식육 및 그 가공품의 중금속 모니터링 (Monitoring Heavy Metals in Meat and Meat Products)

  • 본 연구에서는 식육의 중금속 기준규격 설정을 위하여 다소비 식품인 소, 돼지, 닭, 오리, 햄 및 소시지에 대하여 중금속 함량을 조사하였다. 국내 유통 중 식육 및 식육 가공품 총 466건을 2008년 5월부터 11월까지 구입하고 납, 카드뮴, 비소 및 수은의 함량을 분석하였다. 시료의 분해를 위해 관련 전처리 방법을 비교하여 검증된 중금속 분석법을 찾고자 하였으며, 이를 근거로 소, 돼지, 닭, 오리, 햄 및 소시지 6종류의 시료에 대하여 납, 카드뮴, 비소 및 수은을 모니터링하고 안전성 평가를 위해, 수집된 자료와 식이섭취량으로 JECFA의 주간잠정섭취허용량와 비교 분석하고자 하였다. 전처리법으로 비교한 습식 분해법과 마이크로웨이브법은 회수율이 모두 80% 이상이며 재현성(RSD)은 10% 미만으로 나타났으나 전처리 시간과 조작의 편리성에서 마이크로웨이브법이 나은 것으로 판단되었다. 따라서 납, 카드뮴, 비소의 경우 산 혼합액을 사용한 마이크로웨이브법으로 시료를 전처리하여 ICP-MS로 분석하였고, 수은은 수은분석기를 사용하여 직접 분석하였다. 전반적으로 낮게 검출된 원소는 카드뮴과 수은이었으며, 납과 비소는 상대적으로 높게 나타났다. 납의 경우 평균함량이 식육은 0.006-0.010 mg/kg이었고, 식육가공품은 0.005-0.009 mg/kg이었다. 카드뮴의 경우 평균함량이 식육은 0.000-0.001 mg/kg이었고, 식육가공품은 0.001-0.002 mg/kg이었다. 비소의 경우 평균함량이 식육은 0.004-0.021 mg/kg이었고, 식육가공품은 0.014-0.018 mg/kg이었다. 그리고 수은 함량은 식육에서 0.710-0.902 ${\mu}g/kg$이었고, 식육가공품은 1.052-1.141 ${\mu}g/kg$이었다. 안전성 평가를 위해 본 연구에서 측정된 모니터링 자료를 이용하여 JECFA(Joint FAO/WHO Expert Committee on Food Additives)의 주간잠정섭취허용량(Provisional Tolerable Weekly Intake, PTWI)와 비교하여 노출량을 평가한 결과, 본 사업에서 검출된 중금속 함량은 비교적 안전한 수준으로 확인할 수 있었다.

Enrichment of Pork with Omega-3 Fatty Acids by Tuna Oil Supplements: Effects on Performance as well as Sensory, Nutritional and Processing Properties of Pork

  • The effects of tuna oil supplementation (0, 1, 2 and 3%) to pig diets on growth and carcass yield as well as meat quality were determined in 40 crossbred pigs. Animals were fattened from 30 to 90 kg of live-weight. Twenty-four hours after slaughter, following various early- and late-post mortem measurements, loin, backfat and belly were prepared from the carcasses. Bacon was produced from the belly part by curing and smoking. Neither performance (feed intake, daily gains, feed conversion efficiency) nor carcass quality (slaughter weight, dressing percentage, lean percentage, nutrient composition of the loin) were significantly affected by tuna oil supplementation. Tuna oil also had no clear effects on early- and late-post mortem meat quality traits, water-holding capacity and tenderness of the M. longissiumus dorsi (LD). Colour traits of LD and backfat, and backfat firmness were not significantly affected by tuna oil, either. However, there was a certain trend to elevated fat contents of LD (and bacon), but not of backfat, with increasing levels of tuna oil in feed. Pigs receiving elevated proportions of tuna oil expressed lower VLDL cholesterol and triglyceride concentrations in blood plasma, whereas the cholesterol content of LD, backfat and bacon did not reflect this trend. Effects of tuna oil on fatty acids in LD, backfat and bacon were often small in extent, except those concerning the long-chain polyunsaturated fatty acids. With 3% tuna oil in the diet, the contents of the particularly desired omega-3 fatty acids, C20:5 and C22:6, were 0.1 and 0.2 g/kg in LD. The corresponding values for backfat and bacon were 2.6 and 12.6 g/kg, and 1.3 and 9.2 g/kg, respectively. Tuna oil supplementation was associated with significant adverse effects on flavour and overall acceptance of bacon (not significant in LD although numerically the same trend was noted), but these effects on sensory ratings were limited in extent. Also shelf life of the products, determined as TBA value after different storage periods at $4^{\circ}C$ in LD, backfat and bacon, was significantly reduced. Overall, the present study suggests that omega-3 fatty acids may be enriched in pork by feeding tuna oil with few undesired side-effects, particularly those on sensory perception and shelf life, suggesting immediate consumption of the products is advisable. Most economically important traits (performance, slaughter and physical meat quality) remained unaffected.

감귤피를 급여한 교잡종 돼지 고기가 흰쥐의 지질대사, 단백질 농도 및 효소 활성에 미치는 영향 (Effect of Diet with Meat for Crossbred Pig Fed with Tangerine Peel on lipid Metabolism, Protein Level and Enzyme Activities in Rats)

  • 감귤피를 급여하지 않은 교잡종 돼지고기(대조구, $T_0$), 육성기와 비육기에 각각 3% 및 5% 급여한 돼지고기($T_1$), 그리고 6% 및 10%를 급여한 돼지고기($T_2$)등 3 종류를 각각 단백질로 환산하여 12% 되도록 흰쥐 식이에 첨가하였다. 이식이를 생후 17주령의 흰쥐에 4주간 급여하여 영양대사에 미치는 영향을 조사하였다. 대조구($T_0$)와 감귤피 급여구($T_1$$T_2$)의 사이에 흰쥐의 증체량, 식이섭취량, 식이효율, 장기(간, 신장, 비장, 부고환 지방)무게는 유의적 차이를 보이지 않았다. 혈청의 지질(총지질, 인지질, 중성지질, 총 콜레스테롤, HDL-콜레스테롤, LDL-콜레스테롤), 동맥경화지수, 혈당, 혈색소 함량 및 효소(${\gamma}-GTP$, ALT, AST, ALP) 활성은 모두 유의적 차이를 보이지 않았다. 흰쥐의 간에서 얻은 총지질 함량은 유의적 차이를 보이지 않았으나, 중성지질과 콜레스테롤 함량이 대조구보다 감귤피 급여구가 낮은 값을 보여(p<0.05), 감귤피 첨가 사료로 사육한 교잡종 돼지고기가 흰쥐 간의 중성 지질 및 콜레스테롤을 감소시키는 효과가 있는 것으로 나타났다.

고에너지 수준의 사료급여가 돈육 품질에 미치는 영향 (Effects of High Energy Density Diet on Pork Quality)

  • 본 시험은 고에너지 수준의 사료를 급여한 돼지의 사양성적, 돈육의 도체 특성, 일반성분, 이화학적 특성 및 지방산 조성에 미치는 영향을 조사하기 위해 실시하였다. 80$\pm$3 kg의 삼원교잡종 120두를 공시하여 비육돈 사료 변화의 영양소 수준에 따라 저에너지 DE 3,290 kcal/kg, CP 14.5%, Lysine 0.70%, Ca 0.78로 배합한 사료를 38일간 급여하였고, 고에너지 DE 3,350 kcal/kg, CP 15.0%, Lysine 0.10%, Ca 0.78%로 배합한 사료를 27일간 급여하였다. 저에너지와 고에너지 사료를 급여한 돼지의 종료체중이 101 kg내외에 도달했을 때 도축하여 시험에 공시하였다. 고에너지 사료를 급여한 돼지가 일당 증체량이 높았고, 사료섭취량과 사료요구율은 낮았다(p<0.05). 도체특성과 일반성분은 차이를 보이지 않았다 이화학적 특성 중 고에너지 사료를 급여한 돈육의 가열 감량과 황색도는 저에너지 사료를 급여한 돈육에 비해 현저히 높게 나타내었다(p<0.05). 지방산 조성에서는 저에너지와 고예너지 사료를 급여한 돈육에서 차이를 보이지 않았다. 이상에서 고에너지 사료를 27일간 급여한 돼지는 저에너지 사료를 38일간 급여한 돼지에 비해 성장률이 향상되었고, 돼지의 도체 특성, 물리적 특성 및 지방산 조성에는 미치지 않았지만 돈육의 가열 감량과 황색도가 높았다.

영양소 섭취의 주요급원식품과 주요변이식품들을 이용한 간소화된 반정량 빈도 조사 도구의 개발 및 평가 (The Development and Evaluation of a Simple Semi-Quantitative Food Frequency Questionnaire Using the Contribution of Specific Foods to Absolute Intake and Between-Person Variation of Nutrient Consumption)

  • This study was conducted to develop a simple flood frequency questionnaire (FFQ) based on the results of contributions of specific floods to absolute intake and between-person variance in nutrients using semi-quantitative FFQ with 93 flood items. The subjects were 554 healthy adults for development of a simple FFQ, and 37 students for a validation test of a developed simple FFQ. The contribution of specific floods to 80% absolute nutrient intake was measured by assessing their percentage in total consumption of a nutrient. To assess the contributions of floods to the between-person variance in the intake of each specific nutrient, stepwise multiple regressions were performed. The number of floods necessary to account for the respective 80% of absolute intake was 11-36, depending on the nutrient, while flower floods (5-16 floods) were required for the corresponding percentage of between-person variation for all nutrients. Important floods for between-person variance include Tangsuyuk (pork) and snacks for energy and fat, fish for protein and polyunsaturated fatty acids (PUFA) and snacks for carbohydrates. Spearman correlation coefficients between 93-itemed FFQ and 63-itemed FFQ ranged from 0.91 for vitamin A to 0.99 for fat in the population data used in developing a simple FFQ. Also, the correlation coefficients between the two FFQs were 0.82-7.92 in the population for the validation test. This study suggests that useful information on dietary intake could be obtained using a simple semi-quantitative FFQ in a large-scale dietary survey in Korea.

Factors Related to Dietary Fiber Intake Among Sixth Grade Elementary School Children in Daejon City

  • This study was conducted to investigate variables related to dietary fiber intake among sixth grade children in an elementary school in Daejon city. One hundred and forty-seven children completed a questionnaire for determining their socioeconomic background and their food habits. Anthropometric measurements were taken, and a 24-hour diet recall method was used to collect three-day food intakes. The socioeconomic status of the children's families belonged to the upper middle class; 53.0% of their fathers and 25.8% of their mothers had completed college or higher degrees. 27.9% of the mothers had jobs, including part-time jobs. Approximately 30% of the children skipped breakfast, 66.4% of the children preferred animal foods to plant foods, and 52.4% of the children preferred green vegetables to yellow or pale vegetables. Grilled meat dishes, such as Grilled beef rib with seasoning, Bulgogi, grilled pork belly and beef steaks, were the most popular types of food eaten outside home by the children. Daily dietary fiber intake was 14.5 g in boys and 14.5 g in girls, and these intakes are low compared to the standard guidelines. The average intakes of energy and protein of the children were 84.5% and 114.0% of the Korean Recommended Dietary Allowances (RDAs), respectively. Besides energy, riboflavin, iron and calcium intakes were below the RDAs, and especially calcium intake was only 50% of the RDAs. On the other hand, thiamin, niacin, ascorbic acid, protein and phosphorus intakes exceeded the Korean RDAs. Family income or the children's body mass index (BMI) was not directly related to dietary fiber intakes. However, higher dietary fiber intakes tended to be related to higher intakes of green vegetables and fruits. Children with higher dietary fiber intake tended to prefer plant foods to animal foods. Energy and most nutrients, except heme iron and retinol, showed positive relationships with dietary fiber intake. Especially potassium and plant origin protein and calcium were highly correlated with dietary fiber intakes(r>0.6). From these results, it is concluded that dietary fiber intakes of these sixth grade elementary school children were less than the standard reference and it is anticipated to decrease further in the future with increased incomes. Therefore, increased intakes of dietary fiber by elementary school children should be promoted through nutrition education, together with the development of cooking methods and recipes utilizing green vegetables and fruits.

서울지역 여고생들의 식이 철분밀도에 따른 영양섭취상태 및 철분 급원식품에 관한 연구 (A Study on Nutrient Intake Status and Food Sources of Iron by Dietary Iron Density of High School Girls in Seoul)

  • This study was conducted to examine nutrient intake status and iron food sources by dietary iron density of high school girls in Seoul. The subjects of 226 girls were divided into High group (${\geq}$ 6 mg/1,000 kcal, N=115) and Low group (< 6 mg/1,000 kcal, N=111) by dietary iron density. The nutrient intake data obtained by 24-hour recall method were analyzed by Can Pro 3.0 software. Mean age of all subjects was 16.4 years old, heights and weights of High group and Low group were 164.5 cm, 53.4 kg and 161.7 cm, 51.7 kg, respectively. The body mass index (BMI) of High group and Low group was 20.5 kg/m$^2$ and 19.8 kg/m$^2$, respectively. Most nutrient intakes except energy and lipid intakes of High group were higher than those of Low group. High group showed significantly higher intakes of total iron, vegetable iron and animal iron than Low group. Ca and folate intakes of High group were under 75% of the recommended intake (RI) and Ca, iron, folate and vitamin C intakes of Low group were under 65% of RI. The percentage of subjects who consumed iron less than estimated average requirements (EAR) were 40.0% in High group and 77.5% in Low group. Total food intakes of High group showed higher than that of Low group. Total animal food intakes were significantly higher and total vegetable food intakes were significantly lower in Low group than those of High group. Iron intake from meats, fishes, shell fishes and seasonings were significantly higher in High group than Low group. Iron intake from milk and dairy products were significantly lower in High group than Low group. Major food sources of iron were rice, bean curd, pork, and egg in order among both groups.

Effects of Restricted Feeding on Performance, Carcass Quality and Hormone Profiles in Finishing Barrows

  • To investigate the effects of feeding restricted on growth, carcass characteristics and plasma profiles in an attempt for optimum responses, a total of 108 cross-bred finishing barrows [(Landrace${\times}$Yorkshire)${\times}$Duroc]weighing an average of $46.88{\pm}0.52kg$ were assigned in a randomized complete block (RCB) design to one of four treatments with three replicates and nine pigs per pen. Feeding regimens were, 1) ad libitum from 50 kg to market weight (Ad 3/3), 2) restricted feeding from 90 kg to market weight (Ad 2/3), 3) restricted feeding from 70 kg to market weight (Ad 1/3), and 4) restricted feeding from 50 kg to market weight (Ad 0/3). During the experimental period, average daily feed intake (ADFI) was decreased from 2.53 kg (AD 3/3) to 2.09 kg (AD 0/3) with increasing restricted feeding duration of (p<0.05). Average daily gain (ADG) of AD 3/3 (0.79 kg) was significantly higher (p<0.05) than those of AD 1/3 (0.74 kg) or AD 0/3 (0.72 kg). Feed efficiency was not influenced by restriction regimens. Blood IGF-I concentrations were increased from 74.14 to 134.25 (167.36-115.66) ng/ml as body weight increased. Blood leptin concentrations were affected by feed intake level and coincided with blood IGF-I concentrations. Most of carcass characteristics were not significantly affected by restricted feeding, however cooking losses in AD 1/3 and Ad 0/3 treatment diet were higher than those in Ad 3/3 and Ad 2/3. In addition, there was a trend that backfat thickness was lowered in proportional to decreasing feed intake (p>0.05). In conclusion, restricted feeding improved feed efficiency after 50 kg body weight without deteriorating the pork quality of barrows.

칼슘강화 메뉴 첨가에 의한 학교급식 식단 조정이 여고생의 영양소 섭취 개선에 미치는 효과 (Effect of School Lunch Menu Intervention through Calcium Enriched Menus on Nutrient Intakes of High School Girls)

  • This study was conducted to improve the nutritional status of high school girls via lunch menu intervention. Surveys were carried out twice to evaluate basal status and status after lunch menu intervention. In the first survey nutrient intakes of 24-hour and school lunch were each estimated by 24-hour recall dietary survey and self-recording, respectively. Calcium intake was the lowest among nutrients, and stir-frying was the most preferred cooking method. Five dishes of school lunch menus which were included in the first survey were replaced with recipes containing foods with higher calcium level; anchovy stir-fried with red pepper paste, anchovy stir-fried with almond, pork stir-fried with shredded kelp, crab meat soup, and tteokbokki with cheese. In the second survey calcium intake from school lunch was significantly (p < 0.001) increased from 45.5% to 50.2% of one thirds of recommended intake (RI) after calcium enriched lunch menu intervention. Intakes of vitamin A and E were also significantly increased, whereas those of energy, thiamin, and vitamin C were decreased. Index of nutritional quality values of nutrients of 24-hour intakes (except thiamin, vitamin B6, vitamin C) is increased by intervention; however, those of calcium, folic acid, iron are still very low. Even though this study shows a possibility of improving nutrient intakes of students through school lunch menu intervention, lunch intervention by itself is not enough action to improve nutritional status of micronutrient for adolescents.

도시지역(都市地域)(대전(大田))일부 국민학교(國民學校) 아동(兒童)의 도시락 실태조사연구(實態調査硏究) (Survey Study on the Packed-lunch Boxes for Elementary School Children in Daejeon City)

  • The present study is concerned with nutritional status and palatability of the packed-lunch in elementary school children in Daejeon city. Rice and side dishes in the lunch box were weighed and the contained nutrients were analyzed by the Food Composition Table. The result of survey is as follows; 1) The means of nutritional values of 523 lunch boxes were calorie 562.48 Cal. percentage of the recommended dietary allowances.(79.11%), protein 19.16gr. (88.43%), animal protein 6.03gr. (83.50%), calcium 110.75mg (48.15%), iron 2.20mg. (56.15%), Vitamin A 328.16 I.U.. (49.22%), Vitamin $B_1$ 0.22mg. (59.45%), Vitamin $B_2$ 0.14mg (32.56%), Niacin 3.20mg. (68.08%), Vitamin C 9.79mg. (73.44%). All the nutrients are under the recommended dietary allowances. 2) The correlation between the boys and girls in the intake of protein, calcium, iron, Vitamin A, Vitamin $B_1$, Niacin index revealed statistical significancy at the level of P<0.01. 3) According to the intake of calorie, the ratio of carbohydrates, protein and fat is 78 : 14 : 8, which is excessive meal of carbohydrate. 4) Among the total intake of the protein consists of 30.20% for the boys and 32.90% for the girls. 5) The most favorite food for boys and girls from the packed-lunch is kimchi, egg, ham, sausage, cuttle-fish, laver and beef, and pork and pickles are most undesirable items. 6) The most favorite snack is bread, cake, ice cream, chocolate, fruits and milk. 7) Both boys and girls like Kimchi, fried and saute foods but dislike Namul (seasoned green vegetables) the most. 8. The side dishes of the packed·lunch lack in variety of cooking method.
