특1급 호텔 조리사의 위생교육 현황과 위생관련 조리업무 인지 및 직무수행도 (Status of Sanitary Education and Recognition and Perceived Performance of Cooking Operations Related to Sanitation for Cooks in a Super Deluxe Hotel)

  • A survey on the status of sanitary education and recognition and perceived performance of cooking operations related to sanitation for cooks at nine deluxe hotels in the Seoul area was conducted. The frequency of a food sanitary training program inside the hotel was 94.0%, and the frequency of training was 'once a month' at 68.5%. The program was taught by a hygienist in the hotel (62.7%), and 64.2% of cooks always attended. Cooks' recognition of HACCP was 3.52, and the importance of education on HACCP was higher at 3.77. Cook's' level of sanitary management was satisfactory with an average of 3.83 out of 5 in a Likert scale. The results showed a high average (4.08) for importance of personal hygiene during cooking, but satisfaction of personal hygiene was rather low at 3.92. Cooks' recognition of food sanitation in work field was very high at 4.15. The average scale of recognition on personal hygiene was 4.36, and out of 10 items related to personal hygiene, 'maintaining hand hygiene' showed the highest recognition (4.43). In a performance scale, the average was 4.24, and 'performing annual health examination' was the highest at 4.38. Perceived recognition of 18 items related to food sanitation had an average of 4.41, whereas the average for performance was lower at 4.31. Perceived recognition of 12 items related to cooking equipments had an average of 4.39, and average scale of performance was 4.28. Therefore, cooks' high recognition of food sanitation but rather low recognition of satisfaction of personal hygiene and perceived performance indicated that systematic sanitation management monitoring tools are necessary for higher performance.

일부지역 고등학생들의 치과위생사에 대한 이미지와 진로 고려의사에 관한 연구 (A Study on the Image of Dental Hygiene and the Career Consideration of Some Local High School Students)

  • Purpose : The purpose of this study was that For high school students in Busan, in order to provide basic data in selecting dental hygienists by establishing the correct perception and image of dental hygienists by identifying the image of dentists and career doctors who will choose dental hygienists. Methods : The comparison of group differences with dental hygienists' images was analyzed with independent sample t-test and one-way ANOVA. Correlation between image factors of dental hygienists was analyzed using Pearson's correction coefficient. Results : The image for dental hygienists averaged 3.87 points overall, while the average for each area of the image was 4.09 points for professional images, 4.07 points for business images, 4.08 points for personal images and 3.28 points for social images. When choosing a career path, 18.8 percent said they would not consider dental hygiene, and if they said they would consider dental hygiene, both work, professional, personal and social images were significantly high (p<.05). Professional and professional images (r=.975, p<.05) in the correlation between factors of dental hygienist images, personal and professional images (r=.942, p<.05), social and professional images (r=.865, p<.05), business and personal images (r=.924, p<.05), business image and social image (r=.858, p<.05), personal and social images (r=.882, p<.05) expressed a statistically significant amount of correlation. Conclusion : The study found that high school students' image of dental hygienists was rather positive, but their social image was rather low, and most students did not consider dental hygiene. Therefore, specific measures will be needed to build a desirable image for dental hygienists and positively recognize dental hygienists with active promotion and career experience for dental hygienists in the future.

산업위생기사의 일반적 특성에 따른 직무스트레스와 직무만족도 (Job Stress and Satisfaction by General Characteristics of Engineers Industrial Hygiene Management)

  • Objectives: The purpose of this study was to investigate job stress and satisfaction by general characteristics of engineers industrial hygiene management, and we expect to provide basic data for strategic plan to strengthen the role related to the job. Methods: The subjects of this study was 184 persons who belong to the Korean Industrial Health Association, and 178 completed questionnaires were analyzed. The survey was conducted from June 29 to July 3, 2015. Conclusions: It is necessary to decrease the stress caused by additional job through increasing manpower and developing detailed manual according to the position and systematic job assignment considering general characteristics. Also, it is judged that job satisfaction should increase by vitalizing mentoring, club, small group activity in workplace for maintaining and improving good personal relationship with team members, and implementing incentive system to acknowledge and reward personal duty result.

학교 급식 조리 종사원들의 위생 의식 및 교육 수행 평가 -경기 지역을 중심으로- (Estimating Recognition of Sanitation and Sanitary Education in School Food Service Employees from the Kyunggi Area)

  • This study investigated school food service employees' recognition of sanitation and sanitary education in the Kyunggi area of Korea. In terms of personal hygiene, over 90% of the food service employees acknowledged personal hygiene and regarded it as important. Inspection of personal hygiene before cooking occurred "everyday" (85.5%); however, 17.2% continued cooking after dissatisfactory personal hygiene was identified. The food service employees thought that contaminated food materials (35.3%) was the biggest cause of foodborne illness. Approximately 71.4% of the respondents answered that sanitation education and testing related to cooking were conducted "once every month". In addition, 56.4% answered that education on cooking sanitation was "lots of help" and 36.3% answered it was "very helpful". Upon examining the food service employees' awareness about cooking sanitation over 90% were aware of sanitary cooking methods, and 46.1% responded that their biggest difficulty in performing sanitary cooking procedures was excessive work duties due to a lack of food service employees.

고등학생의 식품위생태도와 개인위생관리의 성별에 따른 비교연구 (A Comparative Study on the Food Hygiene Attitude and Personal Hygiene Management of High School Students according to Gender)

  • 본 연구의 목적은 남녀 고등학교 학생들의 식품위생 태도와 개인위생 관리에 관한 교육 프로그램의 개발을 위한 기초 자료를 제공하는 것이다. 2015년 7월 16일부터 10월 15일 까지 충남지역 16개 고등학교의 학년 당 30명씩에게 설문지를 배포하였고, 미회수 및 불충분한 설문지를 제외한, 총 1,214 부(남 618, 여 596)에 대해 SPSS(ver 18.0)을 사용하여 통계처리하였다. 연구 결과, 여학생은 남학생보다 식품을 살 때 유통기한을 더 확인하고(3.78, 3.57), 가열했던 식품을 보관한 후 그대로 먹는다는 응답이 적었고(2.83, 3.02), 식품의 특성에 맞게 보관 저장한다(3.92, 3.72)고 하였다. 반면, 남학생은 여학생보다 식품포장 표시사항을 자세히 살피고(3.34, 3.22), 음식을 먹을 때 개인접시를 꼭 사용한다(3.43, 3.32)고 응답하였다. 여학생이 남학생보다 화장실 다녀온 후 항상 손 씻기(4.25, 3.94)를 잘하였고, 정수기 이용할 때 개인 컵을 더 사용(3.45, 3.32)하고, 손톱을 더 청결하게 관리(3.61, 3.49)하였으며, 식사도중에 돌아다니거나(2.14, 2.53) 화장실에 간다는(2.22, 2.57)응답이 낮았다. 남학생은 여학생보다 식사 전 손 씻기(3.64, 3.50)와 올바른 방법으로 손 씻기(3.58, 3.46)를 잘하고, 기침을 할 때 휴지, 손수건 또는 소매로 잘 막는 편(3.55, 3.37)이라고 응답하였다. 본 연구에서, 고등학생은 식품위생태도와 개인위생관리 부분에서 성별에 따라 유의적 차이를 보였고, 각각 개선이 필요한 부분이 다른 것으로 조사되었다. 따라서 본 연구는 성별에 따라 차별화된 식품위생태도와 개인위생관리에 대한 교육이 필요함을 제언한다.

방사선사의 손 씻기 관리와 개인위생관리의 실태조사 (Actual Condition Investigation of Radiologist on the Hand Washing Management and Personal Hygiene Management)

  • 본 연구의 목적은 방사선사의 병원감염관리 중 손 씻기 관리와 개인위생관리에 관한 인식도와 실천도를 조사하여 병원감염예방에 대한 실태를 조사하기 위해 실시 되었다. 그 결과로는 방사선사의 손 씻기 관리의 인식도와 실천도는 5점 만점을 기준으로 4.378, 4.199 이었고, 개인위생관리의 인식도와 실천도는 5점 만점을 기준으로 4.284, 3.990 이었다. 또한 손 씻기 관리의 인식도에서 일반적 특성 중 성별, 연령, 학력, 근무경력이 유의한 차이가 있었으며, 실천도에서는 성별, 결혼여부가 유의한 차이가 있었다. 개인위생관리의 인식도에서 일반적 특성 중 연령, 학력, 근무경력이 유의한 차이가 있었으며, 실천도에서는 결혼여부, 근무경력이 유의한 차이가 있었다. 마지막으로, 손 씻기 관리와 개인위생관리의 인식도와 실천도의 상관관계는 손씻기 관리 r=0.453, 개인위생관리 r=0.415로 인식도가 높을수록 실천도가 높게 나타났다.

부산지역 일부 중학생의 학교급식 위생에 대한 인식 평가 (Evaluation of Perception for Foodservice Hygiene by Middle School Students in Busan)

  • 본 연구에서는 부산 소재 중학교 10개교에서 총 826명 학생을 대상으로 개인급식 위생 및 학교급식 위생에서의 중요도와 수행도 조사를 통해 급식위생의 문제점을 파악하여 학교급식 위생을 향상시키는 데 필요한 자료를 제공하고자 하였다. 학생들의 개인급식 위생 전체 평균 점수는 중요도 3.81/5.00점, 수행도 3.60/5.00점이었고 학교급식 위생에 대한 총 평균 점수는 중요도 4.23점, 수행도 3.66점이었다. 개인급식 위생에서 중요도 점수가 가장 높은 항목은 '음식을 향해 기침이나 재치기 하지 않기'였고 가장 낮은 항목은 '배식시에 잡담을 하지 않기'였다. 수행도 점수가 가장 높은 항목 역시 '음식을 향해 기침이나 재치기 하지 않기'였고 가장 낮은 항목은 '올바른 방법으로 손 씻기'였다. 남학생이 여학생에 비해 개인급식 위생의 중요도 수행도 점수가 높게 나타났고, 학년에서는 저학년인 경우 개인위생에 대한 중요도 인식과 수행도가 높았다. 학교급식 위생의 중요도 점수와 수행도 평가 점수는 모두 음식위생> 기기 시설위생> 환경위생> 배식원위생의 순으로 나타났다. 학교급식 위생에 대한 중요도 평가 점수는 여학생이 남학생보다 유의적(P<0.001)으로 높게 나타났고 학년별에서는 3학년이 1, 2학년보다 유의적(P<0.001)으로 낮은 점수를 보였다. 학교급식 위생의 수행도 평가 점수는 남학생이 여학생보다 높은 점수를 나타냈으나 유의적인 차이는 없었다. 학년별 수행도 평가 점수는 1학년이 2, 3학년보다 유의적(P<0.001)으로 높았다. 격자도 분석 결과, 중요도는 높으나 수행도가 낮아서 가장 개선이 요구되는 항목은 학생의 개인급식 위생에서 '식사 전 손 씻기'이며, 학교급식 위생에서는 '식판의 청결도'였다. 중학생들의 개인급식 위생의 중요도와 수행도 점수가 학교급식 위생보다 낮으므로 학교에서는 학생들을 대상으로 손 씻기 실천, 올바르게 손 씻는 방법 등 개인위생 향상을 위한 정기적인 위생교육 실시가 필요하겠다. 또한 학교급식 위생에서 수행도 평가 점수가 낮은 식판의 청결, 식판의 건조 등과 같은 식기류의 위생에 대한 문제를 파악하여 해결 방법을 강구하여야 하며, 전반적인 배식원 위생 수행수준을 높이기 위한 철저한 지도가 요구된다.

중동호흡기증후군 관련 교육과 의과대학생의 개인 위생 실천도 (Education on Middle East Respiratory Syndrome and Personal Hygiene Practices of Medical Students)

  • The purpose of this study was to inquire into the knowledge of medical students on the Middle East respiratory syndrome (MERS) and evaluate whether infection prevention education impacts students' level of knowledge and individual hygiene practices. This study also investigated the route by which medical students obtain disease-related information. The study involved a survey conducted in August of 2015 at two medical schools in Busan. In the first year to fourth year, a total of 345 students are enrolled (111 students in A school and 234 students in B school). Before the study was carried out, university A performed infection prevention education related to MERS, but B did not. We used self-developed questionnaires to survey the demographic characteristics, routes of acquisition of MERS information, degree of knowledge of MERS, educational satisfaction, and personal hygiene practices before and after education. Knowledge level differences according to gender and year in school were not statistically significant. Students obtained their information about MERS from various news media sources and the Internet, and through social network sites. Students practiced sanitary control behaviors in an average of 2.2 manners (standard deviation=0.95). The level of knowledge of MERS revealed a positive correlation with the frequency and total numbers of personal hygiene practices. This finding suggests that the infection prevention education program played a role in knowledge acquisition and personal hygiene practices for the medical students. In order to provide accurate and reliable knowledge of disease and preventive health behavior to medical students, continuous and well-planned education programs are necessary.

Effects of Empathic Ability and Campus Life Stress on Stress Coping Behaviors in Dental Hygiene Students

  • The purpose of this study was to investigate the effect of empathic ability and campus life stress on the stress coping behaviors among 395 dental hygiene students. The analysis was performed using PASW Statistics ver. 18.0, and the following conclusions were obtained. The empathic concern factor was the highest in the subscale of empathic ability (3.60). The interpersonal relationship stress was 1.65 and the task-related stress was 2.72. The stress coping behaviors were the highest among the sub-domains, with 3.69 for wishful thinking. The differences of stress coping behaviors according to general characteristics were as follows. The lower the age and grade, the higher the problem-focused coping; when they were religious there was a high pursuit of seeking social support. When they were satisfied with their economic level, wishful thinking was high. There was a low negative correlation between empathic concern and interpersonal relationship stress in campus life (p<0.01). There was a positive correlation between personal distress and task-related stress (p<0.001). The relationship between empathic ability and stress coping behaviors was most associated with personal distress and wishful thinking. Among the sub-domains of stress coping behaviors, factors that have a common impact on personal distress and seeking social support are viewpoint acceptance. Factors supporting emotional focus and wishful thinking were task-related stress. Dental hygiene students are not able to completely eliminate the stress that they are actually under. However, as the research results show, it is necessary to use stress coping techniques to cope effectively with individual tendencies and situations, and to improve the ability to sympathize with another individual.
