This study aims to determine the physicochemical and sensory qualities of yogurt dressing prepared with mulberry juice(0, 10, 20, 30 and 40%). As the amount of organic acid added with mulberry juice increased, malic acid, acetic acid and citric acid contents increased, while tartaric acid content decreased. The viscosity of the control group(5033.33 cP) was higher than that of the others(3043.33~736.67 cP). The pH of the control group(3.38) was lower than that of the others(3.38~3.45). The sweetness of the control group(15.80) was lower than that of the others(16.30~16.83). As for the colors, L value decreased significantly, whereas a value and b value increased significantly with more mulberry juice added. DPPH radical scavenging activity of the control group was 8.61%, whereas that of yogurt dressing samples with mulberry juice ranged from 21.98~50.65%. The sensory property results showed that yogurt dressing with 20% mulberry juice added group had the highest value in terms of color, taste, mouth feel and overall acceptability. Overall, the result of this study indicates that the yogurt dressing containing 20% of mulberry juice was most preferred among the groups.

This study was conducted to investigate effects of cooking method on physicochemical characteristics and qualities of hamburger patties processed with ground pork/beef meat $(20\%\;fat)$. Hamburger patties were cooked by electric griddling, fan frying, microwave, conventional cooking, and charbroiling. Cooking rates were affected by cooking methods, had the highest in patties cooked in microwave oven. Hamburger patties by microwaving were also higher moisture content, but were lower protein and fat content compared to other methods. Electric griddling and microwaving were higher cooking yield, lower diameter changes in patties than other methods, but pan frying showed the opposite effects. Higher values of hardness and brittleness in pan frying than those of other methods were showed, but pan frying had the highest overall acceptability in sensory evaluations.
The water qualities of Namdae-stream, Yeongok-stream and Sacheon-stream were examined, by using physicochemical factors, trophic status and epilithic diatoms from May 2008 to February 2009. The physicochemical water qualities of three streams were, except for some construction areas and sites of downstream, generally good, having less concentration than BOD of $2\;mg\;L^{-1}$. As for the sites of downstream, there were ongoing pollution such as graduation of nutrients in Namdae-stream and Sacheon-stream, due to salinity of seawater and topographical feature of the closed estuary. The examination of trophic status of Namdae-stream showed mesotrophic status in all the sites. Also, eutrophication was in progress as from the upstream to the downstream of Yeongok-stream, and Sacheon-stream showed eutrophic status in all its sites. As a result of the biological water quality assessment, Namdae-stream, excluding the downstream site, came out to be $\beta\sim\alpha$-oligosaprobic, and biological water quality was good, having TDI less than 50. Some construction sites and downstream site of Namdae-stream are $\beta$-mesosaprobic, and with the TDI over 70, the biological water quality assessment came out to be polluted. Yeongok-stream is $\beta\sim\alpha$-oligosaprobic, and its biological water quality is good, having TDI less than 40. Sacheon-stream, excluding the upstream site on May 2008 and February 2009, is $\beta\sim\alpha$-mesosaprobic, and its TDI over 70 shows that it has been polluted. The correlation analysis showed a high correlation in both DAlpo and TDI. Also, biological assessment of water quality (DAIpo, TDI) showed higher correlation with TSI rather than BOD.
The physicochemical qualities, antioxidant activities, and polyphenols composition of eight kinds of cloud and clear apple juice products marketed in Korea were investigated. The acidities of eight kinds of cloud and clear apple juice products were in the range of 0.299~0.556 and showed no significant difference (p<0.05). The soluble solid contents of the cloud type were higher than those of the clear type which had higher reducing sugar contents. The color value and turbidity of the cloud type were also higher, but the vitamin c contents showed no significant differences. The total phenolic contents of the cloud type (1.13~1.42 g/L) were four fold to eight fold higher than the clear type (0.12~0.32 g/L). Nine polyphenolic compounds, including chlorogenic acid, caffeic acid (-)-epicatechin, quercitrin, phloridzin, and 5-hydroxymethyl furfural (5-HMF), were isolated by HPLC analysis, and the total amount of the cloud type (319.37~985.63 mg/L) was higher than that of the clear type (92.88~214.39 mg/L). The antioxidant activities, by DPPH and FRAP assays, of the cloud type showed stronger than those of the clear type. The antioxidant activity and the color value were highly correlated with total phenolic content and polyphenols content (r>0.95).

The objective of this study was to improve the sensory qualities of soymilk. For this purpose, soymilk was prepared by adding different types of rice grain, including cooked, puffed, and saccharified rice. Acceptable products could be obtained by addition of saccharified rice. The addition of saccharified rice had a positive influence on sensory qualities, especially mouth feel. Further, soymilk with saccharified rice was comparable in terms of physicochemical characteristics (pH, soluble solids, and viscosity) with commercial whole-bean soymilk. This result suggests that there are opportunities to develop a new market for soy-milk that incorporates health benefits and traditional beverages.
This study aimed to determine the physicochemical and sensory qualities of yogurt dressing prepared with Bokbunja juice(0, 10, 20, 30 and 40%). As the amount of added Bokbunja juice increased, contents of organic acids(citric acid, tartaric acid, malic acid, succinic acid and acetic acid) increased. The viscosity of the control group(8306.67 cP) was higher than those of the others(1633.33~6913.33 cP). The pH of the control group(3.96) was higher than those of the others(3.90~3.85). The sweetness of the control group(14.43) was lower than 10% Bokbunja juice added group(14.93). Color L decreased significantly, whereas a value and b value increased significantly with more Bokbunja juice added. DPPH radical scavenging activity of the control group was 5.84%, whereas those of yogurt dressing samples with Bokbunja juice ranged from 39.72~88.17%. The sensory property results showed that yogurt dressing with 30% Bokbunja juice added group had the highest value in terms of color, flavor, taste, mouth feel, and overall acceptability. Overall, the result of this study indicates that the yogurt dressing containing 30% of Bokbunja juice was most preferred among the groups.
This study was conducted to evaluate the effect of gamma irradiation (0.4, 0.6, 0.8, 1 and 1.5 kGy) on the microbiological, physicochemical and sensory qualities of imported orange during storage at $3^{\circ}C$ for 60 days. Total aerobic bacteria and yeast/mold counts in non-irradiated oranges were 3.59 and 3.75 log CFU/g, and those counts in irradiated oranges at 1.5 kGy were decreased by 1.75 and 2.26 log CFU/g, respectively. Moreover, those counts were decreased significantly according to a dose-dependent manner after gamma irradiation. The pH revealed no significant difference between the control and irradiated samples; however, titratable acidity was decreased significantly according to a dose-dependent manner and storage time. The vitamin C contents were decreased significantly according to a dose-dependent manner and storage time after gamma irradiation. Further, sensory evaluation testing revealed no significant difference between the control and irradiated samples, except 1.5 kGy. Samples irradiated at 1.5 kGy had the lowest values in color, sweetness, sourness, flavor, texture and overall acceptance. The results suggest that gamma irradiation was effective for ensuring microbiological safety; however, irradiated oranges at 1 and 1.5 kGy did not have good physicochemical and sensory qualities. Therefore, we can use the sample irradiated at 0.4~0.6 kGy as optimum-dose to be minimize on quality changes.

To assess the quality of commercial sikhes, we compared physicochemical and sensory characteristics of commercial sikhe with home-made one. Six different brands and home-made sikhes were analysed for physicochemical (sugar content, acidity, color, viscosity, transparancy, texture of rice) and sensory characteristics (7-point scoring test,18 experienced panel members). Commercial sikhes (6 different companies) exhibited lower sugar content (11.6~12.5$^{\circ}$Brix) and viscosity (5.33~9.33 cP) than home-made one, whereas higher pH (5.93 ~6.87), transparency (9.1~46.5% at 558 m), Hunter L, a and b values. In the texture of rice, commercial sikhe showed higher hardness, springiness and chewiness than those of home-made one in. Sensory evaluation showed that malt and rice content, tex-ture and color of rice, and over-all preference for commercial sikhe was significantly lower than those for home-made one (p<0.05). Especially, the scores of over-all preference for 3 commercial sikhes (2.7~3.6) were much lower than that of home-made one (5.7).
The application of Consomm prepared with different ingredients of ground beef and ground chicken ingredients to improve the taste preferences and reduce saving the food cost of Consomm was attempted by reviewing fundamental data and its examining the effect on the physicochemical characteristics of treatment. These treatments were prepared with the following different ratios (9:1, 7:3, 5:5, 3:7, 1:9 ; w/w) of ground beef to and ground chicken: 9:1, 7:3, 5:5, 3:7, and 1:9, w/w, respectively. Gelatin contents were increased significantly with by increasing the mixed ratio of ground chicken. The free sugars identified from Consomm were, glucose, fructose, and sucrose. Free sugar contents, increased significantly by with increasing the mixed ratio of ground beef. (Ed- what are the highlighted treatments? You need to explain in this abstract otherwise the reader doesn't know. For simplicity I suggest you don't use such nomenclaturehere in the abstract and simplify with merely the weight ratios. Confirm the changes that I've made) The highest and lowest free sugars werewas shown at A9:1 and 1:9 treatments, respectively whereas the lowest value was shown at I treatment. As many as 20 different kinds of free amino acids were detected infrom the Consomm and the amount of total amino acids waswere increased with by increasing the mixed ratio of ground chicken. The contents of arginine, glutamic acid and alanine contents were high in the free amino acids of Cconsomm prepared with different ingredients. The In the changes of mineral contents in the Consomm prepared with different ingredients, the mineral showed high contents increased according to in the following order of: K, Na, P, Mg, Ca, Fe, and Zn. From the The results of analysis results, in the Relatin contents, free sugars, free amino acids and mineral contents were all increased with by increasing the mixed ratio of ground chicken. The 7:3 treatment showed From above results, it was showed that B treatment prepared with a ratio of 1 ground beef to 3 ground chicken was the bestmost preferred in physicochemical qualities.
Physicochemical and organoleptic properties were investigated in starch extracted from acorn gamma-irradiated for insect control. Hunter's color L, a, and b values were unchanged upon irradiation at 0.25 to 10 kGy. Scanning electron microscopic observation revealed no changes with gamma irradiation at 1 kGy, that is effective for disinifestation, whereas 10 kGy resulted in some clefts on the starch surface. X-ray diffraction analysis showed patterns of both amorphous and crystalline regions were not different among the treatment groups. Water-binding property, swelling power, solubility, and gelatinization patterns of starch were influenced by irradiation dose, but 1 kGy dose was not detrimental to the physicochemical properties. Textural parameters of acorn gel were relatively stable, but significant reductions were found in hardness, adhesiveness, and chewiness in samples irradiated at 3 kGy or higher. Rrsults revealed that irradiation at 1 kGy or lower could be applied for insect control without causing apparent changes in physicochemical and organoleptic properties of acorn starch.
