자색고구마 전분의 이화학적 특성 (Physiochemical Properties of Purple-Fleshed Sweet Potato Starch)

  • Physicochemical properties and gelatinization patterns of purple-fleshed sweet potato starch were studied. Shape of starch granule was round and polygonal, X-ray diffraction pattern was Ca-type. Amylose content was 14.4% which was lower than that of other sweet potato starch. Water binding capacity was 82.54%, swelling power and solubility at 8$0^{\circ}C$ were 27.94% and 15.35%, respectively. Initial temperature of gelatinization was 72$^{\circ}C$ using Brabender/Visco/Amylograph, consistency and setback were lower than those of other sweet potato starch. The peak temperature and enthalpy determined by DSC were 68.1$^{\circ}C$, 1.24cal/g, respectively. The transmittance of starch dispersions in alkaline solutions increased with NaOH concentration up to 0.17N, and then changed slowly at 0.19N or above. The apparent viscosities were similar to the transmittance of starch dispersions in alkaline solutions, but drastically increased above 0.21N.

수분손상에 민감한 포장된 제품의 저장수명 예측 (Shelf Life Prediction for Packaged Produce Sensitive to Moisture Damage)

  • The change in moisture content of moisture sensitive products in moisture-semipermeable packages was investigated for the purpose of predicting the shelf life of a product-package combination. A mathematical model, and a computer program based on the physiochemical properties of the product and the moisture permeability of the package was developed. The moisture content for products in moisture-semipermeable packages was determined under various environmental conditions and the results were compared with the predicted values by means of the simulation model. These experimental studies demonstrated that the prediction of the change in moisture content of packaged products over time by the simulation model is accurate, within a practical range of temperature and relative humidity values. The developed semi-empirical model is considered to have applications in industry, since it provides product shelf life information for a range of temperature and relative humidity conditions, with a limited number of experimentally obtained data points.

  • Oddi is a mulberry fruit that has anti-inflammatory and antioxidative effects. This study was carried out to investigate the quality characteristics of mulberry fruit wines manufactured by two different methods. Where they were processed according to the traditional Korean fruit wine methodology(A) or a modified(B). Sensory qualities, physiochemical characteristics, and biochemical activities of the Oddi wines were analyzed. From the results of the sensory evaluation, manufacturing method A showed higher acceptability. However, the two different methods was not significantly different overall. The method A wine had higher brightness(L)(77.65) redness(a), and yellowness(b). As for the antioxidant activities and ACE(angiotensin-converting enzyme) inhibitory abilities of the wines manufacturing method A had greater values.

  • This experiment was carried out to investigate the mixing ratio of soil amending materials such as peat perlite, active carbon and zeolite for improvements of physiochemical properties of topsoil, of creeping bentgrass (Agrostis palustris var. Penncross). The results were as followed :1.Appropriate addition of soil improvement material was increased the soil porosity due to the decrease of bulk density. Over supplement of soil improvement material induced the decrease of infiltration of water into soil.2Content of organic matter was increased in treatment of peat and active carbon . Soil reaction was decreased in peat treatment, but increased in perlite, zeolite and active carbon. Exchangeable cation capacity was increased by the addition of all kinds of soil improvement materials used in this experiment.

  • In order to strengthen objectivity and availability of oriental herb medicine, the standard formula for herbs has been attempted to set up by documentary testing original herbs which were recorded in authorized document. The object herb medicines are CARYOPHYLLI FLOS. After this study, additional experimental verification is required as a matter of fact. As comparison materials, this thesis will be utilized. Specially the internal and external morphological standard in this study is expected to supply the search for several physiochemical reaction, biological reaction, determination of indicator material and identification of gene with basic sources in the future.

Molecular Differentiation of Panax Species by RAPD Analysis

  • Traditional taxonomic methods used for the identification and differentiation of ginsengs rely primarily on morphological observations or physiochemical methods, which cannot be used efficiently when only powdered forms or shredded material is available. Randomly amplified polymorphic DNA (RAPD) was used to determine the unique DNA profiles that are characteristic not only of the genus Panax but also of various Panax subgroups collected from five different countries. RAPD results of OP-5A primer showed a specific single band that is characteristic of all ginseng samples. RAPD results of OP-13B primer demonstrated that OP-13B primer could be used as a unique RAPD marker to differentiate Panax species. These results support that this approach could be applied to distinguish Korean Ginseng (Panax ginseng) from others at the molecular level.

녹말 나노 입자의 연구 현황 (Current research trends on starch nanoparticles (SNPs))

  • In recent years, starch nanoparticles (SNPs) have been received much attention due to their unique characteristics different from native starch. Also, SNPs have economic and environmental advantages because they are prepared from starch, a cheap and safe natural polymer. It can be used in various industrial applications such as food additives, drug carriers, etc. SNPs have been prepared using different methods and their physiochemical, functional properties and possible industrial applications have been reported. Based on these studies, SNPs are expected to be the promising food materials and expand their utilization in many industries in the future. This review covered the overall researches on SNPs, including preparation, physicochemical and functional properties, and discussed their current and future applications including resistant starch materials.

당 첨가 민들레(Taraxacum officinale) 발효 추출물의 발효과정 중 이화학적 및 미생물학적 변화 (Physiochemical and Microbiological Changes of the Fermented Dandelion (Taraxacum officinale) Extracts with Raw Sugar)

  • 본 연구는 민들레에 당을 첨가 후 젖산발효를 시켜 발효과정 중의 이화학적, 미생물학적 변화를 탐구하였고 최종 발효물의 성분분석을 통해 기능성 음료로서의 가치를 평가하기 위해 연구를 진행했다. 30% 당을 첨가하여 발효시킨 민들레 발효물 (FD30)과 50% 당을 첨가하여 발효시킨 민들레 발효물 (FD50)은 발효가 진행됨에 따라 FD30의 초기 pH 및 산도가 각각 pH 6.4, 0.18%에서 숙성 30일에 pH 3.85 및 0.72%로 변화되었고, FD50 보다 저하 속도가 다소 빠른 경향을 보였으며 숙성 120일 이후에는 안정된 값을 나타내었다. 발효과정에 따른 총 균수 변화는 Soluble solid와 상관없이 초기에는 비슷한 총 균수를 나타냈고, 점차로 증가하여 최대균수에 도달한 후 다시 서서히 감소하는 발효양상을 나타냈다. 유산균수 결과도 총 균수의 결과와 비슷한 양상을 보였고 유산균수가 초기에 크게 증가하였다가 최대 유산균수를 보인 후 서서히 감소했다. 발효 및 숙성이 완료된 민들레 발효물의 유리당 함량은 각 농도별의 처리구 간에서 fructose, sucrose의 함량은 FD30, FD50 간에 큰 변화를 보이지 않았으나 glucose의 경우에는 FD50이 $46.86{\pm}1.93%$로 FD30에 비하여 2배 이상 증가하였다. 유기산 함량 분석결과 FD30이 FD50보다 유기산의 종류가 다양하고 함량이 높은 것으로 나타났고 유리아미노산 함량은 유기산의 경우와 같은 양상을 보였으며 발효물 모두 민들레물 추출물 (DWE)보다 많은 유기산과 유리아미노산을 함유했다. 이는 민들레에 함유된 각종 효소들과 미생물이 당 발효에 의해 유용한 작용을 거쳐 주요성분이 분해되고, 또한 재합성이 이루어져 각종 유리당, 유기산 및 유리아미노산 등을 생성한다고 판단된다. 따라서 발효를 통한 민들레의 기능성 식품으로의 활용가치를 기대할 수 있고 발효시 첨가물과 시기에 따른 성분변화에 대한 보다 구체적인 연구가 추가로 진행되어야 할 것으로 사료된다.

유체포유물의 생성시 온도-압력 조건과 유체포유물의 물리화학적 특성연구에 있어서의 컴퓨터 프로그램이용 (The Application of Computer Program for Determination of Fluid Properties and P-T Condition from Microthermometric Data on Fluid Inclusions)

  • 유체포유물은 광상의 기원과 물리화학적인 환경 연구에 널리 사용되어져 왔다. 하지만 측정치의 오차와 유체포유물의 밀도와 isochore 등의 계산에 있어 그 과정의 복잡성 때문에 유체포유물에 내포한 물리화학적인 정보를 정확히 알아내는 것은 매우 힘들다. HALWAT, $CO_2$ 그리고 CHNACL 등의 컴퓨터 프로그램들은 (Nicholl and Crowford, 1985) 유체포유물의 밀도와 isochore 등을 복잡한 공식을 이용하여 계산함으로서 유체포유물로 계산될 수 있는 물리화학적인 정보의 정확도를 개선하였다. 본 논문에서는 이들 프로그램을 백악기에 형성된 금학 광산에 대한 최상훈과 소칠섭 (1992)의 유체포유물 측정치와 쥬라기에 형성된 삼황학 광산에 대한 윤성택 (1990)의 유체포유물 측정치에 적용하여 보았다. 컴퓨터 프로그램을 이용하여 결정된 금학광산의 온도-압력조건은 $230^{\circ}{\sim}290^{\circ}C$, 500~800 bar로서 최상훈과 소철섭 (1992)에 의하여 추정된 온도-압력조건인 $280{\sim}360^{\circ}C$, 500~800 bar와 유사하다. 하지만 본 연구에서 결정된 삼황학 광산에 대한 온도-압력 조건은 대략 4~7 kb, $328{\pm}500^{\circ}{\sim}55^{\circ}C$ 이며 이는 윤성택 (1990)에 의하여 추정된 온도-압력 조건인 1.2~1.9kb, $25^{\circ}{\sim}294^{\circ}C$와 차이를 보여준다. 삼황학 광산에서의 온도-압력 추정에 있어서의 차이는 광상의 온도-압력조건 추정에 있어 균일화 온도와 유체포유물의 포획온도를 동일시하고 적당치 못한 isochore의 사용함에 기인한다. 금학광상의 경우는 낮은 압력조건 (<1~2kb)에서 균일화 온도와 유체포유물의 포획온도가 비슷하기 때문에 큰 차이를 보여 주지 않았다. 따라서 1~2kb보다 높은 압력조건에서 형성된 광상에서는 광상의 온도-압력조건 추정에 있어 균일화 온도의 잘못된 적용과 적당치 못한 isochore의 사용을 피하여야 하며 이를 위하여 본 연구에서 소개된 컴퓨터 프로그램 이용을 추천한다.
