The purpose of this study was to investigate the quality characteristics of Sulgidduk prepared by adding the optimal amount of apple powder. Five different mixture ratios of apple powder to rice flour were prepared (0, 4, 8, 12, and 16%). After being stored for 3 days, the mixtures of apple powder and rice flour were measured to determine moisture content, color values, sensory qualities, and the mechanical texture characteristics of Sulgidduk. Moisture content of Sulgidduk with added apple powder ranged from 36% to 39% and but decreased with significantly with added apple powder. The L-color value decreased, whereas both the a-and b-values increased as apple powder was added. Thus, apple peel likely affected the Sulgidduk color value. The pH of Sulgidduk decreased with the addition of apple powder, whereas sugar level increased as apple powder was added. In the mechanical evaluation of apple Sulgidduk, hardness was significantly higher during the 3 days of storage with increasing amounts of added apple powder. Cohesiveness increased significantly during the storage period with the addition of apple powder,-; however, it began to decreased after 3 days. Springiness increased significantly with the addition of apple powder. Both adhesiveness and chewiness of Sulgidduk increased with added apple powder. Sensory quality characteristics such as color, taste, flavor, and moistness were improved with increasing amounts of added apple powder. However, the sensory quality of Sulgidduk decreased when the ratio of apple powder to rice flour was greater than 25%. Consequently, a mixture of 15~20% apple powder to rice flour was the best formula for improving Sulgidduk in terms of sensory quality.

This study investigates the current status and dyeing properties of various natural indigo powder dyes in the domestic market. Products from India, China, Europe are sold in the market and only a few manufacturers provide recommendation for the method of dyeing and information on the additives. Through the market research and the preliminary investigation on 21 products, 11 were selected for the dyeing experiment which include 3 Indian, 3 Chinese, 2 German, and 1 Pakistani origin indigo reduced powders, and 2 Indian origin dried indigo leaf powder. The two dyeing methods used were the precipitation method and the fresh juice method, both at $10^{\circ}C$, $25^{\circ}C$, and $60^{\circ}C$. Color difference, K/S value, and colorfastness of dyed cotton fabrics were examined. Indian reduced indigo powder showed the highest K/S value, deep dyeing, and the best color fastness. Chinese reduced indigo powder resulted in a more greenish and bluish color. Powders of dried indigo leaves were easy to use but resulted in a pale color due to low dye uptake.
The principal object of this study was to assess the effects of garlic powder(2 % and 4 %) on the sponge cake made with medium and cake flour. After making sponge cakes with garlic powder, water activity, softness, color of crumb, and sensory test were tested. Water activity(Aw) of the sponge cakes with different quantity of garlic powder were increased during 7 days storage. These meant that garlic powder had absorption effect. The Max G and springiness of the sponge cakes with garlic powder were all lower than that of the control. With regard to the color of the sponge cakes, the L values were reduced, but the a and b values were increased with the increment of percent of garlic powder. The micrographs of the sponge cakes with garlic powder evidenced slightly lower porosity than the control. And, the results of sensory test showed that the increment of the addition of garlic powder had low scores. But we know the possibility to make the sponge cakes using garlic powder. And the sponge cakes with medium flour using 2% of garlic powder had better evaluation than others using garlic powder.
This study was prepared to optimize $\alpha$-azuki bean powder content by sensory evaluation method when manufacturing bread with added $\alpha$-azuki bean powder. These sensory characteristics were designed to investigate sensory evaluation about appearance, color, texture, taste and overall acceptability of small red bean bread by balanced incomplete block design. According to evaluated mean of adjusted treatments, appearance was represented high value in bread with added 3% and 6% $\alpha$-azuki bean powder than bread without $\alpha$-azuki bean powder. Bread without $\alpha$-azuki bean powder was revealed maximum sensory score value of color among whole treatments and vread with added 6% $\alpha$-azuki bean powder was revealed second highest sensory value. As $\alpha$-azuki bean powder content increased, sensory score of texture, taste and overall acceptability increased. and bread added 12% $\alpha$-azuki bean powder revealed maximum sensory score. On the results of this research about sensory characteristics for manufacturing bread with added $\alpha$-azuki bean powder, bread with added $\alpha$-azuki bean powder was considered optimum when12% $\alpha$-azuki bean powder was added wheat flour because of highest score of texture, taste and overall acceptability in spite of lower score of appearance and color.

This paper presents a novel makeup simulation method for powder application. We propose a color appearance model for powder coated skin that is simple but yet capable of producing realistic visual results. From the photos of several artificial skins before and after powder application, the translucency and thickness parameters are achieved by fitting the color model to the photos. Thickness patterns of powder application on actual human face skin is also extracted, and used in makeup simulations on photos of different human face to give more visually appealing results. From experiments, we found that the simulation results are quite realistic, and expect that the proposed makeup simulation can be used as a virtual coloring test in the cosmetic labs.
This study aims to provide practical information of both color and hands of cotton fabrics dyed with persimmon dye powder for natural dyeing fashion industries by investigating dyeing behavior and color gamut, by testing mechanical properties depending on color characteristics, and finally by evaluating dyeing fastness. As results, the persimmon dye powder obtained by extracting the fruits to final solid powder was found as containing tannin and it partially coated between and on fibers similarly to traditionally dyed one. The K/S values of non-mordanted fabric and two differently mordanted ones with Fe and Cu seemed to reach their equilibrium from 800, 800, and 600% (owf), respectively. Yellow-red was the only one hue shown while tones were various as pale (p), light grayish (ltg), soft (sf), dull (d), grayish (g), and dark grayish (dkg). In mechanical properties, the dyed fabrics with p and ltg tended to be less altered than undyed ones whereas d and d kg by higher bath concentrations could be applied to boxy silhouette owing to their increased stiffness and less stretchability. Although fastness to dry cleaning and stain was good, color change by washing and rubbing needed to be improved.
Color characteristics were investigated for white ginseng powder immediately and during storage following treatments of gamma ray or ethylene oxide (EO) for microbial decontamination. The variation in fatand water-soluble pigments of the sample was negligible immediately after both treatments, however an apparent increase was observed in the samples stored for four months at $25^{\circ}C$ and RH 90%, in the order of nontreated control, EO-fumigated, and 5 key-irradiated samples. Hunter's color a and b values of white ginseng powder increased slightly in proportion to irradiation doses, whereas EO fumigation caused a decrease in L value and an increase in a and b values of the sample, showing overall color difference (${\delta}^E$) of 1.8. Considering the higher ${\delta}^E$ in the higher RH conditions, airtight packaging and sterilization using like gamma ray were considered an effective means for maintaining high quality of color characteristics in stored white ginseng powder.
The purpose of this study was to investigate the quality characteristics of cookies containing Ligularia fischeri powder (0, 1, 2, 3, 4%) substituted for flour. This study measured the density, pH, spread ratio, volume, color values, hardness, and sensory properties of cookies. The pH of cookie dough significantly decreased in response to addition of Ligularia fischeri powder (LFP) at all levels. The spread factor of cookies also significantly increased with higher LFP content. In addition, Hunter's color L, a, and b values significantly decreased with increasing LFP content. According to hardness measurement, substitution of 1~4% LFP resulted in increased hardness compared to the control. In the sensory evaluation, sensory scores for color, flavor, and overall acceptability were highest in 2% Ligularia fischeri powder cookies. Thus, our results suggest that the optimum amount of Ligularia fischeri powder added to cookies was 2%. These results suggest that Ligularia fischeri powder can be applied to cookies to achieve high quality and functionality.

White bread with 1, 2, 3, 4 and $5\%$ Kimchi powder added and control samples were tested for moisture content, volume, height, color, free amino acid content, texture, and sensory characteristics. Moisture content was about $40.46\~41.35\%$ and increased according to the addition of Kimchi powder. Volume and height were increased with increasing Kimchi powder content For the crust and crumb color, lightness was decreased, but yellowness and redness were increased as Kimchi powder content increased For free amino acid content, glutamic acid, alanine, serine and leucine were detected in the white bread, and samples with higher content of kimchi powder showed higher amount of total free amino acid content From the sensory analysis, one with $3\%$ kimchi powder got the highest score for flavor, texture, color, moistness and overall acceptability.
This study was conducted to investigate the effective ratio of Sulgidduk to steaming chesnut powder. I measured the sensory and mechanical characteristics, moisture content and color values of Sulgidduk added by different amount 4 of types of steaming chestnut powder; 0% (Control-0 group), 1% (CP-1 group), 2% (CP-2 group), 3% (CP-3 group), 4% (CP-4 group). Moisture content of Sulgidduk with steaming chestnut powder ranged from 38.53% to 46.05%. The L-value and b-value of the color decreased with an increase in steaming chestnut powder; however, a-value of the color decreased with an increase in steaming chestnut powder. As a result of analysis the texture of Sulgidduk steaming chestnut powder, it's hardness, springiness was increased. According to the sensory evaluation, CP3 had the highest values in texture and overall acceptability. Based on the result, it's considered that the most desirable ratio is steaming chestnut powder CP3. The results of the study supported the benefits of steaming chestnut powder supplementation in Sulgidduk in the aspects of taste and functionality. The degree of further increase in Sulgidduk with steaming chestnut powder without causing an adverse quality effect, remain for future study.
