285명을 대상으로 진행하였다. 연구결과: 대상자의 당화혈색소 조절에 영향을 주는 요인은 연령, 교육수준, 유병기간, 수면시간으로 나타났고 나머지는 영향을 주는 요인으로 나타나지 않았다. 결론: 제2형 당뇨환자에 있어서 중년기에도 질병 이환을 발견한 시점부터 교육수준에 맞는 적절한 당뇨교육을 실시하고, 적정 수면시간을 지키도록 하는 것도 당화혈색소 수치 조절에 영향을 미치는 것으로 나타났으므로, 이에 대한 적용 가능한 교육방법이나 프로그램의 개발이 필요하다.

청주지역 일부 대학생의 체중조절 식품 및 건강기능식품 사용 실태와 관련 인식 연구 (Use of Weight-control or Health Functional Foods, Associated Weight-control Behavior and Perception among University Students in Cheongju)

  • Objectives: This study sought to assess the prevalence and duration of weight-control or health functional food use, associated weight-control behavior, perception, and knowledge among university students. Methods: The subjects were 442 university students in Cheonju, Korea, and data was collected by a self-administered questionnaire. Both χ2 and t-tests were conducted for categorical and mean comparisons. Results: An estimated 62.7% (female 69.0%, male 54.8%) had ever attempted weight-control. Among these, an estimated 59.2% of females and 38.9% of males had used weight-control or health functional foods with significant gender difference. The weight-control foods commonly used included chicken breast, protein powder, low-fat milk and soymilk, and meal replacement drinks, while garcinia cambogia extract and green tea extract were frequently used as health functional foods. One of 10 (10.3%) consumers of weight-control foods reported ≥ 7 months use, with less frequent long-term consumption of health functional foods (4.2%). The average degree of satisfaction was 3.24 ± 0.92 for weight-control foods and 2.72 ± 0.97 for health functional foods on a 5-point scale, meaning 'slightly satisfied' and 'slightly dissatisfied', respectively. Females or students with an experience of weight-control reported poorer perceptions of their health and body image as well as a higher need for weight control. Besides, both male and female subjects felt a high need for correct information regarding weight-control methods. Conclusions: Our results provide a better understanding of the characteristics associated with the use of weight-control or health functional foods among university students and will be useful in developing a nutrition education program by incorporating correct body image, knowledge, and practical yet desirable practices for weight control.

일부 프로 축구선수들과 성인 남성의 식품섭취패턴, 식습관 및 영양지식에 관한 비교 연구 (The Comparative Study on Food Consumption Patterns, Dietary Behavior, and Nutrition Knowledge of Korean Professional Soccer Players and Non-athletic Males)

  • This study was performed to compare food consumption patterns, dietary behavior, and nutrition knowledge between Korean professional soccer players and the non-athletic males. Data were collected from 53 soccer players working for Korean professional soccer clubs and 44 non-athletic males, using self-administered questionnaires. There were significant differences in food consumption frequency between two groups. Meats and eggs, fishes and shellfishes, sea weeds were consumed more frequently by the soccer players. The frequency scores of foods rich in iron, calcium, and protein were also higher in the soccer players compared with the non-athletes. Meanwhile, the consumption of alcohol was more frequent in the non-athletes. As for the cooking method, the soccer players showed higher preference for steaming/parboiling and consumed raw vegetables and fruits more frequently than the non-athletic males (p < 0.05). The average scores of soccer players on nutrition knowledge for basic nutrition and athletic nutrition were lower than the respective values of the non-athletic males. However, the soccer players showed better eating behaviors and dietary habits compared with non-athletic males (p < 0.001). They had well-balanced, regular diet and good habits for chronic disease prevention. No significant relationship could be observed with respect to nutrition knowledge and nutritional behavior. Moreover, the experience of getting nutrition information did not affect either nutrition knowledge score or nutritional habits score, except that for habits of chronic disease prevention in non-athletes. Therefore, it is suggested that more effective and practical nutrition education program be needed for promoting healthy eating habits and improving nutritional status in young males.

체인지메이커(Changemaker) TEMPS 프로그램을 통한 학습자의 성장에 대한 사례연구 (A Case Study on the Growth of Learners through the Changemaker TEMPS Program)

  • 이 연구는 문헌 고찰을 통해 체인지메이커 교육의 의미를 살펴보고, 가정과 수업에 맞는 체인지메이커 교육 프로그램을 개발한 후 이를 적용한 학습자의 성장에 관한 사례를 통해 가정교과에서의 체인지메이커 교육의 의의에 대해 알아보고자 하였다. 이를 위해서 먼저 체인지메이커 교육에 대한 개념을 정의하였다. 체인지메이커 교육이란, 실생활 속에서 우리가 직면하는 문제들에 대해 생각하고(Thinking), 배우고(Education), 만들고(Making), 참여하고(Participation) 즐기며(Play) 다양한 문제해결 방안을 도출하고 서로 공유(Share)하여 변화(Change)시키는 교육을 말한다. 둘째, 본 연구에서는 가정교과에서의 체인지메이커 교육의 방향을 "폭넓은 메이커 활동을 통해 사회 문제에 관심을 가지고 문제를 해결하고 타인과 공감, 협업하여 행복하고 건강한 가정생활과 직업생활을 주도적으로 영위할 수 있도록 하는 것"으로 하고 내용의 범위를 "아동 가족, 식생활, 의생활, 주생활, 소비생활의 5개의 영역의 내용 요소를 추출하여 이를 교육할 수 있는 세부 주제를 선정"하고 교육 방법으로 "주제별로 TEMPS 단계를 통해 교과의 목적을 달성할 수 있도록 한다."로 제안하였다. 셋째, 체인지메이커 프로그램의 설계는 체인지메이커 교육의 5가지 핵심 아이디어 중에서 TEMPS를 단계로 프로그램을 설계하였다. T(Thinking)는 문제에 대해 파악하고 해결방법을 생각하는 단계이고, E(Education)는 다음 단계(Making)를 위한 배경지식을 얻는 단계이다. M(Making)은 문제 해결을 위해 필요한 목표물을 만드는 단계이고, P(Participation)와 P(Play)는 참여하고 즐기는 단계이다. S(Share)는 결과물 전시, SNS공유, 수업 발표회 등을 통해 교육적으로 확산을 시켜 궁극적으로 사회를 변화(Change)시키는 단계이다. 본 연구에서는 TEMPS 단계를 기본으로 하여 중학교 12개 프로그램, 고등학교 15개 프로그램을 개발하였고, 프로그램 당 각각 2차시~12차시로 중학교 총 68차시, 고등학교 총 68차시 분량이다. 체인지메이커 프로그램에 1년 간(2018년 3월 2일~2018년 12월 31일) 참여한 학습자들은 삶과 교육의 연계, 실천 능력의 향상, 자기 주도 학습, 자존감 향상, 성취감과 자기 성찰, 비판적 인식 향상, 감각적인 관찰 등에서 긍정적인 성장을 보여주었다.

서울 지역 일부 초 , 중 , 고 학생들의 다이어트 교육 실시에 따른 인식 변화에 관한 조사 (Change of Perception after Weight Management Management Education among some Elementary , Middle and High Sehool Students in Seoul)

  • To investigate the change of perception after weight management education in elementary, middle and high school students, a survey was conducted. Same questionnaire was administered twice, before and after weight management education, to 426 students at 9 schools in Seoul area. The mean height, weight and body mass index were 145.5$\pm$8.0cm, 40.0$\pm$8.3kg, 18.6$\pm$3.0 for elementary school students, 160.1$\pm$5.2cm, 50.2$\pm$7.3kg, 19.5$\pm$2.4 for middle school students, and 162.2$\pm$5.0cm, 52.2$\pm$6.4kg, 19.8$\pm$2.3 for high school students, respectively. Before education, their preferred weight and perceived healthy weight was 35.4kg and 37.0kg among elementary school students, 44.8kg and 46.5kg among middle school students, and 47.3kg and 48.9kg among high school students, respectively. Differences between their present body weight and their preferred weight and/or perceived healthy weight appeared to be 4.5kg and 2.9kg in elementary school students, 5.6kg and 4.0kg in middle school students, and 5.1kg and 3.3kg in high school students, respectively. After administering education, the differences decreased to 2.5kg and -0.2kg in elementary school students, 4.2kg and 2.7kg in middle school students, and 4.3kg and 2.0kg in high school students, respectively (p<0.01). And their perception on own body shape was investigated using 5 point scale ('too lean' to 'too fat', 1 to 5) before and after education. The mean values changed from 3.1 to 2.8 in elementary school students, from 3.3 to 3.0 in middle school students, and from 3.4 to 3.2 in high school students (p<0.01). Their satisfaction with own body weight was monitored using 5 point scale ('very satisfied' to 'very unsatisfied', 1 to 5), also. The mean values changed from 3.0 to 2.7 in elementary school students, from 3.6 to 3.2, in middle school students, and from 3.8 to 3.4 in high school students (p<0.01). In the evaluation of their nutrition knowledge about weight control using 10 item quiz, before and after education, the mean quiz score was changed from 6.3 to 7.0 in elementary school students, from 7.0 to 7.9 in middle school students, and from 7.5 to 8.1 in high school students (p<0.01). In summary, nutrition education on weight management improved the subject's perception on perceived healthy weight and own body shape, and satisfaction with present body weight. This result suggests that nutrition education program should incorporate strategies to change incorrect beliefs and knowledge regarding weight control. Onto this, weight control education for students should start from their early age, be repeated periodically and consistently, and focus on the harmful effects of excessive weight loss and information on the practical and scientific ways of weight management.
