IKUTON" 발효(醱酵) 고구마 전분박(澱粉粕)의 양돈사료(養豚飼料) 대체(代替)에 관(關)한 연구(硏究) (Studies on "IKUTON" Fermented Sweet Potato Starch Pulp for Growing-Finnishing Swine Ration)

  • IKUTON 발효(醱酵) 고구마 전분박(澱粉粕)의 농후사료대축수준(濃厚飼料代蓄水準) 調査하기 위하여 Large Yorkshire, Landrace, Duroc Jersey 삼품종(三品種) 교잡종(交雜種) 25두(頭)를 공시(供試)하여 농후사료(濃厚飼料)를 급여(給與)한 대조구(對照區)와 IKUTON 발효(醱酵) 고구마 전분박(澱粉粕) 10%, 20%, 30% 및 40%를 대치한 5개처리구(個處理區)를 완전임의배치(完全任意配置)하여 시험(試驗)한 결과(結果)를 요약(要約)하면 다음과 같다. 사료섭취량(飼料攝取量)은 40% 구(區)를 제외(除外)한 기타(其他)의 각처리구(各處理區)에서는 대조구(對照區)에 비(比)하여 유의적(有意的) (P<0.05)인 차이(差異)를 인정(認定)할 수 없었으며 40% 이상(以上)의 대체수준(代替水準)에서 사료섭취량(飼料攝取量)이 감소(減少)되고 있었다. 사료효율(飼料效率)은 20% 구(區); 3.43, 30% 구(區); 3.80, 10% 구(區) 3.97, 40% 구(區); 4.20, 0% 구(區0; 4.53의 순(順)으로 대조구(對照區)에 비(比)하여 높은 사료효율(飼料效率)을 나타내고 있었다. 증체량과 80kg 도달주수(到達週數)는 10% 구(區); 12주(週), 0%구(區); 13주(週), 20% 및 30%구(區)가 14주(週)였고 40%구(區)는 15주(週)까지도 80kg에 도달(到達)치 못하고 있었으며 대조구(對照區)에 비(比)하여 64%의 증체밖에 되지 않었다. 시험사료(試驗飼料)의 소화율(消化率)은 75.2~87.5%였으며 급수율(給水率)은 사료섭취(飼料攝取) 1kg당(當) $1.95-2.01{\ell}$로 되고 있어 사료급여회수(飼料給與回數)는 소화율(消化率)과 급수율(給水率)에 아무런 영향을 주지 않었다.

Enrichment of Pork with Omega-3 Fatty Acids by Tuna Oil Supplements: Effects on Performance as well as Sensory, Nutritional and Processing Properties of Pork

  • The effects of tuna oil supplementation (0, 1, 2 and 3%) to pig diets on growth and carcass yield as well as meat quality were determined in 40 crossbred pigs. Animals were fattened from 30 to 90 kg of live-weight. Twenty-four hours after slaughter, following various early- and late-post mortem measurements, loin, backfat and belly were prepared from the carcasses. Bacon was produced from the belly part by curing and smoking. Neither performance (feed intake, daily gains, feed conversion efficiency) nor carcass quality (slaughter weight, dressing percentage, lean percentage, nutrient composition of the loin) were significantly affected by tuna oil supplementation. Tuna oil also had no clear effects on early- and late-post mortem meat quality traits, water-holding capacity and tenderness of the M. longissiumus dorsi (LD). Colour traits of LD and backfat, and backfat firmness were not significantly affected by tuna oil, either. However, there was a certain trend to elevated fat contents of LD (and bacon), but not of backfat, with increasing levels of tuna oil in feed. Pigs receiving elevated proportions of tuna oil expressed lower VLDL cholesterol and triglyceride concentrations in blood plasma, whereas the cholesterol content of LD, backfat and bacon did not reflect this trend. Effects of tuna oil on fatty acids in LD, backfat and bacon were often small in extent, except those concerning the long-chain polyunsaturated fatty acids. With 3% tuna oil in the diet, the contents of the particularly desired omega-3 fatty acids, C20:5 and C22:6, were 0.1 and 0.2 g/kg in LD. The corresponding values for backfat and bacon were 2.6 and 12.6 g/kg, and 1.3 and 9.2 g/kg, respectively. Tuna oil supplementation was associated with significant adverse effects on flavour and overall acceptance of bacon (not significant in LD although numerically the same trend was noted), but these effects on sensory ratings were limited in extent. Also shelf life of the products, determined as TBA value after different storage periods at $4^{\circ}C$ in LD, backfat and bacon, was significantly reduced. Overall, the present study suggests that omega-3 fatty acids may be enriched in pork by feeding tuna oil with few undesired side-effects, particularly those on sensory perception and shelf life, suggesting immediate consumption of the products is advisable. Most economically important traits (performance, slaughter and physical meat quality) remained unaffected.

Self-administration of an Analgesic Does Not Alleviate Pain in Beak Trimmed Chickens

  • Beak trimming in laying hens is a routine practice in which about 1/3-1/2 of the upper and lower beak is removed with the aim of reducing cannibalism. This experiment aimed to identify if this procedure causes pain by examining self-administration of an analgesic (carprofen) and pecking behaviour in 80 laying pullets beak-trimmed by two different methods at one day of age using hot-blade cauterisation or infra-red cauterisation. We also tested a control treatment, pullets with intact beaks, and a positive control treatment of pullets beak trimmed at 10 weeks of age which were expected to experience some pain due to recent severing of the underlying nerves in the beak. At 11 weeks of age birds trimmed at 10 weeks of age pecked more (p<0.001) gently ($0.6{\pm}0.06N$) at a disc attached to a force-displacement transducer than birds trimmed at 1 day of age with an infra-red machine ($0.9{\pm}0.1N$) or a hot blade ($1.1{\pm}0.07N$) and intact birds ($1.2{\pm}0.1N$). Maximum force of pecks recorded was also lower (p<0.001) in birds trimmed at 10 weeks of age than birds trimmed at 1 day of age with an infra-red method or a hot blade and intact birds. However, the pecking force in birds trimmed at 10 weeks of age was not increased by providing them with analgesic-treated feed, though birds that ate more carprofen had a higher maximum force of peck (p = 0.03). Pecking force in birds beak-trimmed at 1 day of age was the same as the pecking force of intact birds, and was unaffected by feeding pullets carprofen. A method of self-administration of an analgesic had previously revealed that chickens in neuromuscular pain arising from lameness consumed more of a feed containing carprofen than healthy chickens. However, we found no evidence that beak-trimmed pullets consumed more carprofen-treated feed than pullets with an intact beak. It should be noted that the three beak trimming methods resulted in an average 34% reduction in beak length, considered a light trim, and is perhaps not representative of commercial birds where greater portions of the beak are removed. We conclude that although carprofen has been reported to have an analgesic effect on neuromuscular pain in chickens, it appears to have no analgesic effect on potential neuropathic pain arising from the nerves severed by a light beak trim.

Identification of Muscle Proteins Related to Objective Meat Quality in Korean Native Black Pig

  • This study examined the effects of pre-slaughter fasting, chasing stress and chiller ageing on objective meat quality, and their relations to the proteome profile of longissimus muscle using 20 male Korean native black pigs. Treatments were composed of two levels of pre-slaughter feed withdrawal, two levels of pre-slaughter stress and four chiller ageing times. A 15 min chasing stress immediately prior to slaughter significantly (p<0.05) decreased detectable levels of $\mu$-calpain activity during rigor development and chiller ageing, but did not have any direct effect on objective meat quality. On the other hand, pigs fed until the morning of slaughter resulted in significantly (p<0.05) higher hunter L* value and cooking loss than those which received an 18 h feed withdrawal prior to slaughter. Cooking loss and hunter L* value were constant during 7 d of chiller ageing, followed by significant increases at 14 d. The fed animals showed a significantly (p<0.05) higher hunter a* value at both 3 and 7 d, while the other group maintained a stable redness for 7 d. WB-shear force was not affected by the pre-slaughter treatments, but had significant (p<0.05) linear reduction from 1 to 7 d. A gelbased proteome analysis was performed on selected animals for low and high hunter L* values at 1 d. Ten and five spots had greater than two-fold spot densities for the low and high hunter L* groups, respectively. The ten spots included chain A, deoxyribounclease I complex with actin, heat shock protein 27 kDa, a protein similar to cardiac $Ca^{2+}$ release channel, and myosin heavy chain, while the five spots included chain A aldehyde dehydrogenase, glycerol-3 phosphate dehydrogenase, and hemoglobin alpha chain. In general, feeding until the morning of slaughter resulted in more desirable meat color, but appeared to reduce palatability due to increased cooking loss. Proteome analysis demonstrated that various proteins were concomitantly involved in the determination of final meat color. The most noticeable observation in the current study was that various isoforms for a particular protein differed in degradation and/or expression rate depending on meat quality.

Effects of Environmentally Friendly Agents on Growth Performance, Nutrient Digestibility, Nutrient Excretion and Carcass Characteristics in Growing-Finishing Pigs

  • An experiment was conducted to investigate the effects of environmentally friendly agents (yucca extract, mineral feed additive, acidifier, nonspecific immunostimulating anionic alkali solution) on the growth performance, nutrient digestibility, nutrient excretion and carcass characteristics in growing-finishing pigs. A total of 125 pigs were allotted into 5 treatments with 5 replications, 5 pigs per pen in a completely randomized block design. Dietary treatments consisted of 1) control: basal diet, 2) YE: basal diet+120 mg/kg of yucca extract, 3) MFA: basal diet+50 mg/kg of mineral feed additive, 4) NIS: basal diet+3% of NIS (nonspecific immunostimulating anionic alkali solution), and 5) Acidifier: basal diet+0.5% of acidifier (organic acid complex). During the growing phase of the feeding trial, There were no significant differences in average daily feed intake (ADFI) and feed conversion ratio (F/G) among treatments, but the Acidifier group showed higher average daily gain (ADG) than the MFA group (p<0.05). During the finishing phase, there were no significant differences in growth performance among treatments, however YE supplementation increased ADG and F/G by 3.1 and 6.15%, respectively, when compared to control group. Proximate nutrients (dry matter, DM; crude protein, CP; crude ash, CA; crude fat, CF; gross energy, GE; calcium, Ca and phosphorus, P) digestibility did not show any significant differences among the treatments. And there were no significant differences in DM, N and P excretion as well. The supplementation of environmentally friendly agents tended to increase carcass weight compared to control group. Pigs fed MFA showed significantly heavier (p<0.05) carcass weight than those fed control or Acidifier diets. Addition of these agents except for NIS to diet for growing-finishing pigs caused a similar feed cost/kg weight gain than control group. Therefore, present study suggested that the optimum environmentally friendly agent would be yucca extracts, considering the effects on growth performance, nutrient digestibility, nutrient excretion, carcass characteristics and feed cost in growing-finishing pigs.

Anti-adherence of Antibacterial Peptides and Oligosaccharides and Promotion of Growth and Disease Resistance in Tilapia

  • Four hundred and fifty tilapias ($6.77{\pm}0.23$ g) were assigned randomly to six groups to evaluate the feasibility of the tested antibacterial peptides (ABPs) and oligosaccharides as substitutes for antibiotics. The control group was fed with a commercial tilapia diet; other five groups were fed with the same commercial diet supplemented with konjac glucomannan (KGLM), cluster bean galactomannan (CBGAM), and three animal intestinal ABPs derived from chicken, pig and rabbit at 100 mg/kg respectively. After 21 days of feeding, growth, disease resistance, and in vivo anti-adherence were determined. Furthermore, the inhibitory effect of tested agents on adhesion of Aeromonas veronii biovar sobria (A.vbs) strain BJCP-5 to tilapia enteric epithelia in vitro was assessed by cell-ELISA system. As a result, the tested agents supplemented at 100 mg/kg show significant benefit to tilapia growth and disease resistance (p<0.05), and the benefit may be correlated with their interfering in the contact of bacteria with host mucosal surface. Although none of the tested agents did inhibit the growth of BJCP-5 in tryptic soy broth at $100{\mu}g/ml$, all of them did inhibit the adhesion of A.vbs to tilapia enteric epithelia in vivo and in vitro. In vitro mimic assays show that three ABPs at low concentrations of $25{\mu}g/ml$ and $2.5{\mu}g/ml$ have the reciprocal dose-dependent anti-adherence effect. The inhibition of ABPs may be correlated with a cation bridging and/or receptor-ligand binding, but not with hydrophobicity. The KGLM and CBGAM inhibited the adherence of BJCP-5 to tilapia enteric epithelia with dose-dependent manner in vitro, and this may be through altering bacterial hydrophobicity and interfering with receptor-ligand binding. Our results indicate that the anti-adherence of the tested ABPs and oligosaccharides may be one of the mechanisms in promoting tilapia growth and resistance to A.vbs.

Influences of Enzyme Complex Supplementation on Growth, Ileal and Apparent Fecal Digestibility and Morphology of Small Intestine in Pigs

  • A total of 140 weaning pigs were used to determine the effects of digestive enzyme supplementation to corn-soybean meal diets on growth performance, physiological changes of small intestine, microorganisms and pH in the gastrointestinal tract. Two kinds of enzyme complex (A, B) were used in this experiment. Pigs were allotted in a completely random design (CRD) to five replicates with four pigs per pen. Diets and water were provided for ad libitum consumption. Treatments included 1) Control: without enzyme supplementation, 2) Enzyme A 0.05%, 3) Enzyme A 0.10%, 4) Enzyme A 0.15%, 5) Enzyme B 0.05%, 6) Enzyme B 0.10%, 7) Enzyme B 0.15% in the diets. A total of 24 crossbred barrows 25.78${\pm}$0.55 kg BW fitted with simple ileal T-cannulas were used to evaluate the effect the enzyme addition on the nutrient digstibility. Pigs were allotted 4 treatments (No enzyme, enzyme A 0.05%, enzyme A 0.1%, enzyme A 0.15%), 6 replicates according to a completely random design (CRD). Another digestibility trial was followed for enzyme complex B. Twenty pigs, average 31.92${\pm}$0.37 kg BW, fitted with simple ileal T-cannulas for digestibility trial. Neither enzyme A nor enzyme B affected on fecal or ileal digestibility of dry matter, gross energy, crude protein, crude fat and crude ash (p>0.05). The apparent fecal digestibilities of all the nutrients were higher in total feces collection method than in indirect method. At the end of feeding trial, 21 pigs were slaughtered for examining the morphological changes of small intestine and the concentration of microorganisms in the ileum and the colon. Growth performance, intestinal morphology and pH of ileum and colon were not affected by the either enzyme complex supplementation (p>0.05). These results suggested that enzyme complex A and enzyme complex B were of no benefit to early-weaned pigs when corn-soybean meal based diet was provided.

비육돈 사료에 양파의 첨가가 성장 및 혈중 콜레스테롤 함량에 미치는 영향 (Effects of Dietary Onion Supplementation on Growth Performance and Cholesterol Level of Blood in Finishing Pigs)

  • 본 연구는 양파의 첨가에 따른 비육돈에서의 성장 및 혈청내 cholesterol 성상에 미치는 영향을 구명하기 위해 실시하였다. 사양실험은 3원 교잡종($Durcc{\;\times\;}Yorkshire{\;\times\;}Landrace$) 비육돈 60두를 공시하였으며, 처리구로는 옥수수-대두박 기초사료에 양파 무첩가구(Con), 양파 1.0% 첨가구(ORB1)와 양파 2.0% 첨가구(ORB2)로 3 처리로 구서되었다. 전체 시험 기간동안, 일당증체량과 일당식이 섭취량은 대조구에 비해 양파의 첨가수준이 증가함에 따라 증가하였다(linear effect; p<0.01). 또한, 식이효율도 양파 첨가수준이 증가함에 따라 향상되었다(linear effect, p<0.01). 혈중 total cholesterol 농도는 대조구보다 양파 첨가수준에 따라 낮게 평가되었다(linear effect; p<0.01). 또한, 혈중 HDL-cholesterol 농도는 차이가 나타나지 않았지만, LDL-cholesterol 농도는 양파 첨가수준에 따라 유의적으로 낮은 수치를 나타내었다(linear effect, p<0.04; quadratic effect, p<0.09). 그러나 혈중 triacylglyceride 농도에서는 처리구간에 유의적인 차이가 나타나지 않았다. 결론적으로 70 ~ 108 kg 비육돈에 있어 사료내 양파의 첨가는 성장촉진과 혈중 total cholesterol 농도 감소에 효과가 있는 것으로 사료된다.

Assessment of growth performance and meat quality of finishing pigs raised on the low plane of nutrition

  • This study was performed to investigate the effects of the low plane of nutrition on growth and meat quality of finishing pigs. A total of 136 crossbred barrows and gilts weighing approximately 55 kg were allotted to 8 pens, with 17 animals housed per pen, in a 2 (sex) ${\times}$ 2 (nutrition) factorial arrangement of treatments. The animals allotted to a medium plane of nutrition (MPN) received a finisher phase 1 (P1) diet containing 3.47 Mcal DE/kg and 0.92 % lysine and a P2 diet containing 3.40 Mcal DE/kg and 0.78 % lysine for 35 d and 36/43 d, respectively; the animals allotted to the low plane of nutrition (LPN) received only a P2 diet containing 3.00 Mcal DE/kg and 0.68 % lysine 7 d longer than MPN. The animals were slaughtered following the feeding trial, after which the loin, ham, Boston butt, and belly were taken from a total of 24 animals, with the average live weight being 120 kg, and their physicochemical and sensory quality traits were analyzed. Average daily gain did not differ between MPN and LPN during either P1 or P2. Average daily feed intake was greater (P < 0.05) in LPN vs. MPN during both phases whereas the opposite was true for the gain:feed ratio. Backfat thickness (BFT) was less in LPN vs. MPN (21.7 vs. 24.1 mm at 115 kg). The plane of nutrition influenced no effect on any of the physicochemical characteristics of fresh loin, ham, or Boston butt analyzed in the present study. Fresh hams from LPN exhibited superior aroma and odor scores than those from MPN; however, sensory quality traits were not influenced by the plane of nutrition in other fresh primal cuts or cooked meat. Instead, fresh primal cuts and cooked meat from gilts rendered superior physicochemical characteristics and sensory scores, respectively, than those from barrows. Results suggest that the low plane of nutrition may be useful to increase the slaughter weight of finishing pigs with a moderately high BFT by virtue of its BFT-lowering effect with or without exerting a slightly positive influence on pork quality.

라이코펜 급여와 포장방법이 재래돼지 등심육의 저장 중 품질 특성에 미치는 영향 (Effects of Dietary Lycopene Supplementation and Packaging on Quality Traits in Longissimus Muscle of Korean Native Pigs during Storage)

  • 본 연구는 라이코펜 급여에 따른 재래돼지고기 등심육의 저장 중 품질특성의 차이를 확인하기 위하여 실험을 수행하였다. 제주 재래돼지 농장에서 처리구별로 200 (T1), 400 (T2) 및 800 ppm (T3)의 라이코펜 급여구를 배치하여 실험을 실시하였다. pH의 경우 라이코펜 첨가의 차이를 확인할 수 없었고, 저장기간 중 총균수의 경우(Table 3) 저장 0일차의 대조구(무첨가구) 보다 라이코펜 첨가구에서 미생물수가 더 낮은 값을 나타내었다(p<0.05). 저장기간 중 젖산균수와 대장균군수의 경우 저장 0일차의 첨가구(400, 800 ppm)가 무첨가구나 첨가구(200 ppm) 보다 유의적으로 더 낮은 값을 나타내었고. 저장기간에 따라서 함기포장, 진공포장 모두 대장균군수가 유의적으로 증가하였다(p< 0.05). 또한, 라이코펜 첨가구의 보수력이 무첨가구 보다 낮았으며, 가열감량의 경우는 이와 반대로 라이코펜 첨가구가 대조구 보다 더 높은 수치를 나타내었다(p<0.05). 이상의 결과를 종합하면 라이코펜 급여 재래돼지고기는 일반재래돼지고기의 품질과는 다른 미생물수의 차이를 보였으며 VBN, 보수력 및 가열감량에서 다른 품질 특성을 나타내었으며, 최근 소비자의 건강지향성 등을 고려할 때 재래 돈육을 생산하기 위한 기초 자료를 제시할 수 있을 것으로 사료된다.
