Effects of Powdered Pine Needle (Pinus densiflora seib et Zucc.) on Serum and Liver Lipid Composition and Antioxidative Capacity in Rats Fed High Oxidized Fat (솔잎분말이 과산화지질을 급여한 흰쥐의 혈장 및 간장의 지질구성과 항산화능에 미치는 영향)

  • Effects of powdered pine needle (Pinus densiflora seib et Zucc) on serum and liver lipid composition and antioxidative capacity were investigated in rat fed high oxidized fat. Sixty male Sprague-Dawley rats weighing 161.25$\pm$2.51 g were blocked into four groups according to body weight and raised seven weeks with basal diet (normal group, I), basal diet and 10% oxidized fat (control group, II), basal diet, 10% oxidized fat and 2% powdered pine needle (2% powdered pine needle group, III) and basal diet, 10% oxidized fat and 3% powdered pine needle (3% powdered pine needle group, IV). Food intake, body weight gain and feed efficiency were not significantly different among oxidized fat diet groups. The level of plasma total cholesterol showed a tendency to decrease, whereas the plasma HDL-cholesterol concentration revealed a tendency to increase in pine needle groups. However plasma triglyceride level showed no significant differences in the treatment groups. Intake of the oxidized fat has increased the levels of liver cholesterol and triglyceride. The powdered pine needle showed a tendency to decrease thiobarbituric acid values in plasma and liver. The pine needle samples have also decreased the plasma GOT and GPT activities, whereas they have increased the liver glutathione peroxidase activity.

A Study on The Development and Evaluation of The Pine Needle Flavor oil (솔잎 향미유의 제조와 기호성에 관한 연구)

  • In this study, development of the pine needle flavor oils and their application to foods, especially to traditional Korean foods, were investigated. The pine needle flavor oils were prepared by the autoclaving method, and their volatile flavor components(VFCs) were determined by capillary gas chromatographic method The major flavor components of the pine noddle flavor oil were a -pinene 31.1%, pentane 9.8%, tricyclene 7.5%, camphene 6.8%, hexanal 6.2%, propane 6.0%, ${\beta}$-pinene 5.6%, limonene 3.9%. The acceptability of the pine needle flavor oils, sensory evaluation including a preference test and quantitative descriptive analysis(QDA), of the pine needle flavor oil, a sesame oil, and a blended oil (pine needle flavor oil : sesame oil 50 : 50 v/v) was carried out. The blended oil and sesame oil showed much higher preference scores than the pine needle flavor oil, and blended oil was almost as acceptable as sesame oil(P < 0.05). The results seem to indicate that blended oil can be used as a unique substitution for sesame oil in some foods, especially in some traditional Koran food.

Quality Properties and Antioxidant Activities of Chocolate with Variable Leaf Powder (잎채소 분말을 첨가한 초콜릿의 품질특성 및 항산화 활성)

  • Purpose: The aim of this study was to investigate the effects of various leaf powders on chocolate by analyzing quality characteristics, antioxidant activities, and sensory characteristics. Methods: Pine needles, mulberry leaves, ramie leaves, barley leaves, and squash leaves were freeze-dried, powdered, and added to the chocolate. Results: Water contents of all leaf powder-added groups were significantly higher than that of the control (15.78%). The pH values of chocolate with leaf powder were lower than that of the control (6.33) while that of mulberry leaf chocolate (6.56) was higher than that of the control. In color measurement, L-value, a-value, and b-value were highest in pine needle chocolate (30.31, 3.52, and 4.78, respectively). The ${\Delta}E$ value (total color difference compared to white board) was the highest in squash leaf chocolate (69.51) and significantly different from that of the control (67.69). The hardness of leaf powder-added chocolate was lower than that of the control (6.84 N), except for pine needles. In the antioxidant activity analysis, chocolate with pine needles and squash leaves had higher polyphenols, flavonoids, and ABTS radical scavenging antioxidant activity than those of the control. Overall consumer acceptability was the most preferred in the control compared to the other groups. However, chocolate with mulberry and barley leaves also received high scores (5.60 and 5.40, respectively) for overall acceptability. Conclusion: It can be concluded that chocolate with barley leaves is desirable for making functional chocolate due to its high consumer preference and positive effects on improving antioxidant activities.
