Effect of Kimchi and Its Ingredients on the Growth of Helicobacter pylori

  • Effects of kimchi and its ingredients, vitamin C and $\beta$-sitosterol on the growth of Helicobacter pylori were investigated. Three kimchi variations were studied: a standard recipe (kimchi I) and two functional variations for cancer prevention and treatment made with organically grown ingredients (kimch II and III). Methanol extracts and juices from kimchi I and III did not inhibit the growth of H. pylori. However, 10 mm and 12 mm inhibition zones were formed by methanol extract and juice from kimchi II, which had higher concentrations of red pepper powder (RPP) than those of kimchi I and III. Among the major kimchi ingredients, methanol extracts of RPP, garlic and ginger substantially inhibited the growth of H. pylori. The maximal inhibition zone (30 mm) was attained with garlic treatment. Inhibitory effects of the RPP, garlic and the sub-ingredient mixture (prepared with radish, garlic, RPP, ginger, green onion, sugar and fermented anchovy juice) on H. pylori were decreased by lactic acid bacteria fermentation. Neither the fermented garlic nor the fermented sub-ingredient mixture inhibited the growth of H. pylori. But, the inhibition Bone of fermented RPP was 12 mm, which was less than the 16 mm inhibition zone formed by the non-fermented RPP. Vitamin C and $\beta$-sitosterol which are known to be functional active compounds of kimchi also showed no inhibitory effect on the growth of H. pylori after 3 days of incubation. Further study is needed to determine why the inhibitory effect is removed or decreased by lactic acid fermentation, and to determine if fresh kimchi and lactic acid bacteria of kimchi can inhibit the growth of H. pylori.

  • In this study, sensory evaluation on ripened kimchi foods with herbs were carried out. Sensory evaluation indicated that rosemary was the best of all among the tested herbs. It seemed that 0.5% addition of fresh herb powder was most preferable and more than 4% addition was not acceptable. Hot spice and herb flavor was remained when kimchi dishes were prepared but it disappeared as time elapsed.

클로렐라 분말을 첨가한 물김치의 제조와 품질특성 (Preparation and Quality Characteristics of Mul-kimchi Added with Chlorella)

  • 클로렐라를 식품재료로 사용하기 위하여 클로렐라 분말을 0-0.1% 첨가한 물김치를 제조하여 $15^{\circ}C$에서 6일간 발효시키면서 이화학적, 미생물학적 및 관능적 특성을 조사하였다. pH는 발효 3일만에 급격하게 감소하여 0.1%를 첨가한 경우 pH 6.31에서 3.89로, 대조구는 pH 5.98에서 3.83으로 하락하였으며, 감소정도는 클로렐라 첨가량에 비례하였다. 적정산도는 발효가 진행됨에 따라 모든 처리구에서 증가하였으며, pH 변화와 동일한 경향이었다. 대부분의 처리구에서 환원당 함량은 발효 초기 최대값을 보인 후 감소하였으나 0.1%의 경우 환원당 함량은 큰 변화가 없었다. 젖산균 수는 발효초기에 급속하게 증가하였으며, 특히 0.1%를 첨가한 물김치에서 매우 빠르게 증가하였다. 관능검사 결과, 클로렐라 첨가는 물김치의 맛과 종합적인 기호도를 증진시키는 효과를 나타내었다. 클로렐라 물김치를 $4^{\circ}C$에서 19일간 저장하는 동안 pH는 거의 변화가 없었으며 적정산도는 약간 증가하였고, 젖산균 약간 감소하였으나 전체적으로 $10^7CFU/g$ 이상으로 유지되었다. 관능평가의 결과와 저장성을 고려하면 클로렐라의 첨가량은 0.05% 수준이 적당한 것으로 나타났다.

김치 감압건조 시 향기성분의 변화 및 β-cyclodextrin의 향기성분 포집효과 (Changes of Aroma Compounds during Kimchi Powder Production and Encapsulation Effect of β-Cyclodextrin)

  • 본 연구는 김치건조분말을 제조하는 과정에서 김치의 발효과정과 건조 전후에서 나타나는 향기성분의 변화를 조사하고, $\beta$-cyclodextrin의 첨가로 인한 향기성분 포집효과를 검증하고자 GC-MS를 이용하여 분석실험을 실시하였다. 김치를 제조하여 $20^{\circ}C$에서 발효시켰을 때, 초기 2일째는 dimethyl sulfide와 carbon disulfide가 생성되었고, 7일이 경과하였을 때, dimethyl disulfide, methyl 2-propenyl disulfide, allyl methyl sulfide, and di-2-propenyl disulfide의 황화합물이 주된 향기성분으로 검출되었다. 본 김치시료를 감압건조 하였을 때, 11개 화합물이 검출되지 않았고 dimethyl sulfide, acetaldehyde and methanethiol를 주로 포함하는 13개 화합물이 잔류하였다. 건조공정 중에서 김치향기성분의 손실을 최소화하고자 0.25-1.0% 농도의 $\beta$-cyclodextrin을 건조보조제로 첨가하였을 때, 향기성분의 포집효과에 의해 건조 김치분말에 잔류하는 향기성분의 함량이 평균 3% 증가하였다. 본 연구결과로 볼 때 cyclodextrin은 건조 김치분말 제조공정뿐만 아니라 건조식품제조에서 건조보조제로 효과적으로 사용할 수 있을 것으로 보인다.

  • 동결 건조 김치 분말과 Lactobacillus plantarum을 이용해 제조한 발효 소시지의 생산 및 그 특성에 대한 결과를 요약하면 다음과 같다. 1. pH의 변화는 숙성 6일째 급격하게 저하되었으며, pH의 범위는 $4.3{\sim}4.6$의 범위였다. 2. 최종 발효 소시지의 수분 함량은 $40.0{\sim}43.6%$이었다. 3. 관능 검사 평가에서는 최종 10% 김치 분말 첨가 및 0.2% starter culture 첨가 발효 소시지의 신맛이 대조군에 비해 더 강하게 나타났다. 따라서 본 연구에서는 김치분말 첨가 발효소시지 제조는 신맛 등을 조절할 경우 상업적인 김치 분말 첨가 발효 소시지의 제조가 가능한 것으로 사료되었다.

홍국 첨가 김치가 고지방식이를 투여한 흰쥐의 체중변화 및 지질대사에 미치는 영향 (The Effects of Kimchi with Monascus purpureus on the Body Weight Gain and Lipid Metabolism in Rats Fed High Fat Diet)

  • 홍국 김치의 투여가 고지방식이를 섭취한 흰쥐의 혈청지질구성과 간장기능에 미치는 영향을 조사하였다. Sprague-Dawely계의 흰쥐를 I군(정상식이군), II군(정상식이+홍국 $5\%$ 첨가 김치분말 $1\%$군), III군(고지방식이군), IV군(고지방식이+김치분말 $1\%$군), V군(고지방식이+홍국 $2.5\%$ 첨가 김치분말 $1\%$군), 그리고 VI군(고지방식이+홍국 $5\%$ 첨가 김치분말 $1\%$군)으로 나누어 각 군마다 8마리씩 4주간 사육하였다. 실험 종료일의 체중은 고지방식이급여로 고지방식이군은 정상군 보다 높은 수치를 보였으나, 홍국 김치 투여군에서는 홍국의 농도에 관계없이 체중의 증가가 유의적으로 감소하였다. 단위 체중당 간장 및 비장의 중량은 정상군에 비해 고지방식이 군에서 증가하였고, 김치 및 홍국 김치의 투여에 따라 감소하였으나, 신장의 중량은 각 군들 간에 유의성은 없었다. 중성지질의 농도는 정상군에 비해 고지방식이군에서 높았으며, 홍국 김치의 투여에 따라 감소하였고, 동맥경화와 밀접한 상관관계가 있는 LDL 콜레스테롤과 총콜레스테롤의 농도 및 동맥경화 지수는 김치 및 홍국 김치 투여군에서 유의적으로 감소하였다. 혈장 중 AST활성은 고지방식이군에서 증가하였고, ALT 활성은 각 군간에 차이를 보이지 않았다.

  • To investigate the materials in the preparation of kimchi for Koreans in the Commonwealth of Independent States(CIS) a survey was completed by 199 Koreans living in Moscow, Sahalin, Uzbekistan and Jazahstan, In the way to purvey the materials of Kimchi, the frequency to get all the materials of Kimchi in the markets is 74.7% on the whole and by regional groups the frequency is relatively high in Moscow and Kazahstan, For the main ingredients most respondents use Chinese cabbage, cabbage, or turnips. In general Chinese cabbage is used most, But the respondents who live in Moxcow and Kazahstan. For the main ingredients most respondents use Chinese cabbage, cabbage, or turnips. In general Chinese cabbage is used most, But the respondents who live in Moscow and Kazahstan. 쫴 are younger, or belong to higher emigrant generation, prefer cabbage kimchi. For the additional vegetables many respondents use carrots. For the seasonings, garlic, red pepper powder, and salt are added to Kimchi, but the use of ginger, whole seasame seed, and waxy rice paste is relatively low. The coriander, which is not added to kimchi in Korea, is used in Kimchi By above 80% of the respondents living in the three regions except Sahalin. It is considered to be due to the effect of the western dining cultural area. For the animal materials, 74.4% of the respondents add lightly salted fish to Kimchi and all toe respondents in Sahalin add salt-fermented sea food, the kind of which is mainly salt-fermented croaker. The reasons given for not adding salt-fermented seafood to Kimchi in the three regions except Sahalin, 59.9% of the respondents said it was because of the difficulty to purvey, 21.1% because of the fishy taste, and 16.8% because of not considering the addition of self-fermented sea food in Kimchi. The higher the emigrant generation of respondents, the less seasonings of strong flavor like garlic, red pepper powder, and salt-fermented sea food are used, and the more coriander is used. In the salting of Kimchi preparation, 97.8% of the respondents salt the main vegetables by soaking in brine and its concentration is controlled by experience.

대구지역 고등학생들의 김치에 대한 인식 및 이용실태에 관한 연구 (A Survery of High School Students' Awareness of and Uses for Kimchi in Taegu Area)

  • The main purpose of this study is to provide a basic knowledge of Kimchi preferred by high school students and to improve high school students' Kimchi intake. A questionnaire survey was conducted on 1,056 high school students in Taegu area. The results were as follows: 82% of the students had an affirmative opinion of Kimchi intake and they regarded Kimchi as one of our traditional, healthful and nutritious foods. The most well known Kimchi is as follows: Kkaktugi, Baechu Kimchi, Mul Kimchi, Chonggak Kimchi, Pa Kimchi, Dongchimi, Kkaennip Kimchi and Buchu Kimchi. The students preferred the white stems of the Chinese cabbage. Boy students preferred taste of fresh prepared Kimchi but girl students more preferred properly fermented Kimchi than the other. Their favorite ingredients were Korean radishes, oysters, green onion and carrots, also their favorite spices were red pepper powder, anchovies sauce, garlic and sugar in the order. Among those spices, boy students more preferred anchovies sauce than girl students. The students regarded market Kimchi as one of convenient and time-saving, but less quality and insanitary foods.

삼채뿌리분말 첨가 김치의 품질 특성 (Quality characteristics of kimchi with Allium hookeri root powder added)

  • 본 연구는 삼채뿌리분말을 첨가하여 김치의 맛과 저장성을 증진시키는 김치를 개발하고자 품질특성을 관찰하였다. 삼채뿌리분말 0.1%, 1%, 5%를 첨가하여 $4^{\circ}C$에서 8주 동안 저장하였으며 저장기간에 따른 pH, 산도, 염도, 환원당, 미생물의 변화 및 관능특성을 살펴보았다. 삼채뿌리의 비타민 $B_1$및 비타민 C의 함량은 각각 0.04 mg/100 g 및 5.76 mg/100 g으로 나타났으며, 삼채 뿌리의 비타민 $B_1$의 함량은 마늘보다는 적고 양파와 비슷한 수준으로 검출되었다. 삼채뿌리분말 첨가 김치의 pH의 측정결과 초기의 pH는 비슷하였으나, 저장기간 중 삼채뿌리분말을 첨가하지 않은 일반김치는 삼채뿌리분말을 첨가한 김치에 비하여 대체적으로 낮은 pH를 보였으며, 삼채뿌리분말 5% 첨가한 김치의 pH가 가장 높게 나타났다. 산도의 측정결과 pH 변화와 비슷하였으며, 삼채뿌리분말첨가 김치의 염도는 대체로 2.23%를 유지하였다. 환원당 함량의 측정 결과 삼채뿌리분말 0.1%, 1%, 5% 첨가 김치는 발효가 진행됨에 따라 모든 군에서 환원당 함량이 지속적으로 감소되었고, 삼채뿌리분말 첨가량이 많을수록 환원당 함량이 높은 것을 알 수 있었다. 숙성 중 총 균수 및 젖산균수 변화는 숙성 초기에 급격히 증가한 후 서서히 증가하는 경향을 보였다. 관능적 특성을 살펴보면 외관, 맛, 전반적인 기호도 에서 삼채뿌리분말 1% 첨가 김치의 평가가 가장 우수하였다. 이상의 결과를 보면 삼채뿌리분말을 첨가한 김치의 pH가 높고 천천히 감소되는 점으로 미루어 볼 때, 숙성 지연 등의 저장성과 기호성이 좋은 삼채뿌리분말 1%를 첨가하여 김치를 개발하는 것이 적합한 것으로 사료된다.

배추김치 부재료 혼합의 모델화와 품질 (Studies on Modelization of Subingredients of Chinese-Cabbage Kimchi)

  • This study was conducted to ivestigate the quality of modeled chinese-cabbage Kimchi. The mutual action of sub-ingredients and optimum mixing conditions were examined by analyses of pH, acidity, content of vitamins, carotenes, number of total microorganism, and Lactobacilli, the activities of softening related to enzymes (polygalacturonase and ${\beta}$-galactosidase), and sensory quality during fermentation. The result about the mutual action of red pepler powder and garlic showed that the pH was decresed as concentration of garlic was higher and that of red peppler powder became lower. Kimchi had unpleasant taste and undesirable odor when the adding ratio of the peper powder and garlic was unbalanced. As the concentration of garlic became higher, the content of vitamin C in Kimchi tissue decreased while that of vitamin C in Kimchi juice increased. The contents of vitamin B1, B2 and carotene increased as the concentration of garlic became lower. The optimum mixing ratio of red pepper powder and garlic evaluated by overall eating quality was 4.66% and 3.45%, respectively. The result about the mutual action of ginger and green onion was that pH became higher as the concentration of ginger was 1.84% and that of green onion was 5.96%. The intensity of fresh taste and odor became stronger as the concentration of ginger increaed to 2.76% and that of green onion decreased to 2.98%. The balance of sour, salty and hot taste became better as the concentration of ginger increased and that of green onion decreased. The optimum mixing condition evaluated by overall eating quality was 2.94% in ginger + 2.78% in green onion. The contents of vitamin B1, B2 and C were high in this condition. The result about the mutual action of leek and salted anchovy juice was that pH became lower as the concentration of leek increased and that of salted anchovy juice decreased. Sour, hot and sweet tastes were good in the condition of leek 12%, salted anchovy juice 4.69%. Palatable, fresh taste and odor became weaker when the one of both sub-ingredients was too much little. The optimum mixing condition evaluated by overall easting quality was 9.76% in leek + 7.32% in salted anchovy juice. The contents of vitamin B1, B2, C and carotene were high in this condition and other sensory qualities were good. The result about the mutual action of salt and sugar was that pH became lower as the concentration of sugar became higher and that of salt became lower. The sweet taste was reduced of hot taste than salty taste. Palatable and fresh tastes were desirable when Kimchi fermented with less salt and more sugar. The optimum mixing condition evaluated by overall eating quality was 3.29% in sugar + 4.80% in salt. The contents of vitamin B1, B1, C and carotene were high in this condition. The result of model Kimchi fermented at 20$^{\circ}C$ was that the number of Lactobacilli in model Kimchi was higher than that of in control Kimchi. The fermentation period was extended under pH 4.0 and the contents of vitamin B1, B1,C and carotene were high through the whole edible period. The activity of polygalacturonase was low, but that of ${\beta}$-galactosidase was high during fermentation.
