Studies on Extending the Shelf-life of Refrigerated Chicken 1. Effects of Potassium Sorbate and/or Ascorbic Acid Dip on Microbial and Sensory Quality of Refrigerated Chicken (냉장 닭고기의 저장성 연장에 관한 연구 1. Potassium Sorbate와 Ascorbic Acid 처리가 닭고기의 미생물 및 관능적 품질에 미치는 영향)

  • Effects of 7.5% potassium sorbate and/or 1% ascorbic acid dip on she]f-life of chicken parts stored at $4^{\circ}C$ was investigated. There was no remarkable difference in the microbial growth between 1% ascorbic acid dipped chicken parts and untreated chicken parts. Off-odor developed after 8 days storage and bacterial spoilage was occurred after 12 days storage. 7.5% potassium sorbate dip significantly retarded mesophilic and psychrotrophic counts compared with untreated, markedly reduced growth rate of Enterobacteriaceae. Fecal coliforms were not detected and bacterial spoilage was not occurred until 21 days storage. off-odor developed after 19 days storage and color was not significantly deteriorated until 21 days storage. Additional effect of 7.5% potassium sorbate and 1% ascorbic acid dip was found on retarded mesophilic, psychrotrophic and Enterobacteriaceae counts compared with 7.5% potassium sorbate dip alone. Bacterial spoilage was not occurred until 21 days storage. off-odor developed after 21 days storage and color was not significantly deteriorated until 21 dayss storage.

  • Potassium (K) is one of the essential nutrients for plants but is not a constituent of any plant compound. K is substances for activation of many enzymes and influences the process that the enzymes are involved in catalyzing. Although experimental results associated with the K effects with both benefits and no effects on turfgrass growth were reported, the limited research results of K effects on turfgrass among K sources are available in Korea. The objectives of the study was conducted to evaluate responses of Kentucky bluegrass (Poa pratensis L.) treated by fertilizer treatments with six K sources. There were six fertilizer treatments as K sources applied to Kentucky bluegrass which were potassium nitrate (13-0-44, PN), potassium chloride (0-0-60, PC), potassium sulfate (0-0-50, PS), polymer-coated potassium sulfate (0-0-45, PPS), potassium thiosulfate (0-0-25, PT), and potassium sulfate granulated with methylene urea (20-0-25, PSU). Potassium of $8g\;m^{-2}$ and N of $5g\;m^{-2}$ was applied 4 times giving a total 20 and $30g\;m^{-2}$, respectively. Although significant differences were found for turfgrass color, quality, chlorophyll index, and clipping dry weight, no consistent results among K sources were found during the one year study. Overall, K treatments didn't affect turfgrass growth in this study.

A Study on the Intkae-Balance of Sodium and Potassium of College Men of Korea (한국 남자 대학생의 Sodium 과 Potassium 평형에 관한 연구)

  • This study measured the daily intake and excretion of sodium and potassium of eight 20-26years old college men during four weeks by means of analyzing their food intake, urine and feces, keeping their normal living pattern and body weight. This study also compared the actual measurement value of sodium and potassium intake by atomic absorption spectrophotometer with the conversion value of them by food table. The results are as follows ; Daily mean sodium intakes conversed ($2.36{\pm}0.03g/day$) was about 63% lower than those intakes meansured($6.36{\pm}0.13g/day$). Daily mean potassium intakes conversed($1.71{\pm}0.03g/day$) was not different of sodium and potassium were $5.49{\pm}0.19g/day\;and\;1.33{\pm}0.08g/day$, respectively. Daily mean fecal excretions of sodium and potassium were $0.24{\pm}0.02g/day\;and\;0.45{\pm}0.03g/day$, respectively. Mean prooportion of Na/K in urine was $4.3{\pm}0.1$.

Synthesis of potassium titanate by wet process (습식법에 의한 티탄산칼륨 섬유의 합성)

  • The potassium titanate fibres were synthesized with wet process by the addition of KOH solution to the TiOz gel produced by the reaction between element titanium particles and $H_2O_2$ solution at $50^{\circ}C$. And then they were characterized by XRD, SEM and FT - IR. It was found that potassium titanate fibres were mainly affected by KOH/TiOz mole ratio, synthesis time and aging time in this wet process employed. For $KOH/TiO_2 = 1/1$, synthesizing time 24 hrs, aging time 24 hrs and calcination temperature of TEX>$900^{\circ}C$ for 1 hr, their products were mainly found to be potassium tetratitanate which had thin and long fibres in the range of 10 ~ 20 mm. As the synthesizing time increased and the amount of KOH decreased, potassium tetratitanate was converted into potassium hexatitanate. Also, the length of their fibres became short.

  • In order to study the effects of dietary potassium and lysine levels on growth performance and nutrient utilizability in broiler chicks, an experiment was conducted in $3{\times}3$ factorial arrangement with three levels of dietary potassium (0.3, 0.6 and 1.2%) and three supplemented levels of dietary lysine (0.6, 1.2 and 2.4%). A total number of 360 male broiler chicks was used for 6 weeks. Birds fed optimum lysine (1.2%) diets had the highest body weight gain and feed efficiency, followed by those fed low lysine (0.6%) and high lysine (2.4%) diets (p < 0.01). But levels of dietary potassium had no effects on the body weight gain and feed efficiency. Interaction between potassium and lysine was not shown (p > 0.05). High level of lysine resulted in higher mortality than that of optimum or low level of lysine (p < 0.01). The levels of supplemented lysine affected utilizability of ether extract, total carbohydrate, and nitrogen retention (p < 0.01). But supplemented potassium levels did not affect nutrient utilizability and interaction between potassium and lysine was not shown (p > 0.05).

The Effect of Ginseng on the Calcium Uptake by Sarcoplasmic Reticulum Fragments Isolated from Potassium Deficient Rat Skeletal Muscles (인삼이 칼슘결핍 흰쥐골격근의 소포체에 의한 칼슘 - Uptake에 미치는 영향)

  • The effect of orally administered ginseng ethanol extract on potassium deficient and normal rat skeletal muscles was investigated in terms of Ca uptake by sarcoplastic reticulum fragments. The ginseng ethanol extract (100mg/kg/day) was administered orally to Sprague-Dawley rats for 21 days and their changes of body weights, $K^+$ content in skeletal muscles, and calcium uptake capacity of sarcoplamic reticulurn of each groups were measured. The growth rate of rats fed with the potassium deficient diet was significantly decreased compared to that of normal rats. Ginseng components did not show any effect on the decreased growth rate of the postassium deficient rats. Potassium content in skeletal muscle from potassium deficient rats was significantly reduced compared to that of normal rats. Ginseng components showed the tendency to prevent the reduction in potassium content of potassium deficient rats, but differences were not statistically significant. Calcium uptake of SR prepared from skeletal muscles of potassium deficient rats was increased significantly compared to that of normal rats. Ginseng components prevented such increase of calcium uptake by 30%. In summary, it can be concluded that ginseng may prevent the increase in Cauptake of SR obtained from potassium deficient rats.

A Comparative Study of Acidemia-induced Hyperkalemia and Hyperkalemia-induced Acidemia (산혈증 유발 고칼륨혈증과 고칼륨혈증 유발 산혈증의 비교 연구)

  • A comparative study of acid-base balance has been made between acidemia-induced hyperkalemia and hyperkalemia-induced acidemia. A group of rabbits was infused 0.1 N hydrochloric acid solution and metabolic acidosis was induced. Another group was administered 20 mM potassium chloride solution and hyperkalemia was induced. The third group was infused 0.1 N hydrochloric acid and 20 mM potassium chloride solution, simultaneously. Acid-base data and plasma potassium ion concentration were monitored every thirty minutes in these three groups of rabbits. Following results were obtained: 1 ) Along with the infusion of hydrochloric acid, acute metabolic acidosis was induced in the rabbits. Plasma bicarbonate ion concentration decreased primarily in this group. As a respiratory compensation, there was a tendency of reduction of arterial $Pco_{2}$. The alteration of data became larger along with the amount of administration and the time elapsed. However, hyperkalemia was not so severe compared with the second group. 2) In potassium chloride infused group, plasma potassium ion concentration increased along with the time elapsed and the amount of infusion. And the alteration of acid-base data was parrallel to the level of potassium ion concentration, above all depression of pH was prominent. 3) Above data suggest that when acute metabolic acidosis was induced, exchange of intracellular potassium ion with extracellular hydrogen ion seems significant for the regulation of extracellular acid-base balance. And when hyperkalemia was induced with the infusion of potassium chloride solution, the exchange of intracellular hydrogen ion with extracellular potassium ion also seems significant for the regulation of extracellular potassium balance. 4) In the group of rabbits infused hydrochloric acid and potassium simultaneously, disturbances of acid-base balance and potassium balance were much more severe than two other groups. In these mixed disturbances, the process of compensatory mechanism might be inhibited and one disturbance might aggregate each other. 5) Through above data it has been postulated that in acid-base disturbance potassium balance can be sacrificed as a compensatory mechanism, and vice versa in disturbance of potassium balance. And our data also suggest that hydrogen ion and potassium ion are compensatory pair, one another.

Effects of Potassium Sorbate on the Growth of Yogurt Starter and Contaminant Yeast (Potassium Sorbate가 요구르트 Starter와 오염 Yeast의 성장에 미치는 영향)

  • This study was carried out to investigate the effect of potassium sorbate on the growth of yogurt starter and contaminant yeast. Yogurt starter was isolated using 9 company of market yogurt and 10 strains of contaminant yeast was isolated in swollen yogurt after incubated for 7 days at $25^{\circ}C.$ The growth of isolated starter was inhibited by 0.3% of potassium sorbate except starter-H. Most isolated yeast was inhibited by the 0.1% of potassium sorbate. The growth of yeast-9 was the most inhibited among isolated yeast. The growth of selected starter-H was similiar to that of control in MRS broth containing 0.3% of potassium sorbate. 0.3% of potassium sorbate did not affect the growth of selected starter-H incubated with selected yeast-9 in skimmilk at $37^{\circ}C$ for 48hr, whereas, the growth of yeast-9 did not occur during incubation. The viable cell change of starter-H in yogurt contaminated with selected yeast-9 was not observed at $4{\pm}1{\circ}C$ for 7 days and the contaminant inhibited in 0.3% potassium sorbate containing yogurt during storage at $25^{\circ}C.$

A Study on the Food Intake Sodium and Potassium Intakes and Urinary Excretion of Preschool Children in Pusan (부산지역 학령전 아동의 식품섭취와 나트륨, 칼륨의 섭취 및 소변중 배설실태에 관한 연구)

  • o assess the food intake and the sodium and potassium intakes and urinary excretion of preschool children in Pusan and to evaluate the relationship among variables dietary behaviors food and nutrient intake and 24hr urinary sodium and potassium excretion were measured with 97 subjects. The mean sodium and potassium intakes were 1890. 1mg(82,2meq) and 1479.7mg(37.8meq) respectively. The mean potassium intake(p<0.05) and density(p<0.01) were significantly low at the group who had food intake pattern absen of fruit and daily groups. The mean urinary sodium and potassium excretion were 735.3mg(32.0meq) and 418.7mg(10.7meq) respectively. The mean sodium intake(p<0.01) and urinary excretion were 735.3mg(32.0meq) and 418.7mg(10.7meq) respectively. The mean sodium intake(p<0.01) and urinary excretion (p<0.001, p<0.001) energy intake(p<0.01) sodium intake and density (p<0.001, p<0.05) the food number and intake frequency of vegetable group consumed (p<0.01, p<0.01) dietary frequency score(p<0.05) and negative correlations with the food number and frequency of dairy group consumed (p<0.05 p<0.05) The urinary potassium excretion showed positive correlations with height and weight(p<0.05, p<0.01) urine volume and urinary creatinie excretion(p<0.01 p<0.001) potassium intake(p<0.05) food number and intake frequency of dairy group consumed (p<0.05, p<0.001). Based on the results urinary sodium excretion was related to age sodium intake and food intake of vegetable and dairy group and urinary potassium excretion was related to potassium intake and food intake of dairy group. So nutritional education is needed in order to decrease sodium intake especially from food intake of vegetable group when preschool children have less food intake of diary group,.

  • These studies were carried out to investigate the effects of potassium salts on the changes of chemical properties in submerged soil. Rice plants were cultured in submerged soil using potassium salts. Obtained results were as follows. In the submerged soil cultured with rice plants the value of pH was higher in the potassium chloride plot than in the potassium sulfate plot. The leaching of cations such as calcium, magnesium, potassium and ammonium were higher in the potassium chloride plot than in the potassium sulfate plot. On the other hand, the leaching of phosphate ion was slightly higher in the potassium sulfate plot than in the potassium chloride plot. The leaching of iron was higher in the planted plot than in the non-planted plot, but that of silica was higher in the non-planted plot than in the planted plot. However, the leaching of iron and silica was not affected by potassium salts.
